Beach Beaufort

2013

Summer is my favorite time of year, Beach time. In my youth I would use these days to catch some waves and some rays, The Sea Islands of the Lowcountry have some of the best beaches anywhere. We have the iconic beauty of Hunting Island, which offers some of the most unspoiled beaches in the country. It’s a place where you can watch something as beautiful as the pelican perched on a tall tree stump, majestically spread its wings and fly. You can watch as it gracefully swoops down and scoops its prey of fish from the surf. Dolphin often surface close to shore and sanddollars are plentiful near the shore at low tide. Fripp Island and Harbor Island boast ocean breezes enjoyed from beautiful homes and condos. You can't beat the beautiful palmettos, white sand and warm Carolina waters. You can also enjoy hunting for sharks' teeth at the Sands beach in Port Royal. Now is the perfect time to enjoy the Lowcountry sun and sand. So bring your beach chair and umbrella and kick back and relax. But don't forget the sunscreen!

Fruit Salsa with Cinnamon Chips

Grilled Fruit Kabobs 2 tbsp vegetable oil 2 tbsp brown sugar 2 tbsp fresh lime juice 1 tsp ground cinnamon 1/4 cup fresh mint, chopped 2 apples, cored & cut into 1" pieces 2 bananas, peeled & cut into 1" pieces

2 peaches, pitted & cut into 1" pieces 4 kiwis, peeled & sliced into 1" thick sections 4 1" slices fresh pineapple, peeled, cored and cut into 1" pieces (or 1 can pineapple chunks) 16 strawberries, washed and hulled

DIRECTIONS: Preheat the grill. In a small bowl, combine oil, sugar, lime juice, cinnamon and mint; mix until sugar is dissolved. If you are using wooden skewers, soak them in water for about 10 minutes to prevent them from burning. Alternate fruit pieces and thread onto skewers. Brush kabobs with the sugar mixture and place on the grill. Grill kabobs for about 6-8 minutes, turning frequently until fruit starts to brown and is heated through.

Layered Fruit Salad Sauce: 2/3 cup fresh orange juice 1/3 cup fresh lemon juice 1/3 cup packed brown sugar 1/2 tsp grated orange peel 1/2 tsp grated lemon peel 1 tsp pure vanilla extract

Fruit: 2 cups cubed fresh pineapple 1 pint fresh strawberries, hulled & sliced 2 kiwi fruit, peeled & sliced 3 medium bananas, sliced 2 oranges, peeled & sectioned 1 pint blueberries

DIRECTIONS: In a sauce pan, bring all of the sauce ingredients to a boil, except for the vanilla. Simmer for 5 minutes. Add vanilla and allow sauce to cool. In a large, clear glass salad bowl (if you own one), arrange fruit in layers in the order listed above. Pour sauce over fruit. Cover and refrigerate several hours. Makes 10-12 servings.

Fruit Salsa: 2 kiwis, peeled & diced 2 Golden Delicious apples - peeled, cored and diced 1 fresh ripe mango, diced into 1/4" chunks 1 pound fresh strawberries 1 tablespoon white granulated sugar 1 tablespoon brown sugar 3 tablespoons fruit preserves, any flavor

Cinnamon Chips: 10 (10-inch) flour tortillas butter flavored cooking spray 2 cups white granulated sugar 2-3 teaspoons ground cinnamon

DIRECTIONS - SALAD: Cut up the fruit as noted above. In a large bowl, combine the chopped kiwi fruit, apples, mango, and strawberries, white sugar, brown sugar and fruit preserves or jam. Cover and chill in the refrigerator for 15 minutes or more. DIRECTIONS - CHIPS: Preheat oven to 350 degrees. In a small bowl, mix together 2 cups granulated sugar and 2-3 teaspoons ground cinnamon. Spray a flour tortilla evenly with butter flavored cooking spray. Cut each into 8 wedges and place them in a single layer on a large cookie or baking sheet. Sprinkle the wedges evenly with the cinnamon sugar. Spray each wedge again lightly to set the sugar in place. Bake for 8-10 minutes until lightly brown. Remove from the oven and let them cool 5 minutes in the pan and transfer them to a platter or plate to finish cooling for another 10 minutes. You can do two pans at a time. To Serve: Place the salsa in a serving bowl and center it on a large platter. Arrange the chips around the outer edge of the platter and serve.
