Gluing on googly eyes gives the dog a cute look. - You can write messages under the ears and on the inside of your new card.

A Different Day on Bay More often than not you will see me charging on foot down Bay Street for business. Not as often do I get the opportunity to stroll and savor the waterfront atmosphere on a sweet spring day.

There happened to be different day on Bay. I met a good friend and esteemed confidant, Cera, on the waterfront for a bit to discuss life and the pursuit of peace. I couldn’t help but notice what a perfect day it was on Bay. The sky was clear blue and the water was soft spoken. There were sailboats, laughing children and people walking hand-in-hand. The sun was bright and the air as fresh as ever. Nothing could spoil that moment, not even a single thought.

I watched Lillie play at the waterfront playground and was quite amused as she climbed on the larger-than-life iron shrimp (which I thought was artistically appropriate for Beaufort). For a few moments at the Waterfront Park it was as though time had stopped. I had nowhere in particular to be, I wasn’t rushed. I didn’t have a deadline to make and the phone was not ringing. For that moment it was a different day on Bay Street. It was the true essence of the South Carolina lowcountry. The pace was slow and calm, the people friendly and courteous. There were plenty of pauses during the conversation with Cera, comfortable silences. I sat there pondering the big picture of life and love and family and friends and food. Yes, food. Somehow the thought of food interferes with most of my thoughts. I was thinking about how much I wanted another helping of red rice from Smokey Chef and how lazy I was to go get it. I was wondering if it would be easy to pull Lillie from the playground and how long it would take to get to the car walking in toddler steps. Just as there is impermanence in all things, that day on Bay came and passed. It is now filed in my memory bank as a moment in time that I cherish. I continue my work knowing that Waterfront Park will still be there for more memories to be made soon. Enjoy this beautiful season!

Hunting Island Lighthouse and State Park A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132’ tall lighthouse. Beaufort and the surrounding local communities are home to numerous species of birds and other wildlife, some which are endangered and protected by law. Bailey Museum Founded in 1862 by northern missionaries as the first school built in the south for education of blacks, the history and culture of the Gullah People, and the West African connection. Shrimp Boats With all the shrimp in this area it’s no wonder that shrimp boats can be seen at many docks along the island chain, in Beaufort and Port Royal. ‘Shrimping’ is an activity that is not only done for business, but enjoyed as a leisure activity as well. When the tide is right and the season is in, shrimp can be caught or bought by the bundles.

Marine Corps Air Station (MCAS)

During the Revolutionary War, the British landed at what is now the Laurel Bay military housing base, located right off MCAS, and battled American troops at Gray’s Hill. MCAS provides tours to visitors on request. Locally, MCAS pilots perform air shows at various local festivals and events.You may also be able fly-bys during their routine exercises. MCAS is located just north of the city on U.S. Highway 21.

Beaufort Arsenal & Museum Located at the corner of Craven and Carteret Street, the Arsenal was completed in 1798 and has housed the museum since 1939. Run by the Historic Beaufort Foundation, the museum displays Indian artifacts, art, textiles, and Civil War weapons. Call for museum hours and admission prices. (843)379-3331

Sheldon Church Ruins Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War.The ruins are located on Sheldon Rd. State Hwy 21, fifteen miles from Beaufort.

Parris Island Recruit Depot Museum An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. Beaufort National Cemetery Beaufort National Cemetery is listed on the National Register of Historic Places. The cemetery was established by Abraham Lincoln and contains the graves of 7,500 Civil War soldiers including 4,019 unknown Union soldiers and 117 Confederate soldiers. 1601 Boundary Street, Beaufort. Open daily from 8:00am to sunset for visitors.

Beaufort's Point and Langley Square By Gerhard Spieler

“The Point” (often erroneously called “The Old Point”) is that part of downtown Beaufort located east of New Street and between Bayard Street to the North and Bay Street to the South. In the midst of The Point, as that area is generally known, is a grassy square, bounded North and South by Laurens and King Streets, East and West by Short and Pinckney Streets. Surrounding the grassy square are some of downtown Beaufort’s most prominent antebellum mansions, such as the Paul Hamilton House, the Edward Means, the Berners Barnwell Sams and some lesser known, but just as important, such as the George Mosse Stoney House. In 1967, the two property conveyances, Elizabeth Waterhouse deeded the western half of “Block 6... also known as Langley Square,” to her daughter Elinor Waterhouse Hoyler. The eastern half of The Square, Mrs. Waterhouse deeded to Marguerite Waterhouse Herendeen. Back in 1984, I wrote in an article for The Beaufort Gazette: “For many years, there was an unwritten agreement to maintain the open, grassy square, with its several large, old live oak trees as a play ground for the children of the neighborhood. Now, many Beaufort old-timers tell tales of their childhood there.

Until recently, the city cooperated by maintaining the grounds of the square.” The Point had been taken into Beaufort town as far back as 1809. During the War Between the States, the U.S. Government acquired The Point at a tax sale “for $40 for an unpaid direct tax” amounting to $26.69. The U.S. Direct Tax Commissioners had appraised the property at $2,000. On Feb. 6, 1866, The Square was sold at public auction to Merit A. Sizer, a northern Union soldier, who sold it the same day, to Reuben C. Holmes, “of the town of Beaufort,” and Franklin Holmes, of the City and State of New York, for $450. In 1870, The Square was acquired by L.S. Langley, then a Beaufort County Auditor. In 2006, I received a letter from Elise Gauyette, of Vermont. “The purpose of my visit (To Penn Center) is to discuss London S. Langley... his life in Vermont and after the war, in Beaufort, and his 1882 burial in Beaufort’s U.S. National Cemetery.” But that is another story.

Easy Grilled Wahoo Wahoo is a dence fish and stands up to the open flame of a bar-be-que grill very well. Marinate wahoo in mojo for 10-15 minutes and then cook it on the grill. As an option you can baste it with a lemon/paprika/mayo mixture as it grills, or additional mojo.

The benefits of honey are numerous. Honey promotes the healing of cuts and burns and is a remedy for sore throats.

Sweet Honey Drumsticks 1/4 cup honey 1 tablespoon molasses 2 tablespoons soy sauce (optional) 1 tablespoon cider vinegar 8 chicken drumsticks (about 2-1/4 pounds total)

DIRECTIONS: In a saucepan combine honey, soy sauce, vinegar, and molasses. Cook over medium-low heat for 5 minutes, or till bubbly, stirring occasionally. Meanwhile, preheat broiler. Remove skin from chicken, rinse and pat dry. Place on a rack in an unheated broiler pan. Broil 5-6 inches from the heat for about 15 minutes, or till chicken is light brown. Turn chicken and broil for 10-15 minutes more, or till chicken is tender and no pink remains. Brush chicken with glaze for last 10 minutes of broiling. Spoon any remaining glaze over drumsticks then serve.

Honey Carrot Slaw 2 tablespoons canola oil 2 tablespoons lemon juice 1 tablespoon honey 1 small shallot, minced 1/2 teaspoon salt

1/4 teaspoon freshly ground pepper 2 cups shredded carrots 1/4 cup golden raisins 1/4 cup chopped walnuts, toasted

Marinated & Grilled Cobia 3 lbs cobia 1/3 cup olive oil 1/3 cup lemon juice 1-1/2 teaspoons dry mustard

1 teaspoon salt 1 clove garlic, minced 1/4 teaspoon pepper

DIRECTIONS: Cut fillets into serving size pieces, and place in a bowl. Combine olive oil and lemon juice. Add all remaining spices to oil and lemon juice, and mix. Pour mixture over fish steaks. Marinate for 5 minutes. Remove from marinade and barbecue for about 8 minutes over coals (Keep checking, do not overcook!) Turn as necessary, basting several times with marinade. Serve hot off the grill.

DIRECTIONS: Whisk oil, lemon juice, honey, shallot, salt and pepper in a large bowl. Add carrots, celery root, raisins and walnuts; toss to combine.

BEAUTY TRICK: Honey may be good for your skin. It has the ability to attract water and is safe for sensitive skin. You can use it as a moisturizing mask for your face and hair. To use it as a conditioner, mix the honey with olive oil. Be sure to wash your hair thoroughly before you go outside.

WAHOO is one of the fastest fish in these waters with top speeds of 50 miles per hour! It is listed as one of the fastest fish in the world. A huge Wahoo can spool a 50W Penn reel with 80 pound monofilament line in less than 1.5 minutes. A Wahoo strike is the most awesome thing in saltwater fishing. We recently had our best two days of Wahoo fishing ever! I call it “Wahoo Madness”. We found a huge school of feeding Wahoo and they were ferocious. At first light, they cleaned off my Tuna rigs with 300 pound monofilament and 200 pound fluorocarbon lines in less than 5 minutes. We immediately switched to all wire and we were reeling in doubles in no time! No one on board got to rest or take a break for over 5 hours. When the action was over we had 7 large Wahoo in the box. Two were huge 55 and 57 pounders. The average fish harters p Gun C was in the 40 pound tesy of To tch cour ahoo ca W range. We finally got a drink of water and a sandwich before we headed home. Everyone on board caught the largest Wahoo of their life. Two caught the all time biggest fish of their life that day. We all decided that was our best day of fishing in Beaufort, South Carolina. The next day we had a triple with just three people on board! Everyone was fighting a 40 pound class Wahoo at the same time. Mates Mills and Taylor did a great job and we got all three of them in the boat! The bite only lasted for 5 minutes. We finally picked up another huge one just before we decided to call it a day and head back to the hill! Taylor Thomas caught a huge 56.74 pounder and edged me out by .2 pounds in the Beaufort Sportfishing Club’s year round tournament. We currently have 9 first

place categories! The Hilton Head Wahoo Shootout is coming up in two weeks and we are hoping for good weather and the hot fishing to continue. The water temperatures are rising fast now and by the time this hits the stands the Cobia run will be in full swing! Beaufort Cobia fishing is some of the best in the country and it also ranks as one of the best places for Cobia fishing in the world. They will start in offshore waters in mid April and will peak in the Broad River in mid to late May. Water temperatures of 68 degrees will bring them in and I believe that they spawn around 69 degrees. Beaufort has the State Record fish and it keeps getting beaten in Beaufort waters. I believe two or three State Record fish were caught last year. They head back out to sea and can be caught over structure throughout June and July. Wahoo is my favorite fish to eat! I love it grilled over a charcoal fire and then I make a grilled Wahoo salad for later. You can’t beat it. Ask your favorite restaurant for grilled Wahoo. Saltus and Breakwater currently have fresh local Wahoo. Cobia is a great tasting fish as well. I think grilled is the best tasting and blackened is good, too. Get your boat ready or book a Charter now! You don’t want to miss this awesome action. Topgun Charters will be fishing for Tuna, Wahoo, Mahi and Cobia during May out of the Downtown Marina! Deer are known for nibbling on plants, whether in the wild or in your garden. That’s right. If deer are hungry enough, they will not hesitate to come into your yard and have a bite. Fortunately, there are some steps you can take to make your lawn and garden less tantalizing. While hunger will drive deer to eat almost anything, there are some plants they will shy away from. Anything overly aromatic, bitter, coarse, fuzzy, poisonous or spiny will not appeal to them. Study the plants in your lawn and garden and consider replacing some of the ones that deer find extra tasty with ones they don’t. Common favorites among deer include azalea bushes, balsam and Fraser firs, berry plants, dogwoods, fruit trees, Norway maples, redbuds and yews. Deer also like to nibble on flowers, in particular chrysanthemums, clematis, daylilies, hyacinths, roses and tulips. They eat vegetables as well, most often beans, broccoli, lettuce, peas and sweet corn. Since you can’t replace every plant in your lawn and garden, you will probably want to incorporate some deterrents. Protect your individual plants by coating them with hot pepper or soap spray or encircling them with unappetizing substances, like blood meal, fabric softener, garlic, hair, mothballs, rotten fish heads, sewage or thorny branches. Fence in your garden on all sides, making sure the fence extends partly underground and stands eight feet tall. That way, the deer won’t be able to squeeze under it or jump over it. Deer detest bright light and loud noise, so don’t be afraid to set up floodlights or get out the firecrackers, noisemakers or whistles whenever you catch sight of a deer in your yard. You might also use electric wires or sprinklers to make deer turn the other way. Even with the best of efforts, you may still find some deer nibbling away in your lawn and garden. To distract them, consider planting some of their favorites in the far corner of your lawn and garden. They just might feast there and leave your prized plants alone.
