Albie Maxwell, 82, is “the oldest active sweep in the world”, according to his teammates. He says a “sweep” coaches and guides the team. “I’ve been rowing since 1951,” Albie said. “And I’ve been sweeping since 1956. “You’ve got to be able to read the surf because the rowers have got their eyes on the beach. “You’ve got to have good balance and be strong. “It’s fantastic, the camaraderie. “I give them a hand and make sure everything’s on track.” Matthews said the team trained in the boat three times a week in the lead-up to the ASRL. They’ll now focus on the next race event, which will be at Tugun on January 16.

WITH a combined age of about 250 years, the Coolangatta Surf Club masters rowing team hoped experience would count bigtime at the Team Navy Australian Surf Rowers League national season launch. They were up against more than 100 crews from surf life saving clubs across Queensland and the top crews from NSW and Victoria at Surfers Paradise on December 5. The Coolangatta Blues team were competing in the “240s” section of the ASRL. Unfortunately, they couldn’t predict the wild weather and big seas which were responsible for cancellation of the event on the Saturday. Rower Graham Matthews said while it was disappointing the Blues didn’t get to compete, conditions were too dangerous. “I love big seas but that’s the way it goes,” Matthews said. “It was really rough and,

Dreamworld plays a vital role in
Breeding program a key BILBY twins Emma and Tashi are well cared for in the confines of the Dreamworld breeding program. In the wild, bilbies aren’t so lucky. They battle foxes, cats and loss of habitat for survival. Dreamworld at the Gold Coast plays a vital role in preserving one of Australia’s most enchanting animals. Its captive breeding program is essential to the survival of the bilby, with numbers of these endangered marsupials now at a critical stage in the wild. Working with the Queensland Government and Save the Bilby Fund, Dreamworld has bred bilbies for release into the Currawinya National Park, a specially set-up, fenced enclosure in western Queensland. Vere Nicolson, the vet at Dreamworld for 11 years, says twins in the bilby world are pretty standard. Triplets are “a bonus”. “There’s always bilbies on
display in the bilby house at Dreamworld,” Vere says. “We also take them out to schools. “The bilby is just one of a dozen animals that are hanging on in the deserts. “If you sort out how to save the bilby, you’ll be saving all the others as well.” Co-founder of the Save the Bilby Fund, so-called “Bilby Man” Frank Manthey, realised in 2003 that people needed to see how beautiful the animals were – then they would be encouraged to save them. “You can show people photos, but this is not like seeing a real live bilby,” Frank said. “I also wanted to visit schools and take a bilby with me to show kids what a beautiful animal we share Australia with, and to spread the message that we should all work together to save it. “I was very grateful when Dreamworld agreed to house the bilbies that I CONTINUED PAGE 5

Neighbours still great friends after 48 years ‘Give and take’ the key to relationship By YVONNE GARDINER
DI LOWE brings out photos of her Tugun house taken over five decades. When she and her young family moved to Blamey Dr on the Gold Coast in 1965, there was little development, no high-rises overlooking the beach and her children thought they’d moved to “the bush”. Two years later, Gwen Taylor built a house across the street and an enduring friendship evolved. When Di held a neighbourhood party in mid-November to mark her half-century in the street, Gwen was there – as she has been for numerous family celebra-
tions. “We’ve always helped each other with the kids and only had each other when the husbands were working,” Gwen said. “Di used to have a bus so we’d jump in the bus and go

out to Currumbin rock pool. “That was lovely there – we used to have some great times. “I couldn’t stand being in a
neighbourhood where we didn’t get along.” Gwen can’t recall the neighbours ever having a “bad” argument, although Di did make a complaint some decades back over a noisy party. At parties, Gwen is often called upon to dance Hawaiian-style, an act she perfected at The Playroom in Tallebudgera. Both she and Di chimed in that “give and take” was essential to the success of a long relationship such as theirs. They’re not aiming to move. “I always say, if you love where you live, why move?” Di said.

MOST aged care residents who sign up for the Tech Savvy Seniors course have never used a computer. Learning how to communicate via the internet gives them a new way to contact family and friends, and prevent their isolation. ACE Community Colleges trainer Paul Marks, 68,

says the focus of the program is on family and fun. At Bupa Pottsville, 23 residents were enrolled in his five-week course – a halfday each week. Half-a-dozen aged care students sat in to support the elderly residents. “In just about every case,
these people have no computer experience at all,” Paul said. “The opening gambit is, we’re going to have some fun. “If it’s fun, then it becomes easier to learn. “The first thing we do is go to YouTube to make them
feel less threatened. “We talk about the way to communicate with people quickly that are a long way away. “We get into Skype as well. They love it. “By the end of week five, some have got hotmail and Skype accounts.
“Once they can Skype, they can actually see those grandkids who live in Perth or London.” The interest from residents to enter the computer age has been so strong, Bupa Pottsville may soon consider setting up an internet cafe. The next Tech Savvy

Four women from Tweed region honoured for work as volunteers in the community
‘Hidden Treasures’ in spotlight By YVONNE GARDINER
FOUR out of the 106 women recognised and celebrated as Hidden Treasures for the valuable volunteer work they do within NSW rural, regional and remote communities are from the Tweed region. Developed by the Department of Primary Industries’ Rural Women’s Network, the 2015 Honour Roll records and pays tribute to Dianne Collier from Tweed Heads, Kay Bolton from Fingal Head, Catherine Boyd and Carole Keast – both from South Tweed Heads. Kay Bolton is a dedicated environmentalist who spends more than 18 hours a week working as a community volunteer. She is a foundation member of Fingal Head Community Association where she has actively campaigned on many local and national environmental issues. Kay organises interpretive walks, workshops, community planting days,
Clean Up Australia Day, cane toad musters and birdwatching events. “I think it is generally recognised that many activities and essential services in our society would grind to a halt if volunteers stopped volunteering,” Kay said. “The diversity of activities recognised by just the Hidden Treasure award alone indicates that. “I think the formal recognition of volunteers not only encourages those already volunteering but it can encourage others to join them. “I am retired and for the first time in my life I have time to spend on issues that I am passionate about. “I have loved Fingal all my life – the amazing natural environment, diverse but cohesive community and small village character is something really worth working to preserve.” Fellow “treasure” Catherine Boyd began volunteering when she was 15 by knitting socks, balaclavas and scarves for the war effort.

Now in her late 80s, Catherine still helps at hospital fetes and fashion parades – she knits, sells raffle tickets and plants, helps in the kitchen and models for the fashion parade. She is a founding member of the Tweed Coast Uniting Church and is the longestserving member of the
church’s opportunity shop. Catherine has been involved with sports clubs, bowls clubs and the Tweed Hospital Auxiliary. Since 1990, volunteering has played a pivotal role in Dianne Collier’s life, beginning in aged care and then helping with mental health. Di is an active member of
the Tweed Community Mental Health Redesign Committee, Tweed Carers Support Group and the Tweed Family and Carers Reference Committee. She says, while her caring journey has presented many challenges, it has also allowed her to form some very strong relationships and
learn new skills. Carole Keast has worked with Meals on Wheels, facilitated regional parenting programs and worked within disability services. She became a volunteer of the Northern NSW Local Health District Mental Health Forum two years ago.

FOR more than a year, Ernie Pohlman has had the benefit of visits from a special friend. When the 85-year-old came out of hospital, “friend” Lyn Harwood started to come to his Tweed Heads home to keep him company. Ernie is a leukaemia sufferer and lives alone. He’s feeling much better now that Lyn makes her weekly visits. “She comes along for a chat and cup of tea,” he said. “We might go through some old photos. “They’ve involved me in the Red Cross Christmas party. “We sort of clicked all round.” Ernie was the first client in his area to benefit from the Community Visitors Scheme (CVS) auspiced by the Red Cross. CONTESTING WILLS – IT’S JUST NOT CRICKET The voice of cricket and former Australian Cricket Captain, Richie Benaud, has had a claim made against his estate by his first wife and son. Most Australians would know Richie’s wife, Daphne, who has been made a household name along with her former husband, no doubt fuelled by the comedic genius of Billy Birmingham and his 12th Man recordings. However, Richie’s first wife Marcia and one of his son’s have brought proceedings in the NSW Supreme Court, seeking particulars of the estate assets from wife Daphne and making a claim against the estate. They were divorced in 1967. The case follows a string of recent high profile families where disgruntled family members have contested the Will and ended up in Court. Some examples:The family of Mary Gaudron, former High Court Judge, were recently involved in Court proceedings; Justice Byrne of the Supreme Court Qld contested the Will of his parent in recent proceedings; Ex NSW Premier Neville Wran – his family are involved in a huge Supreme Court matter involving millions of dollars; The fact that the claims involve legal families including Judges, as well as such savvy and high profile personalities such as Richie Benaud shows that no family is immune from these types of claims being brought by disgruntled family members. It highlights the fact that there are problems and different situations in all types of families and that, in many cases, the wishes of the deceased are not actually being honoured due to a variety of different reasons. The high profile cases provide an interesting insight into the dynamics of the families and the conduct of parents and their partners and children. These very public family disputes lay open the various family secrets and expose in great detail the relationships involved and the conduct of the various family members. It is sometimes overlooked by people bringing claims that the Court proceedings are public documents of record and are open to the public and the media for scrutiny. Although some of the recent high profile cases involve estates that are worth many millions of dollars, the same principles and issues apply to smaller estates of a more modest nature. The simple fact of the matter is that all families should look carefully at their estate planning and ensure that their Will is up to date and accurately reflects their wishes in relation to how they want their assets to be distributed to their family members.

WHILE most of us are taking a break from work over Christmas, anyone in the emergency services can expect to be on the roster. Queensland Ambulance Service paramedic Inspector Pat Berry will be on duty from December 24 to 28 as senior operations supervisor at Southport station. After 30 years as a paramedic, he’s resigned to giving up family time when others are making merry. “Christmas Day is another mark in the diary,” Pat said. “The triple zero calls will continue to come into the call centre. “I have a great family who’ve made a lot of allowances over the years. “Predominantly I’m here to look after my people and liaise with key hospital managers. “I’m a sort of ‘conductor of

“There’s always mixed emotions when you’re dealing with others’ misfortunes on a day that’s supposed to be happy. “It’s a lonely time for people. There’s an elevated suicide rate. “Everybody’s like an eggshell; everybody can be broken.” For Pat, Christmas with his own family is “when my wife tells me to fit it in”. With her birthday close to the festive season, that’s often the main celebration date. Dozens of medics make up the crews on call over Christmas, and their shifts can each range from 10 to 12 hours. “The work is so varied and you get such an enormous sense of achievement out of what comes out of it,” Pat said. “Ambulance work is a precious resource and one that is in high demand.”

TEN pre-schoolers cheered up the elderly residents of Feros Care Wommin Bay in October to mark Grandparents Day. The Smiley Tots children, aged four and five, performed songs, made playdough characters and shared morning tea with
the residents. Eileen Holland, who turned 101 a few days before the pre-school visit, said she felt “spoilt”. Feros Care manager Amanda Harvey said the young children brought laughter and lots of joyful noise into the village.

Rapt in CareFlight help By YVONNE GARDINER
JULIE Dever has good reason to be thankful for the RACQ CareFlight Rescue service. When her husband needed urgent medical treatment, CareFlight was there for him. “My husband had an accident in 1985 in NSW,” Julie said. “He had a broken neck. It was a water skiing race. I need to pay them back for what they did for him. “I saw an ad in the local paper wanting volunteers. “I’ve been helping them out whenever I’m able.” For the past five festive seasons, Julie has volunteered for the gift-wrapping stall at Robina Town Centre. The most unusual gift she was asked to wrap was a wooden giraffe almost as tall as herself. “I generally do three days a week ... a shift goes for four hours,” she said. “One hundred per cent of the money goes to CareFlight.” CareFlight’s regional fundraising assistant Chris Brun says volunteers are

Time spent in jungle the inspiration for two novels A BRIEF visit to New Guinea 26 years ago gave Hastings Point author Jean Watson enough inspiration to write two works of fiction. Her contact and experiences with the Dani villagers in the highlands provided a rich source of ideas for the books. Taskforce focusing on needs of seniors A KEY commitment for the Palaszczuk Government was to establish an Advisory Taskforce on the Residential Transition for Ageing Queenslanders, and in October I was pleased to announce this taskforce had been appointed. The primary focus of the taskforce will be to consider the needs of older people and will aim to improve choice, affordability, fairness and independence, while reducing complexity in your transition to aged care. This includes selling the family home, transitioning to retirement villages and remaining close to loved ones. We understand that this issue is important, especially around Christmas time, and I look forward to giving you an update on their findings in the future. Christmas is an exciting time, but it can also be very stressful for Queenslanders who are stretching their budgets to enjoy some of the holiday cheer. The expense of buying gifts, pre-

Retired operating theatre nurse Kate Emery, of Burleigh Waters, has been passing on her valuable knowledge as a trainer with St John for the past five years. The 67-year-old teaches at Southport and Tugun on the Gold Coast. I AM A senior. Well past retirement age. But I still work. Full time. If I gave this any thought, which I never have until now, I’d be proud of myself and my work record. As it is, I just keep working, grateful my management hasn’t noticed I should have packed my belongings in a cardboard box long ago, left my desk, and headed out the door. Until someone does notice – and you can bet it will be a young whipper-snipper just out of university who suddenly looks my way with rolling-eyes and whispers “who is that old sheila sitting in the corner?” – I’ll keep on working. Working as long as you are able to and your employer lets you has to be good for you, no? My hero, Singapore’s founding father, Mr Lee Kuan Yew, worked until the day he died at 91. He was having a Mandarin lesson the night before he closed his eyes never to open them again.

Apparently he was so fluent in Mandarin (not his own language), his accent, nuances and colloquiums were perfect to the ear of the Mandarin-born speaker. Mr Lee Kuan Yew is a commendable example of so much that is right about continuing to work until you die ... but back to me. A company can’t fire me now for being past a certain age – at least not in this country – and this is a very good thing.
But the older working person needs to keep up, because it is a certainty she will be working with youthful lithe things and she doesn’t want to appear “elderly”. Obviously keeping up appearances plays an important role, and fashion and grooming is a big part of it (and in my case taking shameless advantage of every cosmetic enhancement available as long as it does not cost more than $50 or involve a scalpel.) Even if she is groomed and cosmetically enhanced, even though she may be young at heart and of mind, there are still things the older worker needs to be aware of to keep up appearances, especially if her job entails sitting in front of a computer. It is the act of getting up off a chair after a sitting period of two or more hours. It’s the noises you make during the rise from a chair that alerts fellow workers to your age via the ache of your back, the pain of your buttocks, the tightness of
your calves. At least it is so for me. Every time I rise from the chair I have to suppress a series of unbecoming grunts followed by a long “oooooooommmmph”, sound and then an “aaaaaaaaaaaargh” noise. Then, the actual walking from the chair to the kitchen or a colleague’s desk – trying to pretend the thighs aren’t cramped, the calves are not seized and the feet are most unhappy – takes a fair bit of fakery. “I’m just off to the kitchen to make coffee,” you must say loudly to cover the bendy-knee groan. If you don’t care about work colleagues hearing your unflattering chair-ascending groans or noticing your shuffle once out of the chair and on your way to the coffee, then congratulations to you. But I do mind, and I’ve been covering up for a few years now. I’m pretty certain I’ve fooled everyone. →ann.rickard@scnews. .com.au

Tip to avoid unnecessary conflict and distress - don’t assume, ask
Inspiring and Retiring with Eva Bennett
HOW often do we make assumptions about what others may be thinking or doing, then find out later that the situation wasn’t what we thought it was, which can lead to unnecessary conflict and stress. Here is a true story, told to me by a financial planner, after one of my presentations a few years ago, about mistaken assumptions. One of his clients, who was getting close to retirement, travelled a lot with his work and was looking
forward to spending a lot more time at home, gardening and getting involved in his local community and not travelling. His wife, who had spent a lot of time at home, was looking forward to going on OS trips like their friends, when he retired. When they were both in his office one day to discuss financial matters, the husband mentioned he was looking forward to no more travel when he retired, which caused a heated argument to flare up between the couple. Each had assumed that the other person wanted the same thing they did, so had never really discussed it. So how could this argument have been avoided? By simply having some good, clear communication and asking questions of each other, listening to each other about their thoughts about what to do in retirement. The way to keep yourself from making assumptions and dealing with the conflict created by mistaken

A recent survey showed that 35% of couples divorce because of poor communication and 37% divorce because of financial issues. Here is an exercise you can do with the other person in your life, to develop the habit of having clear communication and reducing the conflict that assumptions can create. Each person writes down how they want a particular situation to be, eg. what to do in retirement, how to spend Christmas, availability for minding
grandchildren, whether to downsize or move to a new town, whether to buy a new caravan or not – the list is endless. When you have each completed your list, listen carefully to each other’s “wants” and then ask questions to get clear on what is being said. Do you have a better understanding of the situation? Can you and the other person resolve any issues in a more peaceful way than the ‘volcanic eruption’ that the couple had in the FP’s office? I’d be happy to get some feedback from you, when you try this approach. Remember – ask rather than make assumptions. The Aphasia Intensive Therapy program is proven to positively impact on the lives of aphasia sufferers and their families. Clinical educator Susan Walker said research indicates intensive therapy such as the UQ five-day program can greatly benefit those with aphasia. “UQ is one of the few organisations that offer this intensive program and we have received extremely positive feedback about the outcomes,” Ms Walker said. “Our high quality program utilises the skills, enthusiasm and dedication of final-year speech pathology

INCONTINENCE is a topic rarely spoken about but surprisingly common in our community. In fact, over 4.8.million Australians have bladder or bowel incontinence (or both), and because of the embarrassing nature of this problem, many suffer in silence. Deloitte Access Economics estimated that the cost of incontinence to the health system was expected to rise to $450.million by 2020. So what is incontinence? What causes it and most
importantly what can be done about it? Incontinence is the involuntary or accidental loss of urine or faeces. It can range from a small volume leak to complete loss of control of the bladder or bowel or both. Urinary incontinence is usually divided into four main categories: stress incontinence; urge incontinence; overflow incontinence; and functional incontinence. Faecal incontinence is usually caused by weak pelvic floor muscles or sphincters from either childbirth, as a result of surgery or radiation therapy, or by lower bowel
problems such as chronic constipation or diarrhoea. There are a range of management options for both urinary and faecal incontinence which begin with lifestyle interventions, pelvic floor exercises and bladder training. If, however, these types of interventions are ineffective, newer treatment options such as botulinum toxin injections into the bladder and sacral nerve neuromodulation can be highly effective. Minimally invasive sling surgery has also proven to be a highly effective treatment for certain types of urinary incontinence.
All of these newer treatment options now have rebates available through Medicare and private health insurance for eligible patients. I have found that many sufferers of this condition have tried many forms of therapy in the past without success, and may have given up, thinking that their life must now rely on incontinence aids such as pads, catheters and bedding protection. The newer methods of treatment are now offering these people a real possibility of a life without reliance on these products. Loops and magnifiers are also available for individuals who may be hearing or vision-impaired, or if you’ve just left your specs at home. The Home Library Service is available for unwell, incapacitated or convalescing residents who have no support from friends or family to borrow the books. On their behalf, library volunteers will select the books and deliver them to your door. eBooks and eAudiobooks are also an option if you can’t personally visit your local library. These books can be downloaded and accessed directly from your eReader and are great if you struggle with the bulkiness of hard copy books. Our first seed library breaks new ground THE region’s first seed library was officially launched at Murwillumbah Library recently, enabling residents to “borrow” and share seeds to grow their own fruit, vegetables and other plants. Gardening experts and enthusiasts joined with Council, library and school representatives to celebrate the launch of the seed library, which will be based at Murwillumbah Library, to promote a sense of community sharing, sustainability and self-sufficiency. Richmond Tweed Regional Library Branch technician Linda Bell said it was the third seed library of its kind in NSW and the first in the Northern Rivers. “Almost all the seeds have been donated by gardening groups and other locals, for plants which are already grown successfully in this area,” she said. “The seeds can be ‘borrowed’ for free and taken home - just like a library

A FLASH of falling yellow leaves make a beautiful carpet across the wide footpath of Riverside Drive, Manhattan. It’s the beginning of October, crisp blue skies, comfortably cool weather and a city dabbed with the colour of falling autumn leaves. I look up towards the swirl of leaves, but before I can take in the trees, my vision is caught up in the spectre of magnificent, mighty buildings reaching, pushing into the blueness. And there it is, all at once – New York – a city of nature, nurture and big ideas. The juxtaposition of so

much unspoilt nature growing amidst the densest concrete jungle is the world is a sight to behold. Manhattan Island is bounded by the Hudson, East and Harlem rivers. These rivers frame a crazy beautiful city that arguably attracts the biggest, the boldest and most wildly divergent lifestyles in the world. It’s a city where the skyline provides an understanding of its past, future and people. Up high, the cathedral style facades, modern blue glass, turrets, baroque design, Greek columns and pale green spirals pierce the heavens. It’s a showy exhibition mirroring the vision of architects, men of money
and construction workers. A built environment that, since its inception has echoed the collective imagination of an audacious tribe. Talk about having your head in the clouds – in New York, it has to be, or you miss out on the marvels of sky-high beauties. At around eight-and-a-half million, the city boasts one of the country’s biggest populations. Additionally, the tourism industry is booming with a record high of 56.4 million visitors in 2014. The New York City mayoral office attributed visitor numbers to: “Quality of life, low levels of crime and dynamism”.
Two months ago I became one of the 56 million, after trip that took about 24 hrs. I exited Brisbane Qantas airport with a couple of hours stopover in Los Angeles and arrival at JFK airport. From JFK airport, depending on the traffic, it takes a couple of hours to drive to Manhattan. Be it day or night, it is a fast, flash trip past the highs and lows of urban city life. Our holiday residence was a hotel room in the perfect position of Midtown at Hotel Marrakesh. It’s quirky, relatively cheap hotel and our room came with a great CONTINUED PAGE 33

view across the streetscape of Broadway. The hotel is managed by the most hospitable of staff. Not for a moment is the street noise a problem. My friend and I loved it, the strange, different sounding sirens of NYPD (New York Police Department), the accent of hipster Afro Americans and were delighted with people who raise their voices to argue with partners, sing with mates or loudly declare a point of view. It’s New York, we’re there to see and hear it all. Everyday is an adventure – but here’s a few highlights; In the front of the magnificent facade of Museum of Natural History you are met with the words of President Theodore Roosevelt – knowledge, truth, vision. The President’s environmental values prompted the construction and focus of this mindblowing museum. The mission statement of the American Museum of Natural History is: “To discover, interpret, and disseminate—through scientific research and edu-

cation—knowledge about human cultures, the natural world, and the universe.” And while this museum tells a big story, close by the story of Central Park is alive and well. In the middle of Manhattan an area of 840 glorious, thriving, blooming, spacious acres provides a peaceful sanctuary for the busy New Yorker. This oblong slash of green is parted in the middle with a beautiful flowing lake. It’s home to thousands of squirrels who bounce throughout the trees. As we walk through Central Park, little somethings splatter on our heads and we realise it these tiny bushy tailed creatures breaking chestnuts above us. There are seats for quite meditation, outdoor theatres, hire bikes, a zoo, stone bridges, rustic fences and in one way or another, room for everyone. No matter where you go Times Square, Wall Street, Grand Central Station, there is always a spare, quiet seat in Central park to revive yourself. On the clear blue day, we gazed down from the Em-

pire State building and marvelled at the tall, piles of buildings, in shapes that defied their position, and again it made us wonder how a city, so busy, could have made time and space for something as tranquil and fun as Cental Park. And those who built the subway have gifted another bit of luxury for New York. It is easy and cheap to get around New York. For $31 (USA) you could travel around for a week. But you are easily brought to earth when out the blue, there are some incredible hip-hop dancers doing their thing on the sidewalk in front you, or the notes of a random blues singers are playing just a little ahead of you.

Don’t be afraid to experiment SJONELLE HODGINS IN THE 20 odd years I’ve been cooking, I can honestly say I have never followed an entire recipe. As hard as I’ve tried, my attention span and thirst for creating something a little different just won’t allow it. I have certainly used recipes as guides, but when it comes to adjusting flavours, adding some crunchy bits, or making something spicier or healthier, I just can’t resist. My love of cooking comes from my darling mum. As does my chronic inability to follow a recipe without adding a bit of this, a dash of that... oh and just a sprinkle of something else. “I like to be creative,” mum tells me when I ask her what’s important to her about cooking. “And when I’m busy, I like it all in one pot.”
From as far back as I can remember, mum always encouraged my interest in food, and gave me the freedom to create my own school lunches. While I rarely strayed from my Vegemite and cheese sandwiches, it instilled in me a confidence and a feel for food, and the passion to go on and cook all sorts of dishes. One of her favourite recipes is also her quickest. It’s tasty, nutritious, and colourful and can be done in the microwave while you work on other elements of your dish. Depending on how mum’s feeling on the day, there could be any number of other herbs and spices in here, but if you follow this base recipe you can’t go wrong.
Fragrant coconut rice
Serves 4 to 6 Ingredients 1 large onion, chopped 2 cloves garlic, chopped

2 cups basmati rice 600ml vegetable chicken stock 300ml coconut milk 1 tsp turmeric Dash of soy sauce
