A Day

with Romance

As Valentine’s day once again approaches, cupid sits sharpening his arrows and our neighborhood stores fill their aisles with chocolates, perfumes, roses and other possible expressions of our affection, we ponder about what we should do for our special someone on this the most romantic of all days. A quiet picnic at Hunting Island State Park Beach is always a nice idea (it might be a little chilly but a warm hug should fix that!). You can’t miss with dinner at one of Beaufort’s quaint restaurants. Beaufort is blessed with a wonderful selection of places to dine. Check the restaurant listings in this magazine for some suggestions. The Chocolate Tree and Bitty’s Florist are excellent sources for the traditional flowers and candy. Or try your hand at some original poetry, strategically left for the object of your affection to find. Whip up a batch of heart-shaped pancakes for a surprise breakfast. Be creative! Even though we associate this day with romance, it is also a wonderful time to let all those other significant people in our lives know how much they mean to us. With just a card or a phone call, we can brighten someone’s day by reminding them that they hold a special place in our hearts. A visit to an elderly relative or friend gives more pleasure than any gift. So, whatever your plans are, may Valentine’s Day bring you and your family all of the love and happiness associated with this day. JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951.

BEAUFORT NATIONAL CEMETERY Located on Carteret Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church was damaged by forest fire in 1886 and is an excellent example of tabby construction.

SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown.

FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park. HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal). HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an

GREENE S TREET A IN’T GREEN ! ! ! By Gerhard Spieler

The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.

Union Church The Union Church, also known as, “The Free Church” was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.

Boardwalk Observation Tower At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round.

In the city of Beaufort, the streets running south to north from Bay Street are Port Republic (which once was named Port Royal) then Craven, North, King, Prince, Duke, Washington, Greene, Congress and ending with Boundary Street. One could almost say that they relate some segment of the 300 year history of the town of Beaufort. Not too many years in the recent past, many of the street maps of Beaufort printed Greene Street as Green, without the final “e.” For years, even the metal street signed were printed “Green.” The same spelling is often found in local area maps and newspapers. In The Beaufort Gazette. of August 26, 1975 in Gerhard Spieler’s weekly column “Lowcountry Comments,” was the closing item “Greene Street It is.” I quote: “Beaufort’s Department of Streets, some time last week, changed all of the street signs formerly reading Green Street to new ones reading “Greene” Street. This was in line with the recommendation of City Council, suggested by D. DeSaussure Edmunds.” The street was originally named for General Nathanael Greene, of the Continental Army, commanding all Revolutionary troops, in South Carolina (State and Continental), in the last few years of the American Revolution (1775-1783). Examination of the named street signs, from Port Republic Street to Boundary Street will show that the street names are directly connected with Beaufort’s history over the last three hundred years.

Strawberries & Chocolate

Chocolate Strawberry Trifle 18 oz. pkg. yellow cake mix 1 cup water 1/3 cup oil 3 eggs 6 serving size chocolate pudding mix (NOT instant)

3 cups milk 4 cups sliced strawberries 1 cup heavy whipping cream 1 tsp. vanilla 3 Tbsp. powdered sugar

DIRECTIONS: Heat oven to 350 degrees. Grease a 15x10-inch jelly roll pan. In large bowl, combine cake mix, water, oil and eggs and beat until moistened. Beat 2 minutes at medium speed and pour batter into prepared cake pan. Bake at 350 degrees for 20-25 minutes until toothpick inserted in center comes out clean and cake begins to come away from sides of pan. Cool completely. In heavy saucepan combine pudding mix and milk and stir with wire whisk until combined. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil. Remove from heat and cool for 30 minutes, stirring occasionally. In small bowl, combine cream, vanilla, and powdered sugar and beat until stiff peaks form. Cut cake into 1-inch pieces and place half in bottom of a large glass bowl. Pour half the cooled pudding over the cake pieces and place half of the strawberries on top. Repeat layers. Top with whipped cream. Chill for 2 hours before serving and store any leftovers, covered, in the refrigerator.

Chocolate Covered Strawberries 12 large fresh strawberries with stems

6 ounces semi-sweet or dark chocolate chips

Chocolate Strawberry Meringue 3 egg whites 1/4 teaspoon cream of tartar 1 teaspoon vanilla extract 1 cup sugar 1/2 cup finely chopped almonds, toasted

Filling 1 package (3 ounces) cream cheese, softened 1/2 cup packed brown sugar 1/2 cup baking cocoa 2 tablespoons milk 1/2 teaspoon vanilla extract 1 tablespoon kirsch 1 cup heavy whipping cream 3 cups whole fresh strawberries 2 ounces semi-sweet chocolate, chopped

DIRECTIONS: Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Line a baking sheet with parchment paper. Trace a 9-in. circle on paper. Beat the egg whites, cream of tartar and vanilla on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, until stiff glossy peaks form and sugar is dissolved. Fold in almonds. Spoon meringue evenly over circle, forming a 1-1/4-inch rim. Bake at 300째 for 45 minutes. Turn oven off; leave meringue in oven for 1 hour. Remove from the oven and cool on baking sheets. When cooled completely, remove meringues from paper and store in an airtight container at room temperature. In a large bowl, beat cream cheese and brown sugar until smooth. Beat in the cocoa, milk, vanilla and kirsch. Fold in whipped cream. Spoon into the meringue shell. Top with strawberries. In a microwave, melt chocolate. Drizzle over berries.

DIRECTIONS: Rinse and thoroughly drain strawberries. Leave the stem. Line a baking sheet with waxed paper. Put chocolate chips into a microwave safe bowl. Put bowl into microwave for 30 seconds, take out and stir. Repeat until the chocolate chips have completely melted. Hold stem and carefully dip strawberries, one at a time, into melted chocolate to coat. Allow any excess chocolate to drain back into bowl, then place strawberry on baking sheet. Cool for at least 30 minutes and serve immediately. May be stored in the refrigerator for a few days.
