Halloween
in the Lowcountry
Halloween is finally upon us. Time for little ones to pick out their costumes and empty their pillowcases and get ready to haul pounds of candy around the neighborhood. This is a great time of year, especially for children. It’s a time that reminds children of enchantment, imagination, and magic, things adults have long since forgotten. What better place to experience these ideas than Beaufort, a place where ghost stories are plentiful and some places seem possessed by something other-worldly. Even in the still, yet brisk fall evenings where a little chill is normal there seems to be an extra something in the air as Halloween approaches. Walking along in the dark autumn nights and feeling the crunch of the fallen dried brown leaves under your feet, each step you take feels a little more ominous this time of year for young and old alike. The Ghost stories of the area add a little more trepidation to what may ordinarily seem like nothing. One of the ghost stories of Beaufort County is the story of the Ghostly Lovers who walk the beach of Fripp Island. As the story goes a beautiful young girl from Charleston was kidnapped by Blackbeard himself and brought to his hideout on Fripp Island. When she refused his advances he had the young man she was betrothed to killed and had his severed hand brought to the young girl as evidence that her true love was gone forever. The fair maiden was so distraught she ran to the shore, threw herself into the water and drowned. Now her ghost and that of her lover can be seen on some nights walking arm in arm on a romantic stroll along Fripp Island’s shores. I don’t expect you’ll see any ghosts this Halloween, but whether you are taking the little ones trick-or-treating or going to a costume party, make this a safe and Happy Halloween!!

JOHN MARK VERDIER HOUSE Within the town of Beaufort are 90 historic homes and buildings. The earliest of these dates back to the early 1700’s. Beaufort’s only historic home open the the public is the John Mark Verdier House located in Historic Downtown at 801 Bay Street and is an excellent example of a federal-style house. Open Mon-Sat for guided tours. For tickets call (843) 379-6335. PARRIS ISLAND RECRUIT DEPOT MUSEUM An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. For tours call (843) 228-2951.
BEAUFORT NATIONAL CEMETERY Located on Boundary Street, it was one of the first cemeteries established during the Civil War, it is one of the few that contains both Confederate and Union dead. CHAPEL OF EASE Located on Lands End Road, St. Helena Island, this tiny church was built in 1748 for the convenience of plantation owners to attend church. The church, damaged by forest fire in 1886, is an excellent example of tabby construction.
SHELDON CHURCH RUINS Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War. The ruins are located on Sheldon Road. State Hwy 21, fifteen miles from Beaufort. ST. HELENA’S EPISCOPAL CHURCH (circa 1724) Traces it’s origin to the founding of St. Helena’s Parish in 1712 and has classic colonial interior. Of particular interest is the graveyard, whose tombstones served as operating tables during the Civil War. Located at 501 Church Street, Historic Downtown.
FORT FREMONT HISTORICAL PARK A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park. HENRY C. CHAMBERS WATERFRONT PARK The Waterfront Park includes a playground for children, swinging benches, a marina, and waterfront stroll. Craft and Farmers Market open Wednesdays (seasonal). HUNTING ISLANDLIGHTHOUSE & STATE PARK A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132' tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Open year round, 5,000 acres offer 200 campsites in an oceanfront

Town of Port Royal The town takes pride in its unique natural environment and its accessibility to that environment through its network of walking trails, community beach, boardwalk, and observation tower. Since Columbus discovered America in 1492, seven flags have flown over what is now the Town of Port Royal.
Union Church The Union Church, also known as, “The Free Church� was the first church to be built in the historic town of Port Royal. The land was donated by David F. Appleton and in 1878 cost around $1000 to build. It is currently eligible for recognition in the National Register of Historic Places and is being renovated jointly by both the Town of Port Royal and the Historic Port Royal Foundation. These two groups plan to use the renovated building as a cultural and community center.
Boardwalk Observation Tower At Port Royal Sands Beach you will find a waterside boardwalk leading to an observation tower. This tower provides fantastic views of Port Royal, Parris Island and the surrounding area. For tourists, this is a must see, is free to access and open year-round.

Caribbean Tropical Fruit Salad 2 tablespoons fresh coconut milk 2 tablespoons malt vinegar 1 tablespoon dark rum 1 tablespoon fresh lime juice 1/4 teaspoon seeded and minced fresh jalapeno chile 3 tablespoons peanut oil 1 medium ripe papaya, peeled, seeded, and cut into large chunks (about 2 lbs)
Cuban Black Bean Dip 1 cup dried black beans, (or 16 oz. can of black beans) 2 tbl chopped red onion 2 tbl balsamic vinegar
1 tbl fresh orange juice 1 med clove of garlic, crushed salt and pepper to taste
DIRECTIONS: In a 3-quart stainless steel bowl, whisk together the coconut milk, malt vinegar, rum, lime juice, and jalapenos. Continue to whisk the mixture while pouring in a slow, steady stream of the peanut oil. Add the papaya, mango, banana, and kiwi to the dressing, and gently toss. Portion 1 cup of dressed fruits per serving, and garnish with the cashews, coconut, and cilantro. Serve immediately. The dressed tropical fruits may be stored covered in the refrigerator for 2–3 days. Hold the cashews, coconut, and cilantro separately, and garnish just before serving.
DIRECTIONS: Serve this low-fat pate with toasted pita triangles and sliced veggies. The dip can be stored in the refrigerator for a couple of days. Soak the Beans in water overnight; drain, and cook in 4 cups of water for about 1-1/2 hours or until tender. Drain again. In a blender or food processor, combine Beans, 1 Tbsp. chopped onions, vinegar, O.J., and garlic; blend until smooth. Season with salt and pepper, mix in remaining onions, and place in serving bowl.
Spicy Grilled Tuna 2 tbsp freshly grated root ginger 1-1/2 teasp ground cumin 1-1/2 teasp ground coriander 1/2 teasp cayenne pepper 2 tbsp olive oil
1 medium ripe mango, pitted, peeled, and cut into large chunks 1 medium ripe banana, peeled and sliced 1/4-inch thick 1 kiwi, peeled and sliced 1/4-inch thick 1/2 cup toasted cashews 2 tablespoons grated fresh coconut 1/2 teaspoon chopped fresh cilantro
1 tbsp lime juice salt 4 tuna fillets or steaks, (about 2.5cm/1-inch thick)
DIRECTIONS: Preheat the grill to hot and line the grill pan with aluminium foil. Place the cumin, coriander, cayenne oil, lime, ginger and salt in a shallow dish and mix well. Add the fish and turn to coat on all sides then grill for 3-5 minutes on each side or to your liking. Serve immediately. Serves 4
