A New
Beginning
The New Year is the celebration of a new beginning. Like all new beginnings it can be exciting, challenging, and frightening all at the same time. Many people use the New Year as a chance to do something different, lose weight, start exercising, and set goals for business or personal accomplishments. Some choose to take the time to learn from the old, from events or mistakes of the past year. Others see it as nothing more than the passing of time, another year older, and hopefully wiser. As time passes, the world around us changes, and we look nostalgically at the past while preparing for the future. The only thing certain in life is change and as time goes on we embrace life and the many new beginnings it brings. We celebrate as we experience growth and evolution and lots of possibilities as the world changes and lead us into the future.

JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951.
BEAUFORT NATIONAL CEMETERY Located on Carteret Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church was damaged by forest fire in 1886 and is an excellent example of tabby construction.
SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown.
FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park. HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal). HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an

CAROLINA
became Two States By Gerhard Spieler
One of the least known, but most interesting stories, is how out of one Carolina there arose two states, North Carolina and South Carolina. The story begins with a large grant of land in the New World, in 1663, by King Charles II of England. It was granted to eight of his courtier nobles, who had aided the king in his return to England and the English throne.
The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.
Union Church The Union Church, also known as, “The Free Church” was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.
Boardwalk Observation Tower At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round.
Those eight nobles were thereafter known as the Lords Proprietors who called their newly acquired land grant “Carolina,” in honor of their king. (Carolus being Latin for Charles).The first attempt to settle Carolina was near the Virginia border by an English group from Barbados. It was on the Cape Fear River and did not last long. The second attempt was the proposed 1670 settlement of Port Royal, in what is now Beaufort County, on the coast. After a few days at the Port Royal site, the settlers decided to move north some 65 miles to a location which they called CharlesTown. The move was made because local Indians said that the Port Royal site was not safe. In 1665, the original land grant was large, defined as extending from 30 degrees and 30 minutes north of Pamlico Sound, bordering on Virginia, to 29 degrees to the south, well south of Spanish St. Augustine. Some maps showed the southern limit as 31 degrees, or the San Mateo River, also claimed by Spain. In 1664, The Lords Proprietors provided for three counties: Albermarle, Clarendon and a third, unnamed. The latter was to be south of Cape Romain, all to be within the Carolina Province. About the same time, the Lords decided that the part about to be settled south and west of Cape Romain, be a distinct government from Clarendon County with a distinct Governor commissioned to govern there. The first mention of South Carolina was in a document dated 23 Dec.17l9. It was an Act, signed by Governor James Moore Jr., “For recording all Questions and Disputes concerning the Assembling and Sitting of this Present Assembly of the Settlement in South Carolina.” Later in 1733, the English King made yet another change which established the colony of Georgia south of South Carolina, between Beaufort County, S.C. and Spanish Florida.

A Healthy Start
to the New Year
Winter Citrus Salad 2 grapefruit divided into sections 2 tangerines or clementines divided into sections 2 pears peeled and sliced 4 cups trimmed watercress 3 cups trimmed arugula 3 tablespoons sliced almonds, toasted
Dressing 1 tablespoon finely chopped green onions 3 tablespoons fresh lemon juice 1-1/2 tablespoons extra virgin olive oil 2 teaspoons honey 1/2 teaspoon salt 1/2 teaspoon whole grain Dijon mustard 1/4 teaspoon freshly ground black pepper
Rice Pilaf 2 cups long grain rice 1 cup chopped celery 1/2 cup chopped onion 1 clove of garlic minced
DIRECTIONS: In skillet, saute rice, celery,onion and garlic in butter until the rice is browned. Place in a greased 2 quar t casserole. Combine all remaining ingredients; pour over rice. Cover and bake at 325F degrees for 50 minutes or until rice is done.
DIRECTIONS: Whisk together all dressing ingredients in a small bowl. Combine half of dressing mixture with grapefruit, tangerines and pear slices in a large bowl and toss gently to coat. Combine remaining dressing with watercress and arugula in a large bowl and toss gently to coat. Ar range greens on a platter and top with fr uit mixture. Sprinkle with almonds.
Oven Poached Salmon 1 pound salmon fillet, cut into 4 portions, skin removed, if desired 2 tablespoons dry white wine 1/4 teaspoon salt Freshly ground pepper, to taste
2 tablespoons finely chopped green onions 2 tablespoons capers Lemon wedges, for garnish Dijon mustard
DIRECTIONS: Preheat oven to 425째F. Coat a 9-inch glass pie pan or an 8-inch glass baking dish with cooking spray. Place salmon, skin-side (or skinned-side) down, in the prepared pan. Sprinkle with wine. Season with salt and pepper, then sprinkle with shallots and capers. Cover with foil and bake until opaque in the center and starting to flake, 15 to 25 minutes, depending on thickness. Transfer to plates. Spoon any liquid remaining in the pan over the salmon and serve with lemon wedges and Dijon mustard.
Roasted Asparagus 2 pound asparagus spears trimmed Cooking spray 1/4 teaspoon Kosher salt 1/8 teaspoon freshly ground black pepper
1/4 cup butter 4 cups low sodium chicken broth 1 teaspoon soy sauce pepper to taste
2 tablespoons butter 2 teaspoons low-sodium soy sauce 1 teaspoon balsamic vinegar Grated lemon rind
DIRECTIONS: Preheat oven to 400 degrees. Arrange asparagus in a single layer on a baking sheet and coat with cooking spray. Sprinkle with salt and pepper. Bake for 12 minutes or until tender. Melt butter in a small skillet over medium heat. Cook, stirring occasionally 3 minutes or until lightly browned. Remove from heat and stir in soy sauce and vinegar. Drizzle over asparagus, tossing to coat. Garnish with grated lemon rind.
