Last week, on an unseasonably warm December evening, Sensi
magazine took home top honors in the Publication of the Year category of the 2017 Cannabis Business Awards. As our team took the stage in Seawell Ballroom in the Denver Performing Arts Complex, I looked around the room in awe: a sea of newly minted entrepreneurs, leaders from across all spectrums of this industry, from activists and advocates to dispensary owners and MVPs, all decked out and dapper. Just 10 years ago, most of the people in the room would have been considered fugitives from the law just for operating the successful businesses they are today. It’s a whole new world we live in, and our future is looking pretty bright right now. For the first issue in 2018, we decided to focus on the future, in part because of the “New Year, New You” mentality that’s so prevalent this time of year, but also because this month marks California’s march into the cannabis-is-legal-for-adultuse future. With this milestone moment in mind, Senior Editor Leland Rucker dives into the future of “high tech,” pun intentional. Our dining editor, in his newly rebranded TasteBuds column, looks at the future of dining trends in the US and also sits down with a man best described as a futuristic Willie Wonka for his profile of the Inventing Room proprietors. Robyn Griggs Lawrence looks into the complicated, forward-thinking world of terpenes, and Ricardo Baca offers some hypotheticals about what cannabis use will look like in the coming years. Fresh Complaint // by Jeffrey Eugenides // M A C M I L L A N The first collection of short fiction from the Pulitzer Prize-winning author Jeffrey Eugenides hasn’t elicited many fresh complaints since its release in October. The stories in “Fresh Complaint” explore equally rich—and intriguing—territory in ways that are, forgive me, fresh. Reading Eugenides is an encompassing joy for people who enjoy lyrical prose, who devour novels seeking those perfect sentences that just stop them in their tracks. The author’s works are filled with passages like that. Such as this one: “Pay no attention to the terrors that visit you in the night. The psyche is at its lowest ebb then, unable to defend itself. The desolation that envelops you feels like truth but isn’t. It’s just mental fatigue masquerading as insight.” You’ll find other real insight woven into all 10 of the narratively compelling stories.

Egan, author of the intricately woven A Visit from the Goon Squad, which reads like a collection of short stories until the very end when the full narrative is quietly revealed to the reader. With Manhattan Beach, Egan spins a classic historical novel. Classic in that instant classic kind of way that got the novel long-listed for the National Book Award for Fiction and named an Amazon Best Book of October 2017.

SOMEBODY SAID THAT IT WAS A THREE-AND-A-HALF-MILE TREK ALL THE WAY THROUGH THE MJBIZCON TRADE SHOW IN LAS VEGAS JUST BEFORE THANKSGIVING, THE LARGEST CANNABIS CONFERENCE IN THE COUNTRY. DON’T KNOW FOR SURE, BUT IT TOOK ME THREE HOURS TO STROLL THE ENDLESS AISLES OF TABLES AND BOOTHS AND CHAT WITH SOME VENDORS AND FRIENDS ALONG THE WAY.
Perhaps I need to get out more, but it was easily the largest trade show I’ve ever confronted. More than 17,000 attendees came each of the three days, paying a hefty sum to walk among business owners, angel investors and true believers past more than 700 exhibitors offering hardware, software, packaging, tools and advice to enhance sales and security, improve compliancy, cultivate more plants, purchase the right real estate and scale your business, among many other things. There were more companies with canna in their names than I thought possible. Hordes of people were taking notes and asking questions at the dozens of panels offered each day. Anti-cannabis crusader Kevin Sabet and others argue that marijuana is the next Big Tobacco, and beyond his unwise assertion that the industry is “trying to hook” minorities and children, there is a smidgen of truth to that. Growth is a tenet of capitalism, and development in this sector, at least at this point, seems to be heading into outer space. It won’t last forever, of course, but it’s there, bringing thousands to Las Vegas, all looking for an entrance into the cannabis gamble. By this November some of these companies won’t have made it, but there will be more to take their places. Cannabis isn’t Big Tobacco II. It’s being regulated and sold to adults for all kinds of reasons (I’ll argue that the main one is retaining sanity), and the public-health issues and accessibility to children that Sabet and others push as unsustainable are really all workable. No reliable study suggests that legalization is increasing teen use, and nobody is dying because they went to the emergency room after eating too many edibles. Sorry, Dr. Sabet. Sorry, AG Sessions. Look around you. It’s 2018. Millions of Americans have made it clear that we are going to use cannabis — to relieve pain, for insomnia, seizures and as a sanity retainer, and yes, to get high — no matter what you say about it and no matter how much money you waste on your stupid war to try and stop us. Period. All American adults should have legal access to this plant, for medical or whatever reason. A growing coalition of voters, businesses, investors, advocates and dreamers have lined up alongside us. The legal cannabis train is leaving the station. hearing loss or on the autism spectrum? Hospitality should be for all. In pursuit of the new, I’m resolved to broaden my experience this year by savoring an edible candle at Denver’s Il Posto. The trattoria serves an herbed beef fat candle that melts into something you would want to dip bread, steak, and fingers into. I also want to breathe the herbed steam that emerges when a claycooked trout is served at Kachina Southwestern Grill in Westminster and Denver. Rainbow trout wrapped in corn husks is coated in clay and baked. The clay vessel is broken at the table when served. For that matter, I really should sip Colorado wine aged in huge clay pots called amphora— just like in the ancient world—at Purgatory Cellars in Parker. This year, I want my mouth to encounter an Electric Butterfly. Served at Boulder’s Eureka! bar and grill, the cocktail is composed of Immature Brandy, rum, butterfly pea tea, lime, Chareau Aloe liqueur, orgeat syrup, and “buzz buttons,” or Acmella oleracea, a flower that causes special effects in the mouth including electric tingling and numbness. The more I think I’ve tasted everything the more I’m taught a lesson in humility. I really haven’t tasted anything yet. For instance, I’ve never cooked with the Middle Eastern spice mixture called baharat. Colorado’s Savory Spice Shops have a version that combines paprika, cinnamon, coriander, cumin, cloves, ginger, cayenne, cardamom, and nutmeg. It sounds like it should be on my basmati rice and chicken this year. Whether it casts a positive light on the state’s progressive reputation or not, I know that comfort never wanders far away and that mac-and-cheese will remain in the spotlight in Colorado. The brand new Whole Foods Market at Denver’s Union Station boasts a natural/artisan mac-and-cheese bar. A mac-and-cheese-centric eatery, Mac Nation Café, is drawing crowds in Indian Hills. And in the mountain bastion of high cuisine the 8th annual Aspen Mac N Cheese Festival will take place on September 8. Bring your own spoon. Besides, have you tried the fine Boulder-made artisan backpacker entrée: Fish Ski Provisions Macaroni and Cheese with Cheddar, Green Chilies, and Garlic? As a veteran foodie, I’ve earned the right to consciously ignore the following food trends in 2018 including: mushroom-infused coffee; seafood for breakfast; Tropickles (Walmart’s tropical fruit-flavored pickles); kelp (“the new kale”); charcoal-flavored food; and Smashburger’s $54 pass, good for $1 burgers every day for two months. Finally, I plan on spending more time cooking for and dining with people I like and I love. That is the real spice that builds hope and makes change. Wheeler Peak is named after one George Montague Wheeler, an impeccably humble explorer who named at least six southwestern mountains after himself. Wheeler Peak is about a 30- to 45-minute drive north of Taos, but for Coloradans who have trekked pretty much every 14er in the Centennial State, Wheeler Peak offers a new challenge and fresh sights—including a hike into Williams Lake, a paradisiac spot tucked within a wall of mountain ridges and thick timber. Technically, Wheeler Peak isn’t a 14er, but it’s close: the tippy top is just 800-feet below the 14,000 mark. MOLECULAR MARRIAGE When Stacey met Ian, she quickly learned to not taste anything in his refrigerator. “I don’t know if I’ve ever told you this,” she says to him while relating a story to me. “I was getting a glass of water. It might have looked like water, but it wasn’t,” she says. “It was probably just dextrose or something,” Ian replies. Ian and Stacey met through friends and bonded over a shared passion for food. Stacey worked in the fine dining world at Restaurant Kevin Taylor and Palettes at the Denver Art Museum. “I was trained as a pastry chef, but I made the rounds of all the stations in the kitchen,” she says. That experience prepared her to be the Inventing Room’s designated Director of Everything, meeting with clients, planning events, developing menus, serving customers, and schlepping stuff to huge events the company caters from Las Vegas to Chicago and the Middle East. After folks in Dubai viewed the video of Ian on the National Geographic Channel in 2015, the couple was invited to the 2015 Dubai Food Festival, where the molecular desserts were a huge hit. Now, there are multiple, franchised Inventing Room Dessert Shop kiosks across Dubai, with others set for Qatar and Bahrain calling for regular visits to the desert kingdoms. Whether at the home shop or the Middle East kiosks, the Inventing Room is no cookie-cutter operation dishing packaged commercial stuff. “We’re applying pastry- and candy-making techniques,” Stacey says, to create toppings, sauces, candies and ice cream from Grade A ingredients. “We can be professional chefs and also have a fun little ice cream store, too,” Ian adds. The menu at the shop includes smaller snacks such as apple Gobblepops lollipops, paired with house-made crème brûlée-flavored pop-rock dip, Really, Really Cold Cheetos, Oreo Space Foam, and vacuum-compressed Granny Smith apple slice “apple pie.” A whirring device spins out chocolate, grape jelly, cherry cotton candy, and savory twists such as maple sage cotton candy. The menu’s most popular dessert so far has been Mexican fried ice cream. Frozen custard coated in fried, spiced-crushed tortillas, butterscotch sauce, and tempered dark chocolate squiggles formed in liquid nitrogen. Nitro-chilled exploding whipped cream tops almost everything on the roster. The shop’s Harry Potter-esque Butter Beer was also an immediate hit, with 140 of them selling one recent Saturday. It’s a combination of salted butterscotch ice cream, butter beer soda, and crunchy brown butter bits. The s’mores-like chocolate chip waffle features graham cracker ice cream and burnt whipped marshmallow. Treats using seasonal fruits have included frozen lemon curd mousse with salted butterscotch, blueberries, and torched meringue. Patrons can also concoct their own creations using various nitro ice cream flavors (including Cold Brew Coffee with Chocolate Chips) and toppings. The menu features gluten- and sugar-free items, coconut milk sorbet, and beverages like the mango pomegranate nitro yogurt smoothie. And then he dipped his hand in liquid nitrogen. 60 Denver //Boulder JANUA RY 2018
Ian has had to become an expert on gas storage safety. Under the counter at the shop, there’s one dewar—a type of vacuum-insulated flask—that holds 220 gallons of liquid nitrogen. There’s also two 180-gallon stainless steel tanks as well as a 40-gallon portable unit for events. He estimates he is one of the largest users of liquid nitrogen in the metro area other than aerospace companies like Boulder’s Ball Aerospace. “They dip satellite components in it to make sure they can withstand the cold of space,” he explains. Moments later, the chef casually uses his hand to strain exploding whipped cream from a bowl of about -300 degrees Fahrenheit liquid nitrogen to top a dessert. He says he doesn’t feel it.
WHERE "FARM PUNK" MEETS RUBE GOLDBERG One of the unappreciated talents most chefs must have is the ability to keep kitchen equipment, from steam tables to fryers and sinks, functioning. The Kleinmans’ maker mentality extends to everything, including “farm punk” artwork made from artifacts salvaged from his grandfather’s Kansas farm. “I’m the grandson of a tinkerer so it may be genetic,” he says. His welded funky-but-functional masterpiece is the copper wire “marble maze” framed by Stacey’s decoupage art. Customers of all ages eagerly operate the maze, which occupies one wall. The elder generation would recognize it as a Rube Goldberg machine. Appropriately, the project still needs tweaking because the marble occasionally decides to escape the maze and bounce across the floor. Overseeing the Inventing Room is an oversized portrait of Gene Wilder as Willy Wonka. Ian pointedly addressed the 500-pound Oompa Loompa in the room. “Gene Wilder is the only Willy. The (2005) Johnny Depp version is horrible. It should never have been made,” he says.
FROM GOBBLEFUNK TO EDIBLE RUBIK’S CUBES About the only catch about the Inventing Room’s creations is that they are designed to be consumed— and to be entertaining—within a few minutes of being made. The chefs are adding longer-lived ready-to-go treats to the menu. Using house-made silicon molds, the staff will form nougat-filled chocolate Rubik’s Cubes airbrushed with food colors. Ian and Stacey say they have received e-mails from people in 40 states wanting to open Inventing Rooms and in 40 countries from Brazil to India. But aside from the franchises in the Middle East, they say they are happy concentrating on their new shop. They host Gobblefunk chef dinners, monthly molecular dining experiences at the shop, and continue catering parties across the country and around the world. The over-the-top artisan doughnuts will eventually join the menu along with shot glasses molded from sugar. Ultimately, Ian wants to produce liquid nitrogen and supply other tank-to-table chefs.

But why is VR so uniquely suited to being high? Zayner has given this some thought. “The pairing is a perfect match. Cannabis users have always been looking for immersive experiences that they can experience while in that perfect state of euphoria, and virtual reality definitely fulfills that void in so many ways,” he posits. “Especially when you give the user the power to make art without fear. Virtual reality has had a nausea stigma attached to it since its early testing days, and some users can still feel a bit disoriented,” he says as I find myself nodding. “I feel cannabis—a known nausea inhibitor—is perfect when introducing new users to the intense immersion that virtual reality brings.” This is a common gripe I have heard: motion sickness and a sense of dysphoria when the goggles come off. I can’t read in cars for fear of losing my lunch in the glovebox, so I’m apprehensive when it comes to entering an entirely different world. Art seems like it’s my speed, but I take a hit of some SFV OG I was gifted earlier to make sure. A fresh insert means I’m sharing forehead sweat with the previous unit’s wearer as Zayner fits the headset to my skull. Suddenly, I’m in a black room, staring down at a disembodied controller that will act as my brush. Despite my increasing high, it’s very intuitive, and I’m changing brushes and colors with simple clicks. I fire off a huge swath of blue that seems like it’s on fire, not ideal for the wave I’m working on, but erasing it takes seconds. I tell Zayner I want a larger brush to work with, but he explains it’s not the size of the brush I want to change, but the size of my art itself. This is mind blowing, as I’m learning how to create in a completely new atmosphere: I shrink my piece and my brush is now huge, I rotate it and work on the crest. My head high is soaring while I’m not cognizant of my body at all, as if I’m riding the virtual wave I’m creating. I leave in awe, that quiet euphoria you feel right after leaving a good movie.

When I was younger, I always pictured cannabis parties as similar to the basement scenes in That ’70s Show, only with a larger table and better weed. But here I am, sampling the latest in technology and sophisticated consumption concepts in dimly lit, chic spaces. Grassfed is shifting the entire narrative.
