Beef Cheek Ragu
Beef Cheek Ragu Beef Cheek Ragu with Pappardelle Pasta with autumnal veg, topped with a hard local cheese and crispy breadcrumbs
Ingredients • 1 beef cheek, or 600g • 2 tbsp rapeseed oil • 2 medium onions, sliced • 2 celery sticks, chopped • 2 carrots, diced
Method 1
Remove any sinew from the beef cheek or ask your butcher – if you can’t find beef cheeks in your local supermarket don’t worry, any cheap cut of meat will suit, such as stewing beef or even try this recipe with lamb shoulder.
2
Grab a cast-iron casserole pot or any heavy large sauce pan will do and place on a high heat.
3
Season the beef cheek and place a splash into the pot once it is smoking hot.
4
Carefully add the beef and brown all over until it is dark and caramelized. Now add the onions followed by the rest of the vegetables, stir and cook for two minutes. Add the 2 cloves of garlic, rosemary, sugar and the tomato puree and cook for one minute. Once fragrant add the balsamic vinegar followed by the stout and reduce by 50%. When it’s all lovely and dark add the beef and bring to the boil.
5
Now preheat an oven to 180˚c. when the stock boils, remove the pot from the heat and carefully cover with tin foil. Place the pot into the oven for at least 2 hours or until the meat begins to fall apart.
6
While waiting heat a frying pan until nice and warm, add a drizzle of rapeseed oil followed by the bread crumbs, rosemary and garlic and toast until golden. Remove from the heat and mix in a bowl with the cheese. Set this aside.
7
Now check the beef, if it is falling apart, great! If not sure look, it’s a great time to have a few glasses of wine.
8
Remove the beef from the oven and carefully lift the beef out of the stock, place on a tray or plate and using two forks begin to shred. While shredding the beef place the pot onto the hob and place on a high heat until the stock reduces and thickens into a delicious sauce.
9
Place a pot of salted water onto a high heat and bring to the boil. Add the pasta and cook until the pasta is al dente. Strain the pasta and toss in a bowl or pot with the pulled beef and add the enough sauce until your happy with the consistency.
• 1 small celeriac, diced • 4 cloves of garlic crushed • 2 tbsp of tomato puree • 4 sprigs of rosemary, chopped • 500ml stout, Guinness or a lovely local alternative • 500ml beef stock, from a Knorr jelly pot is perfect • 2 tbsp brown sugar • 1 tbsp balsamic vinegar • Salt and pepper • 4 tbsp of grated Parmesan or Pecorino or a local hard cheese • 4 tbsp of dry bread crumbs • 6 nests of pappardelle
10 11
Place in a serving bowl and dust with a layer of the bread and cheese mix. Enjoy!

The Whole Duck Taco Feast
The Whole Duck Taco Feast Pan roasted breast, chipotle spiced duck legs, soft shell corn tacos, crunchy slaw, Pico de Gallo, crispy onions, avocado and sour cream
Ingredients • 1 whole duck • 1 tbsp chipotle chilli flakes
Method 1
Grab the duck and remove the breasts from the bone, then cut the legs off from the carcass and set aside (you can always ask your butcher to do this).
2
Preheat an oven to 180˚c. Place the duck legs onto a tray and rub in the chipotle, agave, salt, pepper and juice from one lime. Place into the oven and cook for 20 minutes or until golden and crispy.
3
With a very sharp knife, score the fat of the duck breast and season. Place the two duck breasts skin side down on a heavy based pan and place on a medium heat. As the pan heats up the duck fat will release and the breasts will cook in their own fat. After 3 minutes turn the breasts over and brown the other side. Remove from the heat to rest.
4
Now in a large bowl combine the cabbages, carrot, one crushed clove of garlic, one lime juiced and zested. Mix this together, add a touch of salt and some chopped coriander.
5
Get another bowl and mix the tomatoes, onion, the other clove of garlic, the chopped jalapenos and some coriander. Season with salt and add lime juice and zest.
6
Remove the duck legs from the oven and pull apart using two forks. Set aside.
7
Wrap the tacos in tin foil and place in the oven for 5 minutes until warm.
8
To serve, thinly slice the duck breast and place on a sharing board along with the pulled duck legs. Place the salsa, sour cream and slaw in bowls, the tacos on a plate and fan the sliced avocado across the board with the duck.
9
Finish everything with a generous splash of lime juice and olive oil.
• Salt and pepper • 1 tbsp agave syrup • 4 limes • 1 small red cabbage, grated • 1 small white cabbage, grated • 2 carrots, grated • 2 garlic cloves, crushed • 1 bunch of coriander, chopped • 2 tomatoes, diced • 1 small onion, diced • 1 tbsp chopped pickled jalapenos • 4 tbsp crispy onions • 2 avocados, halved and thinly sliced • 4 tbsp sour cream • 12 soft shell corn tacos, you will find these in any good supermarket • 4 tbsp extra virgin olive oil

Enjoy!

JFC
JFC Jacks Fried Chicken, with Mac ‘N’ Young Buck Blue Cheese and Pickles
Ingredients • 1 whole chicken, broken into breasts, drums and thighs • 1 tbsp freshly ground black pepper • 2 tbsp and 4 tsp salt • 4 large free range eggs • 500ml buttermilk • 2 tablespoons tabasco • 400g plain flour
Method 1
Toss chicken with black pepper and 2 tbsp of salt in a large bowl. Cover and chill for at least 3 hours.
2
Whisk the eggs, buttermilk, and hot sauce in a large bowl. Whisk flour and remaining 4 tsp of salt in another large bowl.
3
Heat a deep fat fryer to 160˚c to 170˚c
4
Pat the chicken dry. Working with 1 piece at a time, dredge in flour mixture, shaking off excess, then dip in buttermilk mixture, letting excess drip back into bowl. Dredge again in flour mixture and place on a baking tray covered with parchment paper.
5
Working in 4 batches and returning oil to 160˚c between batches, fry chicken, turning occasionally, until skin is deep golden brown and crisp and a thermometer inserted into thickest part of pieces registers 76˚c. Transfer to a clean wire rack set inside a baking sheet.
6
Now for the mac n cheese, grab a heavy based sauce pan and place on a medium heat. Add the butter and once it has melted stir in the flour until a paste is formed. Slowly pour in the milk and keep mixing until a smooth sauce is formed.
7
When it simmers add the cheese, garlic and onion powder and whisk until smooth.
8
While the sauce is cooking place a pot of salted water on the hob and bring to the boil. Add the pasta and cook until its al dente. Strain the pasta and fold through the sauce and serve in a large bowl for everyone to share.
9
To finish the meal, add a few extra splashes of tabasco across the chicken and place on top of a slice of bread on a plate and sprinkle with pickles.
• 1 tbsp cayenne pepper • 1 tbsp dried thyme • ½ tbsp garlic powder • ½ tbsp onion powder • 1 tbsp paprika • 2 litres of sunflower oil for frying • 400ml milk • 40g butter • 40g plain flour • 200g red cheddar • 200g Young Buck blue cheese • 1 tsp garlic powder • 1 tsp onion powder • 400g Macaroni pasta • Salt and pepper • Sliced pickles • White bread

Elegant new look for family home When the owners of a Co Down house decided to renovate their kitchen, they knew they wanted to make better use of the space, but weren’t quite sure how
H
aving seen and liked Neptune Belfast’s work, they subsequently turned to the interior design company for advice. They were keen to see how Neptune could transform their living space and, after visiting the showroom, decided to renovate both the kitchen and an adjoining room. “After that initial appointment with our kitchen designer they really liked what they saw and realised they could do more than just a kitchen,” says Emma Chambers, interior designer at Neptune Belfast. “They started to talk about layout and how to use the space more effectively and that’s when I got involved. Basically, their kids are older now and they wanted to enlarge the space. This ultimately involved knocking down a wall into a former toy room beside the kitchen, which really opened up the space.”
Open-plan brief
With two teenagers and their own business to manage, the home-owners wanted an openplan space which they could all enjoy together. What they didn’t quite know was how to
42
achieve that, which is where Neptune Belfast stepped in with their expertise. “They knew they wanted to change it, but didn’t know where to start,” says Emma. “They loved the timeless, classic and homely look of Neptune.” After visiting the Neptune Belfast showroom and viewing the ranges and colour tones available, the clients had a much better idea of what they wanted. A site visit followed, helping Emma to get a better understanding of the space and the natural lighting within the rooms, all of which influenced her interior design choices. Amongst the various considerations with the project was how to make the kitchen layout work for the family practically, as well as giving it a stylish makeover. It was, says Emma, “a tricky space in a lot of respects,” with regards to the layout. Following in-depth research and information-gathering, however, she created a detailed mood board which portrayed her overall vision for the project. “Our client was absolutely blown away by the mood board and just wanted to go for it all,” she says. “When you get to the point of
presenting the mood board, you’re fairly sure they’re going to be happy with it because you know by that stage what they like. “We all collaborate together at Neptune on projects, so I was working along with the kitchen designer on this and all of the products we used are Neptune’s own.”
Kitchen calm
The first part of the project saw the kitchen refitted with Neptune’s graceful Suffolk range of units in a Driftwood tone, with the counter tops rendered in a natural shade of Quartz Olympus. Meanwhile, Neptune’s Silver Birch paint is used for the walls. The result is a fresh, clean look which exudes elegance and simplicity and creates a room which feels light and airy, contrasting with the previous more traditional heavy wood cabinetry, which darkened the room. Described as their ‘most pared-back collection of all,’ the Suffolk Collection hovers between classic and contemporary and is made from natural timber, with a hand-painted finish. Merging seamlessly with these tones, the cooker’s splashback uses Neptune’s Elcot Salt tiles, while the island in the centre of the kitchen is in a gentle contrast shade of Grey Oak. The surrounding bar stools are again, from the Suffolk range and are Seasoned Oak, with Suffolk linen bar stool cushions on top. The sink, meanwhile, is a ceramic doublebowl style from Neptune’s collection, paired with a trendy Quooker Flex tap. Suspended above the island hang beautiful hand-blown ceiling lights with globe bulbs from Neptune’s Shaftesbury Glass Pendant range, which have chunky chain fixtures with a chrome finish. “We carried that same lighting through into the dining space as well,” says Emma. “The glass cabinets on either side of the range also
create a nice focal point in the room and there are LED lights within that, which creates nice mood lighting at night. They can just use the LED lights and the extractor light.” Neptune also designed bespoke curved cabinets to fit on either side of the clients’ fridge-freezer, adding a nice softness to the overall look of the cabinetry.
Relaxed living/dining space
Having knocked down a wall to create extra living/dining space with an open-plan layout, the clients opted for a statement piece of furniture against the wall leading in from the kitchen. “The customer really wanted to maximise storage in this space so they have a really beautiful cabinet in the centre for dry food,” says Emma. “There are two drawer packs of
They were keen to see how Neptune could transform their living space and, after visiting the showroom, decided to renovate both the kitchen and an adjoining room. four on each side, with more storage under the centre cupboards. “We added lightness with two beautiful glass cabinets with LEDs on either side of the central cupboard space, which creates a nice mood. All of this is again from Neptune’s Suffolk range and everything was tailored to work with this space.” In front of the wall cabinet sits an Arundel rectangular dining table, made from natural oak and with a brush finish. “It’s really important in that space because it creates texture and warmth,” says Emma. “Bench seating is also good for areas where you don’t have a lot of space. You can push them underneath the table and you can get a few more people around the table. That’s why we used them here.”
Subtle tones for soft furnishings Moving across into the lounge area, the fabrics and msoft furnishings here continue

the muted, calming tones of the kitchen and dining space, knitting the décor together seamlessly. The look is understated and relaxed, with gentle hues and quality fabrics adding softness and comfort to the space. “This is all natural fabric trimmed off in teal blue, which ties in with the sofa choice,” says Emma. “The sofa and armchairs come from our Long Island furniture range and are in the Chloe Ash shade.” On the sofa, linen fabric scatter cushions include larger un-patterned designs at the back – from the Grace Cushion range in Chloe Old Rose. The smaller front cushions are from the same collection, but in Emma Teal with an English cabbage rose print. On the armchairs, the larger cushions are Chloe Ash, while two throws, from Neptune’s Cotswold range – the Herringbone Throw in Old Rose design – add a splash of soft pink colour. The curtains, meanwhile, are one of Neptune’s own printed fabrics, a natural linen and cotton blend in Emma Teal, which have a faded, vintage feel and are again, in that English cabbage rose design. The blinds, meanwhile, are made from an external fabric and are in a soft neutral tone with a teal border. “We put in a picture window at the other side of the room, at the sofa side,” says Emma, “which brought in light from the hall. We also studded out the wall with the two cabinets on either side of the TV. Before, that was just a flat wall. We then made the two bespoke units to provide additional storage and to give some decorative shelving. There’s storage below as well.” The coffee table and two side tables are all from Neptune’s Chichester range, in Silver Birch tone, and have a natural oak wood top which again, works to soften the space. Beneath the table is a Tolsey Loop Pile Rug in Gull Grey, woven from pure wool, while on the side tables stand elegant Shaftsbury Glass Lampstands with Oliver lampshades in warm white tones. Neptune also added all of the finishing

touches to the room, including the wall pictures, lighted candle and flowers. The artwork also comes from their Paeonia range of images and depicts loosely gathered bouquets of peonies.
Project inspires further redesign Taking around three months to complete – with just three weeks’ work in the house itself – this home renovation project was completed in September 2018. However, the clients were so happy with the end result that they’ve decided to keep going… “The family moved out when they were getting the kitchen and living space fitted and they were delighted with how it all went,” says Emma. “Work is now ongoing in other parts of the house.”

Top 10 layering techniques Want to add your personality to your home? Some creatively placed layered schemes might just create the individual look you want. Words: Jill O’Neill
C
reating a home, not just a house, can be a little harder than it looks. This is especially true in new build houses. But using layering techniques and decorative schemes will easily add texture and depth in your rooms, for a space that’s perfect to relax in. My penchant is for the vintage and salvaged aesthetic, but whether your interior love is modern, retro or antique, you can create a captivating layered look by choosing a variety of your most treasured items and displaying them in an interesting way. So, firstly what do I mean by ‘layering’. I don’t mean adding a few scarfs and extra cardi’s! In interior design terms I am referring to adding texture, depth and levels of overlay that create interest and warmth to a room.
Layer your Patterns
The beauty of layering is the mix and match opportunity. You don’t have to have all your colours completely in tone; rather, play to the strengths of each colour picking out tones to highlight. The trend for Persian rugs are a great example of this style. They are normally multi-coloured with intricate designs. You could keep it as the only colour and pattern in a room, which would be a lovely focus, however you can also not worry about the rug design scheme and just keep adding more pattern and colour! The trick is to keep the additional colours in keeping with the overall colour scheme and only add less intricate patterning. Keeping
48
the walls and floors fairly plain will help. Or vice versa – have a patterned wallpaper and colourful window dressing and some furnishings, with the rest being more muted.
Charming Curio Displays
We’ve all picked up nik naks from travels or from family; cards or images from life events; and gifts or forget-me-knots from loved ones… these wonderful pieces are what will add character to a home. So don’t file them away – put them on show! Find ways to display them; layer them or purchase charming display units for your curio. If you prefer a more minimalist look, simply create an area where you can use a collection of keepsakes to create a beautiful display. A cabinet does help to ease dusting these areas! I love using vintage or antique units for this as it adds to the display beautifully.
Overlay Rugs
A Persian rug looks great in a modern or eclectic setting, but adding a plainer shag rug for example, adds even more warmth and can also help zone an area within the room. The double rug combo creates beautiful texture and adds immediate warmth, or hygge as the Danish say. They are definite fans of a layer or four! The result that the ‘hygge’ idea aims to achieve is a feeling of warmth, cosiness, comfort. Overlaying certainly achieves this. If however you are not a fan of lots of colour, but still want a splash and touch of antique you could add a small Persian rug to a larger jute or hessian one.
Create Lighting Zones
A wonderful way to create zones in a room, particularly in a kitchen or living room is through lighting. And as you use the room throughout the day you will move into different zones to create ambiance or highlights as you require it. Personally, I love the old factory lights and they work so well in a kitchen. You can get amazing original vintage ones, or the repro versions; either way having a range of sizes and shapes will provide the perfect tools for your layered arrangement.
Stack up your Art & Photography
Whether layers increase your comfort, please the eye, or hide parts of a room that make you cringe, going multi-dimensional in a few zones will certainly add to your interior comfort and style.
Too many pictures you say? They don’t always have to be perfectly hung to be seen. A lovely relaxed way to display artwork is by simply stacking them, slightly overlaying each one. This works on a shelf or on a sideboard/ unit. Equally, you could create the look on the floor by stacking a rage of medium/ large artwork along a wall or in a corner. Try using old vintage frames to create a ‘worn-in heirloom’ look!
Try a Salon Style Hang
You don’t have to have gallery size walls to
49
of curtains with sheer material underneath – either curtains or blinds – also provides versatility. You can use both or just one depending on how the light falls. But this style of layering can really beautifully and softly dress your window area.
Stick to a theme
….and so many to choose from! Perhaps your theme could be from the biggest collections of items you have, e.g. cushions or from a colour scheme. Even just a plant theme can work; also quite a current design trend at the moment. This image shows a boho theme using Moroccan style rugs and cushions of all colours. All the materials are of a similar style which ties everything together nicely. Using wicker pieces and patterned floor or wall coverings creates a souk type of feel. Whatever your theme, pick items that speak to you visually, e.g. a green leaf pattern upholstered chair, with green leaf framed pictures, some large green plants and touches of similar greens in some soft furnishings. Then leave the rest fairly simple. This way the items can shine and not overwhelm.
Kitsch Fun
If colour and fun is your passion, then the retro kitsch look is a great way to go! Bags of colour makes for such a pleasant place to be. You can go all out, as in the image, or have touches of it in the room. So maybe two really strong coloured walls in a bedroom for example with garlands and fairy lights to decorate picture frames or the headboard. Animal prints look good here and 1950s furniture such as a dressing table and mirror with leopard print upholstered seat. Paint a vintage 1930s wardrobe in a vivid colour and stencil on top. Have fun with it! layer the pictures. A tight group of images works well on a wall to create a sort of pattern of artwork. The look doesn’t have to use all the same frames or style of frame but can look great with a mix of frames, sizes, colours.
Create a feature wall
Create a wall of interest with a treasured collection. Beautiful mirrors as seen here, make for a fascinating display without too much effort. Keeping to a simple palette allows you to add depth by layering without having to add colour schemes or pattern. The look simply ‘is’ through having comparable items collected together.
Layering window dressing
Remember the net curtains of your grandmothers’ era? The idea of having layers of window dressing is definitely a lovely way to add visual warmth to a room. Having a pair

At home with nature We put a lot of effort into making our gardens wilder, and rightly so. But what about our houses and flats themselves? In a world where the wild places are shrinking, every inch of space we can make for nature is vital. Whether it’s the joyful song of a robin drifting through an open window, or the colourful flash of a peacock butterfly just beyond the glass, it’s always a delight to glimpse the wild world just beyond our walls. But our wildlife is in trouble. Natural habitats are shrinking, becoming fragmented and isolated by roads and other developments. With every tree that is lost, there are fewer natural cavities in which bats and birds can roost and nest. Nature no longer has the space it needs to thrive. Nature reserves are invaluable, but to keep these protected areas from becoming wild oases in an impoverished landscape, we need to use every single space to help wildlife. Our gardens, streets, road verges and even houses can become part of a wild network, creating vital green corridors and stepping stones that connect larger wild spaces. Every home, new or old, can play a part. With just a few mostly inexpensive adjustments, we can make our roofs, walls and even windows a little more wildlifefriendly. From bee bricks and bat and bird boxes that provide safe roosting and nesting spots, to walls blooming with climbing plants, there are lots of great ways to turn the outside of your house into a wildlife sanctuary. The best results will come when they complement the surrounding landscape, so take a look at the habitats around your house and choose the best features for your location – bats are more likely to use a roost close to a hedgerow or line of trees, and birds need to be able to find enough food to feed their hungry chicks. Together, our homes and gardens take up more space than all of Northern Ireland’s nature reserves put together. So let’s make every inch count! Visit our website for handy guides to helping wildlife, from building bat boxes to attracting bees.

Window-mounted feeders Even with no garden you can still feed the birds. A window-mounted feeder gives them a helping hand and lets you enjoy their antics from your armchair.
House martin nest cups Invite house martins to move in under your eaves with a specially made nest cup. They’re especially useful when martins can’t find enough mud to build their own.
Hanging baskets and window boxes Wildflower-filled hanging baskets and window boxes make the perfect pit stop for passing pollinators.
Hedgehog holes Hedgehogs can travel over a mile each night as they forage and look for mates. A 13cm x 13cm hole in your fence helps keep the hedgehog highway open.
Bat boxes By fixing a bat box to your wall you can provide the perfect resting spot for your local bats. It’s important to avoid directing any artificial lighting onto the box.
Swift box Modern houses leave little space for swifts to nest, but swift boxes create a home for these summer visitors. Broadcasting a recording of their calls encourages them to move in.
Green wall From a simple climbing plant to a trellis laden with different species, a green wall adds colour to a house, creates vital habitat and helps regulate pollution and rainfall.
Water butt Using less water helps keep our wetlands healthy, so set up a water butt to catch rainfall. You can use the water to clean your car and water your plants.

Holywood style for bathroom quintet When Ryan Smith was asked to design five bathrooms for a new-build in Holywood, he had no idea it would turn out to be one of the biggest and best projects of his career to date.
A
s showroom manager at Bassetts Simply Bathrooms in Belfast, he’s worked on many jobs over the past 20 years but says, “This was my biggest and best and the most
enjoyable.” The project, which took between two to four months to complete, required four ensuites in total, along with a separate downstairs cloakroom. Working closely with the site foreman, interior designer and clients, Ryan says the trickiest part was in getting the layouts just right, ensuring that everything would work together. Several site visits later, however, and they were ready to get on with things. “I did about 30 drawings at the outset,” he says. “At the first visit, the clients came in with the interior designer and told me what they wanted for each room - a classic traditional theme throughout to match the half-panelled effect they had, with some wallpapering. We looked at what would fit practically in the layout. Once we did that, then we got into the styles and colours. They wanted certain rooms to look more minimal than others.”
Stunning master bedroom ensuite
As the clients’ own personal bathroom, the
56
master bedroom ensuite was perhaps the most important to get right and the brief was to make it “a little different from the rest.” “They wanted a really nice, luxurious ‘wow-factor’ bath, which I knew we could only achieve by getting a traditional cast-iron bath that could then be painted to suit their colourscheme,” says Ryan. “We got a matching bespoke vanity unit to complement that colour, a powder-blue which was suggested
by the interior designer. The bath had to be stylish but also functional and comfortable. Cast-iron baths are more comfortable than the modern styles of roll-top baths.” A striking vanity unit with his ’n her custom washstands adds to that period-style look, with a three-tap-to-hole basin format for each wash area. Below, there is ample storage in a central nest of three drawers, with two cupboards on each side of the unit. Meanwhile, a large
rectangular mirror hangs above the wash basins, its frame painted the same dusky blue as the unit. All of the fittings in this ensuite come from Imperial Bathrooms, including the vanity lights - Segovia Wall Lighting with Glass Shade from Imperial Bathrooms’ Classic Collection. These are attached to each side of the mirror. The taps, mirror, toilet and shower are also from Imperial. “It’s one room but split to create a separate shower and toilet area, so to the right, is the shower and to the left, the walk-in WC area,” says Ryan. “The tiles in the shower are polished marble from our All-marble Lasa Natural 600X600 range. We needed a nice tile to blend in with the herringbone-style wooden floor-effect tiles. The herringbone was a style the clients specifically wanted.” The wet room/walk-in shower subsequently boasts a traditional drench showerhead, with plank-effect flooring which meets the herringbone in the rest of the room. As with all of the bathrooms in the house,
a Geberit CleanLine Wet Room Drain was installed for optimum convenience and to continue that minimal look, making it easier for the water to drain. “It also meant they could use larger tiles as opposed to the usual smaller mosaic style in the showers, which are harder to maintain,” says Ryan. Each shower/wet room in the house was further given its own recess in the wall for bathroom products, which proved a little bit more challenging for the builders because of the brick walls. “That was a requirement the clients wanted,” says Ryan. “I think it’s essential for every bath and shower, if it can be done.”
Elegant front bedroom ensuite
Moving onto the front bedroom ensuite, this is fitted out primarily with the sleek, clean lines of Villeroy & Boch bathroom products, including the toilet and surface-mounted wash-hand basin. The overall look is one of
understated elegance - a room designed to have minimal fuss. Like all of the house, this ensuite enjoys good natural lighting, courtesy of two large windows opposite the washstand unit, which is part of a range provided exclusively to Bassetts from Burbidge in England. This Langton unit is a solid oak piece of furniture hand-painted in soft moss, with a 25mm solid surface top and a single drawer underneath for storage. The base is left open, with wooden slats allowing for further storage of towels. Above the Villeroy & Boch basin, a vertical rectangular mirror is shouldered by wall lighting on either side from Imperial Bathrooms. The front bedroom ensuite also has a walk-in wet room, with only the essential areas – floor and shower – tiled and the rest of the room painted in warm creamy tones. “That’s becoming more popular, so people can change their paint colour later on,” says Ryan.
Minimal back bedroom ensuite
In the back bedroom ensuite, a Laura Ashley floor-standing cotton-white unit with a small brick-style tile splashback provides the focal point of the room. This oat-coloured gloss tiling continues in the shower while the rest of the room is painted. Continuing the theme with a mirror above the washbasin and two Imperial Bathrooms side lights, the wash area also has cupboard storage room below. Designed with a neutral theme, the back bedroom ensuite has a walkin wet room with large wood panel-effect tiling, while the shower itself comes from Aqualla’s Luca range in Newtownards.
57
Modern guest bedroom ensuite
The guest bedroom ensuite was designed specifically with the clients’ grandchildren in mind, for when they come to stay, and has a slightly more modern look than that of the back bedroom ensuite. Here, there is a very minimalist floating, or wall-hung, toilet, along with a floating solid oak, hand-painted grey unit from Laura Ashley, which has two drawers for storage. An impressive rectangular recess mirror stretches right across the top of the wash area and toilet, with four small circular lights discreetly embedded into the tiling above. The guest ensuite is all about simple, modern and practical design, which continues with its walk-in shower/wet room, fitted again with a no-fuss Aqualla shower. Large floor tiles are used throughout this ensuite and are the same within the shower, while the wall tiles are
in a large brick-style, with a feature wall in the shower using much smaller brick-style tiling.
Victorian-style cloakroom
The final bathroom fitted in this stylish newbuild is the downstairs cloakroom, which was to have a dash of wow-factor while being styled in a more traditional way. Overlooking the sea, a large, almost wall-length window floods this space with natural light. To the left of the window is the toilet and a Victorian-style washstand, both from Imperial Bathrooms. “We definitely have a bit of wow factor with the basin and washstand,” says Ryan. “It has a nice traditional feel to it but still manages to look stylish and modern.” The washbasin is fitted with a three-tap hole and has a mirror above, as per the other ensuites, this one in an arch shape, with the Imperial lights on either side. Below, a single
glass shelf allows for towel storage, while the exposed metal framework of the unit sets it off in elegant style. “The floor tiles here continue through from the hallway,” says Ryan. “They’re beautiful and are Rainforest White from Vitra. They have a nice warm feel to them, which is why the clients liked them. Initially, they thought about getting real wood for the floor but they were happy to have these instead.” The cloakroom also boasts a bespoke coat rack, with overhead pelmet and double storage cupboards underneath, which is built into the wall and was specially constructed by the clients’ joiner.
Five fabulous fit-outs
While this was undoubtedly a large project, with five ensuites to fit out, it was nevertheless highly rewarding and one which was much very much enjoyed by Bassetts Simply Bathrooms. With each room requiring its own distinct style, while following an overall brief of a classic traditional theme, with minimal design, the end result surely achieves all of this and more…

Kitchens Solid wood gives a beautiful natural look to a kitchen and choices can include iroko, oak, and beech. But when used with solid wood doors it may not provide much of a visual contrast and works best with painted kitchens. It should be noted that wood worktops will naturally darken over time and will require periodic maintenance such as regular oiling.
Granite is an extremely hard and durable polished stone. Heat resistant, unlikely to scratch or chip but also tends to be costly, and lead times lengthy. Some granite can be sourced here in Ireland, while others may be imported from as far afield as India and China. As it’s a natural material the granite you choose from that small sample in the kitchen showroom may be quite different to the large piece that eventually arrives at your door.
