Primarily, his work has focused on decorative themes including chinoiseries, architectural subjects, and scenics, often with bird, animal, or floral motifs. Harrison started his career at the age of nineteen with a one-man exhibit at the upstairs gallery of Ross Thiele & Son Interiors in La Jolla, California, where he has lived for many years. THE VEILED PROPHET BALL DECEMBER 22, 2009
On December 22, 2009 the Veiled Prophet will crown this year’s Queen of Love and Beauty at the organizations 125th ball at the The Hyatt Riverfront Hotel. Founded, in 1878, the organization provides financial support and leadership for various civic projects and not-for-profit agencies as well hosts the annual Veiled Prophet Parade.
THE FLEUR DE LIS BALL DECEMBER 29, 2009 The annual Fleur de Lis Ball will be held on Tuesday, December 29, 2009 at the Hyatt Regency Riverfront Hotel. To date the Fleur de Lis has donated $2,552,000 to the SSM Cardinal Glennon Children’s Medical Center, and this year’s ball will continue their philanthropic efforts, donating all proceeds to the center.

I have done a lot of things in my life. Played pro football. Won a Super Bowl. Done a TV show. And now ESPN radio. But here’s one thing I never thought I’d ever do: work out next to a 68-year-old grandmother. Her name is Sonja Nelson-Stough, and she is in amazing shape. She and I both work out at 20 Minutes to Fitness, a place that provides a medically based form of fitness training that takes just 20 minutes a week. But before you start thinking I have joined some sort of geriatric fitness club, let me add this: In all my years in the NFL,
Okay, I may lift a few pounds more than Sonja and most of the other folks here. But muscle failure is muscle failure. As medical research has proven again and again, achieving it is the first step to toward growing stronger and healthier – no matter what your age or physical condition. The truth is, the 20 Minute to Fitness workout can be fine-tuned for people of any fitness level – from overweight kids, to elite high school athletes, to stay-at-home moms, to timestarved professionals, to 80-year-old grandmas, to former pro athletes like me.
I never had a strength-training regimen as tough, or as effective, as this one. Don’t believe it? You can watch I’ll explain. When I played for the Rams, strength training was a numbers game. We were required to lift a certain amount of weight, a certain number of reps, three times a week. I was spending nine hours a week in a gym, building muscle, but damaging my joints. But at 20 Minutes to Fitness, the medical approach is completely different. Here, I work out on special physical therapy equipment. Everything we do is in ultra slow motion. My personal coach doesn’t really care how many reps I do, or even how much weight I’m lifting. All she is concerned about is that I achieve muscle failure – that I get to the point where I can’t lift another ounce.

So D’Marco Farr never thought he’d be working out alongside a 68-year-old woman. Well, I can do him one better than that: I never thought I’d work out AT ALL – much less next to a Super Bowl champion. You see, for the first 65 years of my life, I hated the gym. Oh, I tried. I would tag along with my husband, Larry, when he went to play squash, intending to work out.
For the past three years, Larry and I have worked out every Monday morning at 8:30 a.m. at 20 Minutes to Fitness’ Chesterfield studio. A half hour later, we’re done for the week. And that’s a good thing. Because in addition to my golf game, I’ve got tap lessons twice a week and ballroom dance competitions to prepare for – not to mention an occasional friendly arm wrestling contest.
But I dreaded it all day long. And I was miserable the entire time. As I started thinking about retirement three years ago, I realized my attitude toward physical fitness was going to have to change. I was on the verge of having osteoporosis, and was getting a little thick around the middle. I could see where I was headed, and that’s NOT how I wanted to spend my retirement years. SOMETHING OLD, SOMETHING NEW
F
or some brides, wedding planning begins following the proposal. For others it begins in childhood while flipping through wedding albums belonging to your mother and grandmother. For bride, Margaret Wolfner Terry, daughter of Mr. and Mrs. Richard Terry, the latter was the case. Wed to Philip Locke George, son of Mr. and Mrs. Philip George, the bride’s day was filled with allusions to the prior matrimonies she had been enamored by as a child. Garnering inspiration from family and tradition, the bride’s goal was to, “weave the timeless elegance of the past with the present,” and what resulted was a beautiful wedding that’s every detail was accompanied with significance and history. From the bride’s wedding gown, a family heirloom worn by four other women in her family, to the wedding portraits inspired by her grandmother’s, taken by esteemed photographer Jules Pierlow, the wedding paid homage to the family history the bride so values. The decision to wear her grandmother’s dress was simple, recalls the bride, claiming, “ever since I was a little girl I knew I would someday wear the gown,” however, the journey to actually donning it on her wedding day turned out to be anything but simple. Despite being properly preserved, the dress, first worn by her grandmother and namesake Margaret Fox Wolfner in 1951, had portions which needed repairing. She remembers receiving a call one afternoon with the news that the dress may have been too delicate to repair and perhaps she should think about remaking a gown in the original’s image. 28

She remembers, “I was on the verge of tears. Grasping for options I sat down in front of my computer and began researching gown restoration.” Her research led her to a restoration and preservation specialist in Connecticut who would be the saving grace in her quest to wear the historic gown. Luckily the restoration was a success, and after numerous trips back and forth, the dress was in perfect condition for the big day. The day was a celebration of the happy couple, who became engaged in Vail, Colorado over Labor Day weekend after Philip, known to all as Locke, proposed, presenting Margaret with a family heirloom of his own: a ring which has been in his family for four generations. The ring wasn’t the only significant thing involved in the proposal. Choosing Vail as the location for their engagement was important to Locke, says the bride. The groom spent much of his child and young adulthood vacationing there with his family, and, “he wanted Vail to mean as much to me as it does to him,” Margaret recalls. Following their nuptials at Church of the Annunziata, where the bride carried a bouquet of white dendrobium orchids and roses accented with stephanotis and mini calla lilies inspired by her mother and her grandmother’s flowers at their weddings, the happy couple celebrated with a reception at Old Warson Country Club. The day, as described by the bride was, “a dream come true.” Rich with thoughtful details, the wedding celebrated, not only the happy couple, who would go on to honeymoon in Paris, France and on the Amalfi coast of Italy, but to both of the young couple’s families and traditions.

esiding in a traditional two story brick English Tudor, homeowner Michael Gianino was excited to incorporate his more modern tastes with his classical settings. Thanks to the extensive remodeling completed by the prior homeowner, the home has an unexpected open quality which balances Gianino’s modern sensibilities with his appreciation for classic construction. Lush and inviting, with soaring ceilings and rooms that flow effortlessly from one to the other, the home supplies a warm atmosphere while retaining its original architectural features: hardwood floors, timber beams with exposed rafters, arched doorways and original stained glass. When decorating for the holiday season, much like when furnishing his home, Gianino wanted a balance between modern luxury and classic good taste, so he turned to Resito Pecson owner of Twigs and Moss to conceive a plan which would reflect both his style and his home’s construction: a duality of the modern and the traditional. Merging the old with the new was the inspiration for the holiday decorations which utilized familiar

neutral components such as pinecones, magnolia, and birch and displayed them in an unexpected way, says Pecson. Mr. Gianino decorated his home in a neutral pallet allowing the home’s furnishings, art and architecture to stand out. Pale walls highlight the deep tones of the hardwood floors and the dark exposed wood beams; dramatic artwork calls attention to the large floor to ceiling windows; and modern furniture like the lattice back dining room chairs lend a note of modernity to the traditional surroundings. In keeping with Gianino’s personal style, the holiday dÊcor utilized atypical neutral colors and natural elements to seamlessly incorporate festive decorations in the home. The central living room with its large fireplace, anchored with a massive mirror framed with numerous handmade metal flowers, a gift given to the homeowner to mark an important birthday set the tone for the living room decorations. Adorning the large mirror is a magnolia leaf garland from the south whose leaves of copper brown and crimson create dramatic effect. Adding depth and dimension to the southern garland are the sugar pine cones, hung like ornaments to spill down the mirror front toward the stone fireplace. In lieu of using traditional ribbon, Pecson kept with the natural theme and 62

used strands of birch bark to tie the cones in place. Resting on the hearth of the stone fireplace are two zinc urns topped with pinecone spheres. Repetitive elements, like circular shapes were utilized to create continuity throughout the home. Starting in the living room with the pinecone urns, Pecson continued the mélange/motif with three spheres of mood moss placed on and around the modern Lucite coffee table, pinecone topiaries and numerous moss wreaths near the stained glass window, and finally round vases wrapped in birch bark in the dining room. Keeping the homeowner’s personal style as well as the architectural elements of the home in mind should always inspire one’s holiday décor, Pecson says, promising that, “Decorating for the holidays with this in mind will result in a home that can be enjoyed during the season with a warmth that will embellish your holiday memories!”
Meant to be seen from above, the owner’s collection of mercury class pinecone trees is set amongst puddles of mood moss which spill from the mirrored tray on to the table with mercury glass votives, crystal candle holders and silver bowls by Michael Aram creating a sort of winter “landscape”.

LOCAL WINE EXPERTS: hanging the face of St. Louis wine storage and collecting is Marc Lazar, President of Cellar Advisors: Wine Collection Services, a company dedicated to fostering successful wine collections, storage and education. Located on Dale Avenue, the local company boasts some of the most impressive tools in wine storage and collecting in the nation. From unpacking, setting up and organizing the cellar to cataloging entire collections into an online database, Lazar’s services are designed to anticipate needs and enable collectors’ interest to grow. Lazar explains that the perks of the online database, a sort of Dewey Decimal System for wine, is the ease with which his clients can get answers. Lazar explains, “the database is constantly updated and can be accessed anytime. Clients can look up what wines they currently have, and how much of it. They can see how much it’s worth and even learn when it will be best to drink.” For Lazar he sees wine as an accessible hobby, and not something that needs to be overwhelming. “Collecting wine,” Lazar says, “means you have one more bottle of wine than you plan on drinking that night.” Although he notes that this makes nearly everyone over the age of twenty-one who enjoys a glass of wine after a long day, a collector, he also believes that wine collecting is a misunderstood practice. It’s not something which has to be daunting and it doesn’t mean you need over 600 bottles, he says. His company stands by this mentality as well, offering storage units varying in size from a locker that holds ten cases to their largest which holds 1000. Should the time arrive when

This single-vineyard Champagne is made of 100% Pinot Noir, from 70 year-old vines in “Les Crayères” inside the Grand Cru village of Ambonnay. This Champagne is an expression of the vineyard's super-chalky soil, is fermented in barrel and spends 51 months on its lees.
GIACOMO CONTERNO, “Cascina Francia,” Barolo Giacomo Conterno is clearly one of the greatest names in all of Piemonte, and each and every wine that bears the Conterno label is the quintessence of “traditional” Barolo: rich, powerful, massively structured, and capable of extraordinary development in bottle.
Egly-Ouriet, “Les Crayères” explodes with aromas of raspberries, ginger, candied-nuts and crushed stones. This is a big, full-bodied wine offering dense, super-ripe red fruit flavors. Despite the wine’s size there is still plenty of focus and clarity. Lush and broad on the palate, this is a benchmark for great Pinot Noir Champagne and can be enjoyed for around $125.
WEINGUT PRAGER, Riesling, “Wachstum Bodenstein” Smaragd, Wachau Pure. Precise. Mineral. Produced in the granite hills high above the Danube River in Austria, Prager wines showcase their site-specific character, while demonstrating the complexity that proprietor Toni Bodenstein can draw out of dry Riesling and Grüner Veltliner. Planted in 1990 at an altitude of about 1,500 feet, everybody doubted that this vineyard would be able to fully ripen Riesling- except Bodenstein. Prager, ‘Wachstum Bodenstein,” Riesling is the perfect balance of power and elegance. Full-bodied and firm, with mouthfilling flavors of sweet peach, apricot, lavender
When I asked winemaker Roberto Conterno why he didn’t bottle any Barolo for two consecutive vintages in 1991 or 1992, he told me that he would not put his family name on a bottle of wine unless he expected it to drink well for 30 years or more. He explained that those two vintages would likely have lasted for only about 20 years.
While Giacomo Conterno “Monfortino,” Riserva is justifiably considered one of the world’s greatest red wines, “Cascina Francia” is often very close in quality, and can usually be found for around $120 at release. This spectacularly rich, concentrated Barolo possesses striking perfume with its aromas of rose petals, licorice, tar, and spiced red fruits. While it will reward cellaring for several decades, it is also relatively accessible within a few years. Enjoy it with Osso Bucco for a perfect wine and food experience.

STEAMED MUSSELS WITH SAISON DUPONT: GERARD CRAFT BRASSERIE by niche Perhaps the most talented chef in Saint Louis, Gerard Craft is famous for his innovative food and interesting combinations. After tremendous success with Niche, the chef has now opened his latest restaurant, Brasserie, a more casual spot focused on pairing food with beer. We caught up with Craft, who shared one of his favorite recipes for the season with us.
STEAMED MUSSELS WITH SAISON DUPONT 1 tablespoon olive oil 2 tablespoons minced shallots 4 cloves garlic, thinly sliced 1 bottle dry white wine 4 pounds of mussels 1/2 cup creme fraiche 1 teaspoon chervil minced 1 teaspoon parsley minced 1 teaspoon chives minced 1 teaspoon tarragon minced Salt and Pepper as needed In a 6 quart pot, heat olive oil over medium to high heat. Add shallots and cook for 1 minute, add garlic and wine, bring to a boil. Add mussels, cover and steam until mussels open about 5 to 6 minutes. Remove mussels from pot, reduce liquid by half, continue to cook 5 to 10 minutes. Add creme fraiche, salt, pepper, and herbs to broth, whisk together. Pour broth over mussels and enjoy! ~ Serves 4 70

As he wrote to us: “This fragrant spice cake is perfect as a light ending to a substantial meal or as an early course in a dessert progression. The cake can even be served as a part of a breakfast menu because it is not very sweet. This is a great makeahead preparation; the cake does not suffer in any way from being baked the day before.” If Lady apples are not available, substitute any small cooking apple. serves 9 APPLE CHIPS 1 cup granulated sugar ¼ cup freshly squeezed lemon juice 2 cups water 18 paper-thin slices Lady apples or other small apples (seeds removed, but not peeled or cored) CAKE Vegetable oil or nonstick vegetable spray, for greasing pan 2 cups all-purpose flour, plus additional for flouring pan ¼ cup freshly squeezed orange juice ¼ cup finely chopped fresh ginger About ½ cup milk, as needed 2 tablespoons brandy 1½ teaspoons rice wine vinegar ½ cup (1 stick) unsalted butter ⅓ cup granulated sugar 2 large eggs ⅓ cup light molasses 1½ teaspoons baking soda ¼ teaspoon salt 1 teaspoon ground cinnamon ⅛ teaspoon ground cloves

I serve this chicken loaf accompanied by soft polenta and crisp asparagus. The next day, any leftovers are sliced for sandwiches on rustic bread and dressed with a tangy sweet hot mustard and some arugula or baby lettuces. serves 4 CHICKEN LOAVES 2 tablespoons extra virgin olive oil ½ cup finely chopped onion 2 pounds ground chicken ½ cup finely chopped celery ¼ cup minced Italian parsley leaves 1½ teaspoons minced garlic 2 large eggs ¼ cup milk ¼ cup grated Parmigiano-Reggiano cheese ½ cup fresh bread crumbs
heat, bring to a simmer, and add the apple slices. Simmer until the slices are translucent, about 10 minutes. Remove the apple slices from the liquid and lay them flat on the baking sheet. Bake until the apples are thoroughly dry, 1 to 1½ hours. Carefully transfer the chips to a cooling rack. When completely cool, store in an airtight container at room temperature until ready to use. MAKE THE CAKE: Preheat the oven to 350°F. Grease and flour a 9-inch square baking pan, then line with parchment paper. In a small saucepan, combine the orange juice and ginger. Place over low heat until the juice is warm, about 3 minutes. Remove from the heat, cover, and allow to steep for 30 minutes. Strain MARSALA-MUSHROOM SAUCE ¼ cup extra virgin olive oil 6 cloves garlic, coarsely chopped 1 cup sliced white mushrooms 1 cup Marsala 1 cup low-sodium chicken broth 2 tablespoons unsalted butter MAKE THE CHICKEN LOAVES: Heat the oil in a saucepan over medium-low heat. Add the onion and sauté until translucent, 3 to 5 minutes. Transfer to a mixing bowl and allow the onion to cool. Add the chicken, celery, parsley, garlic, eggs, milk, cheese, and bread crumbs, and mix well. Cover and refrigerate until chilled, about 1 hour. Divide the chicken mixture into 4 equal portions and, with wet hands, shape into small oval loaves about 1 inch high. MAKE THE MARSALA-MUSHROOM SAUCE: Heat the oil in a large deep skillet (at least 12 inches in diameter) over medium-low heat. Add the garlic and sauté until golden.

Using an electric mixer, cream the butter and sugar until light and fluffy. Add the eggs and continue beating until they are fully incorporated. Add the molasses and beat until well mixed. Sift together the flour, baking soda, salt, cinnamon, and cloves. Alternately add the dry ingredients and the orange juice mixture to the batter, mixing well after each addition. Pour the batter into the pan and bake until a toothpick inserted in the center of the cake comes out clean, 25 to 30 minutes. Transfer the cake to a wire rack to cool. a Using a slotted spoon, remove and discard the garlic. Add the chicken loaves to the pan and increase the heat to medium-high. Allow to cook until golden brown on the undersides, 2 to 3 minutes, then turn and brown the other sides. Add the mushrooms and Marsala and simmer until the liquid is reduced by half. Add the broth. Cover, and cook until an instant-read thermometer inserted in the center of the loaves registers 170°F, about 20 minutes. Transfer the loaves to a warm platter, cover with aluminum foil, and keep warm. Increase the heat under the pan to high, and boil the sauce until reduced by half, scraping up the bits on the bottom. BLUE BOTTLE: MICRO-ROASTING AND SHADE GROWING Frustrated with the bad coffee he was constantly drinking while traveling as a professional clarinet player, James Freeman started roasting his own at home. Little did he know that his home-made experiments would lead him to starting, not only a new career but a movement in the coffee industry. The movement in question is artisan micro-roasting; an involved and time consuming technique of making coffee in small batches that are never preblended or left to rest and lose freshness. Freeman explains his passion for fresh coffee saying, “I feel coffee shouldn’t sit- it’s the difference between a buffet and a made to order dinner. If you want something to be truly good, it should be made specifically for them.” Thus the philosophy behind Blue Bottle Coffee was born, and it is one which is proving to be a success. The more he experimented, “the more passionate I became,” Freeman says, “and I decided I wanted to open a Roasterie.” He started by selling his micro-roasted coffee at farmers markets in the San Francisco area, and soon his dream was realized. Five years ago, Freeman’s still very popular Kiosk was opened in Hayes Valley, and two years ago his café, located in San Francisco was opened. With the growing success and attention of his micro-roasting, Freeman remains humble, choosing instead to focus on getting customers their coffee at his peak of freshness and highest level of quality. INGREDIENT: MEYER LEMON The Meyer Lemon, native to China, is thought to be a cross between a lemon and a mandarin orange. Introduced to the United States in 1908, the fruit was widely ignored by the culinary world, but is now making its mark. Used by some of the world’s most innovative chefs, like Alice Waters, co-owner of chic California restaurant Chez Panisse, the sweet and complex fruit is not to be missed.

ARTISANAL CHEESE: LEARN FROM MERRYL WINSTEIN OF WEBSTER GROVES
I
t all started when Merryl Winstein started raising dairy goats in her backyard in Webster Groves. She quickly discovered that the dairy animals she loved produced much more milk than expected, and using the excess product for cheese making seemed only natural. Thus Winstein’s seventeen year long journey to, what she refuses to call, but must be said, expert cheese making began. She started by taking a few classes but found, “there was a lot of missing information in the courses. I had so many questions that weren’t being answered,” so she turned to books and taught herself. Through trial and error, and an increased interest in the art of cheese making as her children grew older, Winstein’s passion grew and so did her knowledge. Today, Weinstein has been teaching courses on cheese making for five years, her pupils numbering in the high hundreds. This past September Winstein attended an intense three week program at The University of Vermont’s Institute for Artisan Cheese. Established in 2004 in Burlington Vermont is the first school of its kind in the United States and the only center devoted solely to teaching the craft of artisan cheese production. Attending courses at the Institute was a turning point for her career saying, “It took me a long time to reach this point, but the courses gave me the answers I couldn’t find in a book. All of my questions were answered and 74

while I can’t say I am expert, I feel that I am really able to teach now.” Winstein holds classes at her home for all skill and interest levels, some classes are basic and others are more intensified, lasting all day. “I really love to teach people how to make cheese,” she says, “People are often mystified because they have heard it is hard or have tried and failed by teaching themselves from a book- where crucial steps of the process are often left out.” In her courses, Winstein stresses the approachability of cheese making, remarking how, “some people come without a speck of knowledge and they leave knowing so much, it is such a fun thing to be able to do.” Winstein encourages her pupils to explore cheese making on their own, accrediting outside resources and experimentation as part of the fun explaining; “now a days there is so much information out there, on the internet, books. I enjoy that people can take the information I provide from my class and apply it with other information, combining the lessons and explore the craft.” Most importantly, Weinstein says she enjoys, “inspiring people to realize what they can do,” whether it’s a group of school children who chose to visit her backyard instead of hold a pizza party, or a couple of neophyte cheese makers who are intimidated by making blue cheese, “it’s fun and I like revealing the secrets of how easy cheese is to make.” www.cheesemakingclass.com
