Sparkling Singapore Beguiling Singapore is a modern city-state embracing economic progress against the backdrop of ageold tradition. Many business people and holidaymakers travel to Singapore on their way to the Far East, or as a stop-off between Australia and Europe, and are eager to see and experience this legendary hi-tech Asian city, which combines traditional enclaves with the towering steel and cement of a cosmopolitan international power-house. The customs that underpin community life emerge out of a cultural mix that includes predominantly Chinese, Indian and Malay ethnic groups. Singapore’s full calendar of events showcases a spectrum of cultural celebrations and shopping activities. The early summer months bustle in anticipation of the Singapore Sale - a time when tourists can cash in on the competitive prices of electronic equipment, jewellery and other merchandise. The core of downtown Singapore is formed by the Colonial District, embellished by cathedrals and cricket lawns. The notable sites of the area include the Empress Place Building and the luxurious Raffles Hotel. Although most of old Singapore has been demolished to make way for the modern city, many major landmarks within the Colonial District have been preserved. The surrounding ethnic enclaves of Little India, Chinatown and the Arab Quarter also provide glimpses into the traditions that have sustained their respective communities through the centuries.

You might think we’re crazy for suggesting going south for winter – but there are so many fantastic reasons to head to our island state over the next few months. And with only nine weekends in the year where there are no events in Tasmania, there is always something exciting going on – even in the dead of winter! A little island at the world’s edge, Tasmania is like nowhere else on the planet. Devils are worshipped, local produce means heirloom tomatoes were foraged for that morning and a thousand remote lakes and peaks beg to be explored. Compact in size, in one day you can hear stories of a convict past; breathe the cleanest air in the world; sip a local pinot at a cellar door; and devour a paddock-toplate degustation come nightfall. Expect the extraordinary. The island presents constant contrasts. World heritage sites meet soaring sea cliffs on the newly opened Three Capes Track. Folk gather fresh seafood plucked straight from the salty waters as they navigate the Great Eastern Drive. While others down handcrafted whisky and cider in swanky waterfront bars. Tasmanians love old fashioned tradition and breed fiercely proud, creative islanders. Some locals craft artisan cheeses while others cultivate head turning museums.

our top five travel headaches & how to solve them! “My passport has expired.” Check your passport as early in your planning process as possible. Getting it out of your safe two days beforehand and realising it expired twelve months ago is not good for your stress levels. Also, remember that for most overseas countries your passport must have at least six months validity from your expected return date. So when checking your passport, it is vital to note what the expiry date is in relation to your flight home.
“I just found out I need a visa, and I’m leaving tomorrow.” Don’t get caught out. Visit our website to find out if you need a visa for your travels, and from there you can easily start your application. By applying when you find out you are travelling, you can avoid having to pay extra to have your visa application fast-tracked.
“I should have bought travel insurance.” Travel insurance is as essential as having a valid passport, so go to the Sean Simmons Travel website to see our range of comprehensive Covermore insurance products, or speak to your travel expert at the time you make your booking – even for domestic holidays.

mongolia Russia and serbia
TRAVEL REVIEW – BY KAT TIWONG
56 | TURBULENCE | ISSUE 16 | 2016
HAVE YOU EVER WONDERED WHERE YOUR TRAVEL AGENT ACTUALLY GOES FOR THEIR OWN HOLIDAYS? WELL, OUR LEISURE TRAVEL EXPERT, KAT TIWONG HAS SHARED WITH US HER LATEST ADVENTURE TOURING MONGOLIA, RUSSIA AND SERBIA ON THE VODKA TRAIN & THE TRANS SIBERIAN RAILWAY. Arriving into Beijing, I was incredibly excited to embark on my three week adventure travelling from Beijing to Moscow with Vodkatrain who specialise in rail journeys for 18 – 35 age group.
There is a restaurant cart on the train serving basic foods; the food changes cuisine as you travel from China to Mongolia and Russia. And as the name denotes, there is plenty of Vodka to be had and it is cheaper than water.
If you decide to go, make sure you plan your journey so that you arrive in Mongolia during the Naadam Festival which is from 11 – 13 July annually.
Whilst on land you have several activities to choose from and a guide as a point of contact. The guide will normally stick with the majority of the group but if you want to you can certain go off and explore on your own.
Naadam Festival is a Mongolian major holiday and a wonderful time to experience the culture and people of this amazing land. The festival has its roots in the nomad wedding assemblies and hunting extravaganzas of the Mongol Army. The opening ceremony features marches and music from soldiers, monks and athletes before the real fun begins!
Oh and make sure you bring lots of baby wipes, toilet paper, snacks, instant noodles and drinks as there is no mini mart on the train. But if you get chummy with your cabin officer they might even cook you some dumplings.
“THIS WAS ONE OF THE BEST TRIPS THAT I HAVE HAD SO FAR!”
In the Naadam Stadium, the three sporting passions of Mongolians, horse racing, wrestling and archery, are played out over two days. But if you don’t want to watch sports all the time, there’s plenty to see and do outside – food, music, crafts or just watching people and culture. This is the best time to see the Mongolian people and soak up the party atmosphere! The train facilities are very basic and you share in a 4 berth sleeper train. So if you are wanting privacy I would recommend travelling with another pair so that you can have your own cabin, otherwise you will be paired with a random traveller. This could also enhance the cultural experience if you are looking for this.
This trip was on my bucket list and I’m so glad I got to see it when I did as no doubt it will become more popular with tourist as the years go by. The people were amazing and the food was delicious and Mongolia is such a magical place that is surrounded by nature wonders and a soulful way of life. I have travelled extensively around the world, having previously flown for Emirates as cabin crew, however this was one of the best trips that I have had so far! If you want details on experiencing this once in a lifetime journey for yourself. Please don’t hesitate in contacting me! - Kat Tiwong

Top 25 Restaurants
in Asia (15-11)
58 | TURBULENCE | ISSUE 16 | 2016
Last month we embarked on a journey counting down the Top 25 Restaurants in the Asia region. From Bangkok to Seoul, Toyko to Colombo, we highlighted the top 21-25 restaurants. This month we countdown 15-11 giving you a highlight of sumptuous sought after cuisine from chefs that have earned their reputations. No.15 – Mingles, Seoul, Korea
No.14 – Burnt Ends, Singapore
Seoul ‘mingles’ Korean with European influences
The Ultimate Gourmet Barbeque
Mingles has been wowing local and international diners since opening in April 2014, so much so, it has been voted the best restaurant in Korea. Located in Seoul’s buzzy Cheongdam-dong district, Mingles offers a fusion of eastern and western cuisine. Having trained under Martin Berasategui in San Sebastian, Spain, and later enjoyed stints at Nobu in Miami and the Bahamas Young Korean chef Mingoo has been described as one of the most talented chefs around the world. The menu changes seasonally, with jang and cho – Korean traditional fermented sauce and vinegar – playing an integral part in the food. Main courses include charred beef tenderloin with truffle ‘Jang’ sauce, and guests can enjoy the ‘Jang trio’ dessert of Doen-Jang crème brulee, Gan-Jang pican, ‘Gochu-Jang’ grains and vanilla ice cream. The stripped back basement dining room’s décor of blondewood furniture and smooth stone walls, and the casual atmosphere makes it the go-to restaurant for hip Seoulsters. Style of food: Modern Korean Stand out dish: Mingles Bansang (Korean traditional table setting) On the pass: Mingoo Kang Address: Gangnam-gu, Nonhyundong 94-9, 1st floor, Seoul
Chef Owner The heart and soul of Burnt Ends is the massive fourtonne, two-oven brick kiln designed by chef chef-owner Australian Dave Pynt himself. Just about everything here is touched by its heat and smoke, or by the four custom grills, with the philosophy that coals bring out the best in all kinds of ingredients, be they fish, fowl or vegetable. Diners will find langoustines sweet and juicy with accents of tobiko and an umami-rich kombu beurre blanc. Another signature dish would be the fennel, charred on the outside and lush within, paired with orange and burrata. The flatiron steak (with burnt onion and bone marrow) and the top-flight Hida wagyu are sold by the hundred-gram weight. Style of food: Barbeque Stand out dish: Leek, hazelnut and brown butter On the pass: Dave Pynt Address: 20 Teck Lim Road, Singapore 088391
No.13 – 8½ Otto e Mezzo Bombana, Hong Kong
Introducing the ‘King of White Truffles’ in Hong Kong 8½ Otto e Mezzo Bombana was awarded two Michelin stars after only 11 months of opening, and quickly achieved further critical acclaim. The chef now has branches of 8½ in Shanghai and Macau, as well as Opera Bombana in Beijing and Italian trattoria Ciak in Hong Kong. Otto e Mezzo’s tasting menu kicks off with confit abalone carpaccio and moves on to blue lobster, three species of Hokkaido sea urchin and M9 sirloin and beef cheek. The menu finishes with ‘Caprese’ of chocolate cake, chocolate sorbet and orange blossom white chocolate Chantilly or marinated wild strawberry. Among his many accolades, Chef Bombana was named Worldwide Ambassador of the white truffle in 2006 by the Piedmontese Regional Enoteca Cavour in Italy, and is now known as the ‘King of White Truffles’. Style of food: Contemporary Italian Stand out dish: Fassone veal tenderloin, braised celery with black winter truffle, truffle jus and whipped potato On the pass: Umberto Bombana Address: Shop 202, Landmark Alexandra, 18 Chater Road, Central, Hong Kong

Contemporary French fine dining
The meaning of life explored through food
An alumnus of the now defunct Cépage in Hong Kong and L’Atelier de Joël Robuchon Hong Kong executive chef Sebastien Lepinoy is renowed and considered culinary royalty. Style of food: Contemporary French Stand out dish: Caviar on Potato Salad - Kristal caviar surrounded with petals of Roseval potatoes with capers, smoked salmon and fresh herbs On the pass: Sebastien Lepinoy Address: 1 Scotts Road, 1-16 Shaw Centre, Singapore 228208
Chef Hajime Yoneda’s introduces a philosophical streak to the food served in this highly acclaimed French restaurant. Serving intricate, beautifully presented dishes that explore heavyweight themes ranging from the natural world and ecology to the passing of time and destruction, it truly is artistic cuisine. Hajime’s signature ‘chikyu’ (planet earth) is made of up to 110 different vegetables, grains and herbs, artistically arranged around a shellfish foam to represent the land and sea. The roasted scallop topped with saffron foam and a foie gras terrine with mango, daikon and hazelnut is another highlight. With a strong French accent the wine list showcases blockbusters from Bordeaux and Burgundy, however there is also an excellent selection of Japanese red and white wines, plus sake. Style of food: Artistic Cuisine Stand out dish: Chikyu (Planet Earth) On the pass: Hajime Yoneda Address: 1-9-11-1F, Edobori, Nishiku, Osaka City, Osaka 550 0002

FLIGHT DECK Travel information & Industry News Cathay Pacific takes delivery of first A350
Air Canada schedules 787-9 for Brisbane-Vancouver
Cathay Pacific has taken delivery of its first Airbus A350, touching down at Hong Kong International Airport on Sunday morning, 29 May after a nonstop flight from Toulouse.
Air Canada has announced an aircraft change for its upcoming Brisbane-Vancouver service, with the Boeing 787-9 now scheduled to operate the new route from October 30.
The A350 entered service with Cathay on 1 June, operating a daily service to Manila and Taipei. The airlines second A350 will enter service in July, with services expanding to Bangkok, Singapore, Ho Chi Minh City and Osaka Kansai.
The schedule change is the latest tweak to a route that was first originally slated to be a three times weekly service with 787-8s when it was announced in July 2015, later advising the flight would commence as a daily offering using the 787-8 aircraft.
Once Cathay builds up operational experience and crew training on the aircraft the A350 will be deployed on long-haul routes from September, including London and Auckland. The configuration of Cathay’s A350-900s will see 214 economy, 28 premium business seats and 38 business class seats and on-board internet. The Hong Kong based airline has 22 A350-900s and 26 A350-1000s on order. Cathay Pacific has also boosted the strength of its Hong Kong hub with the reopening of business class lounge “The Pier”. The Pier business class lounge has been expanded by 1,000 square metres and has enough seating for 550 people. Located in the north-west part of the airport, it is the airline’s largest lounge.
Qantas announces new frequent flyer offering through expanded Westjet partnership Qantas frequent flyer programme is now offering travellers to North America a boost with an expanded partnership with Canadian airline Westjet. Under the new arrangement members of Qantas’s frequent flyer program can earn points when travelling on any Westjet flight from May 25 onwards as well as redeem points for Qantas codeshare flights operated by Westjet. The airline said it hoped to be able to offer its frequent flyer members the ability to use points to redeem any flight on the Westjet network by 2017. Members of the Westjet Rewards frequent flyer program will also be able to earn Westjet Dollars on any Qantas flight from May 25.
Melbourne welcomes Etihad’s first A380 flight Etihad Airways has deployed the Airbus A380 on the Melbourne route, with the airline’s first service operated by the 496-seat flagship touching down in Australia’s second largest city on Thursday evening June 2.
Air Canada’s 787-9s have 47 more seats than the smaller 787-8, which represents an extra 329 seats a week between Brisbane and Vancouver. Flight AC36 is timed to depart Brisbane at 10:40 and land in Vancouver at 07:15 the same day. The reciprocal AC35 is scheduled to depart Vancouver at 23:45, arriving in Brisbane at 07:15 two days later. Brisbane will be Air Canada’s second Australian port as the airline also flies daily to Sydney using either Boeing 777200LRs or, during peak seasons, the larger 777-300ER. Air Canada is the only airline offering year-round nonstop flights from Australia to Canada. Qantas has a seasonal service between Sydney and Vancouver during the peak winter and summer seasons, while there are also one-stop options via alternate points such as Hong Kong with Cathay Pacific and Auckland on the Air New Zealand service.
Air NZ to deploy 787-9 to Argentina from October Air New Zealand has announced that it will be switching its Auckland-Buenos Aires service from the Boeing 777-200ER to the 787-9 from October 30. While the move represents an overall reduction of 10 seats per flight, from 312 for the 777 to 302 for the 787-9, there will be a change in the mix of seats across business, premium economy and economy. In addition to the aircraft change, the airline announced it planned to add a fourth weekly Auckland-Buenos Aires flight during the peak summer period between December 12 and February 27. The 12-hour average flight time for the Auckland–Buenos Aires service is well suited to the Dreamliner and customers will enjoy the benefits of the higher humidity and lower cabin altitude to help them arrive feeling more refreshed. Air NZ launched he inaugural flight service to Buenos Aires in December 2015. Currently, the Star Alliance member flies to Argentina three times a week. TURBULENCE | ISSUE 16 |2016 | 61
