From Green Beginnings to Deeper Luxury: Tracing the Evolution of Sustainable Luxury in Hospitality - a Retrospective

The Pioneering Days of Eco-Hotels

In the 1980s, Costa Rica emerged as a leader in ecotourism, setting the stage for the world's first eco-lodges. These early ventures shifted the local economy from agricultural expansion to conservation and eco-tourism, which helped preserve its lush jungles and provide a new economic backbone. Among these, Rara Avis and Selva Verde Lodge were trailblazers, focusing on sustainability before it was mainstream, although their basic amenities limited their appeal to wider audiences. However, these establishments were crucial in laying the foundational practices of sustainability such as solar energy use, water conservation, and effective waste management.

The Rise of Luxury Eco-Resorts and Glamping

As discerning traveler preferences evolved, so did the accommodations they sought. The rise of luxury eco-resorts and glamorous camping, or glamping, catered perfectly to these emerging desires. Notable examples from our esteemed HoteliersGuild members include John Hardy's Bambu Indah in Bali, Bill Bensley's Shinta Mani Wild in Cambodia, Luca Franco's Sarika by Amangiri, and Dereck & Beverly Joubert's Great Plains Conservation in Africa to name just a few. These venues masterfully combine the raw beauty of nature with the plush comforts expected of luxury accommodations. By integrating local culture and encouraging community engagement alongside high-end service, these trailblazers have significantly advanced the harmonisation of luxury with sustainability, demonstrating that the two can indeed enhance one another.

Contemporary 'Deeper Luxury' Hotels

Building on these foundations, the modern 'Deeper Luxury' hotel represents the pinnacle of sustainable luxury. These establishments are designed from the ground up with sustainability in mind, utilising energy-efficient architectures, local sourcing,

and renewable energy investments. Moreover, they extend their sustainability efforts to social aspects by supporting local communities and maintaining ethical labor practices. Examples include Starhotel's E.c.ho. Milan and the Red Carnation Collection's Twelve Apostles Hotel & Spa, both of which exemplify how deep luxury integrates comprehensive sustainable practices.

The Role of HoteliersGuild, the HoteliersGuild Academy of Hospitality Arts and Initiatives Like the SIRIUSACADEMYAWARDSCAMPAIGN

HoteliersGuild, since its inception, has been instrumental in promoting these shifts. With initiatives like the HGAHA (HoteliersGuild Academy of Hospitality Arts), we have furthered education in sustainable hospitality practices, ensuring the next generation of hoteliers is equipped to maintain and innovate in this field. Additionally, the SIRIUSACADEMYAWARDCAMPAIGN, curated by the Preferred Travel Group and supported by IU-International University of Applied Sciences, the Study Access Alliance our NGO partners and collaborations with NOW and the Sustainable Hospitality Alliance, has made significant strides in fostering talent and sustainability through scholarships and specialised training for underprivileged communities, aligning closely with the industry's goals for a more sustainable future.

Conclusion

The transformation from the rudimentary eco-lodges of the 1980s to today's 'Deeper Luxury' hotels reflects a broader societal shift toward valuing environmental and social responsibility. The hospitality industry is uniquely positioned to redefine luxury, making it synonymous with sustainability and ethical practices. As this trend continues, the luxury sector is not just responding to a market demand but is actively participating in the global movement towards a more sustainable and equitable world. The work of entities like HoteliersGuild has been pivotal in this evolution, proving that luxury and sustainability are not only compatible but indeed complementary.

Advancing SustainableLuxury in Hospitality

As a long-standing member of the HoteliersGuild and Honorary Co-founder of the HGAHA (HoteliersGuild Academy of Hospitality Arts), I am deeply committed to nurturing a culture of sustainable and profound luxury in the hospitality and travel sectors. It is both an honor and a privilege to contribute to our collective efforts towards these goals.

In 2020, when we welcomed Beyond Green into our family, we were driven by a firm belief that this collection of hotels and resorts would significantly advance sustainability in the industry. Today, I am proud to affirm that our belief was not misplaced. Beyond Green doesn’t just focus on the environmental mantra of "reuse, recycle, reduce" — it goes several steps further by emphasizing local hiring and sourcing, as well as celebrating and preserving the cultural heritage of each destination.

The philosophy behind Beyond Green is clear: true sustainability cannot be achieved in isolation. It requires a holistic approach. To this end, each member of Beyond Green undergoes a stringent vetting process that aligns with globally recognized sustainable tourism standards and the United Nations Sustainable Development Goals. This includes an on-site inspection based on more than 50 sustainability indicators spanning three key pillars: environmental impact, social responsibility, and economic health. Members are then re-inspected every two years to ensure ongoing compliance and improvement.

Furthering our commitment to sustainable development, I am delighted to highlight our involvement with the HoteliersGuild SIRIUSACADEMYAWARDCAMPAIGN, curated by the Preferred Hotels Group. Through this initiative, we have sponsored 30 scholarships for aspiring but underprivileged female African students. These scholarships are more than just financial aid; they represent an opportunity for these young women to gain specialized knowledge in sustainability. This education will occur both at the IU-International University of Applied Sciences and through internships at various member hotels in Africa and beyond.

This comprehensive approach ensures that as we promote luxury and comfort, we do so with a keen awareness of our environmental footprint and social responsibilities. It’s about providing an exceptional experience that also preserves the essence of each unique destination for future generations.

In championing these initiatives, we not only redefine the concept of luxury but also reinforce our dedication to creating a more sustainable and equitable world. It is a journey that goes beyond mere compliance — it is about setting a benchmark for excellence and responsibility in the luxury hospitality sector.

In an era where the call for sustainability echoes louder with each passing day, the hospitality and tourism industry stands at a pivotal crossroads. The choice is clear: evolve through collaboration or stagnate in isolation. As we navigate this critical juncture, the formation a partnership between the World Sustainable Hospitality Alliance and the HotelierGuild, heralds a beacon of hope and a testament to the power of collective action.

The imperative for this industry-wide transformation is driven by five key pillars: the regulatory environment, shareholder demand, community wellbeing, consumer desire, and the aspirations of employees seeking purposeful employment. These pillars are not just the foundation of our mission but the very essence of our call to action. The transition to Net Positive Hospitality, where the industry contributes more than it consumes, is not merely an ambitious goal but a necessary evolution for survival and relevance in the 21st century.

Public and private partnerships stand as the cornerstone of our strategy. The alliance between the World Sustainable Hospitality Alliance and the HotelierGuild is not just a partnership but a powerful collaboration aimed at propelling the entire sector towards a regenerative and inclusive future. This synergy is pivotal as we strive to transform Net Positive Hospitality from an aspirational concept to a tangible reality.

Our journey is marked by initiatives aimed at harmonizing industry metrics, streamlining reporting, and financing the transition towards sustainability. The establishment of the World Academy for Sustainable Hospitality is a forward leap towards nurturing the next generation of industry leaders, equipped with the knowledge and skills to drive sustainable practices forward.

The SIRIUSACADEMYCAMPAIGN, pioneered by the HoteliersGuild, epitomizes the spirit of innovation and commitment to change. By focusing on underprivileged aspiring hospitality students, promoting

women in leadership roles, and championing sustainable design practices, the Guild is laying the groundwork for a transformative impact.

Our collaboration extends beyond the private sector, embracing public sector partnerships that are vital for broader impact. The alliance with Belize as an inaugural Destination Partner is a prime example of how countries can play a pioneering role in sustainable tourism development. This partnership not only showcases Belize’s commitment to responsible tourism practices but also sets a precedent for global engagement in sustainability.

The Pathway to Net Positive Hospitality, a culmination of years of cooperation between various sectors, embodies the essence of collaboration. With contributions from UN Tourism, the International Organization for Migration, the International Labour Organization, and numerous private sector entities, this pathway is a blueprint for the industry, by the industry.

VIRTU Resort & Residences - A New

Paradigm in Sustainable Luxury

However, the road ahead is fraught with challenges. The complexity of global sustainability issues demands a unified approach, transcending competitive boundaries for the greater good. The alliance's commitment to bringing the Guild and other partners on a global Net Positive journey is a clarion call to all stakeholders in the hospitality and tourism industry. By working together, pre-competitively, we can reshape the future of the sector and ensure that Net Positive Hospitality becomes more than just an ideal; it becomes the standard.

As we stand on the brink of transformation, the message is clear: collaboration is not just the best way forward; it is the only way. Together, we can navigate the complexities of sustainability, drive innovation, and create a lasting, positive impact on the global hospitality landscape. The power of collaboration is immense, and by harnessing it, we can ensure a sustainable future for the hospitality and tourism industry.

As the Founder and CEO of VIRTU Hotels & Resorts, and a proud member of both the prestigious HoteliersGuild and the HoteliersGuild Academy of Hospitality Arts, I am profoundly dedicated to advancing Environmental, Social, and Governance (ESG) practices within the luxury hotel sector. At VIRTU, our initiatives marks a pivotal moment in the evolution of the luxury real estate and wellness hospitality sectors. Based in Vancouver, BC, our enterprise is not just creating spaces but is setting new benchmarks for sustainable living and cultural integration.

VIRTU’s approach integrates lifestyle medicine with an unwavering commitment to sustainability and cultural richness. Working alongside Indigenous partners and local communities, VIRTU aims to not only transform landscapes but also to enhance the lives of its residents and visitors. The team, led by globally recognized experts like Alberto Apostoli, known for his sustainable spa architecture, is dedicated to pushing the boundaries of what luxury wellness real estate can achieve.

GLENN MANDZIUK WORLD SUSTAINABLE HOSPITALITY ALLIANCE

Join us on an enchanting journey spanning Bali to Greece, touching down in Milan and traversing through Africa, where we celebrate some of the finest Deeper Luxury properties championed by distinguished members and friends of the HoteliersGuild. Today, the traditional concept of luxury, once deemed at odds with sustainability, stands at a pivotal junction, demanding a transformative approach to how we experience opulence.

Together, we hold the power to uplift environmental and social standards globally and drive a shift in cultural values.

Consider the intriguing question: Can a grand palace hotel offer a luxury experience comparable to that of a tented camp nestled in the wilderness? Moreover, is sustainable operation feasible for such grandeur?

In contemporary times, luxury is expressed in subtler, more meaningful forms—through the crafting of unforgettable experiences and the demonstration of heartfelt consideration. Whether opulent or understated, true luxury creates a deep emotional bond with guests, resonating through every aspect of the service and experience.

As we continue to evolve and redefine what 'luxury' means, it must consistently connect with and captivate the guests. Modern luxury thrives on rich, personal storytelling. This can be seen in the provision of traditional cuisine prepared following recipes handed down from the owner’s grandmother, or through narratives that bring a hotel's heritage to life, all while encouraging guests to engage with and appreciate local customs and cultural practices. Join us in celebrating these stories at the heart of deeper luxury, where tradition meets sustainability in the most unexpected locales.

BAMBU
INDAH Ubud, Bali

In The Wild of Ubud

Arguably the World’s Most Exotic Hotel

Reflecting on my initial meeting with John Hardy years ago at his Bali residence, I remain deeply impressed by his unique commitment to sustainable hospitality. Bambu Indah, his luxurious boutique hotel, is tucked away in the traditional settings of Bali, offering guests a peaceful retreat in tune with the natural world. Founded by the famed jewelry designer John Hardy and his wife Cynthia, the resort embodies their passion for environmental care and creative expression. In 2005, they placed eleven antique Javanese bridal homes, 'Joglos', collected during their travels, atop a jungle cliff overlooking verdant padi fields. Initially a private sanctuary for friends, it soon transformed into the public haven of Bambu Indah. Over the years, it has grown thoughtfully, extending towards the river and featuring

a collection of stunning, unique structures crafted from bamboo—their hallmark material. Today, Bambu Indah attracts global travelers to its vision of a regenerative paradise, where everything used is returned to the earth as compost. This idyllic garden of Eden is not just their home but a shared sanctuary for all who visit.

Resort Highlights:

Bambu Indah Resort is a mesmerizing fusion of historic charm and cutting-edge bamboo architecture, all dedicated to ecological balance. Nestled amidst lush natural surroundings, it offers a serene getaway. Positioned on a scenic jungle cliff, the resort gazes out over expansive padi fields, framed by a rich tapestry of tamarind, cinnamon, palm, and bayan trees that cascade down to a magical river adorned with natural swimming pools.

The Concept

The Canadian-born jewellery designer John Hardy and his American wife, Cynthia, opened Bambu Indah — or “beautiful bamboo” in Balinese — after selling their company, John Hardy, in 2007. The longtime Bali residents turned four transplanted Java houses (each the former residence of a Javanese nobleman and each more than 100 years old) into a rustic retreat on land adjacent to their own ironwood treehouse along the Sayan Ridge in Bali’s bucolic center.

Minutes downriver from Ubud’s most decadent resorts, Bambu Indah’s riverfront compound looks out at the stunning cascades of the Ayung River, rice fields, a Hindu temple called Pura Dalem Gede Bongkasa and, beyond, the multiple volcanic ridges surrounding Mount Batu Kau.

The Look

Eco-luxe. Stone paths lead from the bamboo-encased reception area through rice paddies at various stages of growth and past a soaring black bamboo multipurpose structure reminiscent of an ancient ship.

Bambu Indah’s natural swimming pool is virtually indistinguishable from an indigenous pond, thanks to a recyclable black rubber membrane and tiny river fish.

The Rooms

Casually roped off from other recycled structures that house the Hardys’ own houseguests, the four one-room cottages are made of hand-carved teak. Named Padi (rice), Kuno (antique), Kuning (yellow) and Afrika by 12-year-old Carina Hardy, they are filled with various treasures collected on the family’s travels, including Tibetan vegetable-dye carpets, Kalimantan shields and Ethiopian rawhide benches.

Mosquito-netted four-poster beds would benefit from some pillow top fluffing, but each room’s movement-sensitive night lighting is a nice touch. The rustic ambience of the interiors is complemented by other modern add-ons like airconditioning, wireless Internet access and bathrooms with hand-hammered copper sinks, plush towels and open-air rainfall showers.

“I wanted to create an experience for people that was unlike any other. Local is so important!
Why travel if you end up in the same-old, sameold?”…

reflects John Hardy on the creation of Bambu Indah, pinpointing the unique allure of the hotel nestled in Ubud, the spiritual heart of Bali.

In their quest to provide a lush escape, the Hardys adorned the hotel with eclectic artifacts collected from their travels. The décor boasts traditional Persian carpets, crystal geodes from South America, African furniture, and a range of ikats and cotton throws and bedding from the Indonesian Archipelago, each piece adding to the rich, global tapestry of the hotel's atmosphere.

The newest additions to the hotel, the Moon and Copper

were designed by Hardy alongside his daughter Elora, the creative director of Ibuku, a local architecture and design firm renowned for its innovative use of bamboo. The Moon House, shaped like a crescent basket, showcases the firm's inventive design and structural expertise. Similarly, the Copper House features a sinuous bamboo structure sheathed in tin copper. Discussing the design, John said, "We looked at the view and it was sublime. But how do you build without blocking the view? So we left them open and built a netted sleeping arrangement so there would be the possibility of privacy and safety. I like to call one of them the Love Nest, and the other is called the Moon House because there’s a beautiful copper bathtub in the garden for moonlight

“The hotel offers a connection to nature and a sense of wonder and possibility. We believe that by opening up to a landscape, culture, and nature you can get more joy.”
Elora

describes the hotel’s

essence.

Reaching these new houses is an adventure in itself, accessed by a steep series of stone steps or a unique twoperson mining elevator encased in bamboo, carved directly into the cliffside.

As President and CEO of Starhotels Group, Honorary Ambassador of the prestigious HoteliersGuild and Honorary Board Member of the Board of Governors at LeadingHôtelières Chapter, an esteemed initiative dedicated to fostering gender equality and empowering women in leadership roles within the hospitality industry, I am deeply committed to lead the way in Environmental, Social, and Governance (ESG) practices within the luxury hotel sector.

Across all its operations and activities, Starhotels is dedicated to a long-lasting commitment to sustainability, social responsibility, and outstanding corporate governance. Our company embodies the philosophy of eco-friendly, locally sourced consumption. Indeed, we are devoted to shaping the way for both future generations and the community our hotels serve through strategic investments on ecological transition, championing Italian craftsmanship, responsible water resource management, and adherence to a stringent code of ethics.

Our ability to maximize and optimize hotel performances, devise a strategy and structure growth in a steady and sustainable way, propels us to strive for ever more ambitious challenges. One of these is making a difference in the ESG sector, a topic that is becoming increasingly vital from an ethical standpoint in the long-term vision of the hotel industry.

In this area, 2023 marked significant strides for Starhotels, with a particular focus on ecological transition. Our company has started an ambitious long-term investment plan, set for the period 2023-2028, with a financial commitment of 10 million Euros –among them, 2 million Euros have been already allocated. This strategy is designed to decrease the Group's total energy usage by over 30% by 2026, with a strong commitment to emission reduction, with the tangible goal of cutting its carbon footprint by 10,000 tonnes of CO2 over the next three years.

Among our extended hotel portfolio, Starhotels E.c.ho. in particular is a significant case study in the world of sustainability, a benchmark for green hotels in Italy. The building is

OPED SPECIAL EDITION

considered a gem of eco-friendly construction, enabling the hotel to not only receive the European Hotel Design Award for its sustainable design in 2012, but also the Green Globe certification. In 2023, Starhotels E.c.h.o. was the first city hotel in Europe to join the global portfolio of Beyond Green.

The hotel ensures a fully eco-friendly experience by minimising the environmental footprint of each guest stay. It promotes an ethos of energy conservation among its staff and guests, and is actively engaged in tangible initiatives that benefit the local area and community.

Social responsibility also plays a critical role in the luxury hotel industry, influencing the environment, society, and guest satisfaction. Supporting local communities, prioritizing employee well-being, and engaging in social causes are key aspects for us.

Aiming at uncompromising luxury, investing in customisation and attention to detail in order to make our hotels unique and distinctive, led us to strengthen the connection with the local areas and communities to which our hotels belong.

With this in our mind, in 2019 we launched a significant project of ours called "La Grande Bellezza - The Dream Factory”, a contemporary patronage initiative designed to promote and heighten Italian expertise and craftsmanship. Fortunate to be backed by two significant institutions dedicated to preserving exceptional Italian craftsmanship such as Associazione OMA (Osservatorio dei Mestieri d’Arte) and Fondazione Cologni dei Mestieri d’Arte, the project is a powerful way to shine a light on heritage, beauty and high quality of Italian craftsmanship, encompassing a range of beneficial measures to support the small local businesses and, at the same time, open the extraordinary ateliers for our guests to experience beauty at first hand: authenticity, I can say, is my idea of the ultimate, luxury experience in hospitality.

The transformation of Hotel Splendido into E.c.ho followed a year-long renovation focused on sustainable innovation.

SGREAT PLAINS CONSER VATION Sitatunga

Led by the powerful mission of Great Plains’ Founders Dereck & Beverly Joubert’s to protect natural habitats and uplift local communities, ESG is at the forefront of all strategic decision making at Great Plains.

“ ESG at Great Plains

We are proud Relais & Chateaux members under their global sustainability standards. But the Sustainability of our camps is only one side of our impact, empowering and uplifting local communities and protection ecosystems is the other.

Nature's Blueprint Eco Design for the Future

Sitatunga Private Island Botswana

Opened in mid-July 2023, Sitatunga Private Island emerges as a stunning addition to Botswana's Okavango Delta. This exclusive water-based Réserve Collection Safari Camp is a vision brought to life by HoteliersGuild Ambassadors Dereck Joubert, CEO of Great Plains, and Beverly Joubert, cofounder of Great Plains. Nestled in the upper reaches of the Okavango Delta, Sitatunga Private Island is built on a raised, wraparound private deck made from repurposed railway sleepers. It offers intimate accommodations for up to eight adults, distributed across two separate and beautifully designed private suites, and a spacious Sitatunga Private Island Suite. The latter, a doublebedroom suite, comfortably hosts either four adults or a family comprising two adults and up to three children, spanning approximately 6534 sq.ft.

The camp’s construction from almost entirely recycled materials infuses it with a sense of rebirth and

sustainable luxury. Guests are invited to indulge in a 'slow safari' experience, reflecting both the tranquility and the eco-conscious ethos of the setting. Each suite includes a luxurious indoor lounge, elegantly designed bathrooms with both baths and separate showers, and a private deck with outdoor lounging areas and a personal pool overlooking the lagoon. Dereck and Beverly Joubert have infused the interiors with authenticity and a deep respect for the historical occupants of the area, the Bayei people, as seen in the suites' architectural homage featuring giant bamboo fisherman basket structures. Every material used in the construction of Sitatunga Private Island has been meticulously sourced by Dereck and Beverly over the years, making the camp a true labor of love. The suites are designed to blend seamlessly into the natural backdrop of the Okavango Delta, evoking a vivid sense of its ancestral roots while honouring the local environment.

AUTHENTIC AFRICA

THE FEEL at SITATUNGA

Sitatunga Private Island provides guests with the most authentic ‘Robinson Crusoe’-inspired experience and a refuge for the soul in the Okavango Delta. As elaborated by Dereck Joubert, CEO of Great Plains:

““Sitatunga Private Island is unlike any other Great Plains property, pushing the eco-design boundary in a remote region in Botswana whilst also offering the highest level of hospitality and accommodation. It is also one of the few locations in the world where one can still see sitatunga, the rare aquatic antelope, from camp and by boat, which is the main activity here in addition to walking. It is deep Okavango Delta and, as such, is rich in birding. Head out on a boat to view elephants, crocodiles, and hippos all day, every day. I know our guests will enjoy every moment of it, as I do.

Conservation Tourism Conservation Education

With it’s Conservation Tourism model, Great Plains’ mission to protect these ecosystems and biodiversity is clear. Great Plains hires and trains women from local communities to become Wildlife Rangers who are empowered to monitor and manage the protection of the area. They have also proven to be inspiring ambassadors and knowledge-sharers with their communities. We also host annual Conservation Education Kids Camps to inspire and educate the next generation who are custodians of these ecosystems.

To date we have trained and hired 14 Female Rangers and hosted 1,332 kids in Conservation Education Kids Camps.

Commenting on the Great Plains Foundation’s Female Ranger Programme, Great Plains Foundation co-founder Dereck Joubert said:

“I am thrilled to tell you about this incredible and vital, project, which holds equally tremendous significance for gender equality and conservation, the challenging of gender norms, reducing human-wildlife conflict, and building the next generation of local change-agents prepared to conserve African wildlife and wild landscapes. Women want to work in the conservation front line sector and we have been overwhelmed by applications, a hundred fold more than the positions we advertised. Our commitment is to these women, these positions and to saving the wildlife we are so passionate about protecting.

There is no doubt: the world’s ecosystems are in a fragile state. Poaching and hunting are ever-increasing threats to the Africa we know. This initiative will fortify our defences and empower women. We have a timely opportunity to shift our strategy to better protect vulnerable species, environments, and people. Our Female Ranger Team will provide a unique opportunity for marginalised women to be seen and respected by their community and the world around them. We cannot stand to let poaching and hunting fragment our land, destroy our animals, and desensitise our communities. This step in the process is only the beginning; future iterations hold the potential to preserve vast landscapes and change the course of our planet’s future.”

Guests gather in the inviting lounge and dining area, where tea and coffee flow freely all day long. As the sun sets, the fire pit becomes the perfect gathering place for stories and stargazing, while dinner in our camp's wine cellar promises an unforgettable culinary experience.

Indulge in delicious meals in the main dining area, or opt for a more intimate dining experience on your private veranda upon request. For those staying at the Private Island Suite, located on the opposite side of the main area, personalized à la carte meals are served in the seclusion and comfort of your suite, ensuring a truly unforgettable stay.

Farm to Fork | School Food Program

Great Plains believes in nourishing our bodies and minds. Many of our camps have on-site vegetable gardens to provide nutritious and fresh food to our guests. Our partner communities reached out with a concern of lack of attendance in school due to a lack of food, Great Plains set up the School Food Program to ensure all school kids had a better chance at progressing in education. Since the program started, the attendance is back up to 100% and sometimes a little over!

To date Great Plains has sponsored 3.99 million meals to schools.

“You can make something delicious that is good for you without compromising on taste, which is what we are showcasing at all our camps,” said Dereck Joubert, CEO of Great Plains.

ARISTI MOUNTAIN RESORT & VILLAS GRECCE

Caution: Bears and Beyond Adventure Awaits in the Wilds of Zagori

Within the rugged terrains of the Epirus region and the towering Pindus mountains, road signs cautioning against the presence of bears hint at the untamed nature of this part of Greece. Far from the sundrenched beaches typically depicted in travel brochures, the area near the Vikos Gorge—a marvel of natural beauty featuring icy streams and lush banks sprinkled with medicinal herbs and wildflowers—offers a glimpse into a different kind of Greek paradise. Known in Slavic as Zagori, or ‘the land behind the peaks,’ this region served historically as a mountainous bastion, its inaccessibility shielding it from the Ottoman Empire and, more recently, sparing it from the grips of widespread tourism.

Nestled on the outskirts of a village, the Aristi Mountain Resort commands a breathtaking vista of the valley and the Astraka mountain. Constructed from local stone, wood, and slate, the resort’s architecture reflects the traditional style of the area, with tiered houses and terraces that meld seamlessly into the rocky landscape. From here, a network of paths and historic mule tracks, lined with 18th-century stone arch bridges, weave through the landscape, connecting the 46 villages that stitch together the fabric of Zagori. The ambient sounds of sheep bells and the fragrance of wild rose mixed with woodsmoke drift through the air, invoking a sense of nostalgia for an idyllic past.

While much of Greece basks in the swelter of summer, with temperatures soaring to 40 degrees, Aristi offers a cool sanctuary. Yet, the allure of Aristi Mountain Resort extends beyond its climate. It's an invitation to reconnect with the wild, an embrace of the pristine wilderness that surrounds it. This commitment to conservation has not only distinguished Aristi as one of National Geographic’s Unique Lodges of the World but also highlights its role in preserving the natural splendor. Guests can indulge in rejuvenating treatments using organic oils at the spa or take a dip in the springwater swimming pool, each moment accentuated by unforgettable views across the gorge.

IMMERSE YOURSELF IN LOCAL MOUNTAIN LIVING IN NORTHERN GREECE

Embrace the mountain lifestyle amidst the stunning landscapes of northern Greece. Experience life like a local as you explore the charming villages, ancient traditions, and breathtaking scenery of the mountainous regions. From hiking through rugged trails to savouring local delicacies, immerse yourself in the rich culture and natural beauty of northern Greece for an authentic and unforgettable adventure.

Savouring Salvia: A Taste of Zagori's Heritage at Aristi

Salvia Restaurant is a celebrated gastronomic gem, named after the local herb known for its aromatic and medicinal qualities. This culinary retreat is renowned for its dedication to the rich food heritage of the area, artfully combining local ingredients with innovative culinary techniques to delight the palate.

For those eager to dive deeper into the flavours of Zagori, Salvia offers exclusive one-day Greek cooking classes. Participants have the unique opportunity to gather fresh produce from the Aristi organic garden and greenhouse, culminating in the preparation of a sumptuous three-course meal. Each session concludes with a glass of fine local wine, rounding out a truly authentic and immersive dining experience.

In Greece, we know how to respect tradition and adopt its values. A long time ago, people in Epirus traditionally celebrated and honoured the hard work that was put into the farms and the grasslands, by preparing a family table where everyone shared freely their life stories and experiences. By collectively enjoying the meal that was prepared with love and care, people were developing strong family ties. These are the dynamics that we aim to bring into the table of “Salvia”.

When VIRTU Resort & Residences joined the prestigious HoteliersGuild and the HoteliersGuild Academy of Hospitality Arts we were warmly and personally greeted by Frank Pfaller and crossed a welcoming threshold into a unique global community of luxury hospitality experts who believe in large, noble business with accountability.

A collaboration from award-winning world leaders about what defines luxury includes VIRTU’s brand advisor Dr. Daniel Langer of Equité Brands who has devoted his professional and academic career to furthering this topic about designing and operating differently. A subject that motivates our lead architect, the visionary fellow HoteliersGuild member Alberto Apostoli, Founder | CEO of Studio Apostoli, who will combine creativity and ESG accountability with each VIRTU structural and design decision. This fresh approach to luxury will set new benchmarks and inform the next generation of designers, builders and operators.

Plans about the future of our profession within the hospitality and real estate sectors – as a new luxury brand – requires a unique perspective on service where people, place, and profit are valued in future-forward ways for planetary and community wellness.

VIRTU has a focus on the future of personal human wellness. The intersection of modern science, ancient modalities and creative expression can define what it means to be our best healthful selves – whether an aspiring athlete or an individual rebounding from illness or surgeries. Our unique vision informs our lifestyle medicine direction, strategies and tactics and we are proud to work with Enflingo

International world-renowned wellness consultancy.

Perhaps our biggest goal is a cultural one –where truth and reconciliation, respect and giving inform our work. VIRTU is proud of its alignment with Indigenous leaders and the communities they serve here in our Canadian backyard and beyond.

In Portugal, Norway, and Fiji foray projects are under due diligence with the help of luxury asset management firm Moccino International.

Combined, the essence of the newly formed VIRTU Hotel & Resorts, based in Vancouver, Canada and our global team of design, construction, sustainability and operational experts, is summarized in our singular mission: to inspire the spirit.

Through Frank Pfaller and his organizations, we felt an instant fit and at home on the journey to exploring business and community potential that global alliances can unlock. It’s a place of smart insights from the best in the business. Of note, we are excited to see Glenn Mandziuk, CEO of the Sustainable Hospitality Alliance inaugurated to the HoteliersGuild recently. He has expressed support for VIRTU’s mission and mandate.

Together we stand poised to help set new standards for true sustainability, cultural richness and 360-degree health while protecting the communities where we build and operate.

Alongside visionary, hard working individuals and organizations like those who are gathering under the shared HoteliersGuild umbrella, we move forward in positive action and a new tourism and hospitality reality.
