IN THIS edition Southport QCWA secretary Carol Morgan shares a favourite recipe with our Toowoomba readers. Carol continues the fine tradition of the association by being a pretty good cook. “I’ve been a member of QCWA Southport for four years but have been baking since I was a young girl,” Carol says. “I had heard that CWA was involved in craft, cooking, dressmaking, etc, which is something I had done since a young girl. “Mum passed on her skills to me and I picked up lots along the way.” Southport members, apart from cooking, are involved in community-based projects such the women’s shelter, Angel’s Kitchen and Gold Coast University Hospital. “I find all aspects of our work very satisfying,” Carol said.

Try this delicious pavlova with caramel sauce for Christmas lunch.
At Christmas, this recipe is a favourite. CHRISTMAS PAVLOVA 8 egg whites 315g (1.5 cups) caster sugar 200g slivered almonds 1 x 300ml cream 2 tablespoons brown sugar Icing sugar, to dust Strawberries, raspberries, blueberries Method Preheat oven to 150°C. Line two 20cm cake tins with non-stick baking paper. Use an electric beater and whisk the egg whites in a clean, dry bowl until firm peaks form. Gradually add the caster sugar, 1 tablespoonful at a time, until the
sugar dissolves and the mixture is thick and glossy. Gently fold the almonds through the meringue mixture. Spoon the meringue mixture among the two prepared tins and use the back of a spoon to smooth the surfaces. Bake in oven, swapping the tins halfway through cooking, for 40 minutes or until the meringues are crisp and dry. Turn oven off. Leave the meringues in the oven, with the door ajar, for one hour to cool completely. Meanwhile, use a clean electric beater to whisk together the cream and brown sugar in a medium bowl until firm peaks form. Place one meringue disc on
a cake stand or serving plate. Spread with half of the cream mixture. Top with half of the berries. Continue layering with the remaining meringue disc, cream and berries. Drizzle with caramel sauce. Dust with icing sugar to serve. Caramel Sauce (optional) 1 cup cream 1 cup CSR brown sugar 1/4 cup CSR golden syrup 1 tsp vanilla extract Method Combine all ingredients in a pan and stir over heat until sugar has dissolved. Boil for 5 minutes or until slightly reduced and a rich brown colour and leave to cool before serving. www.seniorsnews.com.au
Lapidary Club’s 50year anniversary By JENNIFER GRAHAM
IT IS safe to say that back in the early 1960s, lapidary – the art of engraving, cutting, or polishing stones and gems – was not as wellknown in Toowoomba as it is today. As a 24-year-old shop assistant at TT Hardware, Selwyn Genrich would field the occasional inquiry, including such questions as, “What do you know about this lavatory hobby?” Things have changed somewhat since then, with the Toowoomba Lapidary Club having just marked its 50th anniversary. As its original publicity officer, Mr Genrich shared his insights into the early days of the club and his role in its development. Born into a dairy farming family at Highfields, Selwyn moved to Toowoomba aged eight and attended Newtown Primary School. With 40 children in a single class it was something of a change from Highfields where there were 32 children in the entire school. Nonetheless, he did well enough to go on and complete his scholarship year, later securing a five-year carpentry apprenticeship with George Strohfeldt and Son. After eight-and-a-half years in the carpentry game, Selwyn then moved into hardware and this is where the lapidary connection began.

The Free City Library Shuttle Bus service has been extended until February 2016. In addition, two further stops were introduced along the loop making a total of 8 stops in the CBD. Noticing an interest in the art form, Selwyn wondered if there might be a business opportunity in stocking lapidary-related items. With the blessings of his boss, Mr Hermann, Selwyn set about contacting lapidary supply firms with the aim of stocking the Toowoomba store with items such as grinding wheels, tumblers, diamond saws and prospector’s sieves. The 1965 Toowoomba Carnival of Flowers provided an opportunity to showcase lapidary to the public via displays and demonstrations at the store. So well were these sessions received, that a meeting to gauge interest in developing a local club was held with 120 members of the

public in attendance. When asked why there was so much interest, Selwyn said: “I think it was just the fascination of being able to pick up a piece of rock and see the possibilities.” Indeed, Selwyn himself, had not been fossicking prior to his involvement with the hardware store, but upon joining his initial field trip to Murgon, said he was “hooked”. Although now retired from the lapidary scene, one of the highlights for Selwyn has been the growth and continuation of the club. “There is a sense of satisfaction seeing the club start from nothing and build and knowing that the club is continuing on in good hands.”

You can also bring a carer or dependent children (under 10) with you for free. When you book, the operator will check to make sure you qualify.

Susan defies her life’s challenge Now she and her mates make blankets for charity

FOR some people, a diagnosis of multiple sclerosis might have spelt the end of active engagement with the community. The often-painful and debilitating disease can make it very difficult to go about one’s normal day, let alone partake in outside activities. But for Blankets for the Homeless co-ordinator, Susan Berghofer, MS was just another challenge to overcome. Originally from Brisbane, Susan settled in Toowoomba twenty years ago and spent eighteen years working in corporate information management at the then Toowoomba City Council.

Although Toowoomba’s climate was much kinder to her medical condition, Susan was still impacted by the effects of MS and eventually had to leave her job. However, as the old adage goes, when one door closes, another opens. “Retirement came sooner than planned because of a relapse of MS. Following a period of personal readjustment and taking advantage of a regime of medical interventions, I looked around for an activity to fulfil my need to think, plan or do something.” It was a chance reading of a newspaper article in August 2013 that led Susan to the new “something” she was seeking. The article related to a pro-

ject being undertaken by the East Creek Community Centre in Toowoomba to supply blankets to the homeless through the recycling of existing materials. Constructed from preloved fabrics – old jeans, fleeces and off-cuts – the patchwork creations provided comfort and relief from Toowoomba’s sometimes harsh winter climate. Although her manual dex-
terity was not what it used to be, Susan, who had previously sewn her own children’s clothing, thought: “I can do that” and went off and purchased a new lightweight sewing machine. Fast forward to 2015 and Susan is now co-ordinating a dedicated group of volunteers who pump out a regular supply of blankets for the needy, thanks to a regular supply of good, clean fabrics and a council grant that has funded the purchase of additional sewing machines. To date, four hundred blankets have been created, helping both local charities
and international causes such as the cyclone-hit population of Vanuatu. Indeed, on the day I visited the group, the back room of the East Creek Community Centre was a hive of activity with vibrant fabrics squares being carefully measured and cut and colour combinations and designs being discussed and decided upon. The busy hum of sewing machines provided the perfect acoustic accompaniment and the fellowship and sense of purpose among the assembled group was palpable. For Susan, the group has truly been a blessing on many levels. “My wish to be involved with doing something useful has been fulfilled together with having the pleasure of working with a lovely group of like-minded ladies.

“My enjoyment is not just the sewing, but being creative with colour and texture and then just giving it (the finished product) away. Volunteering is very worthwhile, benefiting others by using skills which you already have either from employment or hobbies.”

That is exactly what happened, with a core group of students moving on to a deeper study of the language. Around the same time, an acquaintance pointed out to Peter that there were a number of older people in the community who had been keen tennis players in their youth and would be enthusiastic about getting back into the sport but lacked a club through which to do so. Having had previous experience with the sport and not being one to shy away from taking the initiative, Peter established a U3A

ON THE face of it, tennis, sudoku and the German language may appear to have little in common, but in Peter Sheridan’s world, these are but three strings in his quite impressive volunteering bow. Born in Toowoomba in 1930, Peter worked in various capacities during his professional life, ranging from a role with the Main Roads Department, a spell as shire engineer in Mitchell and Oakey, and eventually as the owner of a pet goods wholesaling business. Upon retirement in 1995, and wishing to “make myself useful in the community”, Peter joined U3A as a student of German language. His mother’s side of the family emigrated from Germany in 1863, so there was a little family history involved in his choice of subject. Peter enjoyed the classes immensely and rapidly built up his skill in the language thanks, in no small part, to the efforts of his tutor. Aware that others were keen to set off on their own language learning paths, but were perhaps a little nervous, Peter decided to step up and help out as a first-time German tutor. “I continued learning German in an intermediate class, but became aware that there was no class for anyone who wished to

As if that was not enough, Peter then went on to teach sudoku for a year in 2014, proving yet again that variety is indeed the spice of life. When asked why he took on such diverse tutoring roles, Peter replied: “Just so I can help others … there is nothing more satisfying”. “For me, it goes without saying that we have an obligation to share our knowledge and skills with others”. U3A Toowoomba recently held a Volunteers Christmas luncheon at Regents on the Lake. The purpose behind the luncheon was to say thank you to the small army of volunteer tutors who give of their time and efforts throughout the year to provide a wide variety of classes and activities to members. Well done and thank you. There will be an open morning on Monday, January 25. The aim of the morning is to allow prospective members to check out the classes and activities that will be on offer in 2016. The event will take place at the Philharmonic Performance Complex, 7 Matthews St, Harristown, with doors open to the public from 9.30–11.30am. Additionally, the U3A office will be open on January 13 to 15, 18 to 22.

LYNNSAY Fryer is something of a jack-of-all trades with just a dash of Renaissance man thrown in for good measure. With a wide and varied career portfolio, it is not surprising that his “retirement” activities are equally diverse. Mr Fryer variously divides his time between water colour painting, writing poetry and playing guitar in his band. But it is a love of the open road, a passion for BMW motorcycles and the enjoyment of others’ company that drive his current passion – Big Bike Tours. Centred in the township of Pittsworth, Big Bike Tours involves people from a variety of backgrounds, age groups and professions who just happen to share the joy of motorcycle riding.

Lynnsay explained: “This is really all about the company of good folks … Joie de vivre (a joy of life) … everyone looking out for and caring about each other”. Short rides (100–300km) are alternated with longer rides (up to 600km) with an ever-changing sche-
dule of routes and each ride typically includes time for “smoko and a gossip” and lunch at a country pub. Contrary to what some might think, this social gathering of riders is not impacted by Queensland’s so-called “Bikie Laws”. Lynnsay said: “Such laws

COTA offers chance for you to educate, help your peers “VOLUNTEERING as a peer educator for the past six years with COTA Queensland has been a wonderful and worthwhile experience for me”, said Alison Taylor, a resident of Hervey Bay. “I have been trained in three different programs now, each relating to important issues for older Australians.” COTA (Council on the Ageing) Queensland is a state-based organisation committed to advancing the rights, needs and interests of people as they age in Queensland. They work to create a more just, equitable and caring community in which older people are actively involved and have access to appropriate support, services and care. “The opportunity to deliver a message of hope and educate my peers to access help when required offers me a great deal of satisfaction as well as sense of worth to be actively involved in the community in my retirement years”, Alison said. “The sharing of stories has great value and each peer education program provides for some of
this exchange of experiences and ideas.” The COTA Queensland Peer Education Program trains seniors to deliver free information sessions for their peers within their community. The program is currently offering free sessions on the changes to the aged care system and the introduction of a new Home Care Packages system. The sessions aim to increase the knowledge of older Queenslanders so they can maintain control of their own lives and become active partners in their own health care. Between 10–11 million people (43% of our population) presently live in this sector. In an attempt to correct

The practice was also known as daylight saving time (DST) – defined in an article by Mike Corones [Reuters, November 26, 2014] as “the greatest continuing fraud ever perpetuated on the American people”. It is not unreasonable to refer to DST in Australia in the same terms. Geographic factors mean that not all eastern states can justifiably advance

A KEY commitment for the Palaszczuk Government was to establish an Advisory Taskforce on the Residential Transition for Ageing Queenslanders, and in October I was pleased to announce this taskforce had been appointed. The primary focus of the taskforce will be to consider the needs of older people and will aim to improve choice, affordability, fairness and independence, while reducing complexity in your transition to aged care. This includes selling the family home, transitioning to retirement villages and remaining close to loved ones. We understand that this issue is important, especially around Christmas time, and I look forward to giving you an update on their findings in the future. CLUBS Christmas Down Under 2015 It comes around every year yet many of us seem to be always taken by surprise! Not, however, a group of Warwick senior parishioners from the city’s
Christian Churches who since last August have been planning an event that is now in its 12th year. December sees a frenzy of activity in much of the community with lists made for decorations and presents Volunteer parishioners from the Anglican, Baptist, Catholic, Lutheran, Presbyterian, Wesleyan Methodist and Uniting Churches offer a way for the families of the region to say Happy Birthday Jesus which is the reason for the season. A Free event, Christmas Down Under uses themed craft, face painting and story-telling with figurines to tell the Christian story of the first Christmas. FREE family photos can be taken around the Nativity Scene. These are printed on site and mounted on a card which also has a Christmas story this year from the perspective of the animals in the stable – and Christmas puzzles. It makes an ideal souvenir to share, perhaps with grandparents who may live in other places. Garden City One of the popular features of the monthly meetings of the Garden City branch of National Seniors Australia is the regular flow of guest speakers who speak on a variety of subjects, leaving us entertained and informed. This November, as in previous years, we have sought our enlightenment nearer to home and tapped into the wealth of experience within our own ranks. Committee member Bob Campbell was our lead speaker giving us some insights into his life as an electrician and TAFE teacher, mainly in Mt Isa and Gladstone, before retiring to Toowoomba. Other speakers on the day were Glenda Reimers, Yvonne Lewis and Ken Gillies. Our monthly bus trip was also dispensed with in November in favour of a self drive visit to something close at hand: the Wellcamp Airport. New independent information desk launch THE Assistant Treasurer Kelly O’Dwyer has launched an independent financial information service for older Australians at Parliament House. The National Seniors Financial Information Desk (FID) was resurrected from the ashes of the respected National Information Centre on Retirement Investments (NICRI) which
closed this year after losing government funding. At the launch, National Seniors chief executive Michael O’Neill said NICRI’S demise after two decades of operation had left a dangerous gap for consumers. “This information service will help older Australians navigate through an overwhelming retirement income system,” he said.

I RECKON there’s a lot to celebrate about getting older – the joy of watching our kids grow up, having plenty of life experience to draw on, and surprisingly, valuable savings on insurance premiums. A FLASH of falling yellow leaves make a beautiful carpet across the wide footpath of Riverside Drive, Manhattan. It’s the beginning of October, crisp blue skies, comfortably cool weather and a city dabbed with the colour of falling autumn leaves. I look up towards the swirl of leaves, but before I can take in the trees, my vision is caught up in the spectre of magnificent, mighty buildings reaching, pushing into the blueness. And there it is, all at once – New York – a city of nature, nurture and big ideas. The juxtaposition of so much unspoilt nature growing amidst the densest concrete jungle is the world is a sight to behold. Manhattan Island is bounded by the Hudson, East and Harlem rivers. These rivers frame a crazy beautiful city that arguably attracts the biggest, the boldest and most wildly divergent lifestyles in the world. It’s a city where the skyline provides an understanding of its past, future and people. Up high, the cathedral style facades, modern blue

glass, turrets, baroque design, Greek columns and pale green spirals pierce the heavens. It’s a showy exhibition mirroring the vision of architects, men of money and construction workers. A built environment that, since its inception has echoed the collective imagination of an audacious tribe. Talk about having your head in the clouds – in New York, it has to be, or you miss out on the marvels of sky-high beauties. At around eight-and-a-half million, the city boasts one of the country’s biggest populations. Additionally,
the tourism industry is booming with a record high of 56.4 million visitors in 2014. The New York City mayoral office attributed visitor numbers to: “Quality of life, low levels of crime and dynamism”. Two months ago I became one of the 56 million, after trip that took about 24 hrs. I exited Brisbane Qantas airport with a couple of hours stopover in Los Angeles and arrival at JFK airport. From JFK airport, depending on the traffic, it takes a couple of hours to

of Broadway. The hotel is managed by the most hospitable of staff. Not for a moment is the street noise a problem. My friend and I loved it, the strange, different sounding sirens of NYPD (New York Police Department), the accent of hipster Afro Americans and were delighted with people who raise their voices to argue with partners, sing with mates or loudly declare a point of view. It’s New York, we’re there to see and hear it all. Everyday is an adventure – but here’s a few highlights; In the front of the magnificent facade of Museum of Natural History you are met with the words of President Theodore Roosevelt – knowledge, truth, vision. The President’s environmental values prompted the construction and focus of this mindblowing museum. The mission statement of the American Museum of Natural History is: “To discover, interpret,

recipe Create something a little different with a dash of this and a pinch of that...
Don’t be afraid to experiment IN THE 20 odd years I’ve been cooking, I can honestly say I have never followed an entire recipe. As hard as I’ve tried, my attention span and thirst for creating something a little different just won’t allow it. I have certainly used recipes as guides, but when it comes to adjusting flavours, adding some crunchy bits, or making something spicier or healthier, I just can’t resist. My love of cooking comes from my darling mum. As does my chronic inability to follow a recipe without adding a bit of this, a dash of that... oh and just a sprinkle of something else. “I like to be creative,” mum tells me when I ask her what’s important to her about cooking. “And when I’m busy, I like it all in one pot.”
From as far back as I can remember, mum always encouraged my interest in food, and gave me the freedom to create my own school lunches. While I rarely strayed from my Vegemite and cheese sandwiches, it instilled in me a confidence and a feel for food, and the passion to go on and cook all sorts of dishes. One of her favourite recipes is also her quickest. It’s tasty, nutritious, and colourful and can be done in the microwave while you work on other elements of your dish. Depending on how mum’s feeling on the day, there could be any number of other herbs and spices in here, but if you follow this base recipe you can’t go wrong.
