Wonderful Holiday Its time to dust off the Christmas lights, pull out the Christmas tree ornaments and spend many hours shopping around for a gift for each of your loved ones. Yes, its Christmas time again, and time to do all those things that have such special meaning to your family during the holidays. As children we spend Christmas with our parents carrying out the family traditions, whether it’s when we decorate the tree, an ornament with special meaning or a recipe passed down for generations for Christmas dinner. As we get older we eventually make our own family traditions. Though often they are somewhat reminiscent of the ones we grew up with, we put our own special touches on them to make new memories to share with our spouses, children and grandchildren. It adds meaning to the true spirit of the holidays. Beaufort itself has some great Christmas traditions. There’s The Night on the Town and the lighting of the town Christmas tree, The Christmas Parade and Churches that carry out their own Christmas Pageant or nativity scene. As Christmas comes to us and with the New Year looming ahead I have to wonder what’s in store for the next year. I’d like to see the economy take a turn for the better in the New Year, but then wouldn’t we all? I’d like our troops to come home from war torn countries like Iraq and Afghanistan. I think everybody wants to loose 10 pounds so that’s a given. I want to lose 20. Whatever we do for our Christmas traditions and whatever we each wish for the New Year, may all of you have a Wonderful Holiday and I wish you all peace, love and prosperity in the year 2012!

JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951.
BEAUFORT NATIONAL CEMETERY Located on Carteret Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church was damaged by forest fire in 1886 and is an excellent example of tabby construction.
SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown.
FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park. HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal). HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an

HOLIDAY TRADITIONS

South Carolina’s Christmas traditions are basically the same as those of the United States, there are also some which are peculiar to those of South Carolina and especially the Carolina Lowcountry. William Gilmore Simms wrote of them in the 1850s: “Ours, you know, is not Saint Nicholas, who is a Dutch Patroon, carrying an equally large wallet and abdomen. Our Patron Saint, for young people, is Old Father Christmas himself, who we describe as a large, gray-bearded Prophetlooking person ~ his beard of white moss, his hair of the same material, streaming over great broad shoulders, a twine of ivy is around his brow, and the berries of red and myrtle droop and quiver from his tresses as he walks.” The days of feasting were observed not only by plantation families, but by African plantation workers, who were generally given a few days off their regular duties.
The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.
Union Church The Union Church, also known as, “The Free Church” was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.
Boardwalk Observation Tower At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round.
One of the first settlers of neighboring Savannah wrote on Dec. 24, 1734: “Being Christmas Eve, my people desired to go out this morning to provide themselves a dinner, though we have good beef, pork, cheese, flour, etc. They are now come home and have brought 3-1/2 couple of ducks, one pair of doves, one turkey and a fine buck, together with a fine young pig.” “Hoppin’ John” is a New Year’s dish found on many Lowcountry tables to welcome the New Year. The name is more romantic than its ingredients, consisting mostly of hog jowls, (bacon used now) rice and black-eyed peas. The meal is thought to bring good luck throughout the coming year. It probably has an African origin, but is consumed by whites and African Americans alike. Since the Civil War, for Sea Island and Beaufort African Americans, New Years has a special significance and is still a special occasion in most Lowcountry black churches. It is Emancipation Day since Jan. 1, 1863, when President Lincoln proclaimed freedom for enslaved African Americans in Southern States. Some of the first Christmas trees on the Sea Islands, probably cedars and short-leaved pines, were put up and decorated by New England teachers and missionaries who came with the Union soldiers and sailors after Nov. 9, 1861 and taught the African American children of the area. One of the young missionary teachers wrote in December, 1863 “The children came up about half-past two o’clock on Christmas afternoon to see the tree, but being told not to come until sunset, they hung around outside the gate until Mr. Hall was ready for them. About dusk, they were all marshaled in by classes, and we all helped distribute the presents. The children seemed aghast with the brilliant sight, and when William Hall wished them all a very Merry Christmas, they threw up their hands and shouted with all their might.”

Mama Santagati’s Cranberry Nut Bread Tony 2 tablespoons shortening 2 eggs, well beaten 2-1/2 cups Fresh or Frozen Cranberries, coarsely chopped 1 cup chopped nuts (Walnuts or Pecans work best)
2 cups flour 1 cup sugar 1-1/2 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon baking soda 3/4 cup orange juice 1 tablespoon grated orange peel
DIRECTIONS: Preheat oven to 350ºF. Grease a 9x5-inch loaf pan.
Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan.
Bake for 55 minutes (Probably longer)or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 very moist delicious loaf.

Dairy-Free Banana Bread Gene
Chocolate Amaretto Truffles Valerie
3 or 4 ripe bananas, mashed 1/3 cup melted Earth Balance buttery spread (soy-free variety) 1 cup sugar (can easily reduce to 3/4 cup)
8 oz good quality dark chocolate, finely chopped 1/2 cup heavy cream
1 cup butter 1 teaspoon vanilla 1/2 teaspoon salt 6 tablespoons powdered sugar
Pecan Crescents Pam (from Granny’s recipe)
2 cups flour (sifted) 1 cup finely chopped pecans 1 tablespoon Amaretto finely chopped almonds
DIRECTIONS: Preheat oven to 350 degrees.
Cream butter and powdered sugar. Add vanilla while creaming. Add sifted flour with salt gradually. Add chopped nuts and mix well.
Wrap dough in wax paper and place in refrigerator to chill several hours or over night. Hand roll pieces of dough into pencil like rolls 2-1/2 to 3inches long and 1/2-inch thick. Shape into crescents. Bake on ungreased cookie sheet in 350 degree oven 10-15 minutes. While still warm dust with powdered sugar.
Sweet Potato Pie Frederica 2 cups cooked mashed sweet potatoes 1 cup milk 1 cup sugar 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon allspice
Dash salt 1 teaspoon vanilla 2 tablespoons margarine, softened 2 eggs slightly beaten 2 (9-inch) pie shells
Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve. Makes one loaf.
With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan.
DIRECTIONS: No need for a mixer for this recipe. Preheat oven to 350 degrees.
1 tablespoon Amaretto finely chopped almonds
DIRECTIONS: Heat cream to a scald over medium heat. In the meantime, place chopped chocolate in a glass bowl. Pour heated cream over chocolate and let sit for approximately 5 minutes, until chocolate is melted. Whisk until smooth and looks glossy. Stir in Amaretto and mix well. Cover with plastic wrap and place in refrigerator until truffle mixture is firm enough to form balls, 1 to 2 hours. Using a melon baller or teaspoon, scoop truffle mix and place in mounds on parchment paper lined baking sheet. Cover and place back in refrigerator for an additional 20 minutes until firm. Place chopped almonds into shallow bowl. Roll mounds of truffle into balls quickly with chilled hands. You’ll need to run hands under cold water and dry several times during this process to avoid melting chocolate. Dusting hands with corn starch or cocoa will help keep truffles from sticking. After forming each ball, place into almonds and gently roll to coat. Place on clean baking sheet. Cover and refrigerate until ready to serve. Before serving, place candy in individual candy foil cups or arrange on plate. May be refrigerated for several days or even be frozen for 1-2 months.

DIRECTIONS: Combine sweet potatoes, milk, sugar, spices, vanilla, salt and margarine. Mix well and beat in eggs. Pour into pie shells. Bake at 350 degrees for 50-60 minutes or until firm. Makes 16-20 servings.
