njoy the long summer nights and spend time out in your garden or courtyard. There’s nothing more peaceful or romantic than sitting out while the sun goes down, enjoying food and wine in the open air. But how do you make your evenings feel that extra bit special, especially if you’re having friends or family to visit? Why not add a bit of glamour with some stylish garden lighting!
FAIRY LIGHTS Outdoor fairy lights are popular at Christmas, so why not get them out for the summer, too? String them along the top of a fence or trellis, or drape them across trees and bushes.
POND CANDLES
TEA LIGHTS
If you have a pond or other water feature, why not try two or three large floating candles? Firelight flickers on the water, creating a magical mood for your garden party – or simply for your own pleasure!
An inexpensive way to light up your garden is to use tea lights. Space them out along the tops of walls or stagger them down the side of a flight of steps. For a more finished effect, pop them inside glass holders or use a selection of different colours. You could also use tea light hangers, such as the ones above. Hang them from a nail in a fence, from branches or even from a washing line for a pretty glow.
GARDEN CANDLES There’s an enormous range of garden candles available. Candleholders range from traditional clay plant pots for a rustic look, to elaborate glass lanterns for a luxurious feel. Garden flares on bamboo sticks make a bold impression and don’t forget citronella-scented candles to put off those pesky insects!
SOLAR LIGHTING Solar garden lighting is not only an environmentally friendly option, but also one that can make financial sense. Options include fairy lights, table lights and decorative lights on spikes that can be pushed into the ground. And as they can be used perpetually, the initial investment does make sense!

Above all, be creative. Choose a method of lighting that highlights the best features of your outdoor space. Sankey's Smokie Serves four
YOU WILL NEED 750g natural smoked haddock – available from Sankey's Fishmongers
350 grams or 20 raw, peeled and de-veined king prawns
650 grams (yes, grams) of milk. Any kind – it's up to you
2 bay leaves 1 sprig of thyme salt and pepper to season 250g Applewood smoked cheese –
this cheese is perfect for the job, but Cheddar will work too 50g of unsalted butter 25g plain flour 50g white wine half a teaspoon of diced garlic a handful of chopped flatleaf parsley 4 handfuls of fresh spinach
NOW DO THIS... 1. Ask one of our fishmongers (Graeme, Nick, Colin or even Matt if you are lucky!) to skin the smoked haddock when you buy it. We can also show you how to do this yourself.
3. Whilst the haddock is poaching, make a simple roux from the unsalted butter and flour. To do this, melt the butter slowly in a clean pan, minding you don't burn it. Slowly add the flour and whisk to make a paste. Then add the flour to make a kind of dough. Once you have done this, your haddock and prawns should be ready.

4. Pour the milk into another container through a sieve to collect the bay leaves, thyme, had dock and prawns. Set the fish aside and, bit by bit, add the milk to your roux to make a paste. Keep adding the milk to turn this paste into a white sauce. Keep it on a low heat and add the white wine and garlic, ensuring that the mixture does not boil – it must just be kept hot to reduce and thicken.

5. Add 50g of the cheese to the fish and mix to break up the haddock into flakes. You now need to add your hot sauce to your fish. Gradually add this until you have an equal amount of sauce to fish. You may end up with a bit of sauce left over – it depends on how thick you have made your sauce.
6. In an oven-proof dish or four small portion size dishes add a handful of spinach for each diner, then pour the mixture over evenly. Sprinkle with your cheese and place in an oven for 20 minutes at 200°C.
2. Pour the milk and heat slowly, adding the haddock, raw king prawns, pepper, bay leaves and thyme to poach the haddock. This takes no longer than 5 minuites once the milk has boiled. You want the milk to just simmer and not to boil aggressively.

With the long summer holidays just starting, everybody wants to be outside as much as possible. But how do you keep yourself – and your kids – safe in the sun? We all know the importance of using plenty of high-protection sunscreen, but if you’re going on a beach holiday or planning to spend time by the pool, the best thing to invest in is UV protection swimsuits – many of the kids’ styles cover arms and legs and there are legionnaire-style hats, too. They filter out harmful rays, so that your skin is protected. And for very young children, you can buy small UV protection tents for the garden or the beach. When they’ve stopped running around, kids can take a break out of the sun so they not exposed for the whole time that you’re outside. And remember the golden rule, as they say down under: “Slip-Slop-Slap” – slip on a t-shirt, slop on sunscreen and slap on a hat! Have fun in the sun...
