Las ferias, ¿espacio para los negocios?

Wine fairs? Good for business?

Los primeros meses de año suelen ser sinónimo de ferias relacionadas con el mundo del vino. Enofusión (Madrid), Vinisud (Montpellier), Alimentaria (Barcelona),… son algunas de las ferias del sector que se han desarrollado durante los últimos meses en Europa, y de algunas de las cuales les hacemos un pequeño resumen en esta edición.

Al respecto de ellas, la pregunta que nos hacemos y que también les planteamos a ustedes es: ¿son realmente provechosas estas ferias en el sector del vino? ¿Realmente se hacen negocios más allá de los clientes habituales? ¿La inversión que hacen las bodegas para estar presente en estos eventos es recuperada en forma de ventas? Son preguntas que dejamos en el aire y que nos gustaría que nos diesen su opinión a través de nuestro mail opinion@selectuswines.com.

En este número, la bodega del reportaje es un referente mundial y es la bodega española que todo el mundo conoce: Vega Sicilia. En el número anterior, entrevistamos a su director general, D. Pablo Alvarez, y en este número les explicamos algunos de los cambios/ inversiones que se han realizado en los últimos años para modernizar las instalaciones y adecuarlas a los tiempos que corren y a las necesidades propias de la empresa.

El cava también reclama su espacio en este número a través de un reportaje realizado por Ramón Francàs. Algunos productos compiten, de tú a tú, con los mejores champagnes y es por ello que le dedicamos un artículo a su excelencia.

Y para “rematar” el número, entrevista a otro de los grandes viticultores mundiales: Alvaro Palacios. Nos da su punto de vista al respecto de varios e interesantes temas, algunos de los cuales pueden llegar a ser conflictivos o que den lugar a reflexionar.

Una vez más, y ahora que vamos a cumplir dos años… relájense y disfruten.

In the wine world, the first months of each year are usually synonymous with wine or wine-related fairs.

Enofusión (Madrid), Vinisud (Montpellier), Alimentaria (Barcelona), etc., are some of the shows which have taken place in Europe in the last few months and we summarize one or two of these in this issue.

But we have to wonder whether these shows are genuinely worthwhile for the wine industry? Besides meeting existing customers, do they really generate business? Do the time and money invested by the producers to exhibit at these events really pay back in terms of sales? In this issue, the winery featured in our ‘The Winery’ report is an international beacon, the Spanish bodega: Vega Sicilia. In the previous issue, we interviewed its CEO, Pablo Alvarez, and in this issue we report on the changes/investments which Vega Sicilia has made over recent years to modernize its facilities, to meet today’s needs and the company's particular requirements.

Spanish cava also claims its share of space in this issue in a report by Ramón Francàs. Some cavas compete on an equal footing with the best champagnes and for this reason we have devoted an article to the excellent quality of many of these.

And to "top off" this issue, we are publishing our interview with another great and internationally renowned winemaker: Alvaro Palacios. He shares his views on several interesting topics, some controversial and others giving us some food for thought.

As we approach our second anniversary, we are pleased to be inviting you, once again, to sit back and enjoy the issue.

Fundada en 1864, es el icono del gran vino español y un mito dorado en la cultura del vino universal. 150 años se cumplen de su fundación y tras su azarosa vida -ha pasado por varias manos desde su nacimiento- siempre supo mantener intacta la aureola y el glamour de sus vinos. Desde 1982, en manos de la familia española Álvarez, y comandada enológicamente por la serena, sensata y sabia mano del enólogo Xavier Ausás. Las grandes inversiones que se acometen en esta mítica firma son constantes y sólo para propiciar la única meta que esta firma tiene: la búsqueda de la excelencia. Invierten grandes cantidades de dinero para producir lo mismo, pero mucho mejor. Ni una botella más. No hay camino para la calidad; la calidad es el camino.

The great Spanish wine icon and shimmering myth within the international wine world was founded in 1864. 150 years have passed since then and during its eventful life (it has had several owners since birth), the halo and glamour surrounding its wines are undiminished. It has been in the hands of the Spanish Alvarez family since 1982 and managed, oenologically speaking, by the steady, wise hand of winemaker, Xavier Ausás. This legendary company continues to invest heavily in pursuit of one single objective: excellence. Large sums of money are devoted to producing the same wine, but better. Not a bottle more. There is no route to quality, quality is the route.

La última, una espectacular nave de elaboración, completamente nueva. “Hemos ganado con esta nueva nave muchísima precisión en la elaboración de nuestros vinos, pero también muchísimo más trabajo”, confiesa Xavier Ausás, el director enológico de la firma desde hace años. También nueva tonelería. Ambas construcciones situadas justo detrás de los primitivos edificios, y la capilla de Santa Cecilia, que de ahí debe venir lo de Sicilia. Sobrias edificaciones de ladrillo con marcado carácter castellano que conforman esta especie de ciudad-estado república independiente dedicada

The winery has seen six extensions and modifications since the current owners acquired it in 1982. The latest is a completely new and spectacular production facility.

“With this new facility we have gained a great deal of precision in our winemaking, but also a lot more work,” confesses Xavier Ausás, the company’s long-standing director of winemaking. There is also a new cooperage.

Both buildings are located just behind the early buildings and the chapel of Santa Cecilia, which must be behind the Sicilia name. Sober brick edifices of distinct Castilian character make up this set of buildings which has the air of some kind of independent city-state, dedicated to the great wine. It is located about 40 kilometres from –9

al gran vino, a unos 40 kilómetros de Valladolid, justo a pie de la carretera nacional 122, en plena Milla de Oro de la Ribera del Duero.

Aunque la carretera pasa por su misma puerta, la elegancia de Vega Sicilia se manifiesta también precisamente por su poca “manifestación”. La casa del gran vino español se esconde discreta tras una exuberante frondosidad y tras unos sencillos carteles que indican

al viajante que se encuentra ante el sancta sanctorum del vino español. Son muchos los que paran el coche y se hacen fotos ante el cartel indicador: Unos jardines espectaculares, al más puro estilo japonés, con 300 tipos de árboles y probablemente la mayor colección de arces japoneses, unos 30, que existen en nuestro país. Lagos, bucólicos puentes, no puede faltar la casa de madera casi flotante sobre el lago… Un bello escenario que ha costado más de 25 años ponerlo completamente en marcha, producto de la gran pasión que Pablo Álvarez, director y consejero delegado (ver entrevista en el número anterior de Selectus Wine) siente por la naturaleza.

No sabemos si hace 150 años, cuando estas tierras eran propiedad del Marqués de Valbuena (de ahí el otro nombre de la otra legendaria marca de la casa, el Valbuena 5º Año), habría algunos árboles por aquí, pero nada de lo que hoy es esta ciudad –estado república independiente llamada Vega Sicilia, existía como tal.

Spectacular gardens, in true Japanese style, with 300 types of trees, and probably the largest collection of Japanese maples (around 30) in Spain. Lakes, bucolic bridges, even a wooden house almost floating on the water… beautiful scenery that has taken over 25 years to create, a labour of love by President and CEO, Pablo Albarez (see interview in the last issue of Selectus Wines).

We do not know if there were trees growing here 150 years ago, when these lands were owned by the Marquis of Valbuena (hence the name of the company’s other legendary brand, the Valbuena 5º Año),but there were certainly nothing like those found in today’s independent city-state of Vega Sicilia.

And, of course, there were certainly no oak and cork trees, now being planted in plots closest to the Duero to preserve the vineyards and increase the estate’s plant mass and biodiversity. Will Vega Sicilia use them for corks or barrel – 11

Alcornoques, robles y cepas

Y desde luego, lo que no había con toda seguridad eran robles y alcornoques, que están siendo plantados en las parcelas más cercanas al Duero para preservar los viñedos, incrementar la masa vegetal y la biodiversidad de la finca, y ¿por qué no? tal vez en un futuro muy lejano, utilizarlos para corcho o duelas de barrica. Porque en esta casa todo se hace con visión de futuro. “Si los

alcornoques necesitan cuarenta años para poder obtener de ellos buen corcho y los robles nada menos que doscientos años para proporcionar madera de calidad para las barricas, ya me dirás…” comenta Xavier Ausás.

Poco a poco, tiempo y espera... Espera a las nuevas cosechas, espera de los clientes para conseguir cupos...

Estamos en Vega Sicilia. Nada de prisas.

Del País Vasco llegó el hacendado Lecanda que adquirió la finca a mitad del siglo XIX a su noble propietario.

Ni rastro de viñedo. Los plató algunos años después, pocos, su único heredero, que trajo muchas variedades de sarmientos franceses a estas tierras castellanas por primera vez en la historia del viñedo español y convirtió parte de la finca en bodega. Allí elaboraban de todo, brandy, cognac, olorosos, claretes, licores, todo lo que se consumía a finales del siglo XIX. Ni rastro aún de Vega Sicilia ni del nombre. Las diferentes elaboraciones que hacía llevaban su nombre: Eloy Lecanda.

Más o menos a principios del siglo XX la bodega se vendió y los nuevos responsables de la misma empeza-

try and acquired the property in the mid-nineteenth century from its noble owner of the time. Not a vineyard in sight.

But Lecanda’s only heir, was to plant a few some years later, bringing many varieties of French vine shoots to these Castilian lands for the first time in Spanish wine growing history, and converting part of the estate into a winery. Brandy, cognac, olorosos, clarets, liquor,…they made it all here, all the beverages imbibed in the late nineteenth century. No sign yet of Vega Sicilia or the name. The various beverages produced all bore the owner’s name: Eloy Lecanda.

Around the start of the twentieth century, the winery was sold and its new managers began to produce wines based on more modern criteria for the time, faithfully following the Bordeaux model. In 1915, they created the two iconic brands, Vega Sicilia and Valbuena, which, if I calculate correctly, means that both will be 100 years old next year.

Maybe something to celebrate?

The property continued to change hands, although its two brands, as well as the philosophy and skill of its winemakers, who happily stayed in place and passed on their – 13

ron a elaborar vinos con criterios más modernos para la época, siguiendo fielmente el modelo bordelés, y crearon en 1915, las dos marcas míticas, Vega Sicilia y Valbuena que según mis cuentas, el año que viene cumplirán ambas 100 años. Habrá que celebrarlo.

La propiedad siguió pasando por diferentes manos, aunque sus dos marcas y la filosofía y el buen hacer de sus enólogos, que felizmente se mantenían y sucedían,

This legend begins in the earth and the vine, and I approach both with curious reverence, knowing that the soil is the digestive system of the vine, and that the barrel is the salt on the steak. Nice comparisons which I picked up at Vega Sicilia and which I (and the intelligent reader…) will not forget.

contribuyeron a la construcción de esta gran leyenda.

Leyenda que comienza en la tierra, en la cepa y a ellas me acerco con curiosa veneración, a sabiendas que el suelo es el aparato digestivo de la cepa, y la barrica es la sal del entrecot. Buenas comparaciones que he aprendido en esta casa y que no voy a olvidar, ni el inteligente lector tampoco.

Constante rotación

La finca tiene aprox. 1000 ha y de ellas dedica 200 al viñedo. De estas 200 hectáreas siempre hay 50 en rotación de manera que la edad media del viñedo es de 35 años.

Hay cepas de más de 80 años cuyas uvas van para el Único. Hay cepas muy viejas que son la base genética que se lleva al vivero de palos de sus propios viñedos. Hay 2.200 cepas /ha con el marco de 3’5 x 1’5 m. Hay 20 tipos de suelos que diferencian a las parcelas y cada parcela tiene un patrón y cada patrón va a un depósito… Suelos extremos, cantos rodados junto al rio y otros muy arenosos.

The estate has around 1,000 hectares and 200 of them are under vine. Of these 200 hectares, there are always 50 in rotation so that the average age of the vines is 35 years.

There are vines of over 80 years of age whose grapes go into Único. There are some very old vines which are used as a genetic base taken to the vine cuttings nursery from their own vineyards. There are 2,200 vines/hectare with a 3.5 x 1.5 m planting frame. There are 20 soil types distinguishing the plots and each plot has a specified pattern and each one goes into its own vat…Very diverse soils, boulders by the river and other, very sandy areas. Semi-arid in midsummer – you can find desert roses in its soils! They use no herbicides and only till the earth with small tractors. There is no vegetal cover. There are pheromone traps distributed throughout the vineyards to confuse grapevine moths. Just to manage the vineyards and land, Vega Sicilia employs 50 permanent staff all year round! Before the vine is planted, the land is disinfected by planting other crops which provide the necessary substances and minerals.

rosas del desierto!! No se usan herbicidas. Sólo laboreo con pequeños tractores. No hay cubierta vegetal. Hay trampas para las mariposas con feromonas para engañarlas en pequeñas casetas que se distribuyen por el viñedo. Sólo para ocuparse del viñedo y de la tierra la casa Vega Sicilia emplea 50 personas fijas todo el año!!! Se desinfectan las tierras plantando previamente a la vid, otros cultivos que les aportan las sustancias y minerales necesarios.

With such painstaking care, the vines express themselves in a different manner and their fruit develops particular characteristics. This new production facility has been built to reinforce this uniqueness. They want to delve deeper into the roots of each plot and the soul of each batch of wine. All this, combined with their traditional crianza system, turns legend into reality: Vega Sicilia Único, Reserva Especial or Valbuena 5º Año.

Con tan excelsos cuidados, las cepas se expresan de manera diferente y sus frutos desarrollan características peculiares. Para enfatizar en esta singularidad, se ha construido esta nueva nave de elaboración. Se busca profundizar en las raíces de cada parcela y en el alma de cada lote. Todo ello unido a su tradicional sistema de crianza, convierte la leyenda en realidad: Vega Sicilia Único, Reserva Especial o Valbuena 5º Año.

Xavier Ausás resume de manera muy didáctica este sistema de crianza. “Una primera fase de musculación con barricas nuevas que le proporcionan estructura.

Otra segunda, de educación, en barricas usadas de tercer y cuarto año que ensambla los aromas de la fruta y la madera y proporciona armonía. Pero la madera vieja cansa al vino y tiene que afrontar la tercera fase, la de la recuperación en grandes tinos de roble”.

Xavier Ausás sums up the crianza system in a very instructive way. “The first phase is bodybuilding in new barrels which give it structure. A second phase, of education, takes place in barrels used for three and four vintages, and blends the fruit and wood aromas together and brings harmony. But the old wood tires the wine so it has to undergo the third phase, that of recovery in large oak vats“ •

Álvaro Palacios “El gran vino clásico no lo hace el hombre,

lo hace la viña” “Great classic wine is made not by man, but by the vine” ARIADNA OLIVA No nos sorprende que un hombre nacido en La Rioja, encima de una bodega, haya acabado dedicando su vida al vino. Heredero de la tradición vitivinícola de su familia estudió en Francia y California, combina sus proyectos personales en el Bierzo y el Priorat con la bodega familiar Palacios Remondo en Alfaro (La Rioja). Paseamos por entre sus viñedos riojanos y nos habla con pasión y entusiasmo de la tierra, la importancia de las viñas viejas, la tradición y los grandes vinos clásicos, de los que es un absoluto defensor y habitual consumidor.

¿Cómo se inició en el mundo de la enología?

Nací encima de la bodega, somos nueve hermanos y cuatro de nosotros trabajamos en el sector del vino. Hay en nosotros una gran parte de tradición familiar, siempre hemos tenido presente el vino. Después ya me especialicé estudiando enología en Francia y el respeto que tienen por las tradiciones y suelos, me cautivaron de tal manera que marcaron mi vida para siempre.

Así pues da una especial importancia al terreno de procedencia del vino.

Exacto, creo que la gente tiene que saber de dónde viene el vino, la pirámide de prioridades sería: país, región, municipio, paraje y finca singular. De hecho, cuando tomas un Musigini de la Borgoña no piensas en pinot noir, piensas en ese lugar preciso. Me he vuelto tradicionalista en nuestra cultura agrícola, disfruto y me doy cuenta de que el gran vino clásico no lo hace el hombre, lo hace la viña y tú te conviertes en un humilde guardián de ese terreno, no nos pertenece, pertenece al patrimonio.

It is perhaps not surprising that a man born above a winery in Rioja should have dedicated his life to wine.

Born into a traditional winemaking family, he studied in France and California, and combines his personal businesses in Bierzo and Priorat with running the Palacios Remondo family winery in Alfaro (Rioja). As we walked through his Rioja vineyards, he spoke to me, with passion and enthusiasm, about the soil, the importance of old vines, tradition and the great classic wines, of which he is a fervent champion and regular drinker.

How did you get started in the world of winemaking?

I was born above the winery, we are nine brothers and sisters and four of us work in the wine industry. The family tradition is important to all of us, wine has always been part of our lives. I studied oenology in France and I was so fascinated by the respect the French show for their traditions and soils that it has stayed with me for life.

So you attach particular importance to the wine's terroir of origin ?

That’s right, I think people have to know where a wine comes from, the order of priority from the bottom up should be : country, region, district area, specific local area and single estate. In fact, when you take a Burgundy Musigny, for example, you don't think "Pinot Noir", you think of that specific location. I have become a traditionalist in our viticulture, I understand and appreciate the fact that great classical wine is made not by man, but by the vine. We are really only humble custodians of this land, which is not ours, but part of a shared heritage.

Busco su lado saludable también, su sensación de energía y vitalidad, los encantos y su magia.

En el año 2000 tomó las riendas de la bodega familiar Palacios Remondo en La Rioja, ¿Qué objetivos tiene?

What sensations do you seek to bring out in your wines?

I want to stimulate their various traits.

I strive to capture the emotional state, I think of wine less as a physical entity and more as something that should thrill and excite, I understand wine through its emotion and the pleasure and well-being it brings. I also seek its healthy side, the sensation of energy and vitality, the charms and the magic.

In 2000 you took over the Palacios Remondo family winery in Rioja, what are your goals here?

To continue the family legacy, respect the native varieties and create new products. For example, we have a new vineyard in traditional style from which we will certainly get a great wine but

Después de estudiar en Francia me impactaron los grandes vinos clásicos, volví a la Rioja y el ambiente era un tanto industrial, era difícil encontrar aquel pequeño viñedo que buscaba. La perspectiva de vivir fuera tanto tiempo me dio otra visión y no me importaba cambiar de región, así que busqué otras zonas vinícolas. Un amigo de la familia, René Barbier, me llamó para que fuera a Tarragona, tras cuatro años con Finca Dofi, compré la viña de l’Ermita, en 1993, era el comienzo de la gloria.

One of your personal challenges is in Priorat, how did you end up in Tarragona?

I was really impressed by the great classic wines while studying in France and when I returned to Rioja, I found the ambience to be somewhat industrial. It was difficult to find the kind of small vineyard I was after. The fact that I had lived outside the region for so long had given me another perspective and I did not mind changing region, so I looked in other areas. A family friend, René Barbier, called me up and suggested I come to Tarragona. After four years with Finca Dofi, I bought the l'Ermita vineyard in 1993 - it was the start of great things.

L'Ermita is the wine from this vineyard, can you tell us something about it?

It is like tending a garden, an indulgence. The wine is crystal purity, as the grapes go through more during the harvesting, it makes them more consistent. It is a transparent product, which elegantly expresses the qualities of the vineyard’s greenish, granitic slate soil and its quirky, cool, shady location, which faces north-east and out over the sea, reflecting the light and inhaling the sea breeze aromas.

How has the production of this wine evolved?

I have had two periods, the first was from 1994 to 2004, where there was 25% Cabernet from another vineyard, but I evolved and since 2006 I have made the wine with grapes exclusively from the l'Ermita vineyard. The classic wine is now 90% Granacha, 8% Samsó and 2% white varieties. Its restrained, sublime and delicate strength is captivating. Only 800 bottles were released in 2008, but usually there are around 1,500.

The responsibility of an entire old world wine producing country.

Describe drinking L'Ermita…

It is a wine of contained strength and energy, a wine of unique beauty, of exclusive indulgence. A wine of balance and sensitivity, sometimes you feel dizzy when you taste it. The grape is pure vegetable fibre, we find Mediterranean fruit aromas, fresh, vibrant red fruit, thyme flowers, mineral and acidic power which turns it into a secret elixir.

Its structure is based on the acidity and minerality not on tannins. It is very lively and full of vitality.

What other ongoing projects do you have in Priorat?

We produce other wines such as Camins del Priorat, Les Terrasses and Finca Dofí, but I would like to mention that we have created the vi de vila/village

¿Qué otros proyectos desarrolla en el Priorat?

Elaboramos otros vinos como Camins del Priorat, Les Terrasses y Finca Dofí, pero me gustaría destacar que en Priorat hemos creado la DO vi de vila/vino de municipio. Esto significa que puedes usar el nombre del pueblo como marca del vino de forma colectiva, muy interesante porque, al fin y al cabo, bebemos lugares y no personas, ahora podemos tomar el Vi de la Vila Gratallops de Alvaro Palacios La bodega Descendientes de J. Palacios es otro de sus proyectos personales, ¿Cómo surge?

Es un cúmulo de suertes y circunstancias. En el Bierzo comparto el proyecto con mi querido sobrino Ricardo, con quien me une la misma pasión por el gran vino clásico. La zona estaba muy depreciada y nuestro reto era de agallas, totalmente a contra corriente allá por el año 1999. Elaboramos vino de corte regional como Pétalos, también de municipio con el Villa de Corullón y las parcelas singulares como Las Lamas, Moncerbal y La Faraona, vino casi sobrenatural. ¿De qué vinos con su firma de enólogo está más orgulloso o tiene un recuerdo especial?

Como decía Alejandro Fernández de Pesquera: “los vinos son como los hijos, unos buenos y otros mejores”. Así que de un modo u otro estoy orgulloso de todos, soy consumidor de grandes vinos clásicos y responsable de viñedos como la Faraona o L’Ermita. Estudié en Francia y a mi vuelta me decidí a

The Descendientes de J. Palacios bodega is one of your personal businesses, how did it come about?

It was the cumulation of luck and circumstance. I share the business in Bierzo with my nephew, Ricardo, who has the same passion for great classic wine as I do.

The area was very underrated and it was a huge challenge, going totally against the grain back in 1999. We produce regional wine such as Pétalos, village wine such as Villa de Corullón and single vineyard wine such as Las Lamas, Moncerbal and La Faraona, an almost supernatural wine.

La Entrevista – The Interview encontrar pequeños grandes viñedos y a hacer grandes vinos para todos los consumidores, siento que lo estamos consiguiendo y esto me llena de orgullo profesional. ¿Qué piensa de las puntuaciones Parker?

Estoy de acuerdo. Siempre he estado puntuado con notas altas, por ejemplo L’Ermita, que no baja de 96 puntos.

Pero mis vinos no son estilo Parker, allí triunfan los vinos de impacto inmediato. Robert Parker u otros catadores son grandes profesionales pero nunca dejan de tener su gusto personal. ¿Considera que las DO limitan al enólogo?

Considero que es importante la presencia de las DO, pero creo que hace falta un mayor control administrativo.

La pena es que la máxima categoría de las DO en España sea la regional, hace falta incidir más en el territorio.

El Priorat es el primero que ha dado un paso hacia una DO más concreta. Creo que es una mala costumbre de España hacer denominaciones de origen demasiado amplias territorialmente. Ha llegado el momento de amparar administrativamente a los mejores municipios, parajes y viñedos excepcionales de España.

Wine quick test: Una variedad especial de uva… la uva autóctona del lugar, la que creó la perfecta afinidad entre el terreno y el tiempo.

Una copa de vino debe ir acompañada de… momento adecuado, que implica deseo de tomarlo. También la mejor compañía, no por ser la más querida, sino la más agradecida y divertida.

Para ti el vino es… mi vida y mi libertad.

find small, top quality vineyards where I could make fine wines for all wine lovers.

I think that we are getting there and this fills me with professional pride.

What do you think of the Parker scores?

I agree with them. I have always received high scores, for example L'Ermita has never been awarded less than 96 points.

But my wines are not "Parker style", where the most successful wines are the more upfront ones. Robert Parker and other tasters are very professional but they still have their own, personal tastes.

Do you think that the D.O.s are restrictive for the winemaker?

I think it is important to have the D.O.s, but I think that tighter administrative control is needed. It is a pity that 'regional' is the highest category of D.O. in Spain, we need to be protecting smaller areas within the region more. Priorat is the first to have taken a step toward a more concrete D.O. I think Spain’s very broad territorial designations of origin are a bad thing. The time has come to designate and protect the best villages, small local areas and exceptional vineyards in Spain.

Quick wine test: To make a good wine you need… the best vines.

A special variety of grape is… the native grape of the place i.e. the grape that has developed a perfect affinity with the earth and the climate.

A glass of wine should be accompanied by… the right time to drink it, which means the desire to drink it, and also the best company, not necessary your nearest and dearest, but people who are the most appreciative and fun.

La Valpolicella Valpolicella PEDRO BALLESTEROS MW (Master of Wine) Pocas regiones tienen un nombre tan vinícola como Valpolicella. Es la “vallis polis cellae” de los etruscos, el valle de muchas bodegas. Los romanos la convirtieron en una de sus denominaciones de origen más relevantes, de donde venía el épico vino “acinatico” (textualmente, hecho solamente de granos de uvas, ver más abajo).

En la Edad Media, los señores de Verona y por tanto de la Valpolicella, los Scaligeri, bien conscientes de la importancia que tenía el vino para el futuro de sus feudos, reglamentaron su producción y comercio en todo detalle. La posterior dominación veneciana de la zona permitió que los vinos de Valpolicella fuesen apreciados en lejanas ciudades turcas y asiáticas. Hoy por hoy, los vinos de Valpolicella, sobre todo, los amarone, hacen figura de icono entre los amantes del gran vino. Algunos de ellos pagan cifras astronómicas por los amarone más distinguidos.

La Valpolicella se extiende al Norte de la ciudad de Verona, de fama mítica por su arena romana y por sus cantados amantes, Romeo y Julieta. La región consiste en une serie de valles de orientación Norte-Sur que se extienden casi en paralelo desde la proximidad del lago de Garda hasta la suave transición hacia la zona del Soave y la llanura. Se divide en varias subzonas, siendo las dos más preciadas, Classico y Valpantena, las más occidentales.

Few regions have a name so associated with wine as Valpolicella. It is the “vallis polis cellae” of the Etruscans, the valley of many cellars. The Romans turned it into one of its most important appellations of origin, from which came the epic “acinatico” wine (literally, made only from grapes berries, see below). In the Middle Ages, the Scaligeri, who were the lords of Verona and therefore of Valpolicella, were aware of the importance of the wine to the future of their fiefdoms and so they regulated every aspect of its production and trade. The subsequent Venetian domination of the area meant that the wines from Valpolicella came to be enjoyed in distant Turkish and Asian cities. Today, the wines of Valpolicella, especially the Amarone, are worshipped by fine wine enthusiasts, some paying outrageous prices for the most distinguished Amarone.

The Valpolicella region extends north of the city of Verona, historically famous for its Roman arena and its star-crossed lovers, Romeo and Juliet. The area is made up of a succession of valleys running north-south, extending almost in parallel from near Lake Garda down to where the land smoothly transitions into the Soave region and the plains. It is divided into several sub-areas, the two most prized, Classico and Valpantena, are to the far west.

Centuries of premium agriculture have resulted in an anthropomorphic landscape of great beauty, marked by thousands of kilometres of “marogne”, stone walls which, in some cases, are works of art. El clima es algo más cálido de lo que cabría esperar por la latitud de la Valpolicella, bastante más al Norte que nuestro Pirineo. El efecto termo-estático del lago de Garda, y la protección que el monte Baldo ofrece frente a los vientos fríos que soplan de los no muy lejanos Alpes mantienen un calor precioso para la maduración de las uvas.

La precipitación es abundante, más de 1000mm por año. Como sabemos, mucha agua no es buena para la maduración fenólica de las uvas tintas, que tienen necesidad de una cierta carencia de agua. La naturaleza de los mejores suelos de la Valpolicella, llamados “biancone”, da el factor de calidad al buen vino de la región, puesto que este suelo tiene una escasa capacidad de retención hídrica, sobre todo cuando se encuentra en las laderas donde nacen los mejores vinos de la Valpolicella.

En 1822, un estudioso, Pollini, contó 82 variedades diferentes que se cultivaban en esta zona. Hoy por hoy tenemos cuatro variedades principales: corvina, corvinone, rondinella y molinara. La casi totalidad de los vinos de Valpolicella son un coupage entre algunas o todas estas variedades, pero es indudable que corvina es la variedad clave, jugando un papel en todo equivalente al de tempranillo en Rioja Alta.

Es la variedad que da fruto, color y tanino, mientras que corvinone se considera un pariente un poquito menor de corvina, rondinella es claramente secundaria por su falta de carácter para brillar en solitario y molinara pasa por momentos de menos consideración debido a su color más pálido.

En cuanto a los sistemas de cultivo, la Valpolicella ofrece un tratado de historia de la viticultura para los ojos curiosos. The climate is warmer than you might expect for Valpolicella’s latitude, much further north than the Pyrenees, for example. The thermostatic effect of Lake Garda, and the protection afforded by Mount Baldo against the cold winds blowing from the not too distant Alps, retain precious heat for the ripening of the grapes. Rainfall is abundant, over 1,000 mm per year. As we know, a lot of water is not good for the phenolic ripening of red grapes, which need a certain lack of water. The best soil in Valpolicella, called “biancone”, is the quality factor in the region’s better wine, since this soil has poor water retention, especially on the slopes where the best Valpolicella wine comes from.

The scholar, Pollini, counted 82 different grape varieties grown in the area in 1822. Today we have four main varieties: Corvina, Corvinone, Rondinella and Molinara. Almost all Valpolicella wines are a blend of some or all of these varieties, but certainly the Corvina variety is the most important, playing a role not dissimilar to the Tempranillo in Rioja Alta. It is this variety which provides fruit, colour and tannin, while Corvinone is considered a slightly lesser cousin to Corvina, Rondinella is clearly a secondary grape variety as its lack of character prevents it from shining alone, and Molinara tends to be overlooked due to its paler colour.

As for the growing methods, Valpolicella offers an essay on the history of viticulture for those interested. There are still vines grown according to the method devised by the Etruscans over two thousand years ago - up against the trunks of fruit trees.

In these vineyards, the wide space between the vines is covered with arable crops, vegetables or potatoes. The higher quality of the wine obtained from the best quality soils led to a move away from Etruscan systems to more intensive models and to growing in pergolas which primarily involves completely covering the available area with vines, trained at a certain height and leaving the clusters hanging down below, lovingly protected from the sun. The ‘parras’ in Spain bear a certain

My favourite is a small producer, Terre di Leone, whose “Dedicatum” offers a hymn to the terroir. Produced from a mixture of 14 varieties, all historically planted in the region, the wine is distinguished by its softness and freshness and by its cheerful fruitiness and liveliness on the palate. Unlike the barroque style, heavy wines, it possesses the complexity of a lively wine. A gem.

This wine excites me for an important reason – it does not have to resort to concentrating the bunches by human means, it can rely on its own terroir. But generally speaking, Valpolicella wines tend to be of little consistency and not much colour. Some winemakers obtain more body by blending in Merlot, the

Since time immemorial, Valpolicella wines have sat in the pantheon of great wines due to techniques of artificially drying the grapes, i.e the Amarone and, to a lesser extent, the Ripasso and Recioto wines. Over 1,500 years ago, Cassiodoro, a magistrate in the service of King Teodorico, praised the ‘acitánico’ wine and described its production process, which is incredibly similar to the one used today. In short, an Amarone is made from grapes that have been harvested at full maturity and are transformed into raisins in drying rooms, some more traditional than others. The grapes therefore lose water and gain in concentration of everything else - sugar, colour, acidity, etc. The raisins are vinified as red wine, which then undergoes fairly long ageing in wooden containers of various sizes.

volátil consecuentemente elevada, a veces muy agradable, aromas de ciruela y arándanos con toques animales, y una influencia más o menos perceptible del roble. La mayor parte de los amarone modernos presenta además niveles apreciables de azúcar residual, que responden más al gusto de su mejor mercado, el americano, que a condicionantes de tipicidad o calidad.

Los mejores vinos envejecen muy bien, desarrollando aromas de sotobosque y humedad muy particulares. Prefiero el amarone como vino de postre y compañero de quesos refermentados que como maridaje de platos finos, pero es cuestión de gustos.

Dejo para otra ocasión darles una lista de vinos preferidos, que por necesidad sería larga y quizá poco significativa, y que además tantas guías proponen. Tampoco tengo espacio para hablarles de ripasso y recioto, otros dos estilos de vinos de la región, que dejamos para el futuro. Me quedo con la mención de un solo amarone, por su carácter distintivo. Es posible que Corte Sant’Alda de Marinella Camerani no sea el mejor amarone ni, seguro, el más famoso, pero es uno de los que más me impresionan. Se debe considerar que un amarone es el resultado de tantas técnicas que parecen tender a disminuir el peso del terruño en el balance final de calidad: la pasificación artificial, la vinificación en condiciones extremas con mucho alcohol y alta volátil, el azúcar residual, las crianzas en roble…. Y, sin embargo, Corte Sant’Alda tiene una precisión aromática que solo los vinos de los mejores terruños saben tener.

El fruto noble que se transformó en este vino puede con cualquier transformación, y nos habla de un terruño delicado, de un clima fresco y sano, de una larga estación. El hecho que la viñadora siga la bioclimática no puede ser en nada extraño a este prodigio, pero lo que más cuenta es que Valpolicella nos da algo único, a veces tremendamente placentero, siempre curioso e idiosincrático. No se pierdan ni la región ni sus vinos!

alcohol content, between 15 and 18%, with resulting high volatile acidity. They are sometimes very nice, with aromas of plums, blueberries and animal overtones, and varying degrees of oak character. Most modern Amarone wines also contain appreciable levels of residual sugar, which is more to do with the taste of its biggest market, the U.S., than with any criteria associated with quality or character. The best wines age well, developing very distinctive aromas of undergrowth and humidity. I prefer Amarone as a dessert wine and with fermented cheeses rather than paired with fine dishes, but it is purely a matter of taste.

I will give you a list of my favourite wines some other time, as this list would be long and perhaps not that useful, as these wines already feature in many guides. Nor do I have space to cover Ripasso and Recioto, two other styles of wines from the region - we will also leave these for a future issue. I will finish by mentioning one Amarone for its distinctive character. “Corte Sant’Alda” from Marinella Camerani may not be the best Amarone and certainly not the most well-known, but it is one of the wines that most impressed me. You could think of Amarone as being the result of many techniques which would appear to diminish the influence of the terroir within the final quality balance - artificial drying of the grapes, winemaking in extreme conditions with a lot of alcohol and high volatile acidity, residual sugar, ageing in oak, and so on. And yet, Corte Sant’Alda has an aromatic precision which only wines from the best terroirs usually possess. The noble fruit that became this wine can endure any transformation process, and speaks to us of a delicate terroir, a cool, healthy climate and a long growing season. The fact that the lady who makes this wine follows biodynamic principles must have something to do with this miracle, but what really counts is that Valpolicella can give us something unique, often extremely pleasant, always curious and idiosyncratic. Don’t overlook this exciting region or its wines! ●

El sector del cava, en la élite planetaria de los vinos espumosos de mayor prestigio y el que ofrece una relación de calidad al precio más competitivo, ha ‘descorchado’ una nueva era con cambios en todas sus instituciones, conjurándose para elevar el listón de la calidad y del prestigio, persiguiendo con determinación ‘cosechar’ mayores cotas de excelencia y, claro está, de valor añadido. Ya dijo Martin Luther King que todo trabajo que enaltece la humanidad tiene dignidad e importancia, y debe emprenderse con excelencia esmerada.

Entre los retos inmediatos que se ha marcado el Consejo Regulador del Cava destaca la firme voluntad de conseguir la categoría de Cava Calificado, una nueva herramienta con la que distinguir las mayores excelencias del cava, con estrictos requisitos y exigencias. En el marco del anteproyecto de ley de Denominaciones de Origen e Indicaciones Geográficas Protegidas de ámbito supraautonómico, en el que se incluye la DO Cava y en el que se está trabajando actualmente desde el Ministerio de Agricultura, Alimentación y Medio Ambiente.

Se trata, según el presidente del Consejo Regulador del Cava, Pere Bonet Ferrer, de “hacer justicia y poner al cava en el lugar que se merece ya que tenemos productos que son, realmente, fantásticos”. Se muestra convencido de que la nueva categoría de los cavas Calificados servirá de “estímulo” para elevar, aún más, el conjunto de las excelsas burbujas del cava. Desde el Consejo Regulador (CRC) del Cava se sigue abogando por los controles estrictos. El rigor en el control asegura, según el CRC, una calidad que queda refrendada en los

Among the immediate challenges facing cava’s Consejo Regulador (Regulatory Board), the greatest would seem to be the determination to obtain the “Cava Calificado” classfication, a new category to distinguish the higher quality cavas, with stringent requirements and conditions. This is encompassed within the framework of the draft regulations for the “Denominaciones de Origen e Indicaciones Geográficas Protegidas’ (Designation of Origin and Protected Geographical Indications), of supra-autonomic scope, which include the D.O.Cava and are currently being worked on by the Spanish Ministry of Agriculture, Food and the Environment. According to the president of the cava Consejo Regulador, Pere Bonet Ferrer, this classification is aimed at “obtaining justice and giving cava the place it deserves, because we have fantastic products.” He is convinced that the new ‘Cava Calificado’ classification will serve as a stimulus to further elevate all fine cava production.

The Consejo Regulador continues to push for strict controls. According to the Consejo, tight control ensures a quality reflected in the hallmark characteristics of each and every bottle, and is “the only guarantee for the consumer.”

He also highlights the “great talent” of the growers and winemakers, and the contribution and potential of wine tourism. In fact, he has proposed setting up a committee to determine cava’s strategy for the next decade, investing in marketing and promotional support and even more “state-of-the-art wine growing and winemaking” in order to dig deeper in the quest for higher quality. He also says more influence is needed in order to shake up drinking habits because, although cava is considered essential at formal events and celebrations, it is also the perfect partner for any drinking occasion. According to Bonet, there is no other wine, including champagne, which offers such a diverse range and as much versatility to pair with food.

According to the Minister of Agriculture, Miguel Arias Cañete, “in international markets, it is fundamentally important to position cava in the price segment which reflects its premium quality,” and he has announced that the Government will support promotional campaigns. He believes that “we must grow exports, but not sell cava as a cheap product.” The Catalan government’s Minister of Agriculture, Josep Maria Pelegrí, points out the “unstoppable” substitution of champagne by cava in the market place, and states that “anyone trying our cavas for the first time will see how good and inexpensive they are, and that our product offers excellent value for money, the result of the good work within the cava industry”

Pere Llopart i Llopart, the technical director at Llopart, believes that offering and promoting very exclusive products is a very good thing, “Long ageing, meticulous winemaking and above all, extensive work in the vineyards aimed at finding optimal balance with minimal intervention, carried out in the most natural, environmentally-friendly way possible, yet always guaranteeing the highest quality.” Llopart also believes that “today we have made good progress and are standing ready, with state-of-the-art tools and techniques, but we must not forget that it is essential to preserve our origins in order not to lose our identity.” The technical director at Freixenet, Josep Bujan, says the industry is increasingly investing in the development of premium quality products, “the proof is that today important opinion leaders do not hesitate to compare long-aged cavas to the best champagnes.” Bujan points out that “this does not mean that cavas produced in larger quantities have not improved too. Careful work in the vineyards and above all throughout the winemaking process has raised the quality bar significantly.” As for R&D, Freixenet’s technical director believes that “things have really moved forward

For Codorníu’s technical director, Bruno Colomer i Martí, the quality of a cava begins in the vineyard. While he recognizes that saying this is a bit of a platitude, he adds “but at the end of the day, we should not forget that the selection of the vineyard is what will determine the quality of the product.”

Aunque reconozca que es una afirmación de «perogrullo», añade que “sí es cierto que no debemos olvidamos de que la selección del viñedo es la que va a determinar la calidad del producto”. En este sentido también señala que “el considerar el VIÑEDO

Bodegas Torres decided to enter the cava market with exclusively high end products. Its CEO, Miquel Torres Maczassek, states that “Bodegas Torres have always believed in building brands, as these represent the best

Ton Mata, director de las cavas Recaredo, valora muy positivamente la eclosión de pequeños proyectos en el sector del cava que tienen como protagonistas a jóvenes viticultores “con raíces importantes” que están “dando prestigio apostando por el terroir y por productos de categoría”. Cree que esta dinámica es “imparable”, y “necesaria” para poder ganar mayores cotas de prestigio.

Mata opina, igualmente, que es “muy necesario” que en las etiquetas de las botellas de cava se identifique claramente si han sido elaboradas con uvas de su propiedad”. El director técnico de Gramona, Jaume Gramona, opina que «ya fue un gran avance la calificación de los cavas en Reserva y Gran Reserva”, pero añade que “ahora sería un buen momento para crear un área menor dentro de la amplia D O Cava protegida potenciando los cavas Gran Reserva”. En la viticultura del cava, según Jaume Gramona, “está claro que la tendencia es lo ecológico y/o biológico, buscando la máxima expresión del terroir y nuestro paisaje, incorporando y uniendo la viticultura con el concepto ‘granja’”. En este sentido también apunta que “el cava debe apostar por su identidad y su valor, que reside en su tierra y sus gentes. No hay que inventar nada sino creernos y revalorizar lo que tenemos en nuestras manos, y que depende exclusivamente de la unión de viticultores y cavistas”.

Bodegas Torres ha decidido entrar finalmente en el sector del cava apostando por la elaboración, exclusivamente, de productos de calidad.

Su director general, Miquel Torres Maczassek, manifiesta que “desde

Pascual has no doubt that “new generations of winemakers come increasingly prepared,” but insists that “after years of our profession being discredited, the time has come for our work to be valued.” The head of viticulture at Segura Viudas and René Barbier, Sebastià Raventos, says “raising the level of cava quality in the vineyards has always been my ambition.” He reminds us that “obtaining good grapes involves costs” and that “the time is right” for the industry to get itself back on track and create a “great future” for itself. Raventos, who is the son, grandson and great-grandson of wine growers, also points out that “a good cava starts on the vine” By its nature, cava has intrinsic quality, brought out by the talent of growers and winemakers who have been able to create an extensive range of products with different qualities and styles. They have also determined the international success of the important brands which strive to ensure that cava has the place it deserves in the pantheon of great wines. Tradition and the talent, work and enthusiasm of all the industry’s players, form all the ingredients being leveraged by the cava industry to obtain bigger rewards and greater excellence.

También ve “prioritario” el trabajo en las viñas y aplaude iniciativas como las que permitieron crear los Gran Reserva. Pascual no tiene dudas de que “cada vez más las nuevas generaciones de viticultores llegan más preparadas”, aunque insiste en que “tras años de desprestigio de nuestra profesión, ha llegado la hora de que se nos valore nuestro trabajo”. El responsable de viticultura de las bodegas Segura Viudas y René Barbier, Sebastià Raventós, afirma que “levantar el nivel de calidad del cava desde las viñas siempre ha sido mi gran aspiración”. Recuerda que “conseguir una buena uva tiene sus costes” y que el sector “está a tiempo” de enderezar el rumbo y ganarse “un gran futuro”.

Raventós, que es hijo, nieto y bisnieto de viticultores, también señala que “un buen cava nace en la viña”.

El cava, por su naturaleza, tiene una calidad intrínseca, potenciada por el talento de viticultores y enólogos que han sido capaces de elaborar una gama extensa de productos, diferenciando sus calidades y la trayectoria internacional de las grandes marcas que luchan para consolidar al cava en el lugar que se merece en el olimpo de los grandes vinos.

La suma de tradición, talento, esfuerzo e ilusión de todos los actores del sector se ha convertido en los ingredientes con los que el sector se conjura para conquistar mayores frutos, y más excelencia. Ya Aristóteles apuntó que “somos lo que hacemos día a día, de modo que la excelencia no es un acto sino un hábito”. ■

Los vinos de hielo son una de las rarezas más extremas que atesora el viñedo mundial: maravillas líquidas elaboradas al límite de lo imposible, cuando ya el invierno se ha apoderado de las viñas y las uvas no tienen más recursos que concentrar sus azúcares ante el inevitable congelamiento.

Icewines are one of the rarest of rarities from the world’s vineyards: liquid marvels created in virtually impossible conditions, when the vines are in the grip of winter and the grapes have nothing left to do but concentrate their sugars before the inevitable freeze.

Los vinos de hielo son uno de esos afortunados accidentes con los que muy de vez en cuando se suelen topar los humanos. Como el queso invadido por el moho, un viñedo súbitamente congelado resulta a primera vista una calamidad para cualquier productor.

Pero como los hay que se empecinan en sacar rédito de su trabajo, incluso cuando todo parece haberse ido al garete, tanto el Roquefort como el Icewine son hoy dos productos que han invertido la desgracia para convertirla en una afortunada bendición del dios Baco.

Like a cheese invaded by mould, a vineyard which is suddenly sheathed in frost would, at first sight, appear to be a calamity for any wine grower.

But there are those people who are determined to have their hard work pay off, no matter if everything seems to have gone pear-shaped. Roquefort and Icewine are two products where misfortune has turned out to be a blessing in disguise.

Dulzura y acidez Existen unas cuantas teorías acerca de quién fue el iluminado que tuvo la osadía de vinificar por primera vez uvas congeladas. Una de las más verosímiles asegura que los vinos de hielo nacieron en 1794 en el norte de Baviera, cuando unos desafortunados –en principio– viticultores se vieron sorprendidos por una helada y, de perdidos al río, decidieron vinificar aquellos granos congelados. El resultado fue sorprendente: un vino denso y concentrado, con intensa expresión frutal, dulce pero bendecido por una oportuna acidez. Lo llamaron Eiswein, como no podía ser de otra manera.

Sweetness and acidity There are a number of theories about who was the first visionary to attempt to vinify frozen grapes. One of the most credible has it that icewines were born in northern Bavaria in 1794, when a sudden frost took some seemingly unlucky growers by surprise but - in for a penny, in for a pound - they decided to vinify the frozen grape berries anyway. The result was surprising: a dense, concentrated wine with an intense fruity expression, sweet but blessed with promising acidity. Naturally they called it “Eiswein“.

Since then, many have emulated those bold Bavarian pioneers, both in Germany and neighbouring Austria.

From Germany and Austria to Canada The above serves to explain why icewines are few and far between and, of course, pricey, particularly those which are blessed by the hand of a great grower or winemaker. This is the case of the Austrians (Kracher, Schloss Gobelsburg, Müller and Nittnaus), or the Germans (Dr. Loosen, Burklin Wolf or Hermann Dönnhoff). The last of these, Dönnhoff, located in Nahe, produces one of the most famous “eisweins”, Oberhäuser Brüche, boasting 100 Parker points! The Germans all produce their icewines from Riesling, Gewurztraminer, Sylvaner and the Austrians, from Grüner-Vetliner.

Apart from the famous Austrian and German eisweins, if we take a tour of elixirs from the frozen vineyards of the world, we cannot ignore the Canadian icewines, which have been a big hit in recent years.

The draw of icewines from this great North American country really began in 1991, when the Inniskillin winery, in the Niagara Peninsula (Ontario) amazed everyone by picking up the Grand Prix d’Honneur at Vinexpo with its 1989 vintage icewine made from the Vidal grape, thereby thrusting Canadian wines onto the world stage. Since then, there has been no shortage of wines from Canada competing in international competitions and almost invariably winning top medals.

The huge success of Canadian wine has been due to the fact that they have worked out what wine would work best in a decidedly extreme climate.

The work of those behind Inniskillin has been fundamental in paving the way, setting the quality standards and building awareness of Canadian icewines around the world.

The Inniskillin experience The Inniskillin experience has played an important role in creating the explosive, new Ontario wine scene phenomenon with new wineries seeming to pop up overnight.

The Inniskillin winery was founded in1975 by Canadian, Donald Ziraldo

El “tirón” de los vinos de hielo del gran país de Norteamérica comenzó en el año 1991, cuando la bodega Inniskillin, asentada en Niagara Peninsula (Ontario) dio la campanada recibiendo el Grand Prix d’Honneur nada menos que en Vinexpo con su Icewine de Vidal de la cosecha 1989, abriendo las puertas del mundo a los vinos canadienses. Desde entonces, no faltan los vinos de gran país de la América septentrional en todos los concursos internacionales, casi siempre llevándose las mejores medallas.

La experiencia de Inniskillin En un fenómeno tan explosivo y reciente como es el panorama vinícola de Ontario –donde últimamente aparecen nuevas bodegas como por arte de magia– la experiencia de Inniskillin tiene una importancia primordial.

Eso sí, era necesaria una reconversión que reemplazara las rudas variedades que allí se habían aclimatado –como la Lambrusca– por otras de mayor finura: riesling, gewürztraminer, chardonnay...

Y a eso se abocaron los recién nacidos Inniskillin, que también apostaron por una variedad híbrida que acabaría por dar identidad al vino de hielo canadiense: la vidal. Y allí continúan, elaborando no sólo buen icewine, también excelentes vinos de mesa –sobre todo de pinot noir y chardonnay– y un vino de hielo espumoso que es la joya de la casa y que sorprende hasta los más experimentados.

Desde luego, hay muchos otros productores de Icewine canadienses que merece la pena destacar: Pilliteri, Peller Estate (del grupo Terlato Wines) y Jackson Triggs son algunas de las bodegas más notables de la región de Niagara. Aunque también se produce Icewine en la provincia de Nova Scotia, en Québec, e incluso al otro lado de la frontera con Estados Unidos (valga como ejemplo de ello Bel Lago Vineyards, en Michigan).

Antes de cerrar esta enopatía, mencionaremos que no todos los vinos de hielo proceden precisamente de viñedos septentrionales. En zonas más cálidas, algunos bodegueros se empecinan en experimentar con la congelación de las uvas recurriendo a métodos artificiales.

Algunos con buenos resultados, como es el caso del Celler Gramona, que hace unos años sorprendió con los primeros vi de gel (hoy rebautizados vi de glass, por imperativo legar) catalanes, monovarietales de riesling y gewürztraminer. Más recientemente, la bodega asentada en Sant Sadurní d’Anoia se sacó de la chistera incluso un vino de hielo espumoso, bautizado Frisant. ¿El primer cava de hielo?

Of course there are many other Canadian icewine producers worth mentioning: Pilliteri, Peller Estate (Terlato Wines Group) and Jackson Triggs are some of the wineries of note in the Niagara region. Icewine is also produced in the province of Nova Scotia, in Quebec, and even across the U.S. border (a noteworthy example being Bel Lago Vineyards in Michigan).

Frozen yet Mediterranean...

Before closing this feature, we should perhaps mention that not all icewines come from northern wine regions. In warmer climes, some wine producers are experimenting with freezing grapes by artificial methods. Some have obtained good results, as is the case with Gramona, who a few years ago surprised us all with the first Catalan “vi de gel” (now renamed “vi de glass”, for legal reasons) which are Gewurztraminer and Riesling single varietals. More recently, the Sant Sadurní d’Anoia based bodega has even pulled a sparkling icewine out of the bag, baptizing it “Frisant de gel“.

Dominio de Valdepusa se convirtió en 2.002 en la primera finca española que obtuvo la prestigiosa calificación de Vino de Pago como denominación de origen propia.

Esta bodega, situada en Malpica del Tajo (Toledo), pertenece al emblemático Carlos Falcó, marqués de Griñon, pionero en la plantación de variedades foráneas, la modernización de la viticultura y la elaboración de grandes vinos de Pago en España.

La finca es propiedad de su familia desde el año 1.292 y alberga 50 hectáreas de viñedos.

Uno de los primeros viñedos de nuestro país en los que se ha aplicado el riego por goteo, así como las innovadoras técnicas para la insolación uniforme de los racimos, conocida con el nombre de “canopy management”.

El conjunto de la finca incluye además una gran diversidad de flora con un gran jardín botánico de más de 300 especies y diferentes edificios históricos del siglo XVIII. Vista: Color rojo picota intenso de capa alta.

Nariz: Claros aromas a fruta negra madura con recuerdos a monte bajo junto con toques balsámicos. Gratas maderas en unión con los elementos especiados.

Boca: Sabroso y equilibrado. Taninos amables con cierto recuerdo balsámico y sensación de madurez. Vía retronasal compleja y aromática. Final de buena intensidad.

Comentario: El nombre del AAA parte del concepto de la busqueda de la excelencia y define la máxima solvencia de países o empresas y el de la singularidad, las tres hijas de D. Carlos Falcó, de personalidades fascinantes y edades muy diferentes, lucen en sus respectivos nombres: Alejandra, Tamara, Aldara, tres veces la letra “A”.

Es el vino icono de la bodega y procedente de una solo viñedo, la Finca Casa de Vacas.

Solo se produce en muy pequeñas cantidades fruto de las partidas más excepcionales en los mejores años.

Un vino muy al estilo moderno, en el que destaca su franqueza varietal, muy frutal, que en esta añada se presenta maduro y amable, destacando su carácter balsámico que aporta una rica frescura.

Perfecto con un solomillo de buey con foie y salsa de moras.

In 2002, Dominio de Valdepusa became the first Spanish estate to receive the prestigious “Vino de Pago” classification as its own appellation of origin. This bodega, located in Malpica del Tajo (Toledo), belongs to the well-known figure, Carlos Falcó, Marques de Griñon, who pioneered the planting of foreign grape varieties, the modernization of viticulture and the production of great “vinos de pago” (estate wines) in Spain.

The estate has been in his family since 1292 and includes 50 hectares of vineyards. It was one of the first vineyards in Spain to introduce drip irrigation, as well as innovative techniques for uniform insolation (direct effect of the sun’s rays on surfaces) of the clusters, known as “canopy management”. The estate grounds also boasts a great diversity of flora with a large botanical garden containing over 300 different species and various 18th century buildings.

Appearance: Strong, intense cherry red hue.

Nose: Distinct aromas of ripe black fruit with hints of scrubland and balsamic touches. Nice oak combined with the spicy characteristics.

Palate: Full flavoured and well balanced. Nice tannins with some balsamic aromas and giving an impression of maturity. Complex retronasal aromas.

Nice, intense finish.

Comment: The AAA name was inspired by the pursuit of excellence and is also the highest rating of solvency attributed to countries or companies. AAA also denotes uniqueness - Carlos Falcó’s three daughters, of different ages and each possessing fascinating personalities - the letter “A” appears three times in each of their names: Alejandra, Tamara and Aldara.

This is the bodega’s iconic wine and comes from a single vineyard, the Finca Casa de Vacas. It is only produced in very small quantities, from the most exceptional batches of wine in the best years.

This is a very modern style, very fruity wine, with a markedly forthright varietal character. In this vintage, it shows itself to be mature and pleasant, with a discernible balsamic character which adds a delicious freshness.

Perfect with beef tenderloin with foie gras and blackberry sauce.

Bruno Giacosa es apodado el maestro en Italia y es el máximo representante de la escuela de vinos elaborados con una mirada puesta a largo plazo. Vinos que nacen con la misión de crecer con el tiempo, en donde priman el nervio y la raza, la evolución lenta y el desarrollo aromático pausado y consistente.

Para disfrutar de todo ello se debe esperar: sus vinos no muestran casi nunca todo aquello que poseen la primera vez, y el consumidor debe dejarse seducir poco a poco. En la mayoría de los casos sus barbarescos requieren entre 2 y 4 años de envejecimiento en botella y se pueden beber hasta durante 20 años.

La obsesión sobre el terruño es una constante así como la búsqueda de la expresión propia de cada parcela. Giacosa piensa que un vino es típico de un lugar concreto cuando la historia lo ha consagrado, da igual si es tradicional o moderno, lo importante es si se ha alcanzado la capacidad técnica para saber extraer todo el potencial de la uva y se consiga así crear una simbiosis entre el vino y su territorio, entre la cultura y la historia de su zona.

Vista: Bello color rojo de intensidad media con bordes granate.

Nariz: Cautivadora. Aromas a frutos rojos maduros con notas suavemente florales acompañadas de aromas terrosos de hojas de te, mentolados y pimienta blanca.

Boca: De cuerpo medio, elegante y con un equilibrio impecable. Paso por boca frutoso con unos delicados taninos maduros que ayudan a expandir su sabor y a que permanezca de forma amable en su prolongado final.

Comentario: Asili es el modelo de elegancia y delicadeza con poco color pero con una fragancia que fascina. Proviene de un terruño de margas con arena desmenuzada y con una orientación sureste y suroeste a una altitud aproximada de 250 metros de altura. Sus viñas tienen una edad entre los 20 y 35 años.

Este 2.008 destaca por su finura y accesibilidad. Un vino que se muestra muy equilibrado en variedad de aromas y sabores frutales pero que envejecerá extremadamente bien desarrollando los característicos aromas a setas, trufa y caza.

Resultará sublime acompañado de una risotto de setas con trufa blanca de Alba.

Bruno Giacosa is nicknamed “the teacher” in Italy and he heads the school of wine made with a view to the long-term. These are wines specifically intended to grow over time, where nerve and breeding, slow evolution and steady aromatic development, are the dominant traits. To enjoy the result of all of this, patience is required: Giacosa’s wines virtually never reveal their full splendour on first acquaintance, and the drinker has to let himself or herself be seduced, slowly. In most cases Giacosa’s Barbarescos require between 2 and 4 years’ ageing in bottle and can be enjoyed up to 20 years later.

Obsession with the terroir and the quest for the expression of each vineyard parcel are constants. Giacosa considers that a wine is typical of the particular place assigned it by history. No matter whether it is traditional or modern, the important thing is whether it has reached the technical capacity to be able to extract the full potential of the grapes and thus successfully create a symbiosis with its terroir and the culture and history of its land.

Appearance: Beautiful red hue of medium intensity with a garnet rim.

Nose: Captivating. Aromas of ripe red fruits with soft floral notes accompanied by earthy aromas of tea leaves, menthol and white pepper.

Palate: Medium bodied, elegant with impeccable balance. Fruity on the palate with delicate ripe tannins that help to expand its flavours and enable it to linger pleasantly over a long finish.

Comment: Asili is a model of elegance and delicacy, with little colour but with a fragrance that fascinates. It comes from a loam soil with crumbly sand, on southeast and southwest facing terrain, at an altitude of 250 metres. The vines are between 20 and 35 years old.

This 2008 is distinctive for its finesse and approachability. The wine is very wellbalanced in terms of its variety of aromas and fruit flavours, but will also age extremely well, developing characteristic aromas of mushrooms, truffle and game.

Superb paired with a mushroom risotto with white Alba truffles.

La familia Montezemolo es una de las más antiguas familias nobles del Piamonte.

Aunque merecen un enorme crédito por sus productos vinícolas, su apellido va estrechamente ligado también a la famosa Scuderia Ferrari.

Cuidan los detalles tanto en el viñedo como en la bodega y el resultado son unas creaciones que representan la fusión de la forma tradicional con las técnicas modernas de la nueva escuela. Sus vinos están entre los más elegantes de Italia. Pueden envejecer casi tan bien como algunas de las tradicionales cuvee de elaboradores clásicos puros. Su aroma y su estilo son maravillosos y son más accesibles de beber desde su juventud.

Vista: Bello color rubí-granate de capa media.

Nariz: Bastante intensa y abierta con aromas a cerezas negras así como flores y hierbas aromáticas desecadas. Fondo especiado a canela y a cueros de sus maderas. Recuerdos terrosos a alquitrán.

Boca: Rico y refinado en el paladar. Notas de moras y regaliz. Equilibrio impecable gracias a sus excelentes y sedosos taninos y a su buena acidez, lo que le auguran una larga vida.

Comentario: Este barolo procede de Villero, un pago de una categoría excepcional, de gran riqueza, situado en la comuna de Castiglione Falletto, el municipio más pequeño entre las grandes zonas de producción del barolo. El viñedo está totalmente orientado hacia el sur, a una altura de unos 300 metros y los tipos de suelo están dominados por arcillas con sedimentos de aluvión de limo y arena.

Como buen barolo muestra a la perfección la naturaleza austera y aristocrática de éstos.

Posee un amplio buqué y una gran complejidad. Destaca por su raza y por un equilibrio impecable de sabores afrutados (moras, guindas) y especiados. Seguirá envejeciendo maravillosamente bien durante años.

Recreense con un lomo de ciervo con salsa de vino tinto y pure de castañas.

100% Nebbiolo

The Montezemolo family is one of Piedmont’s oldest noble families. Although they deserve enormous credit for their wines, their name is also closely associated with the famous “Scuderia Ferrari”.

The work in both the vineyards and the winery is meticulous, resulting in creations which exemplify the fusion of traditional processes with the modern techniques of the new school. Their wines are among Italy’s finest. They can age almost as well as some of the traditional wines from the classic producers. With fabulous aromas and style, their wines are easier to drink than many, even when young.

Appearance: Beautiful ruby-garnet hue of medium intensity.

Nose: Quite intense and open with aromas of black cherries, flowers and dried herbs. Spicy backdrop of cinnamon and leather from the oak. Earthy tar aromas.

Palate: Rich and refined on the palate. Notes of blackberries and liquorice.

Impeccable balance thanks to its excellent, silky tannins and good acidity, promising a long life.

Comment: This Barolo comes from Villero, an exceptional, vineyard producing wines of great richness, located in the Castiglione Falletto area, the smallest district area among Barolo’s major production areas. The vineyard is fully southfacing, at an altitude of around 300 metres, with soil types dominated by clays with alluvial sediments of silt and sand.

As a good Barolo should, it illustrates the austere and aristocratic nature of these perfectly. It boasts a full bouquet and great complexity, and is remarkable for its fine breeding and impeccable balance of fruity (blackberries, cherries) and spicy flavours. It will continue to age wonderfully well for many years to come.

En esta bodega es donde empezó el nuevo universo Priorat. René Barbier es considerado el padre del Priorat moderno de finales de los 80 que cristalizo en el movimiento “Clos”. El fue el primero que realmente creyó en el potencial de la zona para elaborar vinos de prestigio mundial. Un visionario que entusiasmó y reunió un grupo de amigos para liderar un sueño, una aventura y un nuevo estilo de vida.

Esta bodega familiar, en la que trabajan, padre, madre e hijos, fué fundada en 1.979 en el término municipal de Gratallops. Su Clos Mogador es todo un símbolo de una revolución y pura expresión del terruño del Priorat, y uno de los vinos más respetados de España.

Vista: Color picota amoratado, muy cubierto. Lagrima fina y lenta.

Nariz: Tremendamente compleja. Necesita tiempo en copa para ir revelando todas sus secuencias aromáticas. Aromas a hierbas mediterráneas y balsámicos. Evidentes notas a fruta negra madura junto con grafito.

Recuerdos a nuez moscada y cacao muy elegantes.

Boca: Goloso y envolvente. Excelente madurez con unos taninos redondos bien ensamblados. Recuerdos a fruta licuada y mentolados. Final de boca expresivo y muy largo. Pura raza Priorat.

Comentario: Nace de unos de los viñedos más bonitos de nuestro país, un auténtico anfiteatro de pizarra sobre el río Siurana, elaborado sobre todo con variedades locales pero sin olvidar otras de menos habituales.

Se trata de un Priorat distinto al resto, con una mayor tendencia al refinamiento y con menos concentración. En esta añada presenta una gran abundancia de notas balsámicas, minerales y de garriga, con cuerpo a la vez que muy equilibrado y tremendamente elegante.

Llega a su máxima expresión pasado unos años, siendo uno de los Priorats más constantes y más brillantes del mercado.

Recomendado con una paletilla de cordero al horno con hierbas aromáticas.

It was in this bodega that the new Priorat movement began. René Barbier is considered the father of “Modern Priorat”, an era which started in the late 1980’s and crystallised into the “Clos” movement.

He was the first to have real belief in the area’s potential to produce world-class wines. Barbier was a visionary who brought together and motivated a group of friends to follow a dream, to embark on an adventure and to create a new lifestyle.

This family-run winery, where two generation currently work side by side, was founded in Gratallops in 1979. Their Clos Mogador is the symbol of a revolution, the pure expression of Priorat terroir, and is one of the most highly-respected wines in Spain.

Appearance: A purplish Picota cherry colour, very dense. Fine, slow-falling tears.

Nose: Immensely complex. It needs time in the glass before it reveals all its aromatic sequences. Mediterranean herb and balsamic aromas. Discernible ripe, dark fruit and graphite notes. Very elegant aromas of nutmeg and cocoa.

Palate: Luscious, coating the palate.

Excellent maturity with smooth, well blended tannin. Aromas of blended fruit and menthol. An expressive, very long finish. A Priorat thoroughbred.

Comment: Originating from one of Spain’s most beautiful vineyards, a natural slate amphitheatre sitting above the River Siurana, growing predominantly local varieties but also some more unusual varieties. This Priorat is different from the rest, with a greater tendency to refinement and less concentration. In this vintage it boasts an abundance of balsamic, mineral and scrubland notes, with plenty of body, very well balanced and immensely elegant.

It will be at its very best after a few years’ ageing and is one of the most consistent and outstanding Priorats on the market.

We recommend pairing it with an ovencooked shoulder of lamb with aromatic herbs.

D’Arenberg es una de las bodegas más antiguas y famosas de Australia. Establecida en 1912 por Joseph Osborn, cuando éste compra los viñedos de “Milton Vineyards”, ya establecidos en la región al norte de los ayuntamientos de Gloucester y Bellevue, ahora conocido como McLaren Vale (South Australia) La Familia Osborn cultiva sus uvas desde 1912, y durante los primeros 50 años vendía su vino a granel, parte del cuál iba para el Reino Unido para consumo masivo. Fue en 1958 cuando el primer vino fue elaborado y vendido en botellas, llevando la distintiva franja roja diagonal en la etiqueta y el nombre de D’Arenberg.

Su enólogo, Chester Osborn, pertenece a la cuarta generación de esta familia dueña del establecimiento. Produce vinos de gran distinción y estilo, basados en el principio de la mínima intervención en el viñedo y unas técnicas de vinificación tradicionales.

Vista: Color púrpura intensamente oscuro.

Capa muy alta. Lágrima gruesa.

Nariz: Gran intensidad con aromas opulentos a cerezas y moras maduras entremezclados con aromas mentolados y chocolates.

Ciertas notas a cueros y café torrefacto.

Boca: Denso y rico, de textura untuosa y acidez refrescante. La dulzura en sus taninos lo hace muy elegante. Se repiten las notas en nariz con buena carga frutal y mentoles.

Potente y largo en su postgusto.

Comentario: El Dead Arm Shiraz es el vino estrella de la bodega tras la enfermedad (Eutypa Lata) que afecta algunas de las cepas más antiguas de D’Arenberg: reduce poco a poco uno de los “brazos” de la cepa a madera muerta para que el otro produzca pequeños volúmenes de uvas concentradas y muy sabrosas, ideales para elaborar un gran vino tinto. Este 2.009 es un vino sumamente concentrado y proporcionado, con una nariz mentolada, buena estructura, jugosa acidez y gran potencial de envejecimiento, todos los requisitos que hay que pedirle a un buen Shiraz australiano.

Casará a las mil maravillas junto a un jabalí estofado con salsa de chocolate y patatas.

100% Syrah

D’Arenberg is one of Australia’s oldest and most well known wineries. It was founded in 1912 by Joseph Osborn, when he bought the “Milton Vineyards”, already wellestablished in the region to the north of the Gloucester and Bellevue townships, now known as McLaren Vale (South Australia).

The Osborn family has been growing its own grapes since 1912, and for the first 50 years it sold its wine in bulk, part of which was shipped to the U.K. for mass-market consumption. It was in 1958 when the first wine was made and sold in bottles, bearing the distinctive diagonal red band across the label and the D’Arenberg name.

The company’s winemaker, Chester Osborn, is from the fourth generation of the original founding family. He produces wines of great style and distinction, based on the principles of minimum intervention in the vineyards and the use of traditional winemaking techniques.

Appearance: An extremely dark crimson.

Very high intensity. Thick tears.

Nose: Great intensity with sumptuous aromas of cherries and ripe blackberries mingling with menthol and chocolate aromas. Hints of leather and roast coffee.

Palate: Dense and rich, with an unctuous texture and refreshing acidity. The sweetness of the tannins makes it very elegant. The aromatic notes, which were apparent on the nose, come through again, with plenty of fruit and menthol. A powerful, long aftertaste.

Comment: Dead Arm Shiraz became the winery’s star product after the disease, Eutypa Lata, had affected some of D’Arenberg’s oldest vines: this disease gradually withers away one of the vine’s arms until it becomes dead wood, causing the other arm to produce low yields of concentrated grapes, full of flavour and ideal for making a great red wine. This 2009 is an exceedingly concentrated and well-proportioned wine with a minty nose, good structure, juicy acidity and great ageing potential - all you could want from a good Australian Shiraz.

A wonderful match with wild boar stew served with chocolate sauce and potatoes.

La Compañía Vinícola del Norte de España (conocida como CVNE o Cune) creada en 1879 son un conjunto de edificios, la mayoría del siglo XIX, colocados alrededor de un patio cercado por pabellones para la producción vinícola, maduración y embotellamiento del vino.

Destaca por varios motivos: por su tamaño, por su carácter familiar, por su estilo inconfundible en sus marcas, por la regularidad de las mismas y también por su capacidad de evolución y adaptación a los nuevos tiempos.

Nariz: Aromas de buena complejidad.

Sobresalen los aromas de fruta madura bien sazonada en unión con las notas especiadas del cacao y los toffees. Presencia de tostados de maderas de muy buena calidad.

Boca: Bien constituido y muy sabroso, con la madera muy bien ensamblada con la fruta y su estupenda acidez. Taninos maduros y elegantes. Final muy largo en el que se aprecia su noble crianza.

Comentario: Es un concepto nacido de la entonces considerada gran añada del 1994 como homenaje a los fundadores de la bodega, los hermanos Eusebio y Raimundo Real de Asúa. Se elabora a partir de uvas seleccionadas de tempranillo de los viñedos propios de Rioja Alta, con una vendimia totalmente manual y con segunda selección de calidad de uva en bodega. Cune construyó una nave a parte únicamente para la elaboración de este vino, pensada para poder trabajar solo por gravedad.

Real de Asúa representa un vino de gran nivel y con un estilo más moderno si lo comparamos con el resto de la gama Cune.

Es un vino con una fruta jugosa, con mucha concentración, gran madurez y con un potencial de envejecimiento larguísimo. El vino más actual de una bodega histórica.

Su compañero ideal sería un conejo asado con especias y chalotas confitadas.

Founded in 1879, the premises of the Compañía Vinícola del Norte de España (known as CVNE or Cune), is made up of a cluster of buildings, mainly from the 19th Century, arranged around a patio surrounded by facilities for winemaking, ageing and bottling.

The Company is remarkable for various reasons: its size, its family character, the unmistakable style and consistency of its brands, and its ability to move with the times.

Appearance: A very intense, dark Picota cherry hue. Thick tears.

Nose: Aromas showing good complexity.

Pronounced, full flavoured, ripe fruit aromas with spicy notes of cocoa and toffees. Very fine quality toasted oak.

Palate: Well-structured and full of flavour, the wood marries very well with the fruit and the superb acidity. Mature, elegant tannins. Very long finish in which the wine’s fine ageing can be appreciated.

Comment: This wine, first released with the 1994 vintage (considered great back then), is a tribute to the winery’s founders, brothers, Eusebio and Raimundo Real de Asúa. It is made from selected, hand-picked Tempranillo grapes grown in their own Rioja Alta vineyards and which undergo a second quality selection at the winery. Cune built separate premises specifically for the production of this wine, designed to enable operations to be carried out solely by gravity flow.

Real de Asúa is an example of a top-notch wine and is more modern in style than the rest of the Cune range. It is a wine with juicy fruit, plenty of concentration, great maturity and extremely long ageing potential. It is the most contemporary wine from a traditional winery.

Bodegas Bilbaínas, es parte de la historia del vino de nuestro país y toda una institución del barrio de la estación de Haro. Fundada en 1.859 por una casa francesa, en 1901 paso a manos de un grupo de amigos de Bilbao, de ahí su actual nombre.

Está considerada una de las bodegas más clásicas de la zona, con marcas tan conocidas como Viña Zaco y Viña Pomal, aunque desde su adquisición por el Grupo Codorníu en 1997, comenzaron los cambios que conllevó su modernización con vinos más concentrados y con menos protagonismo de la madera, como La Vicalanda.

Sin embargo, la nueva apuesta del nuevo equipo formado por Natalia Olarte, responsable de los viñedos, y Diego Pinilla, como director técnico de la bodega, se llama Alto de la Caseta, un super vino que representa la fiel expresión de la privilegiada naturaleza de Viña Pomal y el “savoir faire” de esta bodega centenaria.

Vista: Precioso color rojo cereza picota muy intenso de ribete amoratado.

Nariz: Muy perfumada, con presencia de frutos negros maduros junto a especias dulces, de clavo y nuez moscada, combinadas con elegantes notas a cueros y torrefactos.

Boca: Potente y de buena estructura.

Abundante fruta en el paso, con un tanino grueso en perfecta unión con una acidez envolvente. Crea un conjunto con gran intensidad y elegancia, y de largo recorrido en su postgusto.

Comentario: Una vez más, esta bodega clásica de la Rioja Alta, se atreve a modernizar el pasado con este vino actual elaborado con la mejor uva tempranillo de su pago más emblemático, el Alto de la Caseta. El suelo es cascajoso, suelto y de estructura pobre. En este entorno idóneo para la vid, practican una viticultura integrada y sostenible a cargo de la gente con mayor experiencia de la casa.

El Viña Pomal Alto de la Caseta 2008 és en la actualidad el máximo exponente de la renovación de esta emblemática casa. Un vino de finca, de producción muy limitada, que destaca por su intensa expresión frutal junto a una elegante madera que dota a este vino de un corte muy actual.

Bodegas Bilbaínas is part of Spanish wine history and an institution from the ‘la estación’ neighbourhood of Haro. Founded in 1859 by a French wine company, it passed into the hands of a group of friends “from Bilbao” in 1901, hence its name today.

It is considered one of the area’s most classical wineries, producing well known brands such as Viña Zachus and Viña Pomal, although, since its acquisition by the Codorníu Group in 1997, it has undergone come changes due to its modernization, and is now producing more concentrated wines with less oak, such as La Vicalanda.

However, the new team, made up of Natalia Olarte, head of viticulture, and Diego Pinilla, the bodega’s technical director, has been investing its time and attention on a new wine, Alto de la Caseta.

This is a super wine which truly expresses the unique Viña Pomal terroir and the savoir-faire of this old bodega.

Appearance: Beautiful, very intense cherry red hue with a bluish tint.

Nose: Very fragrant, with ripe black fruit and sweet spices, cloves and nutmeg, infused with elegant notes of leather and roasting.

Palate: Powerful and well-structured.

Loads of fruit on the palate with thick tannin combining perfectly with an enveloping acidity, which gives this wine great intensity and elegance with a very long aftertaste.

Comment: Once again, this classical bodega from the Rioja Alta, is boldy modernizing with a contemporary wine made from Tempranillo grapes grown in its flagship vineyard, the Alto de la Caseta.

The soil is stony with a loose, poor structure. In this ideal environment for the vine, the integrated, sustainable viticulture they practice is overseen by the company’s most experienced staff.

Right now, the Viña Pomal Alto de la Caseta 2008 is the best example of the revival underway at this iconic company. It is an estate wine, produced in very small quantities, distinctive for its powerful, fruity expression along with elegant oak which gives it a very modern cut.

Franciacorta se ubica en el corazón de Lombardía, y se extiende entre Brescia y el lago de Iseo. Define tres conceptos: un vino, un método de elaboración (que es el tradicional o clásico) y el territorio donde se elaboran los vinos espumosos de mayor calidad de toda Italia.

El nombre de la bodega le viene de la instalación de Annamaria (madre del fundador de la bodega) en una gran “casa del bosque” en Franciacorta en 1965. Fue entonces cuando su hijo Maurizio Zanella se enamoró de la zona y decidió entonces empezar allí la producción de vino. Hoy en día, todo el mundo coincide en señalar a Maurizio como uno de los grandes innovadores de la viticultura italiana, y a su bodega como la más importante de la Franciacorta por su calidad y una de las grandes marcas de toda Italia.

Vista: Color amarillo dorado con reflejos oro. Burbuja fina y moderada.

Nariz: Tiene una nariz fragante y madura.

Despliega aromas a manzana asada y cítricos maduros. Notas tostadas, frutos secos estilo avellanas y mucha presencia de la larga crianza. Recuerdos minerales de su terruño.

Boca: Vínico y sabroso. Muy bien equilibrado en su conjunto y con una burbuja fina integrada. Sabores de membrillo dulce y frutas carnosos maduras. Buena acidez final con unas sensaciones minerales, muy de terroir.

Comentario: Es la cuvée de prestigio, que lleva el nombre de la madre de Maurizio Zanella, fundador de Cà del Bosco. Para muchos representa el mejor espumoso de Italia, al nivel de un gran champagne, elaborado con las variedades pinot Bianco, pinot Nero y chardonnay, procendentes de viñedos de más de 40 años sometidos a una una agricultura orgánica muy respetuosa con el medioambiente y con la mínima intervención humana. También opta por vinificar por separado las uvas de diferentes viñedos, respetando los diferentes terroirs, y ensamblar los vinos elaborados sólo en su etapa final. El objetivo es poder permitir la máxima expresión de cada variedad.

Para llorar junto a una buena pularda trufada.

Cuvée Anna Maria Clementi 2004

Franciacorta is in the heart of Lombardy, and stretches between Brescia and Lake Iseo. It lends it name to a wine, a production method (the traditional or classic) and the area where the highest quality sparkling wines in Italy are made.

The Ca’ del Bosco winery’s name comes from the house surrounded by woods in Franciacorta, where Annamaria (mother of the founder of the winery) moved to in 1965. This was when her son, Maurizio Zanella, fell in love with the area and decided to start producing wine there. Today, Maurizio is commonly regarded as being one of Italian viticulture’s great innovators, and his winery as the most important in Franciacorta for its quality, as well as being one of Italy’s top wine brands.

Appearance: Golden yellow hue with gold highlights. Fine, moderate bubbles.

Nose: Fragrant and ripe on the nose. It unfolds with aromas of baked apple and ripe citrus. Notes of toast, dried nuts such as hazelnuts, and a multitude of aromas derived from its long ageing. Mineral aromas from the soil.

Palate: Vinous and full of flavour. Very well balanced overall with smooth, fine bubbles. Flavours of sweet quince and ripe fleshy fruits. Good final acidity showing some mineral character, very terroir.

Comment: This is the top cuvée, named after the mother of Maurizio Zanella, Cà del Bosco’s founder. For many, it is the best sparkling wine in Italy, on a par with great champagne. It is made with Pinot Blanc, Pinot Noir and Chardonnay from vines aged over 40 years, grown using organic and environmentally-friendly methods, with minimal human intervention. They have also opted for separate vinification of the grapes from different vineyards, respecting the various terroirs, and blending the resulting wines only at the final stage, with the aim of allowing each variety to express itself to the full.

Sensaciones tostadas en su retronasal.

Comentario: Es un homenaje de Josep Ferrer Sala, presidente de honor del grupo Freixenet, a sus padres y al estilo en que estos elaboraban sus espumosos hace más de 100 años. Es un cava muy especial de elaboración artesanal llevada a cabo en la Masía de la Antigua Casa Sala, en la que se producen 20.000 botellas anuales que reproducen las primeras que se utilizaron en la Champane en el S.XVIII y con una etiqueta que es una réplica de la del primer brut nature catalán, que Freixenet elaboró en 1.935. Se cuida hasta el más minimo detalle: vendimia manual, prensado con prensa vertical de madera de más de 150 años, fermentación con levaduras indígenas y trasiegos y mantenimiento del vino por gravedad, sin utilizar bombas. El resultado es un cava muy complejo y cremoso pero sorprendentemente vivo y fresco.

Irresistible acompañado de una lubina al horno con patatas.

Parellada – Xarel·lo

Founded in 1914, this family wine group has become the undisputed leader in the cava industry and the world’s biggest producer of sparkling wines made by the traditional method, with 18 wineries in the most prestigious wine regions in the world.

Freixenet takes its name from Freixeneda, a 13th century property located in the Alt Penedes. It owns about 400 hectares of vineyards, maintains supply agreements with over 1,100 growers managed by their specialist advisors, and produces about 80 million bottles of cava, of which 80% is exported to over 140 countries worldwide.

Appearance: Pale yellow hue with golden highlights. Copious fine bubbles.

Nose: Aromas of ripe, fleshy white fruit infused with notes of white flowers and quince. Autolysis notes of bakery and “cabello de angel“ (pumpkin strands in syrup). Herby backdrop.

Palate: Fresh, with perfectly smooth bubbles, good acidity and slightly bitter herb aromas. Citrus fruit on the palate.

Retronasal toasty aromas.

Comment: This cava is Josep Ferrer Sala’s (Freixenet’s honorary president) tribute to his parents and to the style of their sparkling wines over 100 years ago. It is a very special cava, produced using artesanal methods in the Masía de la Antigua Casa Sala, where 20,000 bottles are produced annually. These are reproductions of the first bottles to be used in the Champagne region in the 18th century and they are dressed with a label which is a replica of the labels used on the first Catalan brut nature, produced

by Freixenet in 1935. Attention is paid to the tiniest of details: harvesting by hand, pressing in a 150 year old, wooden vertical press, fermentation using indigenous yeasts, and racking and handling of the wine by gravity flow, without the use of pumps. The result is a very complex, creamy cava which is surprisingly lively and fresh.

Gramona es un todo un ejemplo de cómo debe gestionarse una bodega familiar. Jaume y Xavier Gramona, con asentadas raíces en el mundo del cava tienen las ideas claras, han sabido evolucionar y situarse como una de las referencias más claras y serias de los “cavas de autor” en la actualidad. Unos cavas con la mayor crianza media del mercado y que siguen utilizando el tapón de corcho para sus crianzas más largas.

Gramona además, trabaja desde hace unos años ecológicamente todas sus tierras y bajo la filosofía biodinámica más recientemente.

Cabe destacar también su apuesta por la uva xarel.lo, la uva blanca con más resveratrol, el antioxidante que favorece su lenta oxidación y sus largas crianzas.

Vista: Amarillo dorado intenso. Burbuja muy fina.

Nariz: Extremadamente complejo. Aromas a melocotón desecado sobre un fondo de flores blancas marchitas. Elegantes notas a pan grillé, membrillo y frutos secos de su noble reducción y larga crianza. Recuerdos ahumados minerales.

Boca: Cremoso y seco. Muy bien conjuntado y con una sorprendente sensación cítrica en su paso por boca. Carbónico fino muy bien integrado. Vía retronasal de fruta escarchada y recuerdos de su crianza. Va creciendo en su final de boca.

Comentario: Es el vivo ejemplo de la capacidad de la bodega para llevar la larga crianza al extremo y al mismo tiempo interpretar el clasicismo en clave de autor. Es uno de los cavas con más larga crianza en botella de España (12 años) y, por ello, uno de los cavas más complejos, finos y expresivos de la actualidad, con una extraordinaria reducción que muestra una amplia paleta de aromas que van abriéndose lentamente en boca. Muestra a la perfección las peculiaridades de la tierra y el entorno de donde proviene así como las características de la variedad xarel.lo .

Un cava de pago, La Plana, capaz de emocionar y reservado para grandes acontecimientos.

Gramona Enoteca Brut Nature 2000

Gramona is a fine example of how a family winery should be run. Jaume and Xavier Gramona, with their deep seated roots in the cava world, have clearly defined views. They have managed to grow the company and position it as a major reference among the “author’s cavas” of today. Their cavas undergo the longest average ageing in the industry and they continue to use the cork stopper for their longest aged cavas.

In addition, Gramona has been working all of its vineyards organically for some years and more recently has been respecting biodynamic principles. Its penchant for the Xarel.lo grape is also interesting.

This white variety has more resveratrol, the antioxidant that promotes slow oxydation and long ageing.

Appearance: Deep golden yellow. Very fine bubbles.

Nose: Extremely complex. Aromas of dried peaches against a backdrop of wilted white flowers. Elegant notes of toast, quince and nuts from the cava’s “noble reduction” and long ageing. Mineral smoky aromas.

Palate: Creamy and dry. Very well put together and providing a surprising sensation of citrus on the palate. Fine, smooth CO2. Retronasal candied fruit and aromas from its ageing. It continues to grow over the finish.

Comment: This is a fine example of the bodega’s capacity to take long ageing as far as it can go and to interprete classicism with an “author’s” approach. It is one of the longest bottle-aged cavas in Spain (12 years) and therefore one of the most complex, fine and expressive cavas on the market today. It shows an extraordinary “reduction” character, displaying a broad array of aromas which unfold gradually on the palate. It is a perfect illustration of the individuality of the land and the environment from which it originates, as well as the characteristics of the Xarel.lo grape variety.

This is a really exciting cava from a single vineyard (La Plana), which should be saved for special occasions.

Hay dos fechas clave en la história de Jacquesson. Una en 1798, cuando Memmie Jacquesson fundó la casa en Châlons. Y la otra, en 1.974 cuando la familia Chiquet adquiere la bodega y se instalan en la localidad de Dizy, donde están emplazados gran parte de sus viñedos. Con ellos la firma toma otro rumbo, pasan a producir menos botellas buscando una mayor autenticidad y la máxima expresión de sus terruños mediante un respeto por los suelos, un control de rendimientos, una búsqueda de maduración óptima y una vinificación parcelaria en madera y en contacto con sus lías.

Un hecho que marcan mucho la personalidad y el carácter de sus champagnes es el largo periodo de crianza del vino en botella, sobre lías, alguno de los cuales puede llegar a 15 años antes de su expedición. Auténticas joyas enológicas!

Vista: Color amarillo dorado intenso muy brillante. Burbuja pequeña y abundante.

Nariz: Muy fragante. Con unos aromas a frutas amarillas y también cítricas junto con flores blancas. Notas más dulzonas y delicadas de membrillo y pastelería más propias su larga crianza.

Boca: Gran esqueleto construido sobre sólidos cimientos minerales. Burbuja muy bien integrada con recuerdos cítricos muy marcados en su recorrido. Final con sensaciones de frutos secos y minerales. Mucho potencial de crecimiento.

Comentario: Este vino nace de un viñedo, le lieu-dit Champ Caïn, de 30 hectáreas de Chardonnay plantada en 1.962 con orientación plenamente sur. El secreto está en un suelo poco profundo y de estructura francoarcillo-arenosa rica en grava de tiza. Si a los grandes esfuerzos que realizan en el viñedo le añadimos una vinificación en fudres de roble, bâtonnage con las lías, fermentación maloláctica total y una posterior larga crianza en rimas de 8 años tenemos un champagne de una nariz profunda, madura y con gran carga frutal y pequeñas sensaciones amargo-minerales. En boca una cremosidad y una acidez fantásticas, asi como un largo recorrido. Verdadera expresión de terruño!

Lo recomendamos con un faisán relleno de trufa, manzanas y nueces.

100 % Chardonnay

There are two key dates in the history of Jacquesson. One is 1798, when Memmie Jacquesson founded the champagne house in Chalons. And the other is 1974, when the Chiquet family acquired the company, setting up in the village of Dizy, where many of their vineyards are located.

The company then took a new direction – reducing production and seeking to bring out the authenticity and greatest expression of their terroirs, by respecting the soil, controlling the yields, striving for optimum maturity and vinifying each parcel separately on the lees, in wood.

Their champagnes gain a real stamp of character or personality from the long period of time they spend ageing in bottle on the lees, sometimes up to 15 years. These are veritable oenological gems!

Appearance: Very bright, deep golden yellow hue. Plenty of small bubbles.

Nose: Very fragrant with aromas of yellow fruit and citrus combined with white flowers. Sweeter, more delicate notes of quince and pastry derived from its long ageing.

Palate: Great frame built on a solid mineral foundation. Smooth bubbles with very pronounced citrus aromas across the palate. Nutty, mineral impressions on the finish. Great potential for further development.

Comment: This champagne comes from a single vineyard, located at a “lieu-dit” (a local spot) known as Champ Caïn, where the 30 hectares of Chardonnay planted in 1962, face directly south. This champagne’s secret lies in the shallow, clayey, sandy and silty soil, rich in chalk gravel. If, to sterling work in the vineyards, you add vinification in oak “foudres”, bâtonnage, complete malolactic fermentation and 8 years of ageing “sur lattes”, you end up with a champagne which is deep and mature on the nose, packed with fruit and providing some slight, bittermineral sensations. Long on the palate with fantastic creaminess and acidity. A true expression of terroir character!

We recommend enjoying it with pheasant stuffed with truffles, apples and walnuts.

Blanco dulce – Sweet wine

Domaine Weinbach es una de las bodegas más antiguas y de más prestigio de Alsacia.

Fue fundada por los monjes del monasterio capuchino en 1612. Hay documentos conservados que indican que algunos de sus viñedos fueron plantados nada menos que en el año 890. En 1898 la familia Faller adquirió la propiedad de 26 hectáreas repartidas entre los diferentes Crus del Valle de Kaysersberg.

Practican una viticultura biodinámica y ecológica. Las vendimias se realizan a mano y, cuando la añada propicia el desarrollo de la botrytis, las uvas se recogen entrado el mes de noviembre.

Siguiendo la filosofía de mínima intervención en el proceso de elaboración de todos los vinos, desde los genéricos hasta los más reputados, todos exhiben una gran elegancia y finura. Sus vinos son reconocidos mundialmente por su extraordinaria calidad.

Vista: Precioso color amarillo dorado. Muy brillante y denso.

Nariz: Prodigiosos aromas a orejones, mermelada de naranjas confitadas combinadas con notas a botritis y cerezas. Recuerdos minerales y especiados.

Boca: Gran concentración con una textura densa y oleosa. Impecable equilibrio entre dulzor, alcohol y una acidez espectacular.

Sabores a melocotón en almíbar, mandarina confitada y miel. Un monstruo de la naturaleza!

Comentario: Procedente de una viña Grand Cru con suelos de arcilla y caliza con yeso entremezclado, los Quintaesencia de Granos Nobles de Domaine Weinbach son vinos excepcionales, de una producción muy pequeña y provenientes de cepas nobles seleccionadas. Solo están disponibles en las mejores añadas. Este grandioso vino, de riqueza descomunal, contiene 200 gramos de azúcar residual por litro pero se muestra equilibrado, denso y vinoso pero con una acidez vigorizante.

Domaine Weinbach is one of the oldest and most prestigious wineries in Alsace.

It was founded by Capuchin monks in 1612. Early documents show that some of its vineyards were planted as far back as the year 890. In 1898, the Faller family acquired 26 hectares located among different Kaysersberg Valley Crus. Today they practice biodynamic and organic viticulture. Harvesting is carried out by hand, and when the year has been propitious to the development of botrytis, the grapes are picked in November.

All their wines, from the generics to the very best, are produced to a minimum intervention philosophy and all show great elegance and finesse. Domaine Weinbach’s wines enjoy a worldwide reputation for outstanding quality.

Appearance: Beautiful golden yellow hue. Very bright and dense.

Nose: Impressive aromas of dried apricots and candied orange marmalade combined with notes of botrytis and cherries.

Mineral and spicy aromas.

Palate: Great concentration with a dense, oily texture. Impeccable balance of sweetness, alcohol and spectacular acidity.

Flavours of canned peaches, candied mandarin and honey. A fantastic freak of nature!

Comment: From a Grand Cru vineyard with limestone and clay soils interspersed with gypsum, Domaine Weinbach’s Quintessence “Grains Nobles” is an exceptional wine, produced in very small quantities and only in the best years, using selected grape berries affected by noble rot. This grandiose wine of enormous richness, contains 200 grams of residual sugar per litre yet shows itself to be well-balanced, dense and vinous with invigorating acidity.

Warre’s & Ca. es la más antigua de las empresas británicas embotelladoras en Oporto. Inicialmente la firma se dedicaba al trueque de lana inglesa y de bacalao por los suaves vinos de la región del Minho, los hoy denominados “vinho verde”. La fundación de la empresa se remonta a 1670. Los portos de Warre’s están considerados como uno de los mejores de todo Portugal. La mayor parte de la uva procede de una finca propia, la Quinta da Cavadinha, en el valle de Pinhão, y el resto proviene de pequeños viticultores del valle del río Torto con los que la Warre’s mantiene relaciones desde hace varias generaciones. Tan sólo el 15% del total de la uva vendimiada se prensa de forma tradicional, con los pies, y se reserva para las mejores elaboraciones. El resto se vinifica con procedimientos mecánicos. Vista: Color rojo rubí con reflejos teja.

Conviene decantarlo debido a sus posos.

Nariz: Muy fino y fragante. Aromas de mermelada de cerezas negras, higos y grosellas dulces junto con altas notas florales de violetas. Frutos secos y torrefactos aparecen al agitar la copa.

Boca: Paladar suave y seductor. Buena acidez y dulzor en el paladar. Recuerdos de bayas y caramelos de toffee. Final prolongado y delicioso.

Comentario: Un Single Quinta es un Vintage que procede de una finca concreta, en realidad no estamos ante un Vintage superior, sino ante un tipo de Vintage que no posee la característica gran longevidad ni los altos precios de los Vintages clásicos.

Sin embargo este 96 tiene toda la complejidad y elegancia que se le supone a un auténtico Vintage Port. Su poder de seducción es enorme, un oporto con carácter de una de las firmas más importantes de la zona.

Warre’s is the oldest British port shipper in Oporto. The company started out by bartering English wool and cod in exchange for the soft wine from the Minho region, today known as “vinho verde”.

The company was founded back in 1670.

Warre’s ports are considered to be among Portugal’s finest. Most of the grapes come from their own estate, the Quinta da Cavadinha in the Pinhão Valley, and the remainder comes from small growers in the Torto River Valley with whom Warre’s has been working for generations. Only 15% of the grapes harvested are pressed traditionally, by foot, and this is only performed for the finest ports. The remainder is vinified using mechanical methods.

Today Warre’s is one of the famous port houses within the Symington Group stable.

Appearance: Ruby red hue with brickred highlights. Best decanted due to its deposit.

Nose: Very fine and fragrant. Aromas of black cherry jam, figs and sweet red currants along with high floral notes of violets.

Nutty and roasted aromas emerge after swirling the glass more vigorously.

Palate: Soft and seductive on the palate, with good acidity and sweetness. Aromas of berries and toffees. Long, delicious finish.

Comment: A single quinta is a vintage wine which comes from a specific estate.

This is not in fact a superior vintage port, but a type of vintage which possesses neither the characteristic longevity or the high prices of the classic vintage ports.

That said, this ‘96 has all the complexity and elegance that a genuine vintage port should possess. It is enormously charming, a port of character from one of the most important companies in the region.

Masterful when paired with a coulant au chocolat with toffee sauce and violet ice cream.

Barbadillo es historia viva de los vinos de Jerez, y es que esta bodega familiar fue fundada en 1.821 por Don Benigno Barbadillo y su primo.

Esta bodega centenaria que tiene su sede en Sanlúcar de Barrameda mirando hacia el mar y el Coto de Doñana , es propietaria de 500 hectáreas de viñedos repartidos en dos fincas Gibalbin y Santa Lucia. Tiene el honor entre otras cosas de lanzar al mercado en 1.827 la primera manzanilla embotellada bajo la marca Divina Pastora y de elaborar el vino blanco más vendido de España, el Castillo de San Diego.

Si aún no la han visitado, ahora ya tienen una excusa más para no dejar de visitar uno de los templos y patrimonios bodegueros más importantes de la historia de nuestro país.

Vista: Color negro con tonalidades chocolate y bordes topacios.

Nariz: Extremadamente complejo con aromas intensos a cacao, dátiles, pasas y maderas viejas.

Boca: Muy sabroso, sorprendentemente fresco, ligero y frutoso teniendo en cuenta su vejez. Sabores intensos a pasas, higos secos, miel y recuerdos de café.

Comentario: Estamos delante de uno de los vinos dulces míticos de los viejísimos vinos de Jerez. Un verdadera joya, una auténtica maravilla reflejo del paso del tiempo, de la sabiduría y de décadas de mucha paciencia.

La Reliquia sale al mercado en ediciones muy limitadas a fin de no rebajar la vejez y profundidad de su solera de 1.921 compuesta de añejos Pedro Ximénez. Una solera llena de sabiduría que aguarda un tesoro repleto de pasas, higos, cacao y café, en definitiva un festival de sensaciones dulces indescifrables, que una vez has probado te atrapa y te enamora de por vida.

Barbadillo represents a piece of living sherry history. This family winery was founded in 1821 by Don Benigno Barbadillo and his cousin.

The old bodega in Sanlucar de Barrameda, facing the sea and the Coto de Doñana, owns 500 hectares of vineyards spread over two estates, Gibalbin and Santa Lucia. Palate: Full of flavour, surprisingly fresh, light and fruity considering its age. Intense flavours of raisins, dried figs, honey and aromas of coffee.

Comment: We have before us one of Jerez’s legendary, sweet old wines. A real gem, a wonderful and authentic reflection of the passing of the years, of wisdom and decades of patience.

Serge Hochar produce uno de los mejores vinos del mundo, y no en Burdeos, Napa o Mosela sino en el Valle de Bekaa, en el Líbano. Su marca se llama Château Musar.

Fundada en 1930, se considera la bodega líder del Líbano. Posee 180 hectáreas de viñedos situados a una altitud de 1000 metros, al norte de Beirut, en Bekadalen. En este ambiente las condiciones climáticas son perfectas para el cultivo así como por la ausencia de enfermedades.

Todos los vinos tintos de Chateau Musar maduran completamente 7 años antes de que sean puestos en el mercado y entonces venden sólo un tercio de la producción. El resto permanece en el corazón de esta montaña bíblica, evolucionando en silencio: seis millones de botellas o más que se extienden por la cava construida en 1932 por Gaston, el padre de Serge. Las añadas más antiguas de Musar se venden a altos precios en importantes subastas.

Vista: Color rojo teja de capa media con tonos marrones. Denota cierta degradación.

Nariz: Compleja y singular. Predominan una notables y sorprendentes notas a venado y ratoniles marca de la casa. Más tarde sobresalen notas a licor de moras, especias asiáticas y maderas usadas.

Boca: Estructurado, carnoso y paradójico, ya que el perfil aromático hace pensar en un vino más evolucionado de lo que reflejan sus aromas. Su baja acidez nos deja unas ciertas sensaciones ásperas al final de boca.

Comentario: Este Chateau Musar del 2.005 concentrado y elegante, posee el carácter exclusivo de las mejores cosechas, con olor a brettanomyces (calcetín viejo) así como a vinagre (elevada acidez volátil) combinado por ricos sabores de fruta madura. No obstante su acidez en boca es bastante baja, lo cual hace que se pueda disfrutar plenamente del vino en este momento, aunque no hubiera problema en que siguiera envejeciendo unos años más.

Les sorprenderá acompañado de una liebre a la royale.

Serge Hochar produces one of the best wines in the world… not in Bordeaux, not in Napa or the Moselle.. but in the Bekaa Valley in Lebanon. Its name is Château Musar, it was founded in 1930, and it is considered to be Lebanon’s best winery. It has 180 hectares of vineyards growing at an altitude of 1,000 metres in Bekadalen to the north of Beirut. This setting enjoys climatic conditions that are considered perfect for grape growing and also have the benefit of being free of disease.

All Château Musar red wines mature for a full 7 years before being released on the market and then only a third of the wine produced is sold. The rest remains ageing in the silence in the heart of this biblical mountain: the cellar built in 1932 by Serge’s father, Gaston, houses six million bottles or more. The oldest Musar vintages fetch high prices at major auctions.

Appearance: A brick-red hue of medium intensity with brownish tones, indicating a degree of decline.

Nose: Complex and unique. Some striking deer and mousy notes predominate, the hallmark of this wine house. Later, notes of blackberry liqueur, Asian spices and seasoned wood come through.

Palate: Structured, meaty and contradictory, since its aromatic profile gives you the picture of a wine that is more evolved than its aromas would suggest. Its low acidity leaves a certain impression of harshness on the finish.

Comment: This concentrated, elegant 2005 Château Musar possesses the unique character of the best vintages, with a Brettanomyces odour (old socks) as well as vinegar (high volatile acidity), combined with delicious ripe fruit flavours.

Nevertheless, the acidity on the palate is fairly low, which means that the wine can be enjoyed to the full today, yet could easily bear a few more years’ ageing.

Durante tres días, Montpellier se convirtió en el centro neurálgico de los vinos mediterráneos. En esta feria que se organiza cada dos años en esta ciudad francesa, participan bodegas de diferentes países, con una abrumadora mayoría de bodegas francesas. Un total de1.642 expositores de vinos mediterráneos y 30.948 visitantes en los 3 días de duración del evento (32.840 en 2012).

De ellos, 9.652 eran extranjeros, lo que supone un aumento del 6% en el número de visitantes internacionales (en comparación con los 9.125 de 2012) Este año, los organizadores han optado por controlar el acceso en la etapa de preregistro para animar a los compradores más serios a acudir al salón. The French city of Montpellier became the nerve centre of Mediterranean wines for three days. Wineries from different countries take part in this biennial show but the overwhelming majority are French.

A total of 1,642 exhibitors of Mediterranean wines and 30,948 visitor entries over the 3-day event (32,840 in 2012).

Including 9,652 from abroad i.e. a 6% rise in international visitor numbers (compared with 9,125 in 2012).

This year, the organisers took the decision to screen entries at the pre-registration stage in order to encourage more serious buyers to attend. This screening had an immediate impact on visitor quality, which was noted and appreciated by all exhibitors.

Vinorum, which attracted a large number of visitors throughout the show, was located within the "The Alimentaria Experience", a new area dedicated to gastronomy.

Existe documento notarial de la existencia de una viña y de una bodega, con 150 cántaros, propiedad de Juan Chivite Frías, en tierras de la Ribera navarra, en el año 1647. Sin duda, eran la primera piedra de lo que, pasados cuatro siglos y once generaciones, constituye el actual Grupo Chivite.

There is a notarized deed stating the existence of a vineyard and a winery able to produce up to 150 cántaros, the property of one Juan Chivite Frías in the Ribera region of Navarra, in the year 1647. These were no doubt the foundation of what, four centuries and eleven generations later, was to become today’s Chivite Group.

Resulta curioso comprobar cómo la historia de las bodegas Chivite comienza a escribirse con la importante intervención de 150 cántaros de vino. Ellas sirvieron de “aval”, en un documento notarial realizado un caluroso día de agosto de 1647, para conceder un préstamo de 100 ducados a Juan Chivite Frías y a su cuñada. Cómo ésta última era mujer, pues tal vez por eso no figure su nombre en esa parte del documento que conserva la bodega. Y que reza así: “... la bodega tienen hasta 150 cántaras de cubamientos y que alinta a la calle Real y Camino de la Carrera; la leña y una viña de treinta peonadas…” Ello significaba suficiente poderío en el siglo XVII. Así que el señor Chivite y su cuñada ya apuntaban maneras en los territorios enológicos.

Las cántaras son vasijas ancestrales que antropomórficamente hablando tienen una simbología muy clara y muy femenina. Representa a la Gran Madre como receptáculo de vida. Y bien cierto es que, de alguna manera, aquellas cántaras fueron el germen de lo que actualmente es un gran grupo español. Desde entonces, hasta bien entrado el siglo XX, toda la historia de esta dinastía navarra se encuentra en testamentarías de transmisión de bodegas y viñas. Es el caso de Juan

It is intriguing to read that 150 “cántaros” played an important role in the early history of the Chivite bodegas. In a notarized document drawn up one hot August day in 1647, these are cited as part of the “guarantee” provided in return for a loan of 100 ducats granted to Juan Chivite Frías and his sister-in-law. Perhaps because the latter was a woman, her name does not appear on the part of the document conserved by the Chivite company. The document reads: “…the winery is able to produce up to 150 “cántaros”, is situated adjacent to Calle Real and Camino de la Carrera; has a quantity of timber and a vineyard of 30 “peonadas”….” This was sufficient collateral in the 17th century. So it already looked as if Mr.Chivite and his sister-in-law had some standing as wine growers.

A cántaro is an ancient clay vessel which, anthropomorphically speaking, has an obvious feminine symbolism.

It represents the Great Mother as a receptacle of life. Well, in one way or another, Chivite’s cántaros were the seeds of what is now an important Spanish wine company. From that time until well into the 20th century, the history of this Navarra wine dynasty can be clearly traced in the testaments bequeathing wineries and vineyards, e.g. Juan Chivite Navascués (1678), Joseph Chivite Navascués (1709) and Juan Chivite Hernández. (1779).

The Chivite name is deeply rooted in the town of Cintruénigo, near Tudela in the Ribera region in southern Navarra. Apparently they came from a village in French “Navarra Baja“ or Iparralde, Çivitz, then part of the Kingdom of Navarra, whose Spanish-form pronunciation evolved to Chivite over time.

The family lived in a large mansion known as El Parador, which served as a coaching inn as well as a bodega and which was frequented by many traders and businessmen of the time. The El

y hombres de negocio de la época. Los vinos de la casa, de El Parador, aún sin marca, ya empezaban a ser conocidos y apreciados por los clientes. Eligió unos terrenos que habían albergado una especie de cantera de cascajos, por lo que contaba con una gran oquedad que contempló como lugar idóneo para albergar los grandes tinos de madera de manera subterránea.

Corría el año 1872. Aquella bodega, que actualmente existe como bodega central, tras haber experimentado numerosas ampliaciones y modernizaciones a lo largo de los años, sigue llamándose La Cascajera.

Recuerda su nieto Julián, actual director de la bodega familiar, que no llegó a conocerle por las circunstancias a las que me he referido anteriormente, las grandes diferencias entre generaciones, que tenía seis galeras, unas carros de mulas que trasportaban vino en bocoyes y las había organizado de manera que siempre tenía tres de ida y tres de vuelta, para servir a sus numerosos clientes básicamente en Francia y en el norte de

Parador house wines, even without a brand name, were beginning to become well known and appreciated by customers. Félix chose an area of land that had been home to a sort of gravel quarry which included a large crater that looked as if it would be perfect to accommodate large wooden vats underground. This was in 1872. This bodega, having seen numerous extensions and modernisations over the years, is today’s central bodega and still known as La Cascajera (a word related to gravel).

Félix’ grandson Julián, today’s director of the family winery, never knew his grandfather due to the generational age gaps I referred to earlier. But he tells us that his grandfather had six “galeras“, large, four-wheeled carts, pulled by trains of mules, each transporting large barrels. They organized these mule trains to ensure there were always three on the way there and three on the way back, during the trips to serve their large number of customers located primarily in France and northern Spain. He tells us how, in the famous port of Velate, on the Irún road, his ancestor had to rent mules as reinforcement because the way up required greater animal traction.

In the late nineteenth century, Félix Chivite created a trading company under the name Félix Chivite. Chivite wines were in high demand with merchants in the Alhóndiga in Bilbao, the main wine trading centre in Spain at that time. But they still had not created a brand. The business continued in this vein until Félix’ death in 1928.

The family business then changed its name to “Viuda De Félix Chivite“ (Widow of Félix Chivite), and four

Si bien se casaban tarde, lo cierto es que aquello no era óbice para tener hijos. Félix tuvo trece, nada menos. Desde 1928 hasta 1948, los hermanos Félix y Julián Chivite Marco, dos de sus hijos, llevaron el negocio hasta que en 1948, Julián, el pequeño de los trece, educado en Pau y diplomado en la Escuela de Comercio de Burdeos, compra a su hermano Félix su parte y se queda como único propietario de la bodega.

Julián Chivite Marco carried out a major overhaul of the business and created his first brands in 1956.

His son, Julián, recalls that there were two brands, El Parador, in honour of the family home where his father had been born and raised, as had Julián himself and his siblings, and another brand called Cirbonero. They were one of the first wineries in Navarra to bottle wines. Some years later, in the 1970’s, they created the Castillo de Mélida brand of white, red and rosé wine, which was a huge commercial success, selling seven million bottles.

A few years later, the famous Gran Feudo took the market by storm. La adquisición de una extraordinaria finca en el norte de Navarra, un bellísimo señorío en ruinas pero con unas tierras perfectas para el cultivo de la vida, fue la ilusión de la familia. Se acometió un proyecto de gran calado, con una restauración y conservación de los restos de las edificaciones antiguas y la construcción de una bodega ejemplar, tanto en diseño como en equipamiento, que fue realizada nada menos por el estudio de Rafael Moneo, el gran arquitecto español, navarro y buen amigo de la familia. Se adquieren los terrenos en 1988 y casi quince años después se inauguraron. Una obra colosal con un resultado espectacular. Una de las bodegas y parajes más bonitos del país. Los vinos, sólo tintos premium, de marca Arínzano, se convierten en referentes de exclusividad y calidad al poco tiempo de su aparición. Estos vinos consiguieron 5 años después, la calificación que existe en algunas autonomías españolas de Vino de Pago.

Undécima generación

En 1998, más o menos 15 años después de la primera piedra de Arínzano, la familia Chivite cumple el sueño que siempre tuvo Julián Chivite Marco, ya fallecido hace varios años: adquirir una propiedad en la Rioja Alavesa, concretamente en Elciego, la bodega Viña Salceda.

Y un año después, adquieren la Finca Granja de Legardeta, limítrofe a Señorío de Arínzano. En estos últimos 35 años, la expansión de la familia Chivite, considerablemente mermada por la prematura muerte de dos de los hermanos, de los cuatro herederos directos de Julián Chivite Marco, ha sido imparable.

Actualmente y bajo la presidencia del hermano mayor, Julián se ha reorganizado en cuatro diferentes empresas y razones sociales. Por un lado, propiedad de Arínzano, que elabora los Vinos de Pago bajo la marca Arínzano.

Por otro, Viña Salceda, para los vinos y bodega de la Rioja Alavesa. Para la tercera empresa vinícola, la que está en Cintruénigo, en La Cascajera, la heredera directa de los 150 cántaros del siglo XVII, y a modo de homenaje a su marca mítica, se ha elegido la razón social de Bodegas Gran Feudo. El apellido familiar, se ha reservado exclusivamente para los vinos Chivite 125 Colección, y los nuevos Chivite Finca de Villatuerta, englobados bajo una nueva sociedad bautizada como J. Chivite Family Estates.

They had acquired the land in 1988 and inaugurated it almost fifteen years later. It was a monumental project with spectacular results - it is one of the most beautiful bodegas and vineyards in Spain. The wines, exclusively premium quality reds sold under the Arínzano brand, became benchmarks of quality and exclusivity soon after their launch. Five years later, these wines obtained the “Vino de Pago’ (single vineyard wine) classification which exists in some of Spain’s self-governing regions.

The eleventh generation

In 1998, roughly 15 years after the first stone of Arínzano was laid and two years after Julián Chivite Marco had passed away, the Chivite family acquired the Viña Salceda bodega in Elciego in Rioja Alavesa, thereby fulfilling Julián Chivite Marco’s lifelong dream.

A year later, they acquired the Granja de Legardeta estate bordering the Señorío de Arínzano. Over the last 35 years, the expansion of the Chivite family, which sadly suffered the untimely death of two of Julian Chivite Marco’s four direct descendents, has been unstoppable.

Today, under the presidency of the oldest brother, Julián, they have reorganized the group into four companies and legal entities. One is the Arínzano property, which produces the ‘Vinos de Pago’ under the Arínzano brand.

Another is Viña Salceda for the wines and winery in Rioja Alavesa. The third company, is the one in La Cascajera, Cintruénigo, the direct descendent of those 150 cántaros from the 17th century. This company has been named Bodegas Gran Feudo, as a tribute to its legendary brand. The family name has been reserved exclusively for the Chivite 125 Colección wines, and the new Chivite Finca de Villatuerta wines, subsumed under a new company, baptized J. Chivite Family Estates.
