SUMMERS IN THE SOUTHEAST ARE A THING OF BEAUTY. Warm breezes and
temperate weather lure people from miles around to explore Hunting Island, St. Helena and downtown Beaufort. The sunshine and cooling rainstorms create an environment of tranquility. Unfortunately, warm tropical oceans, moisture and light winds are the exact ingredients to make a hurricane, and I am not referring to the cocktail. As we all know the Atlantic Ocean is ripe with tropical storms and hurricanes during the summertime, specifically from June 1st through November 30th. This long season doesn’t mean that we should board up our houses and head west. Preparedness is key for surviving this hurricane season. In order to be prepared, we need to be informed. Here are the basics: WHAT IS A HURRICANE? A hurricane is a type of tropical cyclone, which is basically a low-pressure system that forms in the tropics. This cyclone is accompanied by thunderstorms and in the Northern Hemisphere, a counterclockwise circulation of winds near the earth’s surface. These cyclones are categorized as follows: Tropical Depression – an organized system of clouds with defined surface and maximum sustained winds of 38 mph. Tropical Storm – An organized system of strong storms with a defined surface and maximum sustained wind of 39-73 mph. Hurricane – An intense tropical weather system of strong thunderstorms with a well
defined surface circulation and maximum sustained winds of 74 mph BASIC HURRICANE SAFETY ACTIONS Know if you live in an evacuation area. Know your home’s vulnerability to storm surge, flooding and wind.
At the beginning of hurricane season (June 1st) check the supplies for your disaster supply kit. If you don’t have one, get one. This should include flashlights, a battery operated radio, first aid supplies and even a generator. Also, make sure you have plenty of bottled water.
Discuss hurricane preparation with family and neighbors. Have an evacuation plan already developed to lessen stress during an evacuation.
If a storm threatens, heed the advice of local authorities. Evacuate if ordered!!

You will be provided with specific information on evacuation plans in your area, related weather information and guidelines. STATISTICS
Each year an average of ten tropical storms develop over the Atlantic Ocean, Caribbean Sea and Gulf of Mexico.
In an average three-year period, roughly five hurricanes strike the US coastline. Of these, two are typically “major” hurricanes. So Texas’s devastating damage this past year would be considered an atypical situation.

by Capt Tom Thomas Thursday the 29th of July was one of the best fishing days of the year and one of the best near shore trolling days I’ve had in Beaufort. Normally, you would have to go out 60 miles to catch fish like we did that day. We were less than 30 miles out. The heat wave was on again and there were no good fishing reports that week. Mate Mills and I wanted to have some fun so we tried dawn fast trolling near shore over some good bottom areas and open water between wrecks. We met at the boat at 0430 for an o’dark 30 launch. The plan was to be fishing at sunrise before the surface water warmed up and to catch the early bite; so that, we could RTB before the 117 degree heat index got into full swing! Our plan worked and we were back at the dock by 1130! It even worked better than expected! The sun had just broken the horizon and Mills saw some flying fish in front of our wake. Then, I told Mills that I just saw a huge Sail jump a half mile infront of the boat. I pulled back the throttles and hurried to get some lines out. We were fast trolling ballyhoo in around 90 feet of water The water temp was 79.5 degrees. I was setting the drag on my second line out when our first strike screamed off the reel. It was on my mono out rigger line with a skirted ballyhoo. It smoked off about two hundred yards of line and then slowed down turning out to my left. I figured it was a good King and was fighting the fish when it jerked and then he stopped fighting as hard. Mills yelled out that a shark probably hit it. It came up to the surface and was not really doing much. It turned out to be a 20 pound King that had his tail bitten off by a Barracuda. I quickly rebaited that line and got the other two lines out. I was running the spread and Mate Mills was driving the boat. If a big fish hit, I would have to get lines in and fight the fish at the same time. So, I only had four lines out. Two 60 pound mono rigs on out riggers for Sails, one 275 steel braided leader for Wahoo and one steel wire for Kings. It turned out that the 275 steel leader caught most of the good fish. We trolled in that area for about 20 minutes and headed to cover some bottom numbers. Nothing hit and we seemed to be off of the flying fish. I told Mills to turn south and lets find those flying fish again. We were trolling at 7 miles per hour and covering a lot of ground. We were about 2 miles from the bottom area and the flying fish started busting the water. A fish was chasing a few ballyhoo, too! My King flat line popped and spooled off about 30 yards. I looked up to see the fish jump. I expected a King so I got a line in and started
fighting the fish. It jumped 3-4 times before I realized that it was a nice Mahi Mahi. Yelling out “Mahi” as he took another lung and 40 yards of line out. It was a 15 pound Mahi that fought hard for it’s size. I rebaited that line and we didn’t get a good bite for about 2 miles. I heard a short bite that just barely pulled a drag. I checked the lines and every bait was gone or torn up by Mahi. I knew that a good school of Mahi was now behind us a mile or two. I was wanting to turn back and Mills said lets just troll another mile to our next target. Mills said, get me a coke and he drove on. Seconds later, the Wahoo rig lunged down and the rod bent over. It wasn’t screaming off the reel so I thought a Cuda hit the bait. About that time I hear Mills yelling “Sail on!” and he could barely talk. He started choking and the Sail realized that he was hooked. He took off a quick 300 yards or so and jumped in a beautiful ballet of tail dances in a slight left turn. I had to get two other lines in and I put on a fighting belt. I was all set and I slowed him down before he spooled us and made us chase him. Then, he aimed right at us full speed! My high speed 3/0 Shimano reel could not get in the line fast enough as I yelled for power and then more power. The Sail was about to slack me as I was thrown into the back seat from our acceleration. That kept a tight line and the fish began to slow down and pull resistance again. I told Mills that did it and I tried to get him in quickly. I pulled him up along the side for a quick picture and released him unharmed back into the water. We “high fived” and Mills then told me that he backwashed his coke yelling Sail! We both laughed and called over to Captain Wally off our port bow. Mills told them about our catch and we proceeded to try for a quick Cobia. I didn’t see any Cobia and we marked fish at 50 feet. I dropped down to cooler water around 50-60 feet and immediately hooked what I thought was an Amber Jack. He tugged down twice and then he started coming up. I yelled it had to be a Cobia and not long after that he came to the surface. I thought he was small because he came up without much of a fight. Then, he saw the boat and the fight was on! He fought for about 15 minutes and I was soaked from the fight and the heat. He turned out to be a nice 40 pound Cobia. Mills gaffed him and I said it was a great day of fishing. It was a near shore slam for me. We caught a beautiful Sail, 15 pound Mahi, 20 pound King and a 40 pound Cobia in less than two hours. I tried to hook some nice fish for Mills but the Cudas took over as the water started to warmed up. We caught 3 Barracudas and two Little Tunny before we called it a day. We headed back to my new slip at the Port Royal Landing Marina. What a great day to start off my new business location on “Charter Row”. The PRLM is a full service Marina with a ship’s store. They have frozen and live bait, fishing tackle, boat supplies, ice, drinks, gas and water. The Back Porch Grill is at the Marina for food and drinks, too! Come check it out. Passion is as Passion Does Each day when I wake, a list of potential accomplishments start running through my mind. At the same time, the clocks ticking urges me to pull myself out of bed and pour myself into a skirt. Whether it be for passion or for luck, I have been able to meet many of the goals I’ve set for myself in my short thirty-something years. About twenty years ago my family packed us up and moved a few cities away. I started a new school and made new friends. I never forgot about the friends I left at St. Raymonds and found a way to stay in touch with my best friend Nissette. We remained in contact primarily through letter writing. Rather than pull out a greeting card though, I began creating tiny, handmade magazines for her. We would send each other crafty colored pages with updates about our friends, school and life in general. I enjoyed putting together things like that. More so, I enjoyed making handmade gifts for friends.

Little did I know that my passion to create scrapbook style gifts would lead me to where I am today. I mean, I always had a passion for writing and being creative, but never thought I would manage a purse-size publication that resembles my crafts of years ago. I can honestly admit that even during my tightest deadlines, the job I do with Sea Island Scene never feels like work. I am one of the lucky ones. I had dreams that I followed and goals that I met with great ease. There were plenty of hiccups along the way, miscellaneous mistakes. All-in-all though, I cannot complain about where I am today. Complaining wouldn’t help anyway. It seems that lately I have been hearing a lot of compliments about Sea Island Scene. It is those compliments that fuel the fire of passion in me. When it comes down to it, my main priority in the work I do is to please you. Knowing that you like what you see and read is all I need. It keeps me fueled, it keeps me passionate, it keeps me going. Fort Fremont Historical Park A unique, unspoiled example of a Spanish American War Era fortification in a beautiful natural setting with many diverse habitats. Located on St. Helena Island, the Fort Fremont 15 acre site was purchased for 5.4 million dollars by Beaufort County through the Beaufort County Rural and Critical Land Program and the Trust for Public Lands as a historic site and public park.

Hunting Island Lighthouse and State Park A breathtaking view of the Atlantic Ocean and surrounding islands can be viewed from Hunting Island’s 132’ tall lighthouse. The state park beach is four miles long and home to over 125 species of birds. Lowcountry Wildlife Beaufort and the surrounding local communities are home to numerous species of birds and other wildlife, some which are endangered and protected by law. Egrets can be found in numbers perched in trees along the water. Deer roam free on most islands; raccoons scavenge for food nightly and gators guard golf course ponds.

Penn Center/ York W. Bailey Museum Founded in 1862 by northern missionaries as the first school built in the south for education of blacks, the history and culture of the Gullah People, and the West African connection. Shrimp Boats With all the shrimp in this area it’s no wonder that shrimp boats can be seen at many docks along the island chain, in Beaufort and Port Royal. ‘Shrimping’ is an activity that is not only done for business, but enjoyed as a leisure activity as well. When the tide is right and the season is in, shrimp can be caught or bought by the bundles.

Beaufort's rivers, creeks, tributaries and of course the Atlantic ocean make kayaking and canoeing a wonderful experience. There are few experiences that can compare to the tranquility of being in the middle of nature paddling in the midst of a school of dolphin that are as equally curious about you as you are about them. The natural beauty that encompasses much of Beaufort county is hard, if not impossible, to discover in other places. One can discover places by kayaking or canoeing that people that have lived here eighty years or more have never seen! Power boats are limited to larger bodies of water, but with a kayak or canoe you can go into places with only a few inches of water. Imagine paddling out with a friend or group of friends and landing on an island and there is not another person except your party to be seen. If bird watching is a hobby, then you should try it by paddling up or down one of Beaufort’s many rivers or creeks and see the birds from a whole new perspective. As with any outdoor activity, there are certain elements of danger. If you are currently thinking about getting into kayaking or canoeing or recently acquired a kayak or canoe but do not have any experience, there is professional help locally. Lessons about hull designs, terminology, safety, tides, technique and proper equipment are very important and will certainly enhance your experience on the water.

Marine Corps Air Station (MCAS) During the Revolutionary War, the British landed at what is now the Laurel Bay military housing base, located right off MCAS, and battled American troops at Gray’s Hill. MCAS provides tours to visitors on request. Locally, MCAS pilots perform air shows at various local festivals and events.You may also be able fly-bys during their routine exercises. MCAS is located just north of the city on U.S. Highway 21.
Beaufort Arsenal & Museum Located at the corner of Craven and Carteret Street, the Arsenal was completed in 1798 and has housed the museum since 1939. Run by the Historic Beaufort Foundation, the museum displays Indian artifacts, art, textiles, and Civil War weapons. Call for museum hours and admission prices. (843)379-3331
Sheldon Church Ruins Built in 1746, this church was burned during the Revolutionary War, rebuilt, and again burned during the Civil War.The ruins are located on Sheldon Rd. State Hwy 21, fifteen miles from Beaufort.
Parris Island Recruit Depot Museum An all-encompassing view of the history of Parris Island. Exhibits range from the attempted colonization by the Spanish in 1521 to photographic depictions of the recruit training process. Free admission, open to the public daily 10-4pm. Beaufort National Cemetery Beaufort National Cemetery is listed on the National Register of Historic Places. Constructed in 1898, with its massive concrete gun emplacements and underground passages now overgrown with foliage, the ruins of Fort Fremont are a unique, unspoiled example of a Spanish American War Era fortification. Fort Fremont is representative of coastal defenses built during this period, and was designed with state of the art weapons systems, including the Disappearing breach loaded rifle cannon. The fortification played a vital role in the mission of Port Royal Sound (one of the largest natural deepwater horbors on the Atlantic Coast), which was to protect the strategic dry dock and cooling station of the U.S. Naval Station in Port Royal, critical to the U.S. Atlantic Naval Fleet. Twenty-two naval ships visited the station, including the battleships USS Maine, USS Massachusetts, USS Texas, and the USS Indiana. The USS Maine made one of its last stops for provisions in Port Royal before leaving for its final voyage to Havana, Cuba at the outset of the war. With increasing tensions along the Mexican border, Fort Fremont was closed in 1921. The Beaufort Gazette reported that “A sergent and five privates have arrived from Galveston, Texas, to pack all portable equipment for transfer to Fort Crockett, Texas, where the garrison will be stationed.� Fort Fremont was named for Major General John Charles Fremont (1813-1890), famous for his early explorations in the far west, and his role in the early history of California. The fort is listed in the National Historic Register, and was purchased by Beaufort County in 2004, with plans for the development of a historic park.

Sourdough Egg Casserole This dish can be made the evening before and frozen until ready to bake. INGREDIENTS: 6-9 slices sourdough crust removed bread tear into cubes Brown 2 pkgs J Dean sausage drain; run through electric chopper 2-1/2 cups sharp cheddar shredded cheese
4 beaten eggs mix with 1 cup half and half 1-1/4 cup milk 1 tsp dry mustard 2 dashes tabasco sauce
DIRECTIONS: Add to cheese and sausage stir and pour over bread in a greased 13x9 inch dish cover with foil. Refrigerate over night. In A.M. mix 1/2 cup milk and 1 can mushroom soup pour over top of sausage bread and cheese mixture Bake 1 hour at 325째 degree uncovered. Mix sausage and cheese together add eggs and milk to cheese and sausage. Mix well. Pour over bread cubes. Cover with foil refrigerate over night in A.M. pour mushroom soup and milk over top and bake at 325째 for 1 hour.
Southwestern Breakfast Casserole INGREDIENTS: 1 (8-1/2 ounce) package corn muffin mix-prepared 3 cups cubed (1/2-inch) Italian bread 8 ounces Italian sausage 1 cup chopped onion 2 cups milk
1 teaspoon ground cumin 1/8 teaspoon black pepper 1 (10-ounce) can diced tomatoes and green chiles, undrained 4 eggs 2 cups shredded Colby-Jack cheese, divided
DIRECTIONS: Prepare corn muffin mix according to package directions; cool. Crumble muffins into a large bowl and stir in bread. Set aside. Remove casings from sausage and cook in large skillet with onion over medium heat until browned, stirring to crumble. Drain. Combine milk, cumin, pepper, tomatoes, and eggs; stir until blended. Add sausage mixture; stir well. Stir into bread mixture. Spoon half of bread mixture into a 9x13 inch pan coated with cooking spray. Top with 1 cup cheese. Spoon remaining bread mixture over cheese, and then top with remaining cheese. Cover and refrigerate 8 hours or overnight. Preheat oven to 350째 degrees F. Bake 40 minutes or until set. After months of searching, you and your roommates have finally found a house to rent. Nestled in a quiet neighborhood, the house’s interior has been updated with fresh paint. The color of choice, of course, is white, and much to your chagrin, the owner will not allow you to repaint. White it is, but not to worry. You can add in pops of color to really jazz up the place. One of the first things that might come to mind is buying a load of colorful furniture. Beware of this, though. Whatever pieces you invest in now will most certainly go with you to your next place where you might be able to paint the walls. Opt for nice neutral pieces instead that will work with any décor in the coming years. You’ve got white walls and neutral furniture, so where does the color come in? One of the easiest, most inexpensive ways is through your selection of fabric and textiles. Like the color red? To s s s o m e r e d pillows onto your caramel suede sofa and a red throw on your chocolate r e c l i n e r. A d d a bright red rug underfoot, and voila, you’ve got instant color. Got some chairs that have seen better days? Sew a slipcover for them, or better yet, reupholster them with colorful fabric. Need more artwork? Drape a canvas with a favorite fabric, tack it in place and presto, you have instant color on your walls. Another way to punch up your space is to use colorful accessories. Cut some flowers from your garden and put them into a colorful vase on your coffee table, or clip some branches and stack them in the umbrella stand by your front door. To stay on budget, look for colorful accessories at flea markets and discount stores. Spray-paint anything you don’t like and purchase artwork from budding artists or frame colorful wallpaper scraps. For even more color, paint all of your plain artwork frames. Don’t overlook lighting in your quest for color. Polish tarnished brass fixtures. Change out white lampshades for more colorful ones. Replace old fan globes with bright, stylish models. Add some brightly colored pull chains to plain metal lamps. By limiting color to your fabrics, textiles, accessories and lighting, you can change your color palette fairly easily and inexpensively whenever you want. Tired of red? FUNDRAISER Announcing Bands Brews & BBQ a South Carolina Barbeque Association sanctioned Cook-Off event hosted by Beaufort Town Center and sponsored by Griffith, Sadler & Sharp, PA and Kinghorn Insurance Agency of Beaufort. Bands, Brews & BBQ will take place on Friday, September 3 and Saturday, September 4, with proceeds going to benefit FRIENDS of Caroline HOSPICE. This event will feature an “Anything But Pork” Party on Friday September 3 from 6:00 until 9:00pm featuring live music and samplings of ‘Anything But Pork’ from the participating cookers. The Saturday event will include a sanctioned SC BBQ Association cook-off in the categories of Ribs & Butts, as well as live music from four local bands and entertainment for the children. Visitors to the event will get to sample all they can eat of the best BBQ our area has to offer. Sure to become a Lowcountry favorite, Bands Brews & BBQ will be an event not to be missed for the entire family. Join us as we enjoy wonderful BBQ and raise money for a charity that has provided loving care to Beaufort for over 30 years. FRIENDS of Caroline HOSPICE is a non-profit, United Way organization, which has been serving Beaufort residents for over thirty years. FRIENDS was the first and only hospice in Beaufort.
