INTRODUCING THE SCENIC ECLIPSE FLEET The Scenic Eclipse fleet is now setting an unparalleled benchmark in design, innovation and luxury. From the ethereal beauty of the Arctic to Antarctica and everywhere in between, ocean cruising has never felt like this.

A

Scenic is delighted to announce that our soon-to-launch 6-star Scenic Eclipse, will be joined by a sister ship.

Alaska to Russia across the Bering Sea, to experience the stark beauty that this remote region has to offer.

Launching in 2020, her debut sailing season will include the European and Russian Arctic, a region of diverse wildlife and habitat, well suited to discovery by our fleet of 6-star luxury meets expedition ships.

Scenic Founder and Chairman, Glen Moroney said the debut of a new ship in the Scenic Eclipse fleet will not only allow Scenic to expand our offering and pioneer new destinations, such as the Russian Arctic, it will also allow us to continue our passion for innovation in design and handcrafted itineraries.

Itineraries will include remote and long sought after destinations including Russia’s White Sea, a real treat for the explorers at heart, and a luxurious voyage that will more than satisfy those who long to experience the delights of an untamed territory; the Northwest Passage, which represents the pinnacle of Polar exploration; Southern Greenland, rarely visited with wilderness that offers some of the most spectacular and un-spoilt scenery anywhere on earth; and

Building will commence next year in Pula, Croatia, where Scenic Eclipse is currently under construction. The second ship in the Scenic Eclipse fleet will be of similar design, including 114 all-verandah suites, nine restaurants, eight lounges and bars, a luxurious Spa Sanctuary, separate fitness areas and indoor, outdoor and plunge pools. It also features a marina deck, helicopters and a submarine. The Scenic Eclipse fleet will be built to comply with the new International Maritime Organisation (IMO) Polar Code requirements, as well as to the highest international safety standards. Utilising state-of-the-art technology and a host of safety features, including innovative zero-speed stabiliser fins that are than 50 per cent larger for even greater stability, the ship will have a rating of Ice Class 1A Super^ (Polar Class 6^), the highest of any luxury vessel, which will ensure the safest navigation through polar waters. The ship will also feature special “Safe Return to Port” capabilities, guaranteeing essential systems remain operational in the unlikely case of an incident.

WHAT FIRST PIQUED YOUR INTEREST IN ANTARCTICA? I grew up with a two metre by one metre photograph of some AdĂŠlie penguins in the living room and looking at that every day as a kid, you get a bit interested in penguins. My father was a professor of geophysics and he spent a couple of years working in Antarctica for the Australian Antarctic Division actually at Mawson station in the early 60s. Later in his life he was invited to be a guest lecturer on an expedition ship that was going to Antarctica, and one year I accompanied him. I got on this tiny ship that took only 50 people and it just blew me away how incredibly beautiful it was and I got hooked, completely hooked. WHAT DO YOU ENJOY MOST ABOUT BRINGING PEOPLE TO THE POLAR REGIONS?

I believe travel is important for us to educate ourselves about the planet we live on. But you need to go to a place to see it and smell it and touch it and absorb the sounds in order to understand it and so to care about it. The polar regions are to me the most precious


places on our earth and I want people to care about them as much as I do and to fight to protect them. But without being there and absorbing the place, it's hard to care. WHY SHOULD PEOPLE TAKE A CRUISE TO ANTARCTICA? The best way to see Antarctica is by cruise because you want to be able to get around to more than just one spot. You want to see penguins, you want to see a few different bits of the landscape, not just one area. It’s an amazing way to see Antarctica, it’s a grand magnificent landscape, it’s just jagged mountains dripped with ice and huge icebergs and it’s spectacular beyond belief. WHY SHOULD PEOPLE TRAVEL TO ANTARCTICA ON BOARD SCENIC ECLIPSE? Scenic Eclipse is the most incredible looking ship I have ever seen. I have probably worked on 15 to 20 different expedition ships in the polar regions and this is by far the most amazing looking ship that’s going to be down there. It has so much technology on board and different ways and means of showing people Antarctica, with not just the Zodiacs to get you to shore, but kayaks, helicopters and submarines^. You can see Antarctica from different vantage points, from the sky, from underneath, from the water’s edge, from the land and that’s the great beauty of it to show people this great landscape from so many different perspectives.

75TH ANNIVERSARY

A

D-DAY LANDINGS The 6 June 2019 marks the 75th Anniversary of one of the most infamous and daring military operations in history. Operation ‘Neptune’, or the D-Day landings as they were to become known, was an Allied operation to invade the Normandy coast across five beaches, marking the start of a campaign aiming to liberate northwest Europe from Nazi Germany’s occupation. The D-Day assault started just after midnight when airborne troops parachuted into drop zones across northern France, with the target of securing bridges and exit roads. Hours later the amphibious part of the operation would begin on the five beaches along a 50-mile stretch of the coast. After encountering varying degrees of opposition from German defences, ground troops captured beaches codenamed Omaha, Utah, Juno, Sword and Gold. Despite setbacks, by the end of the day, Allied forces had gained a presence on mainland Europe for the first time since the evacuation of Dunkirk in 1940. The biggest air, sea and land invasion in history was the start of a two-and-ahalf-month battle that became known as the Battle of Normandy and would signal a beginning to the end of war in Europe.

Apple Tarte Tatin Ingredients

100g butter Table salt 75g confectioners’ sugar 220g flour 2g baking powder 1 egg

200g sugar 100g butter, cut into pieces 1 vanilla pod

1.2kg of Golden Russet apples Sweet shortcrust pastry dough Flour, for dusting

Method

Shortcrust Pastry

1. Melt the butter over a pan of boiling water, stirring it with a whisk. Let cool for a few seconds. Add the salt and mix. Add the confectioners’ sugar and mix again. Add the flour in a steady stream, while continuing to mix. Once the dough begins to come together, take out the whisk and continue to mix with a spatula. Work in the baking powder. 2. Break the egg into a ramekin, beat it with a fork, then pour it into the dough. Mix it until the dough comes together into a ball. Flatten it slightly, put it on a plate, and leave it to rest in the refrigerator for 1 hour.

Caramel 3. Heat the sugar over high heat in a saucepan. When the sugar has turned a nice, golden colour and is beginning to foam, mix it with a wooden spoon. Add the butter and mix until it is melted. To make a successful caramel, wipe the pan out carefully before starting the process. Move it around during the cooking of the sugar, but do not use any utensils.

The caramel should have a good colour without becoming at all brown. Allow 3 to 4 minutes or so. Pour the caramel into a 20cm metal baking dish. Split the vanilla pod in two without separating the two halves. Put it into the pan, right in the middle, to form a “V”.

Tart 4. Preheat the oven to 160°C (Gas Mark 3). Peel and core the apples. Cut them in half vertically. Arrange the apples, standing them upright in the pan. Fill in the centre, and fill up any gaps. Place the pan in the bottom of the oven and cook for 1 hour. Check that the apples are cooked. Allow to rest for 10 minutes, then chill for 1 hour. 5. Preheat the oven to 200°C (Gas mark 6). Place the dough on parchment paper, and flour it lightly. Roll it out into a circle about 3mm thick. Lay the lid of the dish upside down on the pastry, and cut the pastry out to the same interior dimensions as the lid. Cut away the excess. Prick the surface of the dough all over, using a fork. Trim the greaseproof paper to within 12 mm of the edge of the dough. Slide the dough, on the paper, onto a baking tray. Bake for 10 minutes. Lay the cooked pastry on a cooling rack. Allow to cool. Transfer of the pastry base is easy. After 10 minutes of cooking, the pastry will still be soft. It hardens completely when cool. A few minutes before serving, gently warm a serving plate. Place the pastry disk over the apples. Unstick the apples by holding the pastry with one hand and turning the pan from all angles. When the apples are unstuck from the bottom, turn out the tart. Lay the plate upside down over the pan, invert, and lift the pan away. 6. Accompany with a scoop of vanilla ice cream or some whipped cream and the tart is ready to be eaten.

Although we don’t impose a strict dress code, it’s worth investing a little time into what’s suitable for the type of cruise you’re embarking on. While we generally recommend smart casual for evening meals and events, suits, blazers and shoes are welcomed, as well as evening dresses. You might want to dress up for an evening of classical music or a special occasion, it's totally up to you.

LUGGAGE

We’d advise one suitcase per guest and a smaller handbag or rucksack to take out on excursions. Our spacious suites provide plenty of storage, so you can unpack once and really settle in.

Sailing the mighty Mekong

We caught up with Jason Peters, the director of Creative Cruises - one of Scenic's trusted Travel Agents, upon returning from his Southeast Asian adventure with Scenic. Upon arriving in Ho Chi Minh City, our private taxi transferred us to the wonderful 5-Star Park Hyatt hotel for our two-night stay. Our scenic guide met us and our fellow travellers that evening for a get-together and to tell us about the days ahead. After two marvellous days, we were taken to join our ship, the Scenic Spirit. Wonderfully elegant and purpose-built for the Mekong, each of the 32 spacious suites on board the 5-star Scenic Spirit ship afford wonderful views from their private balconies, while the staff are able to be extremely attentive, due to the perfect balance of crew and guests. This beautiful ship certainly stood out as the best in the area, with a well-appointed, stunning Sun Deck and pool area. As we set sail with a complimentary cocktail, we settled in quickly with help from the crew.

The food was varied and of a very high standard, better than many of the 5-star hotels and ocean liners I've experienced in the past. You could tell the chefs knew what they were doing, and everything tasted so fresh. Every day, tours were arranged to immerse us in the local life with ample time to chill out and enjoy the surroundings. Nothing was too much trouble and, although all the tours were included, we still had plenty of time to explore on our own. One of the highlights of our adventure was the overnight stay in Phnom Penn, where a magical night-time Tuk Tuk tour had been organised for us all. The last night was just magical as we were treated to a wonderful candlelit dinner in the grounds of an Angkor temple, a truly incredible way to end the trip. Scenic had every aspect of PAGE 32

the tour covered with local, expert staff, tour guides and crew who make you feel welcome, relaxed and special from start to finish. The voyage ended with three nights in Siem Reap, staying at the outstanding Park Hyatt hotel, and including an excursion to the majestic temples of Angkor Wat. From start to finish everything really was included in the price, which meant we could relax, safe in the knowledge we wouldn’t face any extra charges. We enjoyed everything the Mekong has to offer, with many special surprises, that were exclusive to Scenic guests, arranged for us along the way. A truly memorable tour with a company who cares not only about its guests and crew but the local environment that it operates in too.

From the moment we were picked up by our chauffeur, we were relaxed. He was early, so we knew we were in good hands. Travelling with Scenic for the first time was a well organised, high quality, fast paced tour of Australia and New Zealand. Just what the brochure had promised. The hotels were excellent, some better than others of course. But, without exception, they were well located and this meant we could explore in our own time. We really appreciated the Scenic Freechoice excursions, they were very good but some were exceptional such as the America's Cup Yacht in Sydney harbour - a real sailing experience! PAGE 36

The highlights for us were the America's Cup Yacht, The Merry Widow at the Sydney Opera House, visiting Hobbiton, the Franz Josef hotel (with the most comfortable beds in the world and champagne at breakfast!)! , Kewarra Beach Resort (perfect timing for some R&R halfway through the trip and I definitely recommend their afternoon tea), the Transalpine train journey, stargazing in Queenstown, the sport tour in Melbourne and going to The Melbourne Open Tennis tournament. We loved Melbourne, and Brisbane was a delight too. But Christchurch stole our hearts as they work to recover their city. The hotel, although small and very busy, was in a good location. Definitely recommend the Antarctic Centre, Quake City museum and the City museum. Adam Poole is a Graphic Designer at Scenic HQ. Here, we’ll discover what it is that he enjoys about using his creativity to develop the Scenic brand while communicating our 5-star philosophy effectively. I always wanted to design for the travel industry and saw Scenic as a fantastic opportunity to achieve my career ambitions, whilst working for a company thriving in its sector. It certainly didn’t disappoint. My day-to-day tasks require me to work as part of a team, contributing innovative and creative ideas on how to use my skills to produce a 5-star luxury visual experience. My team will meet with our Marketing team for campaign meetings, which is a great opportunity to share ideas, before transforming them into a reality. It’s not difficult to feel inspired on a daily basis, when I spend every day looking at amazing photos of incredible destinations, all over the world.

The job certainly has its perks. Last year, I was invited to experience a 5-star luxury all-inclusive river cruise on board Scenic Gem, as part of our Highlights of Normandy & the Seine itinerary. During the trip, I was lucky enough to enjoy a bike tour of Vernon, a quaint town on the river bank, as well as an emotional visit to the D-Day landing sites and an exclusive Scenic Enrich concert at Château de La Roche-Guyon. Not forgetting, every moment on board was exceptional, from dining in style at the special L’ Amour restaurant, to trying local wine and beers under the recommendations of the helpful crew on board.

My latest project has been the launch of our brand-new Exotic Wonders of Asia & the Far East brochure, which I’m really excited about. It’s always great when we expand our itineraries further and I’m sure these will provide fantastic new experiences in China, Japan, India and Sri Lanka.

I can’t imagine I’ll ever tire of inspiring the discerning traveller to visit these beautiful destinations, it certainly fills me with ambitions to see as much of the world as I can.
