Celebrating

May is a month full of joy and celebrations for everyone. Cinco De Mayo (May 5th) originating in Mexican American communities during the first years of the American Civil War, the holiday that commemorates Mexican American heritage and pride is the anniversary of the Mexicos Victory at the Battle of Puebla. It is not Mexicos Independence Day - contrary to popular belief Mother's Day is the day that we praise our mothers for giving us the gifts of life and love. Children cook their mothers breakfast in bed or at least attempt to, and familys take their Mothers out to dinner. There are many fine restaurants in our dining section that Mom will enjoy. She might also enjoy some candy from The Chocolate Tree or flowers from Bitty’s Florist

May is also a time for college and high school graduations. Many a high school senior or college senior march donning cap and gown, earning their Diploma or Degree and prepare to start their lives right around the end of this month, joining what adults like to call the “Real World”. Beginning the new chapter of their lives is very much like the rebirth that we feel in Spring every year. May Day (May 1st,) has been hailed as the day to celebrate the coming of spring. Originally it was timed on May 1st to coincide with the Festival of Flora, celebrating the first floral blooms. This was symbolic of rebirth, renewal, a fresh harvest, and fertility. In ancient times, May 1st was the first day of Summer. Summer was what we now know as Spring. A very ancient holiday, May Day is still celebrated in Europe today and in some places in the United States. Speaking of birth May is a very special month for me because it is the month that I, myself, was born. So as I celebrate the anniversary of my 39th birthday, I wish you many happy celebrations in May, for whatever you celebrate!

HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal). HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an oceanfront maritime forest with showers, biking and nature trails. For camping info and lighthouse hours call (843) 838-2011. BEAUFORT NATIONAL CEMETERY Located on Boundary Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. BOARDWALK OBSERVATION TOWER At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church, damaged by forest fire in 1886, is an excellent example of tabby construction. FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park.

JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951. SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown. UNION CHURCH The Union Church, also known as, “The Free Church” was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.

Grits and Greens Casserole

Buttermilk Cornbread 1 cup yellow cornmeal 1 cup all-purpose flour 3 tablespoons granulated sugar 1-1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt

2 large eggs 1-1/4 cups buttermilk 4 tablespoons (1/2 stick) unsalted butter, melted and cooled, more for greasing the pan

DIRECTIONS: Preheat oven to 425° F. Generously butter a 9-inch square pan. Place the cornmeal, flour, sugar, baking powder, baking soda and salt in a medium bowl; whisk together. In a small bowl, whisk together the eggs, buttermilk and butter. Add the buttermilk mixture to the dry mixture; stir just until combined. Heat the pan in the oven for 2 or 3 minutes, or until it is hot, making sure the butter does not burn. Add the batter, spreading evenly. Bake in the middle of the oven for about 15 minutes, or until the top is pale golden and the sides begin to pull away from the edges of the pan. If in doubt, use a cake tester inserted in the middle. Remove from the oven and cool for 5 minutes, then turn it out onto a rack and cool a little longer. Serve warm or room temperature.

Frogmore Stew 1/4 cup of Old Bay Seasoning seasoning 2 lemons quartered 2 pounds kielbasa sausage, cut into 2-inch pieces

3 pounds of small red potatoes 2 onions, peeled and cut in wedges 6 ears of fresh corn, halved 3 pounds large shrimp, unpeeled Cocktail sauce

DIRECTIONS: Bring LARGE (16 quart pot) of salted water to a boil. Add seasoning, 1 lemon, onions, corn, pototoes and sausage. Let pot return to a oil, then cook about 20 to 25 minutes. Add shrimp and boil about 5 minutes. Serve with cocktail sauce for shrimp and 1 quarter lemon. Serves 4-6.

4 slices bacon, chopped (optional) 2 teaspoons extra-virgin olive oil 1 small onion, diced 4 cloves garlic, minced 2 cups reduced-sodium chicken broth or vegetable broth, divided 1/4 teaspoon salt 16 cups chopped collard greens or kale, stems removed (about 1 large bunch, 1 1/2-2 pounds)

2 cups water, plus more as needed 1 cup grits (not instant) 3/4 cup shredded extra-sharp Cheddar cheese, divided 1/4 cup prepared salsa 1 large egg, lightly beaten

DIRECTIONS: Preheat oven to 400°F. Coat an 8-inch-square baking dish with cooking spray. Place bacon (if using) in a large Dutch oven. Cook over medium heat, stirring often, until crispy, 4 to 6 minutes. Remove with a slotted spoon to a paper towel-lined plate to drain. Pour off the bacon fat. Return the pot to mediumlow heat; add oil, onion and garlic and cook, stirring often, until fragrant and starting to brown in spots. Add 1 cup broth and salt; bring to a boil over high heat. Add greens; stir until wilted down to about one-third the volume and bright green, 1 to 2 minutes. Cover, reduce heat and simmer, stirring occasionally, until tender, 18 to 20 minutes. Add water, 1/4 cup at a time, if the pan seems dry. In a separate sauce pan, bring 2 cups water and the remaining 1 cup broth to a boil Add grits in a steady stream, whisking constantly. Bring to a simmer, whisking constantly. Reduce heat to medium-low and cook, whisking often, until thick, about 5 minutes. Combine 1/2 cup cheese, salsa and egg in a small bowl. Remove the grits from the heat and quickly stir in the cheese mixture until combined. Quickly spread about half the grits in the prepared baking dish. Top with greens, spreading evenly. Spread the remaining grits over the greens. Sprinkle with the remaining 1/4 cup cheese and the reserved bacon (if using). Bake the casserole until hot and bubbling, about 20 minutes. Let stand for about 10 minutes before serving.
