A Simpler Spring As predicted, we can already see the signs of an early Spring and there is nothing more magical than Spring in the Lowcountry. There is sound of birds chirping, the sudden bloom of flowers, azaleas bright and fiercely colored with beautiful hues of pink, red, white and purple. The overwhelming fragrance of blooming flowers makes you pause and appreciate thoughts of a simpler time when life wasn’t so busy. It is sometimes hard to remember when we weren't always in a hurry to get somewhere or sometimes, like me, in a hurry going nowhere. The weather is perfect, comfortable days with a warm breeze and beautiful moonlit evenings…the kind of days that make my northern relatives envious of where I live. Spring in the Low Country is a time when you can stop, look, listen, smell and take advantage of what others often wish they had.

HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal). HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an oceanfront maritime forest with showers, biking and nature trails. For camping info and lighthouse hours call (843) 838-2011. BEAUFORT NATIONAL CEMETERY Located on Boundary Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. BOARDWALK OBSERVATION TOWER At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church, damaged by forest fire in 1886, is an excellent example of tabby construction. FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park.

JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951. SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown. UNION CHURCH The Union Church, also known as, “The Free Church” was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.

Town of Port Royal The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.

Grilled Lamb Chops 4 (1" thick) lamb chops 1/4 c. olive oil 3 tbsp. lemon juice 1/3 c. stuffed olives, chopped 1 clove garlic, crushed
DIRECTIONS: Place chops in shallow dish. Combine oil, lemon, olives and seasonings. Pour over lamb chops. Marinate in refrigerator overnight, turning once. Grill until desired degree of doneness. Heat marinade in saucepan and pour over chops before serving.
Leg of Lamb Dijon 1 boneless leg of lamb (4 to 5 pounds) 1 cup Dijon mustard 1/2 cup soy sauce 2 tablespoons olive oil 1 teaspoon fresh lemon juice
1/2 tsp. salt 1/4 tsp. oregano 1/4 tsp. basil 1/8 tsp. pepper
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary, crushed 1 teaspoon ground ginger 1 garlic clove, minced
DIRECTIONS: Cut leg of lamb horizontally from one long side to within 1 in. of opposite side. Open meat so it lies flat; trim and discard fat. Place lamb in a large resealable plastic bag. In a small bowl, whisk the mustard, soy sauce, oil, lemon and seasonings. Pour 1 cup of marinade over lamb but reserve the rest. Seal bag and turn to coat; refrigerate overnight. Cover and refrigerate remaining marinade. Remove from and discard marinade. Using longhandled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat using a drip pan. Place lamb over drip pan and grill, covered, over medium-low heat for 1-1/2 to 2-1/2 hours or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°). Let stand for 10 minutes before slicing. Warm reserved mustard sauce; serve with lamb. Yield: 9 servings.
Irish Stew 3 pounds lamb shoulder with a little fat, cubed 1/2 cup flour 3 large russet potatoes, peeled & cubed 3 large carrots, peeled and sliced 6 stalks celery, cut into 1/2" slices 2 large yellow onions, cut into large dice 3 - 4 cloves garlic, minced 1 bunch fresh rosemary
1 bunch fresh thyme 1 bunch fresh parsley 2 quarts lamb or beef stock, or as needed 12 ounces Guinness stout 1 cup pearl barley 2 teaspoons corn starch salt and freshly ground pepper, to taste
DIRECTIONS: Cook barley for 20 minutes in 3 cups of lamb or beef stock and set aside. Cut off some of the parsley leaves and chop enough to make 2 tablespoons; reserve. Cut off some parsley stems, and tie them into a bundle with a few sprigs of rosemary and thyme; reserve. Season the meat with salt and brown the meat in a little oil. Remove and reserve, sprinkling with a little flour, shaking off excess. Add the onions, garlic, carrots and celery to the pan and sauté, tossing to coat with the fat. Add the Guinness and deglaze, scraping up any caramelized meat juices. Add the potatoes and barley, return the meat to the pot. Add enough stock to barely cover, cook over medium heat until just boiling, then reduce heat to very low and simmer 2 - 3 hours, until the meat is tender, stirring occasionally. Check seasonings, add salt and pepper to taste, then remove from heat, stir in parsley and the cornstarch (mixed into 4 teaspoons water) and stir. Cook over low heat for a few more minutes to thicken. Serve with plenty of Irish brown or white soda bread.

The Sideshow in America will celebrate the work of Rebecca Davenport a Beaufort-based visual artist, who exhibited her work at the Beaufort Museum in the Arsenal in 2008. The Sideshow in America will celebrate her work in the larger context of carnival culture through an exploration of the sideshow as cultural phenomenon during the late 19th century and continuing through the 21st century at the McKissick Museum, 813 Bull Street on the University of South Carolina Columbia campus.
