Thanksgiving The holidays are here and Thanksgiving is finally upon us. I’ve always loved this time of year. The hustle and bustle of the season, searching for the perfect turkey that’s just big enough to serve the family and of course the popping crisp sounds of the turkey when I first drop it in the deep fat fryer. Yes there is nothing better on Thanksgiving Day than a fried turkey, succulent and juicy, warm and buttery, the taste is enough to send your senses reeling. Thanksgiving isn’t just about fried turkey though. Thanksgiving for many of us is about more than the food, it’s about spending time with the people you love. It’s about enjoying the best times with your family and friends. It isn’t about what you make for dinner that makes Thanksgiving important. It’s the people you spend it with that matters. I could spend Thanksgiving anywhere in the world but I would rather spend it here in Beaufort, the Lowcountry, with the people who mean the most to me. That’s what Thanksgiving is really all about... being thankful for what we have, particularly our family and friends.

6 medium sweet potatoes 1/2 teaspoon salt 2 tablespoons butter 1 egg, beaten 1/2 cup raisins 3 tablespoons grated orange zest 1/4 cup whipping cream or half & half
