Happy Golfing As a Beaufortonian for nearly 40 years now I can tell you that one of the things I’ve learned is that in Beaufort there are three things you are never late for; Church, Work, and A Golf Tee Time… Golf is a favorite past time in Beaufort and throughout South Carolina. It is a game we play with our colleagues, business associates, new acquaintances and old friends. Golf is how we have come to conduct business, have heart-to-heart conversations with our children as we navigate them through the road of life, and share meaningful quality time with our family and friends. It is our lifeline, in many ways. Like an ever-evolving sub-culture, it is our way of civil socialization, a game built on good sportsmanship in a world where good sportsmanship seems to be a dying art. Some have even called golf the “Last Gentleman’s Game”. I became a golfer many years after moving to Beaufort and it has become one of my favorite games. As you have no doubt noticed the Lowcountry was made for golf. It is quite a thing to tee off on a golf course and see a blue heron majestically fly overhead against the stunning backdrop of the river and the beautiful sunsets it offers, full of pinks and purples. Aside from the picturesque ocean river and marsh views and its precipitous golf courses, the climate is perfect to nurture the lush Bermuda grass necessary for perfect golfing conditions and the weather here leaves very few days out of the year that you can’t golf in Beaufort. The ground is also perfectly conditioned to grow the Bermuda grass needed for the most superb golf courses. In fact in the state of South Carolina there are over 360 golf courses and 10% of those are in the greater Beaufort area. Kiawah Island is considered by many amateur and professional golfers to be the “Toughest Course in America”. One of the most prestigious golf tournaments, The PGA Tour makes a stop every year in the Low Country for the Heritage Classic at the Harbor Town Golf Links on Hilton Head Island’s Sea Pines Resort, and has been held there for the past 41 years (this year marking the 42nd year). In Beaufort the perfect way to relax after a round of golf is a nice, tall, frosty beverage on a hot, sunny day and the area golf courses offer plenty of those and most have a clubhouse with a view that makes enjoying that libation more of a treat than a relief. So get out on the fairways and enjoy the beautiful scenic golf courses of Beaufort and the Low Country. Happy Golfing!!

IMPROVING YOUR GOLF SCORE In all sports, it is essential that you warm up properly to attain the best performance. If you go to any professional or even amateur sporting event, you will see competing athletes doing pre-game warm-ups. Golfers, especially those in the professional level, are not different from them. When tour professionals are about to begin their first tee, they would have made full warm-ups to be able to make their best swings. However, most amateurs have their “warm-ups” done by racing from their autos to the shop and check in, then dashing to their first tee, in just about five minutes. Most of the time, this is followed by an unsteady and inconsistent play for the first holes, ending up with another lackluster round. The result: Disappointing golf scores. Here are some tips for you for improving your golf score. - First, go to the golf course as early as possible. You need time in taking care of your matters in the shop, in using the restroom, changing clothes and shoes, among others. It is crucial that you do not feel pressured or rushed, allowing you to get warmed up at a relaxed pace. Remember that your warm-up time sets your mood and tempo throughout the day, so just relax and move slowly. A minimum of an hour or two before you begin hitting your first tee would probably help you get a nice and relaxed warm-up. - Start your warm-up routine at the putting green. By spending some time on warming up on the green, you will be ready for the speed of the greens. More importantly, you will start up your day with a nice, deliberate, and smooth tempo. - Spend about 10 minutes or so trying to hit the chips around the green using a tee as your target. First test the greens’ firmness to see how much or less the golf ball will roll. In general, the ball tends to move more on hard greens than the soft greens. In addition, there are various kinds of rough which make the ball move differently when it touches the green. Spending some time around the green helps you to have some thoughts on choosing the great greenside shots during your round, and also, the spots where you are landing the golf ball on the putting surface. Remember: If you do not get enough warm-up, you should not expect to have an optimal performance, and consequently, a good golf score.

JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. BEAUFORT NATIONAL CEMETERY Located on Carteret Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church was damaged by forest fire in 1886 and is an excellent example of tabby construction.

SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown.

FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park. HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal). HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an

The Cobia are offshore three weeks earlier than last year which was an early year. This was the warmest winter of my 30 years in Beaufort. This is the first year that my Mexican Violets did not feeze and get killed back by a cold freeze. My Azaleas bloomed 3-4 weeks early and the pollen bloom was the earliest and worst that I have ever seen in Beaufort. So, I checked the offshore water temps and headed out to catch a very early Cobia. We caught the first Cobia of the year last year on April 10th. This year we caught him on March 18th a full three weeks earlier than last year. The Mahi, Sails and Kings will be earlier, too! I expect huge Bull Mahi by mid to late April this year.

The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.

Union Church The Union Church, also known as, “The Free Church” was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.

Boardwalk Observation Tower At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round.

We all met at the boat at 03:30 for an O’dark thirty launch. With no Moon and clear skies we headed out on RADAR for a three hour ride to the South Ledge. We were on station before the first rays of light hit the water 30 minutes before official sunrise. Lines were in the water and we boated our first fish before the sun broke the horizon. We trolled the ledge for two hours looking for Blackfin Tuna and Wahoo. All we caught was Little Tunny. So, we headed back to a weed line that we saw on the way out. We found a huge weed line in closer than normal and the fish were there on a temperature break of 69-72 degrees. I saw Mahi under the weed line immediately and we picked up two before my last chance line went screaming wildy. Mate Mills picked up the rod and fell back as the fish screamed off about 200 yards of line while I screamed out WAHOO! After a great fight, Taylor gaffed a beautiful Wahoo for Mills. We caught a nice 45 pound Wahoo, two Little Tunny, and three peanut Mahi trolling. It was a beautiful day with a low of 62 and high of 80 degrees. The seas were 1-2 foot and winds SW 5-10 mph. So, I decided to go sight casting for the first Cobia of the year at high noon on a slack tide. Things worked out as planned and we were soon surrounded by 12-14 big Cobia. They were not hungry; but, Taylor Thomas (my son and mate) managed to entice one to bite. After a good fight on a spinning rod he brought him alongside for the first Cobia of the year. It was a beautiful day on the water! We saw Loggerhead and Leatherback turtles, Spotted and Bottlenose Dolphin, a Whale’s tail, Mola Mola, Mahi Mahi, Triple Tail, Wahoo and lots of Cobia. Another boat saw a Sailfish. We all decided that it was a great first fishing day of the year on Topgun 5. Book early this year, I only have 4 weekend days left in May and April is filling up fast. Sauted Soft Shell Crabs 8 soft shell crabs 1 cup milk pepper to taste salt

1/2 cup flour (all purpose) 4 tablespoons olive oil 2 tablespoons of minced garlic lemon wedges

DIRECTIONS: Wash cleaned crabs well. Mix milk, salt and pepper, soak crabs in mixture. Dip the crabs in flour shaking off excess flour. Heat 2 tablespoons of the olive oil with the garlic in a large, heavy skillet over medium heat until it sizzles. Saute 4 of the crabs until golden brown for about 4 minutes on each side making sure that they don’t stick. Repeat with the remaining olive oil and crabs. Serve with lemon wedges. Serves 4.

Hot Crab Cheese Spread 8-ounces crab meat 8-ounces mild or sharp cheddar cheese 2-ounces pimento drained

1 teaspoon finely grated onion 1/2 cup mayonnaise 1/4 teaspoon worcestershire sauce

DIRECTIONS: Preheat oven to 350 degrees F. Mix all the above ingredients well in a medium bowl. Spoon mixture in to a small (1 quart) baking dish. Bake for 25-35 minutes, or until lightly golden browned on top and bubbling at the edges. Serve with crackers or toast points. Makes 8-10 servings.

Oriental Crab Cakes 1 lb crab meat, cartilage removed 2/3 cup bean sprouts, slightly chopped 1/4 cup water chestnuts, chopped 3 tablespoons scallions, chopped

3 tablespoons celery, minced 1-1/2 teaspoons soy sauce 1 large egg about 1/2 cup bread crumbs or enough to hold together

DIRECTIONS: Mix all ingredients together. Shape into patties and fry until brown. Makes about 12.
