New Years

2013

A New Year is upon us and there is so much to look forward to. While many are preparing their traditional “New Years Resolutions”, others are at the grocery store purchasing the necessary accoutrements to whip up a batch of Hoppin’ John and Collard greens to be devoured on New Years Day in an effort to bring good luck, wealth, and prosperity to their homes and families in the up and coming year. Though I’m sure many of you will be celebrating the New Year with either neighbors, acquaintances, family and/ or friends, there will also be a host of our local favorite restaurants, bars, and taverns celebrating in their own unique styles. Beaufort will have a great deal of its citizens celebrating the beginning of a new year with spirited libations, music, and good company. With the celebration of the New Year comes a feeling of rejuvenation, a sense of motivation in starting a new slate each year. Maybe this will be the year I loose that pesky 15 lbs I've been trying to get rid of all year. Maybe this year will bring the turn around our economy needs to help bring us out of the recession. We don’t know what is to come in the future and that is the appeal of New Years. While we may not know what the future holds, the possibilities are endless and our hopes are high, and hope is one of the most precious commodities, especially in this day and age. May all your hopes come to fruition in this New Year and may you all have good health and happiness in 2013 and every year after.

HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal).

BEAUFORT NATIONAL CEMETERY Located on Boundary Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church, damaged by forest fire in 1886, is an excellent example of tabby construction. FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park.

HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an oceanfront maritime forest with showers, biking and nature trails. For camping info and lighthouse hours call (843) 838-2011. JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951. SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown.

Type of block in which a player hits another player with enough force to knock him down, with the blocked player usually landing flat on his back. LIVE ENTERTAINMENT / AUDITIONS January 9, 7pm – Auditions for “Love, Loss and What I Wore” A series of comic monologues and short group pieces – will be directed by Gail Westerfield. Roles are available for five (or more) women. All levels of acting experience (or inexperience) are encouraged to audition. Please bring a current photo and an acting resume, if you have one. The production will run March 7-9, and a portion of the proceeds will benefit CODA (Citizens Opposed to Domestic Abuse). January 10, 7pm – Auditions for Noises Off Roles are available for five male and four female actors for Michael Frayn’s award-winning farce. The production, which will be directed by Gail Westerfield, will run April 5-7 and 12-14. All levels of acting experience (or inexperience) are encouraged to audition, but you must be able to execute fairly intense physical comedy and a passable British standard accent. Two roles also require a Cockney accent. Dialect coaching will be available during the rehearsal period, but please come prepared to give it your best shot. Please bring a current photo and an acting resume, if you have one. January 5, 12pm – Les Troyens The Met Live in HD. The Met offers a rare opportunity to witness Berlioz’s vast epic, last performed at the house in 2003. Deborah Voigt, Susan Graham, Marcello Giordani, and Dwayne Croft lead the starry cast, portraying characters from the Trojan War. Met Principal Conductor Fabio Luisi marshals the large-scale musical forces. January 5, 12pm – Maria Stuarda The Met Live in HD. Metzzo-soprano Joyce DiDonato, one of the world’s most exciting singers, takes on the virtuosic bel canto role of the doomed Mary, Queen of Scots. Director David McVicar turns to the second opera of Donizetti’s Tudor trilogy, which explores regal characters at fateful moments of their lives. Elza van den Heever sings Elizabeth I, and Maurizio Benini conducts. January 27, 4pm – The Soul and Sound of Gospel Music The University of South Carolina Gospel Choir under the direction of Dr. Carl Wells will perform a historical tour of gospel music from traditional to contemporary. Scott Gibbs and the Beaufort County Mass Choir will open the show and join the Gospel Choir for a glorious finale.

Town of Port Royal The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.

Union Church The Union Church, also known as, “The Free Church� was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.

Boardwalk Observation Tower At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round.

Shepherds Pie 1 tablespoon olive oil 1 teaspoon black pepper 1 lb ground beef or 1 lb lamb 1 large onion, finely diced 3-4 large carrots, finely diced 1 cup frozen peas 3-4 sprigs fresh thyme, finely chopped 2 tablespoons flour 1 tablespoon butter

Crock Pot Beef Stew 2 tbsp. vegetable oil 3/4 cup Flour 1 teaspoon Garlic powder 1 teaspoon Paprika 2 pounds lean stew beef 1 onion, quartered 1 clove garlic, minced 2 cups beef broth or bouillon 1 tsp. salt, or to taste 1 tbsp. lemon juice

1 tsp. sugar 1 tsp. Worcestershire sauce 1/2 tsp. pepper 1/2 tsp. paprika 2 bay leaves 6 carrots, cut in pieces 6 med. potatoes, cut in pieces 2 cups frozen lima beans 1/3 cup cold water blended with 3 tablespoons flour

DIRECTIONS: Combine flour, paprika and garlic powder in a food storage bag; add stew beef and toss to coat. Brown coated beef in hot oil in a large skillet; transfer to the Crockpot. Add the remaining ingredients except for water and flour mixture. Cook on low for 8 to 10 hours, until vegetables are tender. About 30 minutes before serving, add flour mixture to the pot. Turn to high and cook until thickened.

1 cup red wine 2 tablespoons tomato paste 2 tablespoons Worcestershire sauce 1 cup chicken broth salt & pepper to taste 6 cups mashed potatoes 1 egg, beaten grated parmesan cheese (optional)

DIRECTIONS: Pre-heat oven to 400°F. Saute carrots in the olive oil until starting to get tender. Add in the onions and saute for a minute or two then add the meat. Season with black pepper and thyme. Cook until browned then drain fat. Add the butter and peas. Sprinkle with flour and stir through. Add tomato paste, wine and Worcestershire sauce. Let this reduce slightly then add the chicken broth. Reduce down until gravy thickens. Add salt & pepper to taste. Remove from heat. Grease a 9 x 13 oven proof dish with butter and add the meat mixture. Spoon the mashed potatoes over top. Brush with egg and sprinkle with Parmesan cheese. Bake for about 20 minutes or until the potato browns.

Creamy Macaroni & Cheese 8 ounces elbow macaroni 4 tablespoons butter 1/4 cup flour 1/8 teaspoon ground black pepper 1/4 teaspoon salt 1 cup milk 1-1/2 cups light cream or half-and-half

1 teaspoon Dijon mustard or your favorite gourmet mustard 3 cups shredded cheese, half Cheddar and half American, divided 1 cup soft bread crumbs tossed with 2 tablespoons melted butter

DIRECTIONS: Grease a 2-quart baking dish. Heat oven to 350°. Cook the macaroni following package directions; drain in a colander and rinse with hot water. In a medium saucepan or saucier, melt the 4 tablespoons of butter over medium heat until foamy; stir in the flour until bubbly. Add the milk and cream, along with the salt, pepper, and mustard. Cook, stirring constantly, until thickened. Stir in 2 cups of the cheese until melted. Add the drained macaroni and blend well. Pour into the prepared baking dish. Top with the remaining 1 cup of cheese and the buttered croissant crumbs. Bake for 25 to 35 minutes, until bubbly and nicely browned.
