country music musician, he is a folk singer who takes up social issues. A Flag of Our Own saw the RSL ban him for disloyalty to the flag, monarchists have attacked his republican viewpoint. His environmental song Rip Rip Wood Chip upset the logging industry. He believes in marriage equality and reckons country singers need to be grounded in Aussie culture, not American, and he welcomes a diverse Australia and reckons the more mingling the better. He is also a big fundraiser for a variety of causes. In 2016 Williamson, the eldest of five boys, who grew up in Quambatook, in the Mallee district of north-western Victoria, says he still interprets Australia through his unique poetic voice. He states in his newsletter to online fans: “I am writing under a wise old coolibah beside a billabong on the Wilson River on Mt Margaret Station in Western Queensland.

AT 70 years old Australian bush balladeer, national treasure and boat rocker John Williamson reckons that, just like most folk his age, he’s mellowed. When it comes to protests in 2016 he says mildly: “I leave that to the younger folks.” Nevertheless, there are qualifiers. He still wants Australia to be a republic and have its own flag. And at every concert, the voice of his convictions is expressed through his classic songs with the same fervour and beauty. Four (golden) weddings A lifetime of adventures makes for a lifetime of memories THE year is 1966. Transistor radios are playing hits like The Beatles’ “She Loves You,” Cilla Black is soaring up the charts with “You’re My World” and, while the song hasn’t been written yet, “Love Is in the Air” for eight young newlyweds. Flash forward 50 years and it is clear the love is still there for the same four couples as they celebrate their combined golden wedding anniversary years with lunch in a Noosa restaurant last month. Considering the average Australian marriage lasts 12.1 years (Source: Australian Bureau of Statistics) you could say being married for 50 years is, well, a rarity. Certainly, the Governor General and Prime Minister think so. Let them know and they will send messages of congratulation. So what are the qualities that underpin a

While the champagne flowed, Seniors spoke to the happy partygoers who have been friends for some years. Sheila Mason, from Derbyshire, married Peter, an Australian journalist, in Avondale, Rhodesia (now Zimbabwe) on February 19, 1966. For the next 40 years or so they lived in that country, South Africa and the UK before coming to the Sunshine Coast in 2001. They are now in Noosa and have two children and four grandchildren

never considered ours to be boring.” Sheelagh and Guy Wannop were married in London on June 11, 1966. They lived in Rhodesia, South Africa and the U.S. before coming to Australia in 1997. Sheelagh is a former professional actress and Guy a retired engineer. They live in Noosa and have three
daughters and eight grandchildren. Sheelagh agreed with Wendy that luck was a factor. “Marriage has its ups and downs but, basically, it is love and caring for each other.” Tim and Jeni Webb were married in Zimbabwe on April 23, 1966. They have two children and two grandchildren.

Tim ran the family auto electric business and, after the family grew up, Jeni joined him at the company. They came to the Sunshine Coast 15 years ago and now live at Bribie Island. Jeni believes respect and friendship is vital.
“You fall in love, you get married and I think it is the lasting friendship that gets you through the tough times,” she said. “We’ve had a great number of adventures that still keep us warm in the remembering and runs deep in our souls.”

JEAN Lehmann is 94 and, having recently given up croquet, she decided she needed something else in her life and bought an iPad. Now she’s playing Scrabble, enjoying the Internet, downloading eBooks from the free Sunshine Coast library system, and blowing up the print size so she can read them. Originally from Bendigo, where she served as a WAAAF during World War Two, Jean (pictured) has lived at Buderim Gardens Retirement Village for 24 years. “Croquet at Headland/Buderim Croquet club was wonderful,” Jean told Seniors. “Great company, gentle exercise, fresh air, interesting tactics requiring skill and concentration. “Because of declining energy, however, I had to give it up. “My eyesight and my hearing have never been good and I attended a meeting in January at the Maroochy Library to learn about the possibility of using OverDrive and downloading eBooks from the library. “Since then the library’s

Researchers from the University of the Sunshine Coast are currently studying the effect of certain antioxidants in fruits and vegetables and polyphenols found in extra-virgin olive oil on maintaining or preventing muscle loss whilst on a weight loss diet. If you are over the age of 60, overweight but otherwise healthy, you may be eligible to participate. LAUNCH OF ‘BASKET BUDDIES’ PROGRAM
“Basket Buddies” is a new program which aims to build a community of people across the Sunshine Coast who are willing to add one extra (specific) grocery item to their shopping basket each week leading up to Christmas. The program runs for 18 weeks, starting July 25. This year, Sunshine Coast Basket Brigade aims to deliver 200 baskets to people in need on the Sunshine
DRAGON BOAT RACING
Over the weekend the Cooloola Dragon Boat club held two days of Dragon Boat Racing on the waters of Snapper Creek in Tin Can Bay, with beautiful weather and over 450 paddlers for the weekend, it was an amazing weekend of paddling. Saturday saw the first round of the Wide Bay Series for 2016, which is
competed between clubs from 1770, Bundaberg, Hervey Bay and Cooloola, with this year we welcomed Burnett River Dragons into the competition. After every club competed in the 3 heats of 200mts and a Minor and Grand final, the winner of round one going to the team from team of 1770. The afternoons racing was for the Diamond Dash for cash. This year saw a record number of 16 teams competing and was open to all clubs in Queensland. The crowd on the day absolutely got into this racing with lots of cheering for all clubs. The recent open day at Camellia House, Woombye, raised a considerable sum for The Daniel Morcombe Foundation. Present owners Doreen and Peter Briggs, threw open their magnificent property, formerly owned by the Morcombe family, and invited people to wander through the five and half acres of natural botanical gardens including more than 700 camellias and more than 40 varieties of exotic fruit species. Doreen said Camellia House is home to one of the largest collections of Camellias in Queensland and those attending enjoyed seeing such magnificent blooms. Crowds were able to take of refreshments, the Lions sausage sizzle, classic cars, and thoroughly enjoyed themselves.

HERE’S some innovative tips. Turn CDs into coasters – stick two together and paste felt underneath. Melt the remains of a lipstick together with a small pot of lip balm – makes a great lip gloss. Grandkids love a tin can phone. Take off the lids and tie together two coffee tins with a long piece of string. Create ice blocks for your esky – fill up old milk cartons with water and freeze them. Want to keep the kids amused? Use empty roll-on deodorant bottles as paint pens for small children. Wash the plastic ball and bottle, fill with paint and replace the ball and lid. To store, keep it upside down with the lid tightly fastened. Get a worm farm and feed all of your food scraps. One kilogram of worms can eat and recycle 1kg of food every day, giving nutritious worm castings for plants and veggies. Put your steel bottle tops and jam jar lids into an old steel can. When the tin is half full, squash the top together so the contents are tightly before recycling. Open the bottom of a used milk carton and plant a tree seedling
inside. The carton will protect your seedling and then degrade as it grows. Going on a picnic? Bring home your cans and bottles to recycle. Save your corks to use them as a paint stamp, or glue them to some timber to make a corkboard. Place clear plastic lids under oil jars or aerosols to prevent oil and rust marks on shelving. Make your own gift wrap: Wrap your presents in the comics pages from your local newspaper, magazines or comics. Kids (and even adults) love it. Temporarily store food scraps in an old icecream tub, before putting them on to your worm farm or compost. Pour old cooking oil and fat into a used milk carton or jar and put it out in the rubbish. It clogs the drains if put down the sink. Old wet-wipe boxes make great string dispensers – try it out. Get creative making greeting cards from old ones, or postcards, photos, stamps, pretty paper and more. CHUTNEYS, pickles and relish are the flavour of the month. Chutneys and relishes are wonderful addition to a steak dinner, sandwiches or even the humble sausage. The most important way to start is with good quality produce, clean jars and lots of spices. Adding spice can change the flavour – use curry powder, mustard seeds, coriander or turmeric. Reduce heat to medium and simmer, uncovered, stirring occasionally, for 2 1/4 hours or until excess liquid evaporates and mixture thickens. Season with salt and pepper. Spoon hot chutney into clean sterilised jar and seal immediately. Turn upside down for 2 minutes. Turn upright and set aside until cooled. Label, date and store in a cool, dark place until ready to use.

Have a commitment to their local Community and on hearing that a student at Bli Bli State School urgently needed a pair of black shoes and some socks they were only too happy to provide them. Lions Connie Gilchrist and Robyn Harm went to the school to meet the student and present the shoes Lion Connie said: “It was a delight to see the joy on his face. He was so happy he went around the school showing his new shoes and socks to everyone.” We also contribute to “Brighter Future 4 Kids” whose purpose is to provide new shoes and socks to needy children in our community. Lions members also assist every Wednesday in a
breakfast program for students at Bli Bli State School.

We experienced the brilliant Mary Grigor Centre, an interpretive archival centre, which details the history of Bankfoot House complete with photographs and memorabilia. Many older people assist their families with caring responsibilities while being actively involved in their communities through volunteering and passing on their knowledge and experience to others. Seniors Week aims to: ■ Improve community attitudes towards older people and aging. ■ Facilitate community participation and activity by older people, including those from indigenous and culturally and linguistically diverse backgrounds. ■ Enhance community connections and inter-generational relationships. NEWLYWEDS Bob Pattison and Kathy Cooper have chosen Palm Lake Resort Cooroy–Noosa to begin their new life together. Kathy came to Australia from North Dakota, USA, as a young school teacher looking for adventure in 1971. She fell in love with an Aussie guy in Rockhampton and ended up marrying and raising a family in Queensland, the past 35 years in the Cooroy area, which included many years teaching at Eumundi State School. Bob, also a school teacher, retired in Cooroy in 2004 after living and teaching in South Australia for most of his life. He built on acreage next to his oldest son and family who came to live in Cooroy in 2002. Sadly, both Kathy and Bob lost their spouses. As both were involved in the Cooroy Pomona Uniting Churches, they knew each other. Their common interests of church, family, caravanning and travel led to a holiday in the USA in 2015, catching up with Kathy’s family, and eventually marriage a few months ago. They started looking at lifestyle resorts where friends from their caravan club live and it was at Hervey Bay and Bargara they first came across Palm Lake Resort. Wanting a place that could accommodate a caravan and have
first-class leisure facilities but not wanting to leave the Cooroy area they love so much, they were excited to hear that Palm Lake was coming to Cooroy and put down a holding deposit on an RV villa the first week the sales office opened in January. After Bob and Kathy sold their homes, they were ready to buy a home together at Palm Lake Resort Cooroy–Noosa. “It was so important for us to be near family, good friends and to continue with our community life. Palm Lake Resort is perfect for us, we can’t wait to move into our new, modern home and begin our life together,” Bob and Kathy said.

Last year Jim and Carol bought a coaster bus and had it converted into a motorhome so they could hit the road again. During their travels they came across Palm Lake Resort Bargara which they absolutely fell in love with, but they both wanted to stay in south-east Queensland and, when they heard Palm Lake Resort was to build a brand new resort in Cooroy, they knew this was going to be the lifestyle resort for them. “The reason we choose Palm Lake Resort Cooroy was the magnificent facilities, everything we have an interest in, is there; fully covered bowling green, craft room and man shed, indoor and outdoor swimming pools, ten pin bowling alley, golf simulator and there is also storage for our motorhome, which is very important to us,” Jim and Carol said. “The location is perfect for us, it’s a little bit country. TWO significant events in Australia’s history – 150 years since the founding of the Australian Army Cadet Corps and 115 years since the Australian National Flag was first raised – will be observed with a parade at Caboolture Historical Village next month. The chairman of the Australian Flag Subcommittee of the 11th Light Horse Caboolture Troop & Military Museum Association, Bob Whitehouse, is predicting
a huge turnout. The event commences at 8am and the parade starts at 9am on Saturday morning, September 3. Immediately following the parade will be an entertaining pageant and flag raising ceremony. ON Sunday, August 21, the Australian Pensioners’ and Superannuants’ League presents its 17th annual Seniors Week amateur fun walk for the over 50s, their families and friends. Our event is a 4km flat walk along the beautiful Golden Beach foreshore, starting from the Oaks Oasis Resort North St Caloundra Landsborough Pde. Registration time is 7am for an 8am start. Walkers can leave their motor vehicles at the Caloundra Power Boat Club and take the free shuttle bus to the Oaks Oasis for the walk start. Under the guidance of a professional instructor, we commence our event with a voluntary aerobic warmup and finishing at the power boat club for breakfast on the lawn of the club. Breakfast will be a sausage sizzle, fruit drinks tea coffee, yoghurt and fresh fruit, then to a seated presentation and distribution of gift packs of relevant seniors and

A sizzling fundraiser PEBBLE Beach retirement community, at Sandstone Point, near Bribie Island, recently held a small but hugely successful sausage sizzle in aid of their chosen charity, The Fred Hollows Foundation. They proved you don’t need a lot of people to host a successful event, have a lot of fun and contribute to the invaluable work the foundation does in putting an end to avoidable blindness in the
Australian indigenous community as well as developing countries. Hosted by the community’s social committee, 42 residents purchased tickets to the event, raising funds along with a raffle consisting of more than a dozen items, which the social committee excelled themselves in obtaining from generous individuals and local businesses as donations. Along with their
sausages, guests and residents enjoyed salads and delicious deserts. In the end, raising $252 for the lunch, $455 on raffles and $630 on direct donations for The Fred Hollows Foundation. "I spoke at a retirement village and afterwards the director told me, ‘We’ve got single men and women who eat nothing but frozen meals every single night because they don’t know how to cook or what ingredients go together'. "It made me very sad to hear about these people, married for years and now without a partner, having to make do with meals which aren’t home cooked. "I decided there and then to start a new class, which I call Gourmet Retiree. It offers a variety of beautiful budget meals prepared with many different cooking techniques and with the special advantage that

they don’t take ages to cook or utilise expensive ingredients. "Like the 30 other classes in the school, it is run with three things in mind. Chicken, Asparagus and Wild Mushroom Stir-Fry Ingredients: 500g chicken breast, skinless and boneless, cut into strips 3 tablespoons extra-virgin olive oil, divided 1 bunch asparagus, trimmed, cut into 2-inch pieces 500g assorted wild mushrooms (such as chanterelle, oyster, and shiitake) 1/4 cup minced shallot 4 garlic cloves, minced Pinch of cayenne pepper 1/3 cup dry white wine or dry vermouth 1/3 cup heavy cream Freshly ground black
pepper Kosher salt Method: Heat 1 Tbsp. oil in a large heavy skillet over medium-high heat. Add asparagus; season with salt and toss to evenly coat asparagus with oil. Add 3 Tbsp. water, cover, and steam until water evaporates and asparagus is just tender, 4–5 minutes. Transfer asparagus to a medium bowl. Heat 1 Tbsp. oil in same skillet. Add mushrooms; season with salt and sauté until tender, 8–10
minutes. Transfer mushrooms to another medium bowl. Heat remaining 1 Tbsp. oil in same skillet. Add shallot and garlic and sauté until just tender, about 2 minutes. Add chicken; season with salt and sprinkle with pepper. Sauté until chicken is almost cooked through, 4–6 minutes. Add wine and cream; bring to a boil and cook until sauce thickens slightly, about 2 minutes. Return asparagus and mushrooms to skillet and toss until coated. Season to taste.

By 1967, Japan’s hunger for our iron ore and coal made it our largest export partner, remaining in that position until it was superseded by China in 2010. When Britain entered the European community in 1973, it dismantled its preferential access system for former colonies such as Australia. By that time, however, its impact was relatively minimal given that Britain was buying less than 10% of Australian exports. Relaxing Bali retreat Jan Richards gets pampered and bendy in Bali’s Ubud Bali, Spain, Italy and France. And has plans for one in New Zealand. At the Byron and Uki retreats the emphasis is on yoga, and cleansing the system – no meat, wheat, dairy, coffee, alcohol… Bali is about yoga and pampering, and for me became an exercise in indulgence that added a kilo, while still rendering me very bendy and relaxed. Our Bali retreat days began at 6am with a knock at the door and delivery of a Thermos of hot water so we could make a pre-yoga cuppa. We started slow – stretching over bolsters, blankets and blocks – opening up, readying ourselves for the poses. Jessie has the ability to read a class, to feel the energy, and matches the overall flow to the day and to the individual. The focus is personal, and caring. FANGING along on the back of a motorbike – one hand gripping the back of the bike, fingernails of the other biting into the shoulder of the young Indonesian man at the handlebars – might seem an unusual activity for a yoga retreat, but it sure was fun. I focused on the pale beam of light illuminating the track between rice paddies – potholed and wet from the storm still rumbling and flashing in the distance. Eventually I relaxed, laughed, possibly even woo hoo’d, as we bounced along towards the lights of Ubud where the convoy halted and we disembarked, pumped, and waited for the remainder of the group who had walked back from the restaurant. It sounds like a lot of yoga, 6.30–9am then 4.30–6pm, but the time flies. Over seven days Jessie turns a bunch of yogis – some with virtually no previous practice,
others accomplished – into a group who not only know “savasana” from “tadasana”, but who also know and care about each other and the community. Jessie includes all elements of yoga, not just the poses, but also the meditation and “pranayama” or breathing practices, and they combine to give a sense of calm and connectedness, as well as physical freedom. Got a dodgy knee, bad neck, sore lower back – doesn’t matter. Jessie and Haydie will help you work with it, and make sure you don’t hurt yourself. And if, like me, you’re not up to a handstand or a perfect bridge, that’s okay, she’ll still have you doing the

preparatory positions, and help you push boundaries you have never dared try before. After yoga it’s a big healthy breakfast, well, mostly healthy. I took a liking to the local palm sugar syrup and poured it over pancakes, French toast… The Bali retreat is a yoga, wellness and pampering retreat, and there was no shortage of pampering included. We visited ultra-luxurious five-star spas and indulged in massages, scrubs and even a flower bath. These trips also included a-la-carte lunches, and just plain lounging around the plunge pools, swimming pools, jacuzzis… Afternoon yoga was restorative. Gently opening chests, lower backs, upper backs, shoulders, assisted by blankets, bolsters and blocks, and topped off with eye pads. During the evening there was often yoga nidra – to put us in the mood for relaxing sleep. The author paid for all her costs.*

Caves under Krakow More to this Polish city than meets the eye Phil Hawkes
KRAKOW, Poland. One of Europe’s most beautiful cities, listed as a World Heritage site. With impressive monuments, churches and fine architecture untouched by war, it should be on every traveller’s bucket list. There’s more to Krakow than meets the eye, however. Just outside the city, deep below ground level is Wieliczka, the site of a 900-year-old salt mine which is, today, open to visitors, in fact more than 1½ million a year. Here are some interesting facts about the Wieliczka Salt Mine: ■ Settlement of the area began in the Neolithic period 5000 years ago, when salt was extracted from brine. ■ In the 13th century, rock salt was discovered and the first shaft constructed. ■ In the Middle Ages salt was a valuable trading commodity (grey gold) used especially for food preservation. Krakow’s wealth and
strategic importance gained. ■ In the last nine centuries, 7.5 million cubic metres of salt have been extracted. ■ The mine today has nine floors from 64 metres to 327 metres underground. ■ Tours reach a depth of 130 metres to the 3rd level, only 3% of the workings. ■ Awarded World Heritage status in 1978, now nearly two million visitors a year. ■ There’s a full-size chapel underground and regular mass is held.
■ The Salt Mine Health Resort offers medical services and a wellness program. Back on the surface, there are so many things to do in a short stay in Krakow that choices are difficult. Schindler’s Factory will bring back memories of the famous movie and is well worth a visit. From daytime touring to nocturnal activities, from shopping to musical events, Krakow is possibly the finest example of a medieval and Baroque city in Europe, whether above or below the ground.

SUNSHINE Coast seniors love to cruise. That’s the view of travel specialist Neil Playford, who with wife Therese started Escape Travel in Caloundra in 2006. “The world is becoming a smaller and more accessible place and cruising has grown phenomenally in our 10 years here. Cruise lines are putting on new ships and many people on the Coast are going for their second, third and fourth time.” Last month the centre celebrated its 10th anniversary with 40 clients who were with them in those early days and still book with them today. “Rather than spend thousands, we decided to keep it small and give the money instead to a local charity so we donated 10 $250 vouchers to the Mix FM wish list Give Me 5 For Kids,” Neil told Seniors. “We specialise in the bigger overseas trips like Europe, North America and round the world itineraries. “We’ve put together a product we’ve branded Escorted Escapes, where one of our staff travel as

An 84-year-old lady came on our Baltic trip and she told her host there was no way she would ever have undertaken this by herself. “We try to make it easy so we advertise the price as including air fares,
sightseeing and all tipping and visas. We also pick up at their door and drop them home afterwards. These trips have become so popular we’ve set up a separate business within our business to cater for them.” Neil and Therese both worked with Flight Centre in Christchurch, where they met. They then worked in travel in Sydney before opening Escape Travel in Caloundra. They have opened a second franchise in Hervey Bay. “We love what we do,” Neil said. “We have a very good staff and the level of service and knowledge we provide has helped us get to where are.”

Chilli-choc brownies Ingredients: ■ 350g good-quality dark chocolate, chopped finely ■ 120g butter, chopped ■ 1/3 cup caster sugar ■ 2 eggs, beaten lightly ■ 1 cup plain flour ■ 1 tsp fresh chopped red chilli or chilli flakes for a milder heat ■ 1 tsp grated lemon or
lime rind (optional) ■ 100g additional good-quality dark chocolate, coarsely chopped ■ Icing sugar for dusting Instructions: 1. Preheat oven to 180°C. Grease a 19cm square cake pan with butter.

SLOW cooker meals are perfect for multi-tasking. Simply prepare the ingredients, combine them in the cooker and get some other chores done while you wait for your delicious meal. Great for winter, these easy recipes are sure to warm your insides. Ingredients: ■ 650g trimmed Gravy Beef, cut into 3cm pieces ■ 2 tablespoons olive oil ■ 2 brown onions, thinly
sliced ■ 3 garlic cloves, thinly sliced ■ 400g cup mushrooms, halved ■ 2 tablespoons plain flour ■ 1 tablespoon sweet paprika ■ 1 cup Liquid Beef Stock ■ 1 tablespoon tomato paste ■ 1 tablespoon Worcestershire sauce ■ 2 tablespoons sour cream ■ Mashed potatoes or steamed rice, to serve ■ 2 tablespoons finely chopped parsley Method: Season beef. Heat 1 tablespoon oil in a large frying pan over high heat.
Cook beef in 2 batches, for 3 minutes each or until browned. Transfer to a 3L (12 cup) slow cooker. Heat remaining oil in same pan over medium-high heat. Cook onion and mushrooms, stirring, for 5 minutes. Add garlic and flour and cook, stirring, for 1 minute. Transfer to cooker with paprika. Combine Liquid Beef Stock, tomato paste and Worcestershire sauce in a jug until smooth. Pour over beef. Stir to combine. Cover and cook on high for 4 1/2 hours or until beef is tender. Stir in sour cream and season. Serve with mashed potatoes or rice. Sprinkle with chives.
