COLIN Dillon never dreamt he would write a book even though he had an explosive story to tell. As the first indigenous policeman in Australia, Colin was also the first person to testify in the Fitzgerald Inquiry. Over the course of his 40 year career in the Queensland Police Force, Colin took a stand against corruption and worked tirelessly to improve the relationship between police and the indigenous community. But it came at a great personal cost. He suffered years of threats and harassment, but
always stood firm in his belief that shining a light on corruption not only exposed wrongdoing but empowered those who behaved honestly. Colin was also the first serving police officer to voluntarily appear before the Fitzgerald Inquiry in 1987 and at the time was a lone man standing. ■ CODE OF SILENCE : Allen & Unwin. THE good work carried out by the nuns at Toowoomba’s Missionary Sisters of St Peter Claver includes writing and editing The Echo, a 24-page magazine/newsletter which helps raise funds to enable them to continue their philanthropy. It was Mary Theresa Ledochowska, a Polish Catholic sister and missionary dedicated to service in Africa, who founded the Missionary Sisters of St Peter Claver in 1894 when she became concerned about the slave trade in Africa. “It was after hearing a Cardinal Lavigerie when
he was touring Europe, telling people about the slave trade in Africa towards the end of 1880, that Sister Mary Theresa took up the cause,” Sister Miriam from the Toowoomba missionary said. “She had a talent for writing. She wrote a column in a local paper. By 1894 she had established a small magazine, Echo from Africa and Other Continents.” Now the Toowoomba missionary continues the publishing of The Echo which was founded all those years ago by Sister Mary Theresa Ledochowska. “We are only three sisters (here in

Council Cabs
Council is trialling a cab service to help older people and those with a disability travel to their local shopping centre. The cab picks you up from your home and takes you to your local shopping centre once a week. The service will need to be pre booked by calling 1300 811 394 before noon on the day before your trip. You will travel in a shared taxi. It then takes you home at a set time a few hours later. It costs $2 per person, per trip (which is $4 there and back). Council subsidises the rest of the cost of the fare. If you live in one of the service areas, and are aged 60 or over, have a disability or hold an eligible concession or pension card, then you qualify to use the service. You can also bring a carer or dependent children (under 10) with you for free. When you book, the operator will check to make sure you qualify.

Maggie’s vision for aged care JIM FAGAN
MAGGIE Beer has a recipe for keeping folk in aged care happy and contented – flavoursome, nutritious meals, served in pleasant surroundings. And Australia’s favourite chef is doing more than just talking about providing food with that touch of home cooking. She started her Maggie Beer Foundation – A Good Food Life for All – in May 2014 and it is now providing benchmark best practice in many of Australia’s aged care homes, transforming the way they look after our elderly and giving them a better quality of life. The 71-year-old entrepreneur will be in Brisbane next month to conduct cooking demonstrations at the Regional Flavours Festival on July 16-17 at South Bank and in an exclusive interview from her home in the Barossa Valley she told Seniors, “I will take the chance to talk up the Foundation while I’m there.” Maggie first became interested in 2010 when she was named Senior Australian of the Year and asked to speak in Tasmania at a conference of aged care leaders. “I did my research into a lot of facilities and, while I saw some wonderful things, I also saw some terrible things at places where the quality of food didn’t count,” she said. “Everyone has the right to a good meal every day. “I’ve had good food all my life and to me the greatest gift everyone should have is the gift of a life of good food. It’s not

just sustenance, it’s pleasure.” She described how she approached the then Federal Government with the idea that they find the best aged care exponents across Australia and see what they were doing to deinstitutionalise food. “There was a lot of interest but no money,” she said.
“I knew I had to do something so I started the Foundation. So far we’ve managed to get a TAFE course with eight different components of specific instruction in aged care and two Masterclasses each giving grants for 30 cooks and chefs in aged care facilities. “We bring in the experts and the chefs then go
back their homes where they are looking after 50 to 300 people and so it becomes a movement. “Flinders University in Adelaide did an evaluation before and after the Masterclasses and six months down the track we have qualitative evidence that it works. “It’s just fantastic,” she said.

Good for body and mind GOLD Coast studies have found that more than half of aged care residents are malnourished – a figure borne out at a national level. Two years ago, when The Lantern Project was launched, that figure was up to 80%. Project founder and dietitian Cherie Hugo, as part of her PhD studies at Bond University, set out to improve the food served up to residents in aged care. After 15 years of
working with the elderly, she had a desire to see food become a part of the day elderly residents looked forward to. “It should be a highlight of their day and, at the moment, it is not always. It is a complex problem that goes beyond the food itself,” Cherie said. “If someone is undernourished, they are more likely to be depressed, have falls, pressure areas and not recover from wounds or
infection, so the ultimate goal is improving quality of life. “We know a mealtime is more than just food and nutrition. Mealtimes are also about communication, company and connection.” The Lantern Project has high-profile supporters, including Maggie Beer, Simon Bryant and Peter Morgan-Jones, and The Stephanie Alexander Kitchen Garden
Foundation. “Awareness has been raised and we are pleased that a working group to develop new guidelines has recently been formed in conjunction with the Dietitians Association of Australia,” she said. “This should be a great step in the right direction in terms of moving towards more enjoyable, less restrictive aged care menus. “We have a number of Gold Coast-based aged
care homes involved with the Lantern Collaboration – each have their own food-based priorities and projects under way. “Terraces Assisted Living Facility is currently involved in the ‘nourish study’ as part of my PhD research, where we have introduced staff nutrition training and set food-based strategies to replace commercial nutritional supplementation with the purpose to improve residents’ mealtime.”

U3A courses cover interests such as sport, exercise, the arts, language, technology, travel, dance, geology, history, language, craft, gardening and the sharemarket. U3A requires no prior learning. U3A in Toowoomba Inc is one of many similar U3A organisations in Australia. Formed in 1990 we provide leisure and educational courses to local seniors. We have over 1600 members and we offer 150 courses each week at present; all of these at a low cost. Many classes are held at 7 Matthews St, Toowoomba. Staff and tutors are volunteers. The joy of volunteering VOLUTEERS keep the wheels of any community turning and no-one knows this more than Sharene Gosley. Sharene is the volunteer co-ordinator for The Toowoomba Hospice and with 109 people on her team, she has many people to organise and
look after. Just doing the rosters for so many people is “challenging” according to Sharene. “It has its moments but all our volunteers are so good and generous and flexible they make the job easy,” she said. The volunteers’ average
age is between 45 to 70, although one kind gentleman aged 87 gives up his time for the hospice. Sharene says she never has a problem recruiting volunteers. “It is all mostly word of mouth,” she said. The volunteers have

HOPE for the planet MOST people are more than aware of the damage man has caused to the environment and most shake their heads in concern, but don’t know what they can do about it as individuals. There is hope at hand in HOPE (Householders’ Options to Protect the Environment), a national organisation that has its headquarters in Toowoomba. HOPE started in Mansfield, Victoria in 1988 with an informal talk to commemorate World Environment Day at an adult education centre. The speaker, Janet MacKenzie, had no idea her talk would initiate an explosion of support that would eventually blossom into HOPE Australia with the slogan “Think Globally – Act Locally”. 100-year-old model HARVEY Nichols is throwing out the new and celebrating the old. Breaking with the traditional youth-obsessed fashion industry conventions, the British department store is featuring a 100-year-old model in an ad to align with Vogue’s century anniversary magazine. The model is Bo Gilbert, who was born in 1916 and the ad will run in the June edition of Vogue. AN ALLIANCE of 48 aged care groups have launched a national campaign to put agedcare on the election agenda. The Australians Deserve to Age Well campaign www.agewell campaign.com.au will target all political parties, calling for an end to the ‘aged care lottery’ so that older people no longer have to wait for months to receive the care. COTA Australia CEO Ian Yates said despite some multi-partisan steps in the
right direction in recent years, older people still languish on waiting lists, not receiving the right level of care because there are not enough aged care packages to go around. “We are calling on all political parties in the 2016 Federal election to commit to a timetable to end the aged care lottery,” Mr Yates said. “This is one of the key asks in the Alliance’s Position Statement for the 2016 Federal Election.

A secret jar conspiracy? Death by the inability to open a bottle top

ONE of our lovely Seniors Newspaper readers emailed me suggesting I write a column about the conspiracy to kill off us seniors by slow starvation. While most of us enjoy a conspiracy theory, this one might be a bit much. And while I can’t really believe our manufacturers and producers are out to kill us oldies, it’s worth giving the theory an airing. It is death by the inability to open a bottle top, unscrew a lid or operate a can opener. This one has crept up on me over the years. Where once I had no trouble with my big hands and strong wrists to wrench the top off a jar of
pickled onions and dive in, now I need to cry for help (or give up picked onions, a far better alternative) to achieve this small task. Any jar now poses an insurmountable problem for me. From the raspberry jam jar to the chutney jar to the humble peanut butter jar, I am defeated by them all. “Buy one of those super gadgets especially made for silly old people who can’t open jars,” I can hear you say. Hear you loud and clear. I already have one. In a fancy red colour. It looks like an old-fashioned bottle opener but it is all modern moulded plastic stuff. You put it on top of the jar lid, press down until you hear a pop noise and then the lid should come off like greased lightning. Not so. At least not for me. Whenever I am confronted with a jar lid, I do give it a go first, and
then raise my head to the heavens and shout: “Why, why, WHY is everything so difficult?” It is the same with can openers. Thankfully most cans now come with a ring pull and even I with my weak old hands can manage that, but the ring-pull-less can (coconut milk, big culprit) that requires a can opener, forget it. My feeble and almost arthritic hands can no longer turn a can opener. Cans and jars and lids are now my enemy. But here’s the puzzling thing... no matter how difficult I find a jar, lid or can to open, I have never once been unable to get the cap off a wine bottle. They come off with just a delicate twist. A champagne cork poses no problem either. I can’t explain this phenomenon, but I don’t question it. ann.rickard@scnews. com.au

One member of the Rainbow Writers has taken a trip to Sydney to take part in it live. It was very interesting especially as the U3A Rainbow Writers are in the process of printing their second book which will be launched at the U3A Seniors Expo on August 17. Many booths have been booked for this informative day already, so nobody will be disappointed with the variety of new entries as well as the old favourites returning.

NATIONAL SENIORS ZONE 109 CONFERENCE
Delegates and supporters from six Darling Downs branches of National Seniors Australia met for their annual conference, hosted by Warwick Branch on May 23. Apologies were received from Highfields and Chinchilla. The conference was opened by the new Mayor of Southern Downs, Tracy Dobie. Reports on the year’s activities were received from all branches indicating an active year of good fellowship, travel and information gathering as well as contributing to a range of community organisations. There was local input from Cameron Haidley of Haidley’s Coaches and Rob Hamilton from the Southern Downs Information Centre who enlightened us on the various attractions and services in the area. Michael O’Neill, retiring CEO of National Seniors Australia gave an impressive address on the research and advocacy activities of the organisation. The election of office bearers for the coming year had Hazel Gillies (chair) and Dawn Wagland (secretary) re-elected.

I WAS in Melbourne on the weekend and ready for single digit weather with jackets and jeans, scarves and socks. Lygon St is renowned as Australia’s “Little Italy” with its huge amount of Italian history and restaurants, is no wonder. But the street’s history reveals Lygon St was a Jewish Ghetto. It seems that a neighbourhood war in the ‘40s resulted in the Jews moving south to Balaclava/Caulfield/St Kilda and the Italians
literally setting up shop in Lygon Street. Since the 1970s Carlton has experience ongoing urban renewal clearly represented by the emergence of an eclectic range of quality eateries. Honour the stockman Stockman’s Hall of Fame pays tribute to the outback pioneers Erle Levey
NOT everyone gets the chance to pass on some history of the nation. Yet that’s just what Australian Stockman’s Hall of Fame CEO Lloyd Mills gets to do every day. The former Caloundra RSL business manager considers it a privilege to be able to help pay tribute to the pioneers of the outback and pass that legacy on to the coming generations. “Australians understand that the bush built the city,” Lloyd tells me as we walk through the landmark at the eastern entry to Longreach. “Everyone carries a bit of bush in them. It’s bringing that out in them.” After 22 years at Caloundra on the Sunshine Coast, Lloyd moved to Outback Queensland Tourism as general manager and after two years in that role the CEO position at the Hall of Fame came up.
He asked the family what they wanted to do: Stay in Longreach or move back to Caloundra? They knew it would be for three to five years. But as Lloyd says, the answer was easy considering their youngest child has been in Outback Queensland longer than he was at Caloundra. “It’s got everything you need but not everything you want,” he says of Longreach. Lloyd’s biggest change in the move from coast to country was leaving friends, especially after surfing for 35 years. Yet the beauty is a barbecue on a Sunday. “There is not much chance of being rained out,” he says with a grin. Professionally, one of greatest business challenges is that nothing is quick, nothing is easy in the bush. Yet Lloyd reflects that it is a bit like life. “I could rely on the internet on the coast, it was not a problem,” he

said. “Here, it can be the way you do business that is different. “It’s definitely not 9–5 Monday to Friday.” And in the outback, where you get used to the unexpected, Lloyd without hesitation says the most unusual thing he has seen was a German traveller with his worldly goods in a
wheelie bin, and he was 350km down the Birdsville Track. A highlight of a visit to the Hall of Fame is the Outback Stockman’s Show, a light-hearted but informative look at caring for stock horses and sheep dogs. The big attraction was the brahman bull walking through the foyer.

IN NEW York City, there is diverse and different architecture, mind-blowing museums and people with attitude. But there’s also something else – cheap, expensive, different and thoroughly enthralling shopping experiences, wrapped up in a satin-ribboned box of history. Yes, stretching between the marvels of Macy’s to the glitter of Tiffany’s and notoriety of Bloomingdales, is an eclectic range of curiosity,
retro, vintage and everything-else stores, many in the boroughs. The lure of visiting what’s known as the world biggest department store was too big for me to resist. And if you’re going to Macy’s you must act like an American and wear your running shoes. Macy’s in Herald Square covers an entire city block, has 11 levels, and encompasses more than two million square feet of retail space. You don’t want to be caught out with the wrong shoes. Macy’s Herald Square
building was the first in the district to have a modern-day escalator. So, if you can’t face the shopping, there’s plenty of history to get in touch with. Thanks to the ladies from Sex in the City, Bloomingdales was on my bucket list. I can tell you it felt good to be part of this upmarket store and know that my refined taste was shared with global celebrities.
As it turns out Bloomingdales, founded in 1861, is a chain of luxury department stores owned by Macy’s. And there’s Tiffany & Co. This time it was visions of the gorgeous, elfin -like Audrey Hepburn in the classic movie Breakfast at Tiffany’s that drove me into this magnificent granite and limestone, art deco-inspired establishment. The world-renowned
Tiffany & Co store is at the corner of Fifth Ave and 57th St. It opened its doors for business October 21, 1940 and its style is as timeless as ever. In Chelsea, a neighbourhood on the West Side of Manhattan, another side of the diverse New York life, is presenting itself in the form of op shops, vintage stores, art studios, curiosity and costume stores.
Of late Chelsea has also attracted the bigger stores – Barneys CO-OP – which replaced the much larger original Barneys flagship store Comme des Garçons, and Balenciaga boutiques, as well as being near Alexander McQueen, Stella McCartney, Christian Louboutin. And between the Chelsea shops there are more than 200 art galleries waiting for your visitation.

Working with Alzheimer’s The Hon John Watkins, Chief Exective Officer, Alzheimer’s Australia NSW, introduces a practical publication compiled in collaboration with the Australian Men’s Shed Association: “Your Shed and Dementia, A Manual” is a great addition to good dementia care for a most needy group – older men who are dealing with the dementia challenge. One of the great problems of dementia is the social isolation it causes. Social inclusion and shared experiences with open and accepting colleagues and friends are essential to a happy life. More so if that life involves dementia. That is why this initiative involving Men’s Sheds and dementia is so welcome. At Alzheimer’s Australia NSW board members have become convinced about the efficacy of the Men’s Shed movement in providing beneficial opportunities for older men dealing with dementia. With one in ten Australians over 65 expected to be diagnosed with dementia, sheds will have to determine whether they are open and inclusive to men dealing with dementia or whether they effectively close their doors to those in need. Mr Watkins said he could not cannot imagine that the Men’s Shed movement will be anything other than open,compassionate, generous and accepting. They are justly seen as

CANCER Council Queensland’s Everyday Health Survey found only six per cent of Queenslanders were aware of the recommended daily adult intake of sodium to prevent chronic disease – 1600mg. Research shows Australians eat around 4000mg of sodium per day (about two teaspoons) – more than twice the amount recommended by the WHO to prevent chronic disease. Cancer Council Queensland spokesperson Katie Clift said many Queenslanders were unknowingly consuming high levels of salt in their daily diets.
“Most people would be shocked to learn that cereals and cereal products contribute an estimated 32 per cent of salt intake from processed foods in an average diet,” Ms Clift said. “We urge Queenslanders to limit their salt intake to 1600mg every day to reduce the risk of chronic disease. “Just 100g of leg ham exceeds the daily limit, with 1650mg of sodium. 100g of bacon has 2000mg of sodium, and 100g of some popular spreads contains up to twice the daily recommended amount of sodium, with 3000mgs. “Two pieces of bread
contain about 450mg of sodium – one quarter of a person’s daily salt intake target. “Small servings of cheese, tomato sauce, salty fish, Italian dressing or olives can all add up to exceed the daily dietary recommendations too.” Salt is a leading cause of high blood pressure and cardiovascular disease, and may increase the risk of stomach cancers. Australian adults should consume less than 1600mg of sodium per day to reduce chronic disease, with 2300mg the maximum daily upper limit. More information at cancerqld.org.au or 13 11 20.
