Seneca niagara caSino’S ‘Day-one employeeS’ reflect on a DecaDe of SucceSS In preparation for a grand opening on December 31, 2002, the Seneca Nation of Indians hired nearly 2,000 workers to run Seneca Niagara Casino. Ten years later, a quarter of those team members are still with the company today and are affectionately known as “Day-One Employees.” Seneca Today interviewed some of these 470 distinguished individuals to learn about their perspectives on the company’s growth, its legacy of outstanding customer service, and its fabric within the Niagara Falls USA community.

Cora IsaaCs Not Your ordiNarY SecuritY Guard Cora Isaacs’ official title at Seneca Niagara Casino & Hotel is “Security Guard,” but she does far more than provide safety. Guests who see her at her usual post during the mid-morning and early-afternoon hours by the hotel elevator know that she plays a number of indispensable roles for the casino. Among them: ambassador, greeter, magician, unique artist, and even television star! Cora, who is one of more than 400 “Day One” employees at Seneca Niagara Casino & Hotel, still has the same passion for the job since she began – and lets it show. “The minute a guest steps into our property, that person is somebody special in my eyes,” she said. “I want to give everyone a memorable experience.” Cora is one of the most frequently complimented team members by reviewers on TripAdvisor – the world’s largest travel website – and guests identify her by name in letters received by the Guest Services Department. Besides holding elevator doors and striking up conversations with anyone that passes her post, Cora is renowned for her “craft box” that contains hundreds of threads, trinkets, cards, and coins. It is common to see groups of people gathered around the elevator to watch her perform a magic trick or create one of her clever rings – such as the “Dime-on Ring” that is made from a dollar bill and a dime as the top base, and the “Pair-aDice Ring” that features two small plastic dice tied to a band made of thread.

“Holding open doors, making rings… I really enjoy what I do, and it’s the little things that go a long way,” she said. “People from all over tell me that guest service is the hallmark of Seneca Niagara Casino & Hotel, and they can’t get over how friendly we are. I don’t mind making birthday cakes and cards if it means guests are happy and have a lasting, positive impression of our property.” Cora is also featured in the Seneca Casinos recent television spots. She volunteered to be an extra in a scene, but the director quickly recognized her high energy and cast her in a starring role. She can be seen blowing a kiss and pointing at a slot machine for good luck.

different types of cuisine prepared in front of them by our chefs.” “From the brick ovens for the specialty pizzas, to the sizzle and flames at the Central Grille, the new Thunder Falls Buffet is a place that touches upon all of one’s senses,” added Gary McHale, executive chef, Seneca Niagara Casino & Hotel. “This won’t be the typical buffet experience. No matter what time you’re here, you’re going to enjoy a dish that is made-to-order and prepared fresh in front of your eyes.” Leading restaurant architect SOSH worked with Seneca Niagara Casino’s Food & Beverage Team to create an entirely new floor plan with an “openmarket” experience, where all the cooking equipment is in plain view. The new Thunder Falls Buffet will be a “can’t-miss” part of Seneca Niagara Casino & Hotel, as the bar and entrance will integrate with the gaming floor.

Overall seating will increase from 420 to 500 seats. Unique wine and beer displays, large video screens, and colored lighting will add to the interactive and exciting feel inside the restaurant. In addition, terrazzo floors, rich fabrics, intricately-lit buffet stations, and a sound system with music are just some of the new features that await guests. The restaurant also promises to be an uncomplicated dining experience for guests. Accoutrements unique to specific foods are at each station as opposed to a central area. Different types of comfortable seating – such as booths, tables, and even a chef’s table – are located close to the stations for added convenience and create unique dining experiences for each visit. Guests will also find self-service beverage stations and selfcheckout kiosks throughout the facility. All food items, including those on Thunder Falls Buffet’s existing menu, will be completely reworked for the new buffet. A major

focus throughout on the menus will be on comfort, ethnic, and healthy items. Servers and chefs will be trained to accommodate dietary needs such as sugar-free, low-sodium and gluten-free options. Buffets and casinos tend to go together like fine wine and artisan cheese, and that was certainly the case when Seneca Niagara Casino opened 10 years ago, as Thunder Falls Buffet was one of the first restaurants to open on property. It has catered to more than eight million diners since then, and now aims to make new memories. “There will always be an experience happening at the new Thunder Falls Buffet – a restaurant that offers a world of flavors under one roof for one price,” Kopasz said. “With the new design and the fresh, made-to-order foods in a market-style atmosphere, guests will experience the ultimate in quality, variety, value, and convenience.”

“It’s important to let the flavors of the elements come through and dominate the dish. A fish stew should taste like fish – and not be overpowered by seasoning. A strawberry dessert should taste like strawberry. The principle elements should be the starring cast, and the rest of the ingredients should play a supporting role.”

On whether he knew he would one day become a chef:

“I had hoped I would, but wasn’t sure. Just recently, I saw a childhood friend who said he wasn’t surprised that I became a chef. He said, ‘You were always experimenting. I remember when you were nine years old and made a sandwich with peanut butter, mustard, hot peppers, and garlic!’”

On family influences for cooking:

“My mother was a natural at cooking. She had great seasoning abilities, and kept a meticulous garden of vegetables. My father was an excellent griller, and we used to cook breakfast together for the family every Sunday.”

On his management style:

“I’m very hands-on and involved. I like to think of myself as a coach and mentor, and I try to build the management skills of the chefs.”

An accomplishment at Seneca Niagara:

“Besides opening up the Western Door Steakhouse, I’m very proud of Blues Burger Bar. I felt like we nailed what customers want in this market. We have a consistent quality product at a good price.”

On the new Thunder Falls Buffet:

“The buffet was already built when I arrived at Seneca Niagara, so this feels like a chance to go back to the plate and hit a homerun. I’m very excited for guests to see live cooking of fresh food… great food.”

Buffalo-Style Chicken Wing Soup Recipe

~ serves six people; takes approximately 30 minutes to prepare ~ Chef Gary says: “This isn’t haute cuisine, but it’s a delicious dish to serve on a chilly Sunday in Western New York!”

Ingredients: 1 cup of diced onions

1 cup of diced celery

4 tablespoons of butter

4 tablespoons of flour

3 cups of chicken broth

1 cup of heavy cream

½ cup of milk

½ cup of white cheddar shredded cheese

¼ cup of Asiago shredded cheese

3 cups of cooked pulled chicken

Frank’s hot sauce

4 ounces of quality blue cheese

The day before cooking, roast a 2- to 3-pound chicken and let it cool. Or, you could buy a rotisserie chicken if time is a factor. De-bone the meat, shred, and reserve. Then, in a large pot, sauté the onions and celery in butter. Add flour and cook at medium heat for approximately five minutes, and stir constantly. Whisk in the stock and milk, and bring to a boil. Seneca Storytelling The storytelling season draws near, as Mother Earth rests in her beautiful white blanket of snow. The Haudenosaunee have relied on passing information from generation to generation through the tradition of oral history and storytelling. Because oral history relies on extensive use of memory, you may hear several versions of the same story. Wintertime, in Haudenosaunee culture, is a time for entertainment. The work of the other seasons had left little time if any for gatherings such as social dancing, singing, and storytelling. Springtime is our planting season; summertime is when we gather berries and weed the garden, and; fall is when we harvest our garden and prepare for the long winter. The stories of the Haudenosaunee have two main purposes: they tell how elements of nature came to be and teach valuable lessons on how we should conduct ourselves. There are several stories that explain how certain elements evolved. For example, the Creation Story tells how a turtle evolved into what we call North America today. A Haudenosaunee child’s punishment for a wrongdoing is often followed by an old story relating to what the child has done or how a child can conduct his/herself in the future. Many stories begin with Onëjih or “a long time ago.” There are several stories like the “No-Face Cornhusk Doll” or “How the Rabbit Got a Short Tail,” or even scary stories like “The Flying Head.” So, as the winter season approaches, think about popping some popcorn (one of our “Three Sisters”) and share some stories with your family.

“Silver Bells, Silver Bells

It’s Christmas Time In The City” “Soon it will be Christmas Day” in Salamanca, NY, and the 10th Annual Silver Bells in the City is celebrating this magnificent season with wonderful acts of giving and many holiday cheers to share with family and friends – young and old. Silver Bells in the City is held each year in honor of Ray Evans, lyricist of the famous Christmas song, “Silver Bells.” Ray Evans, a Salamanca native, was a pop lyricist who teamed up with the composer/lyricist Jay Livingston to write the famous Christmas song. Livingston and Evans won three Academy Awards: one in 1948 for the song “Buttons and Bows,” written for the movie The Paleface; one in 1950 for the song “Mona Lisa,” written for the movie Captain Carey, USA, and; one in 1956 for the song “Que Sera Sera,” sung by Doris Day and featured in the Alfred Hitchcock movie The Man Who Knew Too Much. Another popular song that he and Livingston wrote for a film was the song “Tammy,” written for the 1957 movie Tammy and the Bachelor. The tune was nominated for an Academy Award for Best Song. Livingston and Evans also wrote popular TV music themes for shows such as Bonanza and Mr. Ed. Their Christmas song, “Silver Bells” – which was initially written for the 1951 Bob Hope film The Lemon Drop Kid – has become a Christmas standard.

Native American Music Awards Brings World-Class Music & Heritage to Seneca Events Center

The Native American Music Awards is in its 14th year of recognizing top Native American music performers. Native American Music Association (NAMA) President and Founder Ellen Bello recently announced that the next awards show will grace the Seneca Niagara Events Center in Niagara Falls USA for the sixth consecutive time on May 10, 2013. The event organizers were still securing top acts and nominees for the upcoming show at press time, but did announce that renowned comedian, ventriloquist, and puppeteer Buddy Big Mountain would perform, as well as Indian E (Indian Elvis) and Tony Duncan (Apache/Mandan-Arikira-Hidatsa) – the worldchampion hoop dancer featured in Nelly Furtado’s music video “Big Hoops.” As many as a dozen Native entertainers and musicians will be part of the final lineup. In past years, the Native American Music Awards has featured nationally-recognized mainstream musicians such as Rita Coolidge, Mickey Hart, Robbie Robertson, and Crystal Gayle. “We are always looking to diversify our audience by bringing in widely-known artists for recognition, yet there are tons of Native artists looking for that breakthrough opportunity to heighten the awareness of Native music.” Bello said.

The music itself at the Native American Music Awards is highly diverse, as it honors 35 categories – including Native music such as powwow groups, flute, and drums, but also much more. “Native American music includes a broad range of genres, making it tremendously rich and varied,” Bello said. NAMA celebrates the rich heritage of Indigenous people north and south of the U.S. borders and promotes Native language in song, supporting cultural preservation and revitalization efforts. The organization and the awards show has contributed to the global awareness level and appreciation of Native music. NAMA began in 1998 as a grassroots initiative among music industry professionals and record labels. Since the organization’s inception, more than 400 recording artists have been awarded and more than 1,500 Native music-makers have submitted their work. “Without NAMA, there would be no recognition of Indian music initiatives within the music industry,” Bello said. “Today, after a decade of dedication, we have been able to break new ground with an ever-expanding international audience. Native music is getting heard.”

The critically-acclaimed music awards show and its high production values have been featured in Billboard magazine, USA Today, Wall Street Journal, New York Times, Boston Globe, and CNN. “Recordings range from historical incidents featuring the prison-writings of Leonard Peltier, to Native youth speaking louder than ever in powerful raps about their plights fused with a spirit of undaunted perseverance,” Bello said. “The original roots music of the Americas has many voices and they arrive in record-breaking numbers for all to hear.”

Routes to Art Holiday Sale on December 1

This holiday season, there’s no better way to find unique gifts and to support local artisans than to shop the Routes to Art Holiday Sale on Saturday, December 1. For the third year, the Cattaraugus County Arts Council is producing the Holiday Sale from 10 a.m. to 5 p.m. in the Grand Hall of the Seneca Allegany Administration Building at 90 Ohiyo Way, right off the casino exit in Salamanca. Anne Conroy-Baiter, Executive Director of the Cattaraugus County Arts Council, stated that the location is perfect for a holiday sale. “We chose the Seneca Administration building because of its central location and the fact that all the Routes to Art artists can easily fit in the Grand Hall,” she said. “Instead of shopping in a mall from store to store, shoppers can make their way from booth to booth while finding unique and affordable holiday gifts.” The sale is made up of participating artists in next year’s 2013 Routes to Art open studio tour. Now in its sixth year, Routes to Art (RTA) is an annual, self-guided, open-studio artists’ tour taking place across Cattaraugus County and the Seneca Nation of Indians. Next year’s tour is scheduled for May 18-19, 2013.

Seneca and regional artists like Sean Huntington, Debra Eck, Penelope Minner, Keith McKale, Mary Jacobs, Robin Zefers Clark, Elliott Hutten, Dawn Lombardi, Nance Jackson, Samantha Jacobs, Jennifer Miller, Melanie Hill, Richard Big Kettle, Marilyn Reynolds, Dug Stein, Tom Martin, Kristina McLeod, Cheryl Tome, Patricia Eckstrom, Michael Weishan, and many others will display and sell many cash-and-carry items. Shoppers can expect to find cards, books, prints, jewelry, pottery, ornaments, paintings, stained glass, basket weaving, wood carving, photography, and more. Learning how to smell and describe wine is very important because more than 80% of your ability to taste comes from your ability to smell! 3. Red and Rosé wines receive their colour from contact with grape skins. Although red wine can only be produced from red grapes, white wine can be produced from both white and red grapes. 4. There are approximately 20 million acres of grapes planted across the world; thanks to this number, grapes are ranked as the world’s number one fruit crop. 5. VQA stands for Vintners Quality Alliance. It is the stamp of approval that ensures 100% of the grapes and juice that went into making the wine you’re serving or buying are guaranteed to be from the province of Ontario. 6. On average, there are about 75 grapes in each cluster.

Syrah and Shiraz are from the same grape. The difference is in their style.
