I am proud to be part of an extraordinary team at Seneca Allegany Casino & Hotel in Salamanca, N.Y., which is celebrating 10 years this May. Inside this issue, you will read about some of the team members who have been with us since “Day One,” as well as a look-back at our property’s history. We have come a long way since beginning as a temporary facility with a buffet, to now having a world-class casino resort with restaurants, entertainment, 413 Four Diamond hotel rooms, and so much more. Our 10th anniversary is not the only milestone worth celebrating at the Seneca Casinos throughout Western New York. Ground is broken for a $160 million master project for an 11-story hotel, permanent gaming floor, space for three new restaurants (Western Door, Patria, and The Seneca CafĂŠ), an indoor pool, and The Spa & Salon. The first beam for the hotel is put in place on January 27, 2006, and the final beam is topped on June 20, 2006.

March 14, 2008 The former temporary casino structure undergoes a $40 million makeover, creating the Seneca Allegany Events Center and nearby meeting rooms. The Blues Brothers Band, featuring Dan Aykroyd and Jim Belushi, is the first to perform in the venue in front of a sold-out crowd.

Supporting the Community from 357 Feet Up The Seneca Niagara Casino & Hotel is known for its exciting atmosphere. For some gamers, it takes guts to go all-in. But for the fifth consecutive year in late July, courage and excitement at the casino will be taken to new heights – literally. The casino will again play host to “Over the Edge,” a fundraising event to benefit Special Olympics New York. Last year, more than 100 participants, each of whom earned at least $1,000 in pledges, rappelled down the side of the 357-foot, 26-story hotel tower at Seneca Niagara Casino. You read that correctly:
More than 100 participants rappelled down the side of the 357-foot, 26-story hotel tower at Seneca Niagara Casino. For some, the thought of scaling the largest hotel tower in New York State outside of Manhattan is enough to make their hearts pump fast. But others are flat-out pumped for the opportunity. This year’s Over the Edge event aims to raise more than $150,000 for New York Special Olympics. In recent years, local celebrities have gotten into the act – including former professional hockey players, current professional lacrosse players, media personalities, and members of the Niagara Falls Fire Department. Natalie Conomos, sales manager with Seneca Gaming Corporation, gets ready to go “over the edge.”
While descending down the south face of the Niagara Falls hotel was new for Seneca Gaming Corporation team members back in 2010, helping the community has been long ingrained in the company’s culture. Over the Edge is just one of dozens of ongoing events through “Team Seneca Cares,” a program that is committed to encouraging community involvement, promoting a positive company image, and creating a unified workforce through team member participation. Members of Team Seneca Cares volunteer at more than 25 events throughout the region each year, such as runs and walks, blood drives, and neighborhood clean-ups. Visiting Niagara Falls was a first for the national coordinators of Over the Edge in 2010, but the organization had already safely conducted about 65 similar events throughout the U.S. and Canada, including places such as Hawaii and Chicago. The organization has quickly grown, having now hosted hundreds of events throughout North America, Europe, and Australia. All coordinators are fully certified for rappelling and safety. For thrill-seekers who missed the action in previous years, another opportunity to be daring for a good cause takes place on July 25, 2014. The event includes live music, raffles, games, food, silent auctions, and a special VIP tent for participants. Corporate teams are encouraged to register. Those wishing to scale the hotel tower and/or donate to the cause should visit overtheedgeny.org.

‘Day-One Employees’ Reflect on a Decade of Success
In preparation for a grand opening on May 1, 2004, the Seneca Nation of Indians hired more than 900 workers to run Seneca Allegany Casino. Ten years later, a quarter of those team members are still with the casino today and are affectionately known as “Day-One Employees.” Seneca Today interviewed some of these 200+ distinguished individuals to learn about their perspectives on the casino’s growth, its legacy of outstanding customer service, and its fabric within the Salamanca, N.Y. community.

Philosophy on cooking:
“I learned from Executive Chef Brian Mahony that people eat with their eyes. If the food is appealing to the eyes, the stomach will usually follow. I also believe in keeping it simple when it comes to cooking, and always look to bond more and more with the culinary team.”
How he became a chef:
“I had a Polish grandfather and an Italian grandmother, so our holidays were filled with long tables of food. I told my mom and dad at age six that I wanted to be a chef, and started cooking with my grandparents and my brother. By age seven, I was already learning about marinades.”
On his management style:
“I’m hands-on and show no favoritism – having a well-rounded team is very important. I want to make my team members’ jobs easier and keep things fun. But I also take my role as the room chef seriously. As Dean [Metzger, executive sous chef] taught me: ‘You can’t be a clown and run the circus, too.’”
Roasted Beet and Arugula Salad with Oregano Vinaigrette
Ingredients for oregano vinaigrette: 1 shallot, finely diced 1 jar of Dijon mustard 10 cloves of roasted garlic ½ cup white wine ½ cup vegetable oil ½ cup olive oil 2 rosemary sprigs, finely chopped 4 oz. fresh oregano, finely chopped 3 oz. balsamic vinegar 1-½ cups of buttermilk Salt and pepper (amount = to taste)
Additional ingredients for salad: 1 red beet, roasted 1 golden beet, roasted 4 oz. arugula 1 oz. shredded carrots 1 oz. pickled red onions 1 oz. toasted walnuts ½ pub roll or crouton/bruschetta bread ¼ onion ½ lemon, squeezed 1 tbsp. salt 1 tbsp. sugar 2 oz. goat cheese
In a sauté pan, sauté the shallots. When translucent, add roasted garlic cloves and Dijon mustard and cook for three minutes. Deglaze with white wine and add chopped rosemary. Place mixture into a blender and slowly add vegetable and olive oils until emulsified. Add oregano, balsamic vinegar, and season with salt and pepper. Finish with buttermilk. Next, toss the beets in oil, salt, and pepper. Roast in a 350-degree oven for 45 minutes or until soft. Begin to peel the beets and slice. Set aside for plating. Take the arugula and mix with shredded carrots, pickled red onions, toasted walnuts, and the oregano vinaigrette. [Note: To make pickled red onions, take ¼ onion at room temperature and coat with 1 tbsp. salt and 1 tbsp. sugar. Add the juice from the squeezed ½ lemon and set aside in the fridge.] Slice the roasted beets and intertwine them starting with the red and then golden. Grill or roast a piece of pub bread and brush on the goat cheese. [Recommendation: Add a touch of oil, garlic, and salt to the bread before grilling or roasting it.]

hese are quotes commonly heard by the team at Seneca Hickory Stick Golf Course in Lewiston, N.Y. – a public course that feels like a private country club and is designed by worldrenowned golf course architect Robert Trent Jones II. And while the course can be challenging for those of any skill level, golfers agree that the picturesque course has a layout that keeps them coming back for more. “From the natural hickory stick trees, to the view of the Niagara Escarpment, to the fine details such as the heather grass surrounding the bunkers, Hickory Stick has breathtaking views that add to the excitement of play,”
said Joe Bock, first assistant golf professional for Seneca Hickory Stick Golf Course. “Fans of Robert Trent Jones II courses really enjoy the flow of Hickory Stick and say that the unique layout makes this a destination course. It has a ‘links’ feel, which allows players to choose from a variety of clubs on their next shots after they tee off.” Although water hazards and the tall bent heather grass can create some difficulty during play, Bock reminds golfers that a number of factors can make the course very playable for any skill level. For starters, each hole has five sets of tee boxes, which can vary the overall distance by as much as 130 yards.
“In my opinion, I would say that ball placement is the key to success – and most of our greens are typically elevated on the back end,” Bock said. “But we’ve been noted for having some of the most generous fairways in Western New York for a public course. No matter what your skill level is, you can ask questions of our player assistants throughout the course, and we also have golf pros available at the clubhouse.” A golf outing for all 18 holes typically lasts around four and a half hours, and the team at Hickory Stick will help make every minute worthwhile. Beverage carts travel frequently throughout the course, and each golf cart
also includes a cooler with ice to keep drinks cold. Player assistants will clean your clubs after your outing, and will also allow you to rent clubs for play – including the latest styles by reputable brands such as Taylor Made. Bock says: “Fans of BuffaloGolfer.com voted this hole as the ‘Favorite Hole #6 in Western New York.’ It’s very picturesque with a creek and heather grass right at the beginning. That creek then runs up through the middle of the hole, splitting the fairway in half. Watch the pin location on the green and be careful not to land the ball too far to the left, as it could roll down into the creek.”

Bock says: “Natural preserves are on the left side of the hole, all the way up to the green – and there are spots of heather grass on the right. Watch for the long, skinny bunker that is hidden on the back side of the green. But overall, this is a short par 4.”
Bock says: “This hole offers a beautiful view of the Niagara Escarpment. There’s a slight dog-leg left – so follow the clubhouse to be safe, and remember that the fairway on the left is shared with Hole #1. Aim at the first flag, as this hole has our signature double-green that is shared with Hole #18.”

Bock says: “The green is elevated, and you’ll have to pitch your shot up the hill if you miss to the right. The bunker can help you aim for your drive, and the wind direction on this hole normally helps carry your ball.”

Two bunkers in the middle will frame the fairway, and you’re forced to play right due to the natural preserves – although bunkers also guard the right side of the green. With the trees, you normally have to hook your shot to get on the green – and that’s why I say Hole #17 is ‘the hole where bets are decided.’”
Bock says: “This final hole is ‘The Entertaining Hole,’ as all players have to hit their shots over the large pond. The green is the signature double-green with Hole #9, so don’t aim for the flag on the left. You’ll see the clubhouse in the background. Spectators on the patio enjoy seeing if someone can get a hole-inone – and it has happened!”

An Interview Series With President Snyder Editors Note: On November 7, 2013, Seneca Nation President Barry E. Snyder, Sr. was featured in an interview series “Meet Native America.” The Smithsonian National Museum of the American Indian invites tribal leaders, cultural figures, and other interesting and accomplished Native individuals to introduce themselves and say a little about their lives and work. Together, their responses illustrate the diversity of the indigenous communities of the Western Hemisphere, as well as their shared concerns, and offer insights beyond what’s in the news to the ideas and experiences of Native peoples today. Part One of this interview ran in the Winter Edition of Seneca Today. Here we continue the series with Part Two. What responsibilities do you have as a tribal/band/ Native community leader? As President of the Seneca Nation, it is my primary responsibility to uphold the Seneca Nation Constitution, protect our sovereignty and respect and live the traditions and culture of our people. Who inspired you as a mentor? One of my goals as an elected leader is to impart the vast experiences I have learned over my lifetime of service to the Nation. I too, at one time, was a student of our former leaders – Bill and Cornelius Seneca – who instilled in me that the rights of our people 52 Seneca Today
come first. I took that advice to heart as I began my political journey to help grow our people’s strength and presence. This mentoring follows the pillars of the Great Law – Peace, Equity, Justice and a Good Mind which places the welfare of our people before that of our own. Our two prophets, Hiawatha and The Great Peacemaker, brought a message of peace to the early warring tribes. Those who joined in the Iroquois Confederacy – the League of Peace and Power - were the Seneca, Onondaga, Oneida, Cayuga and Mohawks. Once we ceased fighting, we rapidly became one of the strongest forces in 17th and 18th century northeastern North America. Are you a descendent of a historical leader? If so, who? All our people are descendants of past leaders. Approximately how many members are in your tribe/band/Native community? The Seneca Nation is the largest of the Iroquois Confederacy tribes with approximately 8,200 enrolled members. What are the criteria to become a member of your tribe/band/Native community? The Seneca Nation is a matriarchal society. If the mother is an enrolled member of the Seneca Nation, her offspring are entitled
to be enrolled as members of the Seneca Nation of Indians. Is your language still spoken on your homelands? If so, what percentage of your people would you estimate are fluent speakers? In the Seneca language we are known as O-non-dowa-gah, (pronounced: Oh-n'owndough-wahgah) or "Great Hill People." Seneca is an Iroquoian language of the Northeast Woodlands, spoken by about 100 people. Most Seneca speakers are elders, but some young Senecas are working to keep our ancestral language alive. In 1998, the Seneca Faithkeepers School was founded as a five-day-a-week school to teach children the Seneca language and tradition. In 2010, K-5 Seneca language teacher Anne Tahamont received recognition for her work with students at Silver Creek School and in language documentation, presenting "Documenting the Seneca Language using a Recursive Bilingual Education Framework" at the International Conference on Language Documentation and Conservation. The speakers of the Seneca language would agree that it is in danger of becoming extinct. Fortunately in 2012, a $200,000 federal grant for the Seneca Language Revitalization Program has further solidified a partnership

with Rochester Institute of Technology that will help develop a user-friendly computer catalogue allowing future generations to study and speak the language. The revitalization program grant, awarded to RIT’s Native American Future Stewards Program, is designed to enhance usability of the Seneca language. The project will develop "a user-friendly, web-based dictionary or guide to the Seneca language.” Robbie Jimerson, a graduate student in RIT’s computer science program and resident of the Cattaraugus Indian Reservation near Buffalo, who is working on the project, commented: "My grandfather has always said that a joke is funnier in Seneca than it is in English.” As of Fall 2012, Seneca language learners are partnering with fluent mentors, and a newsletter, Gae:wanöhge’! Seneca Language Newsletter, is available online. Although Seneca-owned radio station WGWE (whose call sign derives from "gwe," a Seneca word roughly translating to "what's up?") broadcasts primarily in English, it features a daily "Seneca Word of the Day" feature prior to each noon newscast, broadcasts a limited amount of Seneca-language music, and makes occasional use of the Seneca language in its broadcasts in a general effort to increase awareness of the
Seneca language by the general public. In 2013, the first public sports event was held in the Seneca language, when middle school students served as announcers for a lacrosse match. The Seneca Nation’s economy has grown significantly in the past several decades into a successful engine for economic growth for the Nation and surrounding communities. The Nation’s businesses have evolved from a bowling alley and campgrounds in the 1970s to bingo, gasoline and tobacco sales and gaming. The Seneca Nation has built a billion-dollar gaming business in Western New York, with its Seneca Niagara, Seneca Allegany and the newly expanded $130 million Seneca Buffalo Creek casinos. In the process, the Nation has created thousands of jobs for Senecas and non-Senecas alike, and has become an important business partner for many local companies, thereby supporting numerous additional jobs in the local and regional economy.
The Senecas are one of the largest employers in Western New York. With 4,400 employees (Seneca Nation and its Enterprise businesses and Seneca Gaming Corporation), we are the 10th largest employer. New York’s efforts to curtail Seneca tax-immune sales have impacted our public and private sector economies and, when combined with the potential volatility in the gaming industry, have compelled the Nation to look for ways to grow its economy through diversification. This includes establishing Seneca Holdings, LLC, an investment holding company whose mission is to provide sustainable economic success to the Nation and its people; and the Seneca Nation Center for Business Growth, a small business incubator providing business advisory services and technical training for individuals. Learn How to Shake Up
the Excitement Craps is considered to be the most exciting game in any casino. There are a variety of wagering options and, as a result, it can be a complicated game. There are, however, some simple bets you can make to start – and you can learn the rest as you go. Each bet is dependent upon the Point value of the uppermost side of two dice that have come to rest after being thrown by a player or “Shooter.” Follow the diagram to learn the terminology and rules of this exciting game.

D. DON’T COME: The Don’t Come Bet may be made any time after a Pass Line Point has been established. The win-loss rules are the same as for the Don’t Pass, but the win, loss, or determination of the Point is established by the next roll of the dice. Like the Come Bet, the Don’t Come Bet allows a Player to bet on each roll of the dice. Pass Line, Don’t Pass, Come and Don’t Come Bets are paid even money. Pass Line and Come Bets cannot be removed or reduced after a “Come Out Point” or “Come Point” has been established, however, they may be increased. Don’t Pass and Don’t Come Bets may be decreased or removed at any time but never increased or replaced. Odds: A player may elect to make a wager in addition to the original or “flat” bet any time after the Point is established. A Player may “take” odds on any Pass Line or Come Bet. A Player also may “lay” odds on any Don’t Pass or Don’t Come Bet. All odds bets may be removed or reduced at any time. Odds are paid based on true odds and will win if the flat bet wins (and vice versa).
A. PASS LINE: If you place a bet on the Pass Line and the first roll of the dice (known as the “Come Out Roll”) is a 7 or 11, you win. If a 2, 3, or 12 is rolled, you “crap out” or lose. Any other number rolled (i.e., 4, 5, 6, 8, 9, or 10) becomes the Pass Line “Point.” Pass Line bets win if the Shooter rolls the Point before rolling a 7. If a 7 is rolled prior to the point being made, the Shooter “sevens out” and the Pass Line Bet loses. The Shooter continues to roll the dice until he or she sevens out, whereupon the dice pass to the next player. You need not be the shooter to make a Pass Line Bet. B. DON’T PASS: The Don’t Pass Bet is the opposite of the Pass Line. That is, the bet wins on the Come Out Roll if a 2 or 3 is rolled, and loses if a 7 or 11 is rolled. A roll of 12 is a stand-off on the Don’t Pass Line. Any other number rolled becomes the Point. To win, a 7 must roll before the Point is thrown. If the Point is rolled prior to a 7, the bet loses. As before, you need not be the Shooter to make this bet. C. COME: You can bet the “Come” at any time after a Point has been established. The win-loss rules are the same as for the Pass Line. The next roll of the dice determines whether you win or lose, or establish a Point which must be rolled before a 7 to win. The Come Bet and Point are independent of the Pass Line Point.
E & F. BUY AND LAY BETS: Buy and Lay Bets pay odds without requiring a flat bet and may be made directly on a 4, 5, 6, 8, 9, or 10 at any time without waiting for the number to roll the first time. The Buy Bet is a bet that the number will roll before a 7. A Lay Bet is a bet that a 7 will roll before the number. In either case, the wager is paid according to true odds as shown on the accompanying table. A five percent commission or “vigorish” is charged on all Buy and Lay Bets, either on the amount bet (if it is a Buy Bet) or on the amount that can be won (if it is a Lay Bet). If no decision is made on a Buy or Lay Bet and the Player wishes to take the bet down, the vigorish will be returned to the Player. G. PLACE BETS TO WIN: You may make a Place Bet on 4, 5, 6, 8, 9 or 10 at any time. All odds, Buy Bets, and Place Bets may be increased, decreased, taken back by the player, or called “off” (or not working) at any time. Come Odds, Buy Bets, and Place Bets to Win are always off on the Come Out Roll unless designated otherwise by the Player. The Player is responsible for placing all odds and keeping track of all bets. H. FIELD: If 2, 3, 4, 9, 10, 11, or 12 is rolled, you win. All numbers pay even money except 2 and 12, which pay double. I. Discover Through Art The Haudenosaunee Taking place at the Nichols School Gallery at the Glenn and Audry Flickinger Performing Arts Center in Buffalo, the Native Roots Art Guild presents a show that celebrates the art and culture of the Haundenosaunee. The show will display artwork that is “expressive of native beliefs by using thought provoking images and interpretations of indigenous knowledge.” There will be pottery, beadwork, carvings, paintings and more. The Native Roots Artists Guild is made up of 72 members from Allegany Territory, Cattaraugus Territory, Tuscarora Nation,
Buffalo and Niagara Frontier in Canada. This group of artists is comprised of all types of people, college students, retired postal workers, EMT’s, people with technology and graphical backgrounds, health care providers, financial workers and full time artist. Members come from all walks of life. The show runs until March 24, Monday to Friday from 8am to 4pm. The show is free, open to the public and is being sponsored by the Colby Art Fund.
