30 year growth of U3A It’s time to say happy birthday and move on to new space U3A Brisbane has a bright new premises to celebrate its 30th birthday. After nearly eight months of negotiation, planning and building, the volunteer-run organisation has moved into the remodelled heritage building next to Anzac Square. It is only about 100m from the existing Creek St rooms, which will be kept for administration and some classes, but the Queen Street location has been vacated. “These new premises build upon the substantial growth and progress our organisation has experienced through the hard work of many volunteers over our 30-year history,” president Marilyn Wagland said. She added the new state-of-the-art facility would allow a significant expansion of class offerings over the next few years. That’s impressive for a
group with over 3500 members, which already offers more than 260 courses each term. For those not in the know, U3A stands for University of the Third Age, which, they say is the age of “active retirement”, following the ages of youth, then work and home-making.

AT 70 years of age, Australian bush balladeer, national treasure and boat rocker John Williamson reckons that, like most folk his age, he’s mellowed. When it comes to protests in 2016 he says mildly: “I leave that to the younger folks.” Nevertheless, there are qualifiers: He still wants Australia to be a republic and have its own flag. And, at every concert, the voice of his convictions is expressed through his classic songs with same fervour and beauty. Take the 1990 lyrics of A Flag of Our Own: “ ‘Cause this is Australia and that’s where we’re from. We’re not Yankee sidekicks or second-class Poms, And tell the Frogs what they can do with their bomb, Oh we must have a flag of our own.”
On his website he says: “The nature of Australia being represented on our nation’s flag is something I have always been very passionate about. “I have dreamed for many years that our nation’s banners

The man that not only plays to thousands but also limited numbers on his own property. Williamson and his wife have settled on a property in Springbrook, in the Gold Coast hinterland, and for the past two years he has hosted the Willoshed Concerts there, with a limited number of 400 tickets. AT 78, the doyen of Brisbane’s Farmers Markets, Jan Powers still feels about 40. And while these days she has back-up from daughter Sammy in running the markets which she started almost 30 years ago, she still attends each and every one. There’s a Jan Powers Farmers Markets every Saturday somewhere in Brisbane, one on Sundays in Mitchelton, a weekly city market and a twice-monthly twilight market at Hawthorne. “Anyone can join as long as they make the product they sell,” Jan said. “People who can talk about their product with pride will always make a sale.” If that’s the case, it’s hardly surprising Jan’s markets have been such a success. She is still extremely passionate about her brainchild. With a background in
nursing and theatre, Jan says she caught the “good food bug” while living in London. She came from a traditional Aussie “meat and two veg” farming family in Stanthorpe but found through her cordon bleu studies that food was something that “gave me pleasure, excited me and interested me for the rest of my life”. She ran a restaurant, food outlets and a catering company before deciding to breathe fresh life into the historic concept of the farmers’ market in Brisbane. LOOKING at this photo, you would have little idea that Terry Bennett is blind. The 71-year-old lost his vision completely almost four years ago as a result of retinitis pigmentosa, but he didn’t lose heart. He has been attending the wood workshop at Vision Australia’s Coorparoo office every week since. The former bus driver had no previous woodwork experience but found he had a talent for it – just one of a range of activities Vision Australia can offer, including leatherwork, pottery, swimming and barefoot bowls. That’s on top of practical services such as helping you use screen magnifiers or readers, braille technology, a cane or matching you with a guide dog. Mr Bennett also facilitates one of Vision Australia’s weekly telelink groups, speaking by phone with a group of up to eight people ranging in age from about 40–95, scattered across Victoria, New South Wales and Queensland, about their day-to-day experiences and life in general. He said it was vital to have that interaction with other people, to have strong family support and to get out and live life. While he certainly misses aspects of sight, including driving and seeing his family, he says
he keeps a picture of them in his head, and is “lucky to have seen everything”. “It’s no good being down in the dumps,” Mr Bennett said. “You’ve got to play the cards you’re dealt. “The big thing is people not feeling sorry for you; I’d rather that not happen. I don’t feel sorry for myself.” The State Budget

MANY self-funded retirees are finding it difficult to come to terms with the Reserve Bank’s policy of continually lowering the official cash rate as a tool to stimulate the economy. While this may help home loan borrowers and business, it has an adverse effect on self-funded retirees. Retired accountant Norm Barrington, 87, has dubbed self-funded retirees “the forgotten race”. “These are the people who went through a recession, saved diligently, were the backbone of Australia’s

progress after World War II and contributed much to the advancement and security of the nation,” Norm said. He feels that more consideration could be
given to those investing in term deposits, the interest of which is dramatically affected by the current policies of the Reserve Bank. “(A person) can change his or her investment strategy by taking up shares or investing in property but these options can be questionable in uncertain times with fluctuating markets,” he said.Norm says a bank oversight is the effect its current policy is having on the Federal Government’s revenue-raising capacity, as he and the many other self-funded retirees find their incomes drastically
reduced. “Lower incomes mean lower taxation revenue, which in turn means less money for the government to meet its welfare obligations,” he said. “Unless the Reserve Bank Board with the co-operation of the Federal Government can ease the negative effect its current policies are having on self-funded retirees, I can see some divesting themselves of liquid assets, and acquiring million-dollar homes so they too can take advantage of the welfare system that will reward them.”

SUPERANNUATION changes are broadly fair but have been poorly communicated, according to National Seniors. Australians are still grappling with what the changes – from the $1.6 million tax-free limit to the $10,000 reduction in the concessional cap will mean to them. National Seniors’ chief advocate Sarah Saunders said generous top-end concessions represented money better spent in areas like health and aged care. “We welcome the rollover of concessional caps and widening access to partner contributions, and the
$1.6 million tax-free cap is reasonable.” But Sarah said some angst had been expressed regarding the reduced concessional contributions caps, particularly from women returning to work late in life who used these to build their savings. A more worrying issue among older Australians is the pension asset change, due to take effect from January 2017. “Combined with historically low interest rates, the assets change will see self-funded retirees near the thresholds living off less than a full pensioner,” Sarah said.

Lyme disease sufferers have joined forces By Alison Houston
SHARON Whiteman looked at the taps in her shower but couldn’t remember how to use them. She gave up driving because she would get lost or forget where she was going. The critical care nurse had to admit she could no longer do her job. Ultimately, she couldn’t remember the names of friends or family. Was it early-onset dementia? No, it was Lyme disease. Although the potentially deadly disease is still not officially recognised in Australia, Sharon, now 59 and the president of the Lyme Disease Association of Australia (LDAA), says more than 1500 people have been medically diagnosed as sufferers. Many who contact the
association have first been misdiagnosed as having dementia, Alzheimer’s, MS, lupus, rheumatoid arthritis, chronic fatigue syndrome and even autism, so debilitating and wide ranging are the effects of the tick-borne disease. South-east Queensland is a hot-spot for Lyme disease, which also has high incidence in New South Wales, Victoria and Western Australia. A senate inquiry into the disease dissolved with the double dissolution of parliament prior to the election, having brought out only an interim report. The LDAA is keen to find new political champions of the cause and ensure it is not brushed under the carpet again. Sharon says it’s because such a narrow definition is taken of the disease, first discovered
in America 34 years ago. Part of the problem, she says is that Australian blood testing for the disease looks for an immune response but, because the disease overwhelms the immune system so quickly, no response is found, and a false negative is recorded. Also only about 30% of Lyme disease patients remember being bitten by a tick. She says a multi-disciplinary approach is needed to treat the disease, which is usually a cocktail of infections, because ticks carry "all sorts of pathogens", and can be different for each sufferer. MINISTER’S MESSAGE CORALEE O’ROURKE I’M pleased to report that a record number of Queensland seniors are now taking advantage of the discounts available under the popular Seniors Business Discount Card. The State Government
introduced the discount card scheme in 1990 to offer discounts on goods and services at participating retailers throughout Queensland – and it now applies to more than 6300 outlets. Any Queensland resident over the age of 60, irrespective of their job status, is eligible for a Seniors Business Discount Card, which
means it’s never been easier to nab a bargain. To use the card, seniors only need to look for a Seniors Card sticker on a shop window or at point of sale, or ask the person behind the counter. Each month we receive around 150 new applications, but recently this number spiked to more than 400 – which shows just how popular
this card has become. After this recent surge, more than 100,000 Queensland seniors are now benefiting from discounts which range from travel packages to restaurants and electrical goods. This great initiative also aligns with our new Queensland: an age-friendly community strategy, which aims to

This strategy has set the platform for a whole of government vision to create a community in which older people are valued, respected and have every opportunity to be involved. Queensland: an age-friendly community has been informed by a number of engagement activities, including a seniors summit, meetings and forums with a range of stakeholders, and a public survey which
attracted more than 9000 responses. As this strategy has been developed in consultation with Queenslanders both young and old, it offers practical solutions to make our state more age-friendly for the community as a whole. Our government recognises that seniors have contributed their working lives to our state, building our economy, communities and families, and it’s only right that we support them as they age. I strongly encourage all Queensland seniors to sign up for the Seniors Business Discount Card and start saving.

Netherlands. Their research findings were published in the May 4 online issue of Neurology, the medical journal of the American Academy of Neurology. The study was supported by the National Institute on Ageing and the Judith Zwartz Foundation.

HERE’S some innovative tips. Turn CDs into coasters – stick two together and paste felt underneath. Melt the remains of a lipstick together with a small pot of lip balm – makes a great lip gloss. Grandkids love a tin can phone. Take off the lids and tie together two coffee tins with a long piece of string. Create ice blocks for your esky – fill up old milk cartons with water and freeze them. Want to keep the kids amused? Use empty roll-on deodorant bottles as paint pens for small children. Wash the plastic ball and bottle, fill with paint and replace the ball and lid. To store, keep it upside down with the lid tightly fastened. Get a worm farm and feed all of your food scraps. One kilogram of worms can eat and recycle 1kg of food every day, giving nutritious worm castings for plants and veggies. Put your steel bottle tops and jam jar lids into an old steel can. When the tin is half full, squash the top together so the contents are tightly before recycling. Open the bottom of a used milk carton and plant a tree seedling
inside. The carton will protect your seedling and then degrade as it grows. Going on a picnic? Bring home your cans and bottles to recycle. Save your corks to use them as a paint stamp, or glue them to some timber to make a corkboard. Place clear plastic lids under oil jars or aerosols to prevent oil and rust marks on shelving. Make your own gift wrap: Wrap your presents in the comics pages from your local newspaper, magazines or comics. Kids (and even adults) love it. Temporarily store food scraps in an old icecream tub, before putting them on to your worm farm or compost. Pour old cooking oil and fat into a used milk carton or jar and put it out in the rubbish. It clogs the drains if put down the sink. Old wet-wipe boxes make great string dispensers – try it out. Get creative making greeting cards from old ones, or postcards, photos, stamps, pretty paper and more. BEGONIAS Is the topic of the guest speaker, Enid Henderson, at the next meeting on Thursday, September 1 at the Enoggera Memorial Hall, corner of Wardell and Trundle Sts, Enoggera. In the Begoniaceae family there are many varieties, each one with its individual shape and distinctive flowering habit, and there would be a type to suit most needs of the gardener. M
avis is an 89-year-old lady who was referred to the Wesley Hyperbaric Centre by her vascular surgeon in a final attempt to save her leg from amputation. Mavis’s story began when she walked under a gum tree where a small branch was located. She stood on the branch and in turn, it pierced her left ankle. Her wound started to ooze and over time formed into an ulcer.

When Mavis arrived at the Wesley Centre for Hyperbaric Medicine she had already undergone all the reasonable treatments available to improve the blood flow to her leg, but unfortunately it hadn’t improved. She had a debilitating arterial ulcer to her left leg for over six months at the time of her first review at the WCHM. Her ulcers were painful and she had significant weeping from them. She was sleeping in a chair with her leg down to help blood circulation and as a consequence her leg was quite swollen. Re-perfusion of her leg was an option but this was considered a significant risk.

When she first arrived at the WCHM she was very apprehensive and had intense discussions before allowing the nurses to treat her wound. After a couple of weeks this apprehension passed and she realised that she was in good hands and that the team was focussed on ensuring that she would not lose her leg. Over the course of her 49 hyperbaric treatments she developed close friendships with the WCHM team and other people receiving treatment.

After her hyperbaric treatments were completed Mavis received outpatient wound care on a regular basis over three months. In that time, she went from only being able to sleep in a chair due to the pain in her leg, to sleeping back in her normal bed. Mavis’s remarks were, “I have been the happiest person and everybody can see the change in me because I’m back to being myself after I’d say at least 7 months of going through extreme pain and being unable to lie down. It’s only been the last couple of months that I’ve been able to lie in bed.”

During one of her visits to the WCHM, Mavis mentioned her 90th birthday was approaching and she would love to be able to spend it in the surf on the Gold Coast. The arterial ulcer to her left leg healed completely 2 weeks before her birthday and the WCHM team organised a morning at the Gold Coast where Mavis was able to enjoy seawater on her legs for the first time in years.

I did wish to swim in the sea for my birthday and that wish has been fulfilled. They saved my leg and I can now just about run up the beach.”
Mavis told us -“My specialist said that if they couldn’t cure my ulcer it would mean an amputation. I said to him, 'Please, never take my leg off.’”

From the Mayor of Redland City Seniors Week August 2016 Welcome to Queensland Seniors Week 2016, a celebration of our older generations and their contributions to our community. With a population boasting more seniors than children, the Redlands offers seniors a healthy, active and connected lifestyle. We believe in a future of possibilities for seniors and strive to create strong social infrastructure, improve well-being and increase social and economic opportunities for our older population. Seniors play an important role in our society. Their knowledge, wisdom and life experiences are invaluable across the community. Every day, seniors selflessly contribute countless hours to their families and their communities, enhancing the quality of life for those around them. Redland City Council is committed to supporting seniors to age well and age independently. We strive to strengthen the community as a whole and support sustainable solutions for the seniors sector. Through programs such as Home Assist Secure Services, we help about 6500 people every year (most of whom are seniors) stay in their homes longer by installing ramps and support rails to improve access, and changing light bulbs and smoke alarm batteries. As the number of seniors in the Redlands grows to more than 50,000 in coming years, community support is paramount to meet the needs and aspirations of our ageing population. Organisations such as Redlands District Committee on the Ageing (RDCOTA) are crucial to the future of our region. We value our partnerships with RDCOTA and other key seniors’ organisations and appreciate your contribution to the direction and support of our ageing population. TWO significant events in Australia’s history – 150 years since the founding of the Australian Army Cadet Corps and 115 years since the Australian national flag was first raised – will be observed with a parade at Caboolture Historical Village next month. And the chairman of the Australian Flag Subcommittee of the 11th Light Horse Caboolture Troop and Military Museum Association, Bob Whitehouse, is predicting a huge turnout. The event starts at 8am and the parade starts at 9am on Saturday, September 3. Taking part in the parade are veterans’ associations, community groups, mounted Light Horse troopers, current and former navy and army cadets, marching bands, vintage military vehicles, animals used in warfare, military reenactors, early model cars and tractors. Immediately following the parade will be an entertaining pageant and flag-raising ceremony. All museums within the village will be open and most will be putting on special “one-off” interesting displays. The day will also be an anniversary of sorts for Bob (77) as 63 years ago when he was just 14 he became a proud army cadet at Brisbane Grammar. “My father was a cadet in the early 1900s and so was my brother in the 1940s,” he told Seniors.

TARAJI JOURNEY THERESE AHERN THIS phrase is rapidly becoming a cliche in the field of parapsychology. From my experience yoga, as we know it in the West, may be one of the great promoters of such parapsychology phrases. This is one of the main reasons I have been such a huge devotee of the late Dr Hiroshi Motoyama and have named the branch of Yin Yoga that focuses on the intersection of the meridians and chakras as Himalayan Yin. Dr Motoyama was born to a mother who was an accomplished yogini with advanced psychic ability and himself was an ordained Shinto priest with many vibutis (powers gained through true knowledge). However his brilliance was not limited to his psychic abilities. He also held two PhD degrees and through Western Science he created instruments that measured subtle energies found in channels such as meridians and chakras.
At the other end of the spectrum was Rene Descartes who back in 1641 published his belief that the realm of the physical and the spiritual are alien, non-communicating realms. His published beliefs were called Meditations on First Philosophy and through his work he declared his hypothesis concerning the disconnection between the realms of the physical and spiritual to be the infallible truth. This declaration has led many of us to believe that our bodies have a specific realm address and our spirits have a completely different discrete realm address. According to Descartes never the twain shall meet. He deduced mind operates under the rules of the spiritual realm and body operates according to the mechanical world of physics. It is fascinating so many of us have fallen hook, line and sinker to the theory of a 1641 philosopher and chosen to discard the knowledge of the ancient wisdom traditions as rubbish. Cancer Council Queensland will celebrate the iconic fundraiser during the entire month of August, with the official Daffodil Day date falling on Friday, August 26. Cancer Council Queensland spokesperson Katie Clift said Queenslanders could text to donate to the cause for the first time in 2016, and dedicate a daffodil in support of those affected. “All Australians need to do is text HOPE to 1999 8877 and a $5/sms donation will automatically be incorporated into their mobile bill,” Ms Clift said.

and delicious desserts. They raised $252 for the lunch, $455 on raffles and $630 on direct donations for The Fred Hollows Foundation, bringing the final tally to around $1200. An excellent result and a wonderful day was had by all.

Achieving happiness is probably most peoples’ number one objective, yet we regularly act in a way that makes it difficult to achieve. Lasting happiness comes from within us. A new car or expensive outfit will make us happy for a while, but the novelty wears off and we soon need another happiness “fix”. Unfortunately a simple definition of happiness is not that easy to agree on. But here is a definition you might like to think about: “Happiness is a way of interpreting the world, it’s difficult to change the world but it’s always possible to change the
way we look at it.” These two attempts came from a book simply called Happiness by Matthieu Ricard. It’s an interesting read. A more practical approach is taken by Professor Tim Sharp, the founder of The Happiness Institute. He suggests the following six strategies: clarity of life goals, direction and purpose; healthy lifestyle; optimism; good relationships, encourage your strengths and enjoy the moment. Some great advice on how to cheat aging and help the body meet those challenges we age comes from dietitian and author Ngaire Hobbins. THINK MONEY PAUL CLITHEROE AS HUMANS we seem to instinctively want to find an easy way to make money quickly. Perhaps this explains why property spruikers continue to drum up business. But consumer regulators around Australia are warning about so-called property investment promoters who claim to be “wealth creators” but who are really just in it for themselves. Over 30 years in the money business, I’ve come across more than a few dodgy property investment schemes, and they are often marketed through free property seminars with invitations
sent via mail, email or promoted on social media. The details may differ however a common thread is often the grandiose claims of the people running the seminar. As the government’s MoneySmart website notes, one property investment seminar featured “Four of Australia's greatest financial superstars”. Yet when our investment watchdog ASIC checked them out, none of the presenters had an Australian Financial Services (AFS) licence. In fact, three of the four speakers were found to live and work in the USA. Who knows what their credentials were? If you do attend one of these seminars, be prepared for some high

You may be bombarded by claims of high capital growth backed up by inferences that the investment scheme is government approved. More worrying, you could find yourself being encouraged to use your home as security to borrow significant sums of money to invest.
I won’t argue that a sensibly priced, well located property can be an excellent long term investment. But our consumer watchdog, the ACCC, is advising against attending these property investment seminars. Many ordinary Australians have suffered financial loss after relying on the unsubstantiated claims of a property spruiker. And when you think about, if an investment scheme works so well,
why don’t the spruikers use it to get rich themselves? The answer is painfully obvious. The schemes don’t work. If you decide to attend a property investment seminar, look for the tell-tale warning signs – like being rushed into a decision, or enticements like discounts offered to attendees who sign up on the day. If the spruiker also supplies mortgage broking, conveyancing
and/or tax advice the alarm bells should definitely start ringing. And if you are encouraged to use your own home to fund the investment, don’t walk, run. For more information on property spruikers, visit the MoneySmart website.

History of Brexit – Australia and Britain AS A BRITISH colony, Australia was heavily reliant on Britain for investment capital and export revenue. Prior to Federation in 1901, Britain bought virtually all of our exports (mainly wool and gold), making Australia one of the richest countries in the world per capita. Britain remained our largest export partner until 1940, when it fell to second behind the United States. After the war our export mix changed dramatically, playing a vital role in the reconstruction and re-emergence of Europe and Japan. By 1967, Japan’s hunger for our iron ore and coal made it our largest export partner, remaining in that position until it was superseded by China in
2010. When Britain entered the European community in 1973, it dismantled its preferential access system for former colonies such as Australia. By that time, however, its impact was relatively minimal given that Britain was buying less than 10% of Australian exports. This was less than the percentage of our exports going to Europe, and less than a third of what Japan was buying. Today, Britain accounts for just 1% of Australia’s export market. The surprise Exit vote took the global markets by surprise and ‘risk assets’ like shares, high-yield bonds and commodities (with the exception of gold) were gripped in a wave of panic selling. Markets
have since calmed, leaving investors to digest what it all means. The implications for Britain in the long term may well be benign or even positive. An exit would remove a seemingly unnecessary layer of bureaucracy that interferes with every aspect of daily life. A renewed sense of independence and self-determination may well boost spending. On the downside, while Britain negotiates new treaties, short-term disruption and uncertainty will likely cause an economic slowdown and it may also slow growth rates in Europe, which has been stagnant since the GFC. The Brexit may also cause the disruption of ‘Great’ Britain – Scottish and Northern Ireland
voters overwhelmingly voted to remain in the EU, leading to renewed calls for Scottish independence and the reunification of Ireland. FANGING along on the back of a motorbike – one hand gripping the back of the bike, fingernails of the other biting into the shoulder of the young Indonesian man at the handlebars – might seem an unusual activity for a yoga retreat, but it sure was fun. I focused on the pale beam of light illuminating the track between rice paddies – potholed and wet from the storm still rumbling and flashing in the distance. Eventually I relaxed, laughed, possibly even woo hoo’d, as we bounced along towards the lights of Ubud where the convoy halted and we disembarked, pumped, and waited for the

remainder of the group who had walked back from the restaurant. This was my fourth Radiance yoga retreat. Jessie Chapman holds retreats in Byron Bay, Uki (near Mount Warning), Bali, Spain, Italy and France. And has plans for one in New Zealand. At the Byron and Uki retreats the emphasis is on yoga, and cleansing the system – no meat, wheat, dairy, coffee, alcohol… Bali is about yoga and pampering, and for me became an exercise in indulgence that added a kilo, while still rendering me very bendy and relaxed. Our Bali retreat days began at 6am with a knock at the door and delivery of a Thermos of
hot water so we could make a pre-yoga cuppa. We started slow – stretching over bolsters, blankets and blocks – opening up, readying ourselves for the poses. Jessie has the ability to read a class, to feel the energy, and matches the overall flow to the day and to the individual. The focus is personal, and caring. Bad day – assistant Haydie will drape you over a bolster, cover you with a sarong, and regularly check in. On a good day, you find yourself stretching further than you have before, moving into “asanas” you’ve never tried before. It sounds like a lot of yoga, 6.30–9am then 4.30–6pm, but the time flies. yogis – some with virtually no previous practice, others accomplished – into a group who not only know “savasana” from “tadasana”, but who also know and care about each other and the community. Jessie includes all elements of yoga, not just the poses, but also the meditation and “pranayama” or breathing practices, and they combine to give a sense of calm and connectedness, as well as physical freedom. Got a dodgy knee, bad neck, sore lower back – doesn’t matter. Jessie and Haydie will help you work with it, and make sure you don’t hurt yourself. still have you doing the preparatory positions, and help you push boundaries you have never dared try before. After yoga it’s a big healthy breakfast, well, mostly healthy. I took a liking to the local palm sugar syrup and poured it over pancakes, French toast… The Bali retreat is a yoga, wellness and pampering retreat, and there was no shortage of pampering included. We visited ultra-luxurious five-star spas and indulged in massages, scrubs and even a flower

bath. These trips also included a-la-carte lunches, and just plain lounging around the plunge pools, swimming pools, jacuzzis… Afternoon yoga was restorative. Gently opening chests, lower backs, upper backs, shoulders, assisted by blankets, bolsters and blocks, and topped off with eye pads. During the evening there was often yoga nidra – to put us in the mood for relaxing sleep. The author paid for all her costs.*

Caves under Krakow More to this Polish city than meets the eye Phil Hawkes
KRAKOW, Poland. One of Europe’s most beautiful cities, listed as a World Heritage site. With impressive monuments, churches and fine architecture untouched by war, it should be on every traveller’s bucket list. There’s more to Krakow than meets the eye, however. Just outside the city, deep below ground level is Wieliczka, the site of a 900-year-old salt mine which is, today, open to visitors, in fact more than 1½ million a year. Here are some interesting facts about the Wieliczka Salt Mine: ■ Settlement of the area began in the Neolithic period 5000 years ago, when salt was extracted from brine. ■ In the 13th century, rock salt was discovered and the first shaft constructed. ■ In the Middle Ages salt was a valuable trading commodity (grey gold) used especially for food preservation. Krakow’s wealth and
strategic importance gained. ■ In the last nine centuries, 7.5 million cubic metres of salt have been extracted. ■ The mine today has nine floors from 64 metres to 327 metres underground. ■ Tours reach a depth of 130 metres to the 3rd level, only 3% of the workings. ■ Awarded World Heritage status in 1978, now nearly two million visitors a year. ■ There’s a full-size chapel underground and regular mass is held.
■ The Salt Mine Health Resort offers medical services and a wellness program. Back on the surface, there are so many things to do in a short stay in Krakow that choices are difficult. Schindler’s Factory will bring back memories of the famous movie and is well worth a visit. From daytime touring to nocturnal activities, from shopping to musical events, Krakow is possibly the finest example of a medieval and Baroque city in Europe, whether above or below the ground.

H HAIL the humble chickpea. I always have my pantry stocked with tins ready to simply drain and whip into an easy hummus, tasty fritters, to add to a curry, bulk out a casserole or sprinkle through a beetroot and feta salad. They add texture, are a great energy source and full of protein. Surprise fact: India is the largest producer of chickpeas, followed by Australia. Today, I’m sharing three of my favourite recipes. First up, crispy, roasted chickpeas. Like salted chips — once you start there is no going back. Munch on their own, add to salads or sprinkle on top of a hearty bowl of soup as an alternative to croutons. Instead of using spices when they are removed from the oven, try adding a variety of chopped herbs for a different flavour. Store in an airtight container — if there are any left. This cauliflower and chickpea salad is full of flavour, despite having just a handful of ingredients. When fried, cauliflower has a wonderful nutty flavour. Brussels sprouts and chickpeas add crunch, while the citrus dressing brings a fresh zing to the dish. Instead of making the usual hummus, try this baked version with a few extra flavours added. With a crumble of feta and crunchy nuts on top, it is perfect scooped on to warm pitas or a piece of Turkish bread. It is even better the day after, cold, added to a sandwich or dolloped on top of a lunchtime salad.
CRISPY ROASTED CHICKPEAS
Makes 3 cups INGREDIENTS 2 x 420g tins chickpeas Olive oil to drizzle 1 tsp salt 2 cloves garlic, crushed 1 chilli, chopped
½ tsp each of cumin, garam masala, coriander 2 tbs chopped parsley or coriander to garnish Lemon wedges to squeeze before serving Optional to serve — toss through kale leaves, parmesan, herbs METHOD Preheat oven to 180C. Drain and rinse the chickpeas. Lie them on a piece of paper towel and pat dry. The drier, the crispier they will become. Spread them on a lined baking tray. Drizzle with oil and toss through the salt, garlic and chilli. Place into the oven and bake for 30 minutes until crispy and golden. Remove and toss through the mixed spices while they are hot.
CITRUS SALAD
Serves 4 INGREDIENTS 1 tbs olive oil 2 cloves garlic, sliced ¼ cauliflower, sliced into shards 200g brussels sprouts, quartered 420g tin chickpeas, drained 1 spring onion, sliced finely Dressing: Zest of ½ orange Zest of ½ lemon 2 tbs olive oil Salt and pepper, to taste METHOD Heat the oil in a frying pan to a medium heat. Add the garlic and cauliflower, cooking for 3 or 4 minutes until the cauliflower is just starting to soften. Add the brussels sprouts and toss through for another few minutes to cook and brown.
Add the chickpeas and spring onion, then season with salt and pepper. To make the dressing, in a small bowl combine the orange, lemon, oil and season. Place the warm salad into a serving bowl and toss through the dressing. Serve while warm or allow to cool.

Serves 10 for pre-dinner INGREDIENTS 2 tbs olive oil 1 onion, chopped 2 cloves garlic, chopped 2 rashers bacon, chopped ½ tsp paprika 420g tin chickpeas, drained 2 tomatoes, chopped roughly 2 tbs tahini Zest and juice of 1 lemon 2 tbs water
½ tsp salt and freshly ground pepper 100g feta 1 ⁄4 cup slivered almonds To serve Greek yogurt, pita or flat bread Coriander to garnish Lemon wedges, to squeeze METHOD Preheat oven to 180C. Heat the oil in a frying pan. Add the onion and garlic cooking for 2 or 3 minutes. Add the bacon and paprika, cook for 4 minutes until it has a bit of colour. Add half the chickpeas and tomatoes. Stir through to warm, then remove from the heat. In a kitchen blender place the remaining half of the chickpeas, tahini, lemon, water, salt and pepper. Blitz until smooth. Add the blended mixture to the pan and stir through. Oil an ovenproof dish well. Pour the bake mixture into the dish. Crumble the feta over the top and sprinkle with almonds. Bake for 20 minutes or until the feta is soft and creamy. Remove from the oven and dollop with yogurt. Sprinkle on coriander. Scoop onto pita to eat, squeeze with lemon and enjoy while warm.
