Welcome to another exciting edition of Turbulence Bounjour et bienvenue! It pains me that I must again start an edition with yet another mention of a terror attack. Our hearts go out to everyone, in particular our friends and colleagues, caught up in the horror of the Bastille Day attack in Nice. The endless parade of atrocities around the world is becoming a regular occurrence, and it makes me both sad and angry that the endless cycle of violence resulting in pointless loss of life continues to happen with ever-increasing frequency.

In happier news, we would like to say congratulations to Celia, our accounts magician, on the birth of her twins. Celia’s son and daughter were born late last month, and we wish her and her husband every blessing as they embark on the great adventure that is parenthood. We also welcome another new arrival, Lizz, who has recently joined the Sean Simmons Travel family as a senior consultant and my new right hand. Lizz comes with a wealth of industry experience and I am sure you will join me in making her feel as welcome as possible. As part of Aires further in this edition. Also this month, we explore Indonesia as only true adventurers can, by leaving Bali behind for the islands beyond, and showcase the luxury and romance of the Maldives and Tahiti. BALI The pilgrimage to Bali is a tradition for many Australians, and don’t get us wrong – Bali is a great holiday destination. It’s close, it’s relatively inexpensive and for a quick break it has just about anything one could hope for.

But is Australia’s obsession with Bali stopping us from going beyond the main tourist areas and really immersing ourselves in the wonderful culture, history and pristine nature that Indonesia offers. Let put it in perspective. Colourful and exotic, the vast archipelago of Indonesia encompasses more than 17,000 islands spread across 5,000km of ocean in Southeast Asia. Less than 1000 islands are permanently inhabited – 6,000 islands don’t even have names. An island hopping tour is the best way to experience Indonesia, and it’s not as exhausting as it sounds. Java

The heart of the nation, Java is an island of megacities, mesmerising natural beauty, magical archaeological sites and profound traditions in art, music and dance. Boasting a dazzling array of bewitching landscapes – iridescent rice paddies, smoking volcanoes, rainforest and savannah, not to mention virgin beaches – most journeys here are defined by scenic excesses. Flores

The island named ‘flowers’ by 16th-century Portuguese colonists, has become Indonesia’s ‘Next Big Thing’. In the far west, Labuanbajo is a booming tourist town that combines tropical beauty with nearby attractions such as Komodo National Park, myriad superb dive spots and beach-dappled little islands. The often lush interior is attracting an ever-greater river of travellers who, in just a few days’ journey overland, encounter smoking volcanoes, spectacular rice fields and lakes, exotic cultures and hidden beaches. You’ll even see plenty of steeples, as away from the port towns most people are nominally Catholic. And many more people are part of cultures and groups that date back centuries, and live in traditional villages seemingly unchanged in millennia. Komodo & Rinca Islands

Lombok

Long overshadowed by its superstar neighbour across the Lombok Strait there’s a steady hum about Lombok that catches the ear of travellers looking for something different from Bali. Blessed with exquisite whitesand beaches, epic surf, a lush forested interior, and hiking trails through tobacco and rice fields, Lombok is fully loaded with equatorial allure. Captivating Tahiti and her 118 attendant islands and atolls, all radiant with iridescent green and turquoise, make up the country of French Polynesia, a French overseas territory that is spread across an area of the South Pacific that is as big as western Europe. The earliest explorers thought they had found paradise on earth when they came across these picture-perfect islands, and today’s travellers are no less entranced by the volcanic mountain peaks clothed in lush tropical vegetation and exotic flowering plants, the coral reefs, warm waters, white sand beaches and stunning turquoise lagoons. TIWI ISLANDS, NORTHERN TERRITORY World class barramundi fishing and some of the most amazing Indigenous cultural experiences await you at Bathurst and Melville Islands, better known as the Tiwi Islands, just north of Darwin. The Tiwis’ island homes kept them fairly isolated from mainland developments until the 20th century, and their culture has retained several unique features. Australians take so many things for granted, but probably nothing more so than our abundant access to clean drinking water. Frankly, most of the rest of the world is not so lucky. Across the majority of Asia, South America and Africa access to clean drinking water is a serious issue and rectifying this has become the mission of many a not-for-profit organisation. So, as a traveller, how do you know if the water is safe to drink where you are going, and what precautions do you take to ensure you don’t get sick? Here are our top tips!

#1 – Keep plenty of Bottled Water Handy

#2 – Avoid Inadvertently drinking the water

In countries where water is a problem, most hotels will include complimentary bottled water as part of your accommodation. Tour operators in affected areas – especially safaris – will always include bottled water. Keep a good supply on hand whenever you travel – and if in doubt, don’t refill your bottle from the tap.

There are many ways you can ingest contaminated water without deliberately drinking it, through every day activities such as bathing, brushing your teeth, swimming or drinking.

There are some places, such as Belarus, where the water is tolerable to locals because of prolonged exposure, but can be harmful to tourists – so don’t necessarily do as the locals do.

On the subject on what to eat and drink – mate is a must along with the barbecue asado. Mate is a tea that you drink through a metal straw. It is theatrical and it is shared at anytime, anywhere as it is a social experience usually with friends and neighbours. So when you find a mate bar you will be given a thermos full of hot water, some yerba loose leaf tea, a receptacle to put the tea into and a metal straw known as a bombilla. To the uninitiated it is an amazing experience but as the tea is rather bitter I would suggest having some pastries with it such as alfajores filled with a caramel goop called duce de la leche. The tea is very good for you and I still drink it today but cheat as I use teabags in the office.

LA BOCA IS NOT JUST THE NAME OF A FOOTBALL TEAM BUT THE BIRTHPLACE OF THE TANGO If you are a meat eater you cannot go past the asado, a traditional dish dating back to the time of the gaucho (the lone cowhand of the pampas). They say these nomadic cowboys survived on just mate and asado whilst taking the heard across the plains. The most common form is the beef rib cooked on an open grill over some coals called a parrilla. Chimmichuri is a delicious fresh green herb sauce that is served alongside with it. There is also a modern food movement that is easily found. By this time, you have done a spot of shopping, learnt about the tango, experienced the history and have done some sightseeing, enjoyed a native tea with a pastry or two, and some local bbq washed down with some Malbec from Mendoza. As you leave and look back, like the good man Carlos sings.... mi corazon esta en Buenos Aires.... (my heart is in Buenos Aires).

Lung King Heen in the Four Seasons hotel was the first Chinese restaurant to be awarded three Michelin stars – a result of its combination of ground-breakingly good food and spectacular views of the Victoria Harbour.

Hailed as one of the top chefs in India, and even the world, Manish Mehrotra has helped put modern Indian food on the gastronomic map, with Indian Accent at the heart. While he is touted as a champion for this cuisine, he says it’s food, flavour and taste that are the true heroes.

Born in Kowloon, master of Cantonese cuisine Chan Yan Tak started cooking as a necessity but soon grew to love it. He has worked for the Four Seasons Hotel group since 2004, starting as chef de partie at The Regent and working up to executive chef, becoming the first Chinese chef in history to be awarded the coveted three stars. Unmissable courses include barbecued suckling pig, braised goose webs with Chinese mushrooms in casserole, crispy pork ribs with osmanthus and pear, sautéed Australian beef tenderloin with assorted mushrooms, and Lung King Heen roasted chicken. Be sure to book well in advance for the popular dim sum, which is available only at lunch. Other dishes include pulled pork phulka tacos and gongura masala prawns, butter popcorn upma and crispy curry leaves. Mehrotra moved out of the kitchen and in front of the camera when he took part in – and won – the cooking game show Foodistan. Reality TV loved him and his chef stardom continued on the small screen with an appearance on MasterChef India. Chef David Thompson and his team take exquisite pains to ensure their dishes are perfectly balanced, but when Thai food is your metier, there’s an undeniable power to the flavours on the plate, with smoke, heat, sourness, funk and bitterness all playing their part. Not your everyday Thai food, then? Not unless your local does a fine line in the likes of clear soup of termite mushrooms with prawn, stirfried crayfish with white turmeric, or smoked fish curry with chicken livers, cockles and black pepper. Much of Thompson’s cooking is informed by his close study of recipes in Thai memorial books, some of which came from members of the court kitchen. Meanwhile some of the ingredients used at the restaurant – the guinea fowl, for instance – are sourced from the Royal Project in Chiang Mai, an initiative to introduce alternative crops to hill tribes, sponsored by the King of Thailand. Ultraviolet by Paul Pairet is considered by many to be the most avant-garde restaurant experience in the world.

Teppanyaki? Not exactly. At Waku Ghin, diners are treated to up-closeand-personal attention from the chefs in small dining rooms, where seating surrounds a dining bar and teppan plate, which the chefs work with rare grace and creativity.

The high-tech gastronomic production utilises elements including video, audio, bespoke lighting, piped-in scents and, of course, good old food and drink to stimulate every sense, with each course its own selfcontained mini drama. The original ‘UVA’ and the subsequent ‘UVB’ menus now rotate on alternative weeks. Both are equally original, unusual and witty, with dishes that are high-concept but, crucially, still delicious. Guests are dropped off by minibus in a dark alley, before being ushered inside through an unmarked door. They then find themselves in an all-white, cocoon-like dining space with a single spot-lit table, at which everyone sits together. The room then transforms itself throughout the meal. Service is suitably theatrical, but remains warm and personable. From next week, customers can redeem between $10 and $60 off their eligible fuel and in-store purchases at participating BP service stations. It is the first time an Australian airline loyalty program has allowed its members to use their frequent flyer points as currency in a retail store. With Australia’s average household expenditure on fuel around $60 per week, Pay with Points gives customers the opportunity to save each time they refuel, reducing the money spent at the pump and putting disposable income back into the pockets of Australians. BP General Manager, Marketing & Offer Development Adam Arnold said: “This new offer will help Australians rethink how they refuel. EMIRATES ANNOUNCES ENHANCEMENTS ON SERVICES TO MELBOURNE Passengers travelling to Melbourne, Australia will now have another direct flight option with Emirates announcing that flights EK408 and EK409 will begin operating as nonstop services from Dubai from 30 October 2016. Operated by an Emirates B777-300ER aircraft, EK408 will depart Dubai at 03:00hrs and arrive in Melbourne (MEL) at 23:20hrs. The return flight, EK409, will leave Melbourne at 06:00hrs and land in Dubai (DXB) at 13:05hrs. The current service from Dubai to Melbourne operates via Kuala Lumpur (KUL) in both directions. These flight changes will save passengers approximately two and half hours in travel time in each direction when travelling between Dubai and Melbourne on these services. The change to these services will provide passengers with improved one-stop connectivity when travelling from more than 150 destinations on the Emirates network to Melbourne via Dubai.

SINGAPORE AIRLINES INTRODUCES “INVITE ONLY” UPGRADE BIDDING SYSTEM Singapore Airlines (SIA) has introduced a new bidding system for seat upgrades which will be available to invited customers, the airline said this week. Customers who have booked tickets in Economy class can get an invitation to bid for an upgrade to Premium Economy Class. The new system, called mySQupgrade, will be “gradually introduced across the network”, SIA said in its email to members of its loyalty programme, Krisflyer.

Emirates offers a total of four daily flights from Dubai to Melbourne with codeshare partner Qantas, including three services operated by an A380 aircraft and one flight on an Emirates B777-300ER. With this change, from 30 October 2016, these four daily services will include two daily nonstop flights to Melbourne from Dubai on Emirates and one flight on Qantas aircraft, as well as one daily Emirates flight to Melbourne from Dubai that operates via Singapore.

Such bidding systems have been adopted by more airlines in recent years. More than 30 airlines around the world offer these “auctions”, The Wall Street Journal reported in January.

Together, Emirates and Qantas operate 91 flights per week to Australia from Dubai. Of these 91 flights, 77 of these are Emirates services, which operate to and from Brisbane, Perth, Melbourne, Adelaide and Sydney, including six daily A380 flights.

SIA said that it will notify eligible customers seven days before their departure. Bids must lie within a “preset range”, it said.

Air New Zealand and Virgin Atlantic were among the first airlines to introduce it five years ago in partnership with Plusgrade, an online auction company, the Business Times said. How the upgrades are offered varies depending on each airline. Some may prioritise frequent fliers, others may prioritise passengers travelling alone.

Travellers can change their bids up to 50 hours before departure. Payment will only be made if the bid is successful. Sucessful bidders will be informed about 48 hours before their flight. “Invitations are made at Singapore Airlines’ sole discretion based on certain criteria and combination of factors, which are dynamic,” the airline said on its website. SIA also said that while only one passenger in a group may receive an invitation, these guests can submit a bid on behalf of other passengers with whom they are travelling. Factors that affect the outcome of a bid can include the value of the bid, the value of other bids, and the number of Premium Economy seats available, SIA said. QANTAS PASSENGERS TO CHEER ON AUSSIE OLYMPIANS WHILE THEY SLEEP Australia’s national carrier and longstanding official airline of the Australian Olympic Team is getting behind Aussie athletes with a limited edition Australian Olympic themed version of its iconic Business Class pyjamas. In the lead up to the Rio 2016 Olympic Games, Qantas will switch out the grey cotton long sleeve pyjamas for a patriotic green and gold set featuring a gold kangaroo on the shirt front and hashtag #RoadToRio on the back. From 22 July until 18 September 2016, all passengers travelling in Business Class across key international routes including Santiago, Dubai, Los Angeles, San Francisco, Honolulu, Dallas, Tokyo, Johannesburg and Vancouver, will be offered the opportunity to be part of the unofficial PJ Cheer squad for the Australian Olympians and Paralympians. Qantas Group Head of Brand, Marketing and Corporate Affairs, Olivia Wirth, said the Olympic PJ range is a special way for the airline and its passengers to throw their support behind Australia’s athletes as their years of hard work come to fruition on the world stage. “Our light grey Qantas PJs are almost as iconic as the flying kangaroo on the front of them, so we thought it would be very appropriate to turn them green and gold in support of the men and women representing Australia at Rio,” said Mrs Wirth. “It means people flying Qantas can literally support our athletes in their sleep.” Australia’s Olympians and Paralympians will receive their own set of green and gold PJs when they and their Olympic Medals return home on a specially chartered Qantas B747. Virgin Australia launches ‘Space +’ economy cabin as part of 777 refit In addition to a new business class with direct aisle access from every seat and a refreshed premium economy cabin, Virgin Australia’s fleet of five Boeing 777-300ERs will also feature a number of extra legroom economy seats that will be marketed as Economy Space +. Economy passengers on Virgin’s 777s, which operate from Sydney and Brisbane to Los Angeles, as well as from Sydney to Abu Dhabi, can buy an Economy Space + seat for between $135 and $165 per sector, with the new product available for sale from Tuesday for flights from August 30, Virgin said on Monday. The seats are located in the first five rows of the main cabin, where they are set at a 34in pitch, as well as at the exit rows. Passengers will also be able to checkin at a dedicated counter, have priority boarding and be guaranteed their first meal choice, among other benefits. Virgin Australia chief customer officer Mark Hassell said Economy Space + offered passengers more choice when booking their travel. “Coupled with Virgin Australia’s award-winning service, we believe Economy Space + will be very popular with a range of travellers,” Hassell said in a statement. “Economy Space + enables you to speed through the airport and enjoy service from dedicated crew members throughout the flight, providing great value for guests travelling to Los Angeles and Abu Dhabi.” Economy Space + is a similar concept to what Virgin’s trans-Pacific alliance partner Delta Air Lines offers on its daily Sydney-Los Angeles service with Boeing 777-200LRs. Delta’s Comfort+, which has more legroom, priority boarding and some extras on board, is available for purchase and offered complimentary to the airline’s elite frequent flyer members subject to availability.
