s the final days of spring wind down, the blooming flowers and beaming sun tell us that summer has again found its way to the Lowcountry. Pretty soon kids will be smiling again with the knowledge that they're free from school for a few months and that family vacations or camp or various other activities are now on the agenda. Summer has always been my favorite time of year and this month, of course, is the kick-off. I love the sand between my toes at the beach, driving the boat up to the sandbar with friends, or simply soaking up the sun by the nearest pool. Last month we honored our mothers for the special things they've brought into our lives, but now it's time for Dad. We celebrate these special men not just because fathers hold a sacred place in our heart and homes, but because of the very real contributions our dads made every day, through sacrifice, hard work, and giving. Fathers are tasked with building boys into men, and as serving as THE model for many women on what to demand of the young men in their lives. Men who've carried their sons and daughters for their first haircuts, who taught their little girls to fish and throw a baseball or lectured their sons on the importance of being able to cook for themselves. Men who consistently confounded expectations and did whatever the job required. Like our moms they served as both punisher and provider, but our fathers often were also teacher, coach, coconspirator, or trusted advisor. This month take a moment to shake hands with and give a great big hug to that special man who helped you so many times along the way. And we've been told to tell you no ties or socks this year. He wants the new clubs. Have a great June and a very happy Father’s Day!

Town of Port Royal
The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.

Looking for something new and fun to do with your kids at the beach? Here are some suggestions that will be enjoyed by young and old alike. 1. Tic-tac-toe. Draw a big square in the sand. Find some shells or use extra sand to make an X or an O and have a tic-tac-toe contest.

2. Hand ball. Use a soft plastic ball roughly the size of a volleyball. Draw a large square in the sand, and divide the square into two, cutting a line down the center. One person starts by serving the ball with her hand, and the ball must cross over the line and hit the other person’s square. Once the ball bounces up, the receiving person must hit the ball back to the other person’s square. Works best on packed sand.
6. Beach darts. A large circle drawn in the sand serves as the target. Draw one large circle as the outside of the target area. For extra complexity, add smaller circles inside, with varying points assigned to each ring. Each player needs his own rock, seashell or other item. Having each person choose a different type of material makes it easier to keep track. The players take turns tossing the objects toward the target to score.
3. Treasure hunt. Bury a few items in the sand and give some clues about where to find them. Let the kids be treasure hunters.
7. Beach golf. You need a set of plastic clubs and golf balls. For putting, consider going down near the wet part of the beach where the ocean waves meet the soft sand. Dig the holes and swing away.
4. Beach bowling. Bring extra plastic cups and a ball to use for bowling when you visit the beach. Have your child fill the plastic cups with wet sand to weigh them down and arrange the cups in a triangle. Mark a line in the sand for the starting point and encourage your child to roll the ball toward the “pins” without crossing the line. You may also form pins by packing moist sand into the cups, turning the cups over and carefully pulling them upward. The result will be sand in the shape of the cup.
8. Wave racing. This may be a familiar game when it comes to beach games for kids. Line up at a safe spot in the ocean where the waves start to come in and race to be the first to hit the beach. 9. Sand writing and drawing. Using play tools can be helpful in order to create pictures or writing your name.

Cucumber Sandwiches 1 8 ounce package cream cheese, softened 1/3 cup mayonnaise 1 medium cumber, peeled, seeded and finely chopped
1/4 teaspoon garlic salt 1/2 teaspoon chopped fresh dillweed 20 white bread slices 20 thin wheat bread slices
Process cream cheese and mayonnaise in a blender or food processor until smooth, stopping once to scrape down sides. Combine cream cheese mixture, cucumber, garlic salt, and dillweed. Spread cucumber mixture evenly onto white bread slices, and top with wheat bread. Cut crusts from bread, discarding crusts, and cut sandwiches into quarters. Store cucumber sandwiches in an airtight container for up to 1 hour before serving.

1/2 cup chopped fresh tomatoes 1/2 red onion, chopped 1 jalapeno pepper, seeded and chopped 2 cloves garlic, minced 1/2 teaspoon prepared horseradish 1/2 teaspoon salt 2 dashes hot pepper sauce
Pour tomato-vegetable juice cocktail into a bowl. Gently stir in shrimp, cucumbers, avocados, canned diced tomatoes, fresh tomatoes, red onion, jalapeno pepper, garlic, horseradish, salt, and hot pepper sauce until thoroughly combined. Chill in refrigerator and serve in martini glasses.
MonTh Cucumber and Black-Eyed Pea Salad 3 tablespoons extra-virgin olive oil 2 tablespoons lemon juice 2 teaspoons chopped fresh oregano, or 1 teaspoon dried Freshly ground pepper to taste 4 cups peeled and diced cucumbers
1 14-ounce can black-eyed peas, rinsed 2/3 cup diced red bell pepper 1/2 cup crumbled feta cheese 1/4 cup slivered red onion 2 tablespoons chopped black olives
Whisk oil, lemon juice, oregano and pepper in a large bowl until combined. Add cucumber, black-eyed peas, bell pepper, feta, onion and olives; toss to coat. Serve at room temperature or chilled.
Cucumber Shrimp Salad 4 large cucumbers, peeled and cut into 1/2-inch cubes 1 large mango, peeled, pitted and cut into 1/2-inch cubes 1 pound medium shrimp, cooked 3 tablespoons rice wine vinegar
3 tablespoons sugar 6 tablespoons Dijon mustard 6 tablespoons mayonnaise 3 tablespoons chopped fresh dill salt & pepper to taste fresh salad greens
Mix vinegar and sugar in small bowl until sugar completely dissolves. Add in mustard and mayonnaise. Cover and chill. Combine cucumbers, mango, shrimp and dill in large bowl. Pour dressing over; toss to lightly coat. Season with salt and pepper. Arrange salad greens on plates. Top with shrimp salad. Garnish and serve.
