Air

After a long winter we welcome the month of April, which has always been thought of as the month of new beginnings. Rain washes away the signs of snow and the winter chill. The sun begins to shine bright to uncover those darkened corners that have been hidden by the gray of winter. April is like a breath of fresh air; a time for planting seeds that we will later become our harvest and to witness the perennials from the previous season, begin to flourish. The azaleas of Beaufort are a perfect example of this effervescence. As we travel around our beautiful city, we see many homes that benefit from the beauty of these blossoming flowers. These brilliant colors paint our landscape only for a short while to tell us that spring is here! I hope we all take a moment to appreciate the radiant colors, the fresh scents and the spirit of the season. Tiffany Santagati

ASPARAGUS

“TIPS” If you are buying asparagus for one of these recipes here is what to look for. 1. Asparagus spears should be firm, smooth, straight and round. 2. Look for a bright green color. 3. The tips of the spears should be closed tightly with no signs of flowering. If the tips have a dark green or purple tinge this means the are of good quality. 4. Pick the size that best suits your recipe. You may want larger stalks for grilling and smaller stalks to use in a salad but make sure that they are similar in size so that they cook at the same rate. 5. Store in the refrigerator for 4-5 days. ENJOY!

Asparagus and Shrimp Salad Crusty garlic bread Dressing ½ cup salad oil ¼ cup vinegar 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh basil 1 tablespoon chopped fresh oregano ¼ teaspoon salt Dash cayenne Pinch pepper
