The Collage Multicultural Festival kicks off next Friday featuring local representatives of the area’s diverse culture.

Collage grows to two days in second year Gearing up for its second annual event, the Collage Multicultural Festival is just around the corner. Celebrating diversity in the area, Collage is about sharing the many unique backgrounds in the community. The location of festivities for the Sept. 9 to 11 event was moved from Woodlawn Regional Park to the Estevan Curling Rink and Lignite Miners Centre, and event co-ordinator Angela Simmons expects the festival will continue to be held in September, though the official event date is yet to be set in stone for the coming years. “The best thing about Collage is to come out and

enjoy the variety of entertainment,” said Simmons. “It’s entertainment that is local and representative of the many cultural groups and backgrounds in our area.” This year’s festival has been expanded to two days after the success of the first event last summer that was held for just one day. “Now it’s two full days of the festival on the grounds itself.” She said they weren’t planning on holding two cabarets during the festival, but that’s what they’ve got. The first will feature Brad Johner and Chris Henderson next Friday night as a welcome to Saskatchewan party, said Simmons,

bringing some “hometown boys” back to Estevan. That cabaret follows the sponsor awards gala and top-chef competition in the curling rink. Simmons noted that they just booked Fred Penner, the famed Canadian children’s entertainer, to perform on Saturday. He will be doing a full children’s performance. She looked at getting him to perform last year, but he was busy. Saturday night will feature a MuchMusic dance party at the Lignite Miners Centre. It will feature beach music and two 10 foot by 14 foot screens. The party on Sunday goes back inside the curling rink for the tailgate party for the Saskatchewan Roughriders road game against the Winnipeg Blue Bombers. The game will be displayed on the two screens used for the MuchMusic dance party and there will be lots of food and an open beer gardens for the game. “We hope to close with a Riders win,” said Simmons. The event has about 50 booths set up for the vendors and a kid zone. Collage was postponed and moved after the flooding earlier in the year, so while the organization had its share of hiccups, Simmons said planning for the festival has gone smoother than it’s opening year. “We’re just rolling with the punches. It’s still new for us. We revamped it a little bit.” Simmons noted similar events in other places have multiple venues that house different aspects of the festival, while at Collage all the vendors are under one roof. Goodbye summer Last column of the summer, folks. This time next week I will be getting all orientated with the University of Regina’s journalism program. Probably at around this time too, since nothing says “fun day at school!” like 8:30 a.m. classes with mandatory attendance. It’s going away to school that is the topic of this week’s column. I’ve been chatting with a few recent grads, including my own sister, Kendelle, and many of them seem to be viewing the school year with a mix of excitement, horror, fear and hope. Ah, to be young again. I remember my first year being shipped off to college. Now, in my day, university wasn’t just a few miles down the road. It was way down in the Midwestern United States, and travelling there required planning, preparation, and climbing a hill both ways. Or something to that effect. I like to think that my two years of education have taught me a thing or two about university, and I’m going to share the most valuable of lessons with you. 1) You aren’t smarter than your professors. This may seem pretty obvious, but I know this from experience. Both of my English professors in my first year loved my writing style and were ridiculously happy with everything I turned in. When I transferred to Regina last fall, I was pretty confident that

So imagine my surprise when I was barely passing the class at midterm. You may (or likely may not) be shocked to know that I had stubbornly been refusing to change my writing style to suit the new professor, because I already knew I was doing it right. It took a complete shift in attitude and a lot of rewritten essays before I achieved a decent mark in the class. Learn from my mistake and acknowledge that your professors may actually know more than you. 2) If you’re on Facebook in class, you probably aren’t learning anything. My first semester in Regina I spent most of my classes on my laptop. I was pretending to take detailed notes, but I was secretly stalking randoms on Facebook. Maybe reading a blog or two. Checking out Texts From Last Night. Definitely not listening to my political science professor’s lecture on government systems. Thankfully I was able to understand the subject by reading the class notes and textbooks before the final, but I definitely would have

saved myself a lot of time by just paying attention in class. Second semester, taking another political science class from the same professor, I elected to leave my laptop at home and actually take notes during the lecture. My grade improved 10 per cent. 3) Go to first-year orientation and live in a dorm. I’m sure that every university-bound student has heard this before, but it’s worth repeating. Living in a dorm immediately introduces you to potential friends, or at least acquaintances who may know of social events and/or offer to drive you places. This is the same for freshmen orientation. Yes, hopping on one foot while holding an egg on a spoon in your mouth is not a life skill, but if you’re doing it as part of a relay race, it is socially acceptable and highly recommended. Orientation gets you talking to people and finding common interests. A little fun fact: the first person I spoke to during freshmen week also lived in my dorm hallway and is still one of my best friends. It’s worth going outside of your comfort zone and meeting new people, trust me. 4) Your long-distance

relationship is unlikely to work. Case study: the first day of school, six girls living in my hallway had “serious” boyfriends. By the end of the first month, that number had changed to two. Today, only one of those relationships is still going strong. I’m not saying that you need to dump your high school girlfriend because you’re heading off to university. I’m just saying to keep it in perspective that chances are good that you’re going to grow apart, meet new people, and find out that everything you loved about each other is suddenly super annoying and drives you mental over Skype conversations. Maybe. Not that I know that from experience. I could go on about this all day, but my weekly procrastination has left me with a lot to do this morning. Good luck, new students. Enjoy the next few years because they’re awesome. You’re going to grow up and learn so much about yourselves. Your family and good friends will always support you, unless you flunk out of school and start robbing banks for fun. Then you’re on your own. Crosby watch. Tiger’s troubles. LeBron’s decisive power hour. Every sport appears to have that one guy: the media darling; the next, next one; the guy who seems like the only one keeping the sport above water. Of course that’s not really the case, and it’s hard to find blame for these excessive stories. Is it the sports writers? Is it the consumer? Do these athletes just have really determined publicists and gigantic egos? My best guess is that all of those things are colliding to make a perfect storm of repetitive stories that focus on one person in the entire sport. Some leagues really are making an attempt to re-image themselves away from that one marketable star’s coattails the rest of the league was clinging to for so long. The National Hockey League is making no such attempt. The PGA Tour has greatly reduced its push to place Tiger Woods at the forefront of everything. The tour is trying to market all these great young golfers who are exciting to watch, and trying to bring in the younger crowd that would otherwise find golf as exciting as watching an athlete talk about his free agency decisions during an hour of prime time television (more on

Rory McIlroy, Rickie Fowler and Dustin Johnson are among the studs stealing the spotlight on the tour this year from the wily, but aging, veterans like Phil Mickelson, Steve Stricker and Jim Furyk. The young guns versus the establishment. That’s been the motto so far, except when Tiger Woods shows up on Thursday. He steps up to the first tee and anybody watching a telecast will then be treated to all of Tiger’s 71 shots that day. He’ll shoot even par and head to the post-round news conference. When he’s answered all the questions and exits stage left, so do the reporters, leaving the guy who shot an opening day seven-under round to answer one reporter’s question. Did you think you’d be leading after round one? No. Maybe there will be a follow-up question. Tiger, who played 20 tournaments in the last two years, still owns the PGA Tour. In the last two weeks I’ve seen daily

stories surrounding Sydney Crosby and his return to the NHL being in short-term jeopardy. I get that the hubbub over the Jets is done, and August is the slowest month of the year for hockey news, but we don’t need daily updates on Crosby’s head, unless Crosby is the only NHL story out there, just like Tiger is the PGA’s tarnished golden boy. Then there’s Lebron, or King James as he’s known by his subjects. With last summer’s The Decision, and the Miami Heat dream team, he’s under the sports world’s microscope. With no championship ring and a battle of words with his hometown of Cleveland, he carries the NBA headlines from day to day. As athletes have become bigger than their owns sports, we are also on vigilant lookout for the next prodigy player to step up and take over the mantle or crown in Lebron’s case. The next Crosby is some 15-year-old Maritimer, though Crosby is my age and just about to enter his prime. He doesn’t need another one of him yet. The next Tiger is being made out to be the 22-year-old Irishman McIlroy. The next Lebron better show up soon because the people turned on him a long time ago.

Options open for crop fertilization In an era when crop protection generally means a complex chemical compound sprayed on a field, or when fertilizers are manufactured and applied, it is interesting when alternate ideas catch hold and attract farmer interest. While I have no issue with the safe application of crop protection products and nutrients, recognizing that they are basically essential in the effort to keep food production ahead of world population growth, I can also appreciate looking at alternatives. In terms of alternatives, I was intrigued when an e-mail arrived from Saltcoats area farmer Kevin Elmy with a few pictures attached of their tillage radish crop. Now I have been an agricultural journalist for a few years now, somewhere over 20 actually, and I can’t say I had previously heard of the crop, and certainly not anything about it being grown in Saskatchewan. For others in the same boat as I was, tillage radish are basically used as a cover crop, which is a crop planted to enhance production of a companion, or subsequent crop, and not grown to be harvested itself. The foliage, and in this case the underground tubers (since tillage radish are

Calvin Daniels Trader Agriculture Columnist more akin to the huge daikon radish popular in Japanese cuisine rather than the small reddish ones grown in Canadian gardens), are basically a source of green fertilizer. The crop can be cultivated under or left to natural decay as a nutrient source. Such crops offer more than nutrients, which is why cover crops were once more widely utilized and why they still hold interest for farmers. The foliage leaves of the tillage radish are rather large, and the relatively fast growing crop can provide a canopy over a field that in turn retards weed growth because they do not receive sunlight through the dense leaf cover. In the case of tillage radish, and I am sure some other cover crop options, the large and particularly long tap roots also help draw nutrients back to the surface in situations where they have leeched down

into the soil. Given the excess moisture of 2010, there is a definite likelihood of many fields having had nutrients transferred lower into the soil profile. Certainly fertilization will add nutrients, deep tillage can bring nutrients back to the surface, and chemicals can kill weeds, doing all of what a good cover crop can offer. But there is the issue of how much manufactured chemical and fertilizer we want to use when an alternative that is greener, on a number of levels, exists. Alternatives such as cover crops are not the solution in every instance and in fact may only be a logical solution in select situations, but it is important crop developers and farmers keep an open mind to alternate uses that enhance crop production in different ways. In some cases, crops may be used in alternate ways once produced. Canola channelled to biodiesel is an example. In other instances, it will be turning to a crop such as tillage radish to perform a variety of in-crop functions to better farm production. The main thing is that farmers have the willingness to look into alternatives, when presented, to see if they fit their farm needs.

Will Saskatchewan’s new area code bring the end of telephone dialing convenience?

SaskTel is preparing to add a new area code to the province, and there is lots of advance warning going out so residents can brace themselves for the inconvenience local calling will become. I suggest making lots of long distance calls between now and 2013, when the new area code is expected to be introduced. That way everyone can get used to dialing all those extra digits, and when the time comes to switch to the necessary 10-digit dialing, it will feel like dialing fewer numbers because you don’t have to hit the No. 1 first. The thing that confuses me most about the introduction of the new area code is that it won’t be given to an area. New numbers are just going to fall under the new area code, so people from Estevan to Saskatoon will share both area codes. There isn’t really going to be an association of where you’re from based on your code. I can’t simply say I live in the 306 but really miss my college days in the 905. The 306 is the same area reserved for the new number, set to be 639. If 306 were to be used for the southern part of the province and 639 the northern, then you’d have that stronger association with that area code. It would be used for an area and it would identify where you come from. Ten-digit dialing isn’t so bad. You don’t really have to remember three more numbers for every phone number you dial. The number will start with 306, most likely, and everyone already knows that area code. But it would be easier if the area codes were based on area. Then you would know that in Estevan everyone had one area code and in Prince Albert everyone had the other one. You don’t have to remember if the number is new or not. Saskatchewan will finally have the same problem everyone else has: having bros in different area codes.

I like living in the 306. I like that everyone is uniform. I like being able to call my local family and only type seven numbers. Wasn’t there a study done on how many numbers the human brain can remember? Isn’t that number seven? I like not having to force my brain to remember something that science says it can’t. That being said, the new area code isn’t going to affect me very much. I primarily use my cellphone to call or text people, and because my contacts are stored in my phone, I don’t have to type numbers out very often. And those numbers that I don’t have stored can be found through my mysask411 app, and clicked on easily, avoiding all dialing. Yay for iPhones, outsmarting Saskatchewan and their evil plan to make me press extra buttons. I could see the new area code being a problem for, say, a telemarketer. Dialing three extra numbers hardly means anything to the rest of us, but when you’re dialing hundreds of numbers everyday, an extra three could mean a bit more work and consumed time. The part of this I dislike the most is that the new area code will be dispersed all across the province as needed for new numbers. This seems like it goes against the whole “area� thing. Shouldn’t areas be geographically specific? How about making everyone north of Regina have the new 639 area code, and leaving us in the south with the traditional 306? It would make for a convenient way to tell where a person was from when receiving his/her phone number. It would actually allow for easier discrimination, if you’re into that kind of thing (I’m not saying discrimination is good or right, I’m just saying that it would be easier). It also would look stupid in Estevan to have the 639 area code: 1-639-634-0000 looks rather silly. No, we should be left with the 306 and let those to the north deal with this new fangled telephone business (seriously, not discriminating).

Carlyle church group comes to the aid of flood victims The citizens of Carlyle and area have made a significant contribution in aid of the southeast Saskatchewan flood victims. On Tuesday morning, Carol Ann and Harold Smith arrived at the Salvation Army headquarters in Estevan to deliver a cheque in the amount of $4,872 which represented the proceeds from a special concert in the Carlyle Full Gospel Church featuring the Freedom Singers. The Smiths reported that well over 100 people attended the concert and the donations were generous since they all knew where the money was going to be directed. Major Len Millar of the Salvation Army accepted the cheque and outlined some of the areas in which

Does the doctor make house calls? You can tell an election is in the air in Ontario. The hot air has carried on an easterly current all the way to Saskatchewan. Quick, get me a doctor! I can’t breathe! The Globe and Mail reported on Aug. 28, “The [Ontario] Liberals are promising to bring back doctor house calls for seniors if elected in the Oct. 6 election. Health Minister Deb Matthews says the government is promising to spend $60-million annually for the program. “It will allow family doctors, nurses, social workers and occupational therapists to visit seniors who may otherwise find it difficult to get to the care in their home.� I mentioned this to my wife, the long-term nurse, whose immediate raspberry was soon followed by a “When pigs fly.� This week or next, one of us has to go to our doctor’s office. The visit isn’t a checkup or for some infection. Nope, we get to pay to have our files transferred to another doctor’s office, because not only has our up-till-now current doctor left town, but the whole

I would gather that thousands of people are now seeking a new doctor, hoping one of the already over-burdened doctors will have room for them. Success will elude many, if not most. The result will be an upward spike in emergency room visits, because these people will have nowhere else to turn. The remaining doctors will be driven even harder. The vicious spiral of doctor burnout self-perpetuates. Estevan, like a large number, if not all, Saskatchewan communities, is facing a serious doctor shortage. While recruitment efforts are trying hard, I don’t know if they will ever catch up. Every month it seems a small town in Saskatchewan is facing a doctor crisis. I’ve even seen highway signs that now can be easily changed

to indicate a hospital not currently able to function on a full-time basis due to a doctor shortage. So to hear Dalton McGuinty is going to magically make physicians appear out of the ether with time to run around town to visit elderly patients, it seems he not only has a medical problem, he has a physics problem. Specifically, matter, in this case, a doctor, cannot be in two places at once. Additionally, said matter, e.g. our doctor, cannot travel faster than the speed of light. This is especially true in a world with red-light cameras and photo radar. As much as it would be grand to have a doctor with her black leather bag come knocking on granny’s door, it is much, much more efficient to have granny go see the doctor in the office. Fast moving doctors see

dozens of people in a day. Unless they have a Star Trek-style transporter, it is simply impossible to see that many people while performing house calls. Even if you did have a transporter, it’s quicker to walk to the next examination room than to have Scotty warm up the transporter pad. My diabetic specialist is in Edmonton. When I was in North Battleford, a four-hour drive to Edmonton was not a big deal. Now, it’s a full three-day affair to get there by car, two if by flight. I’ve inquired about telemedicine, without much luck. Yet his specialized knowledge, for the 10 minutes I typically spend with him, is that important to me to make that effort. Trust me, I wish I had that transporter. It’s common for politicians to promise the moon in the heat of an election. Alberta pipeline to Gulf Coast closer to a go PROVINCIAL SASKATOON - A Saskatchewan couple have a new lucky number after winning the Lotto Max $40 million jackpot using numbers that all included four. John Kinzel of Paradise Hill, Sask., says he just decided to use fours when buying their ticket for the draw last week. He chose 4, 14, 24, 41, 43, 46 and 49. When his wife Darlene read out the numbers, John Kinzel could only say “Heck, looks like we won $40 million.” The win is the largest lottery jackpot in Saskatchewan history. The couple say they are looking forward to a retirement free of financial hassles, plan to say goodbye to winter for good and will use some of the cash to help their family *** REGINA - Saskatchewan cancer agency workers have lifted a ban on working voluntary overtime. The Saskatchewan Government and General Employee’s Union, which represents the workers, says the decision was made as a sign of good faith in contract talks. The union says it gave the agency a new offer, but details are not being made public. The ban on working voluntary overtime hours was put in place in June to back contract demands. The workers said at the time that they were looking for a wage increase of 12

per cent over three years while the government offered 5.5 per cent over the same period. Cancer agency workers have been without a contract since December 2009. NATIONAL WASHINGTON - The State Department says a Canadian company’s plan to pipe oil from Alberta to the U.S. Gulf Coast wouldn’t cause significant environmental problems during construction or operation. A new environmental study of the proposed $7 billion, 1,700-mile pipeline shows no new issues since a similar report was issued last year. The report issued Friday is the third on the controversial Keystone XL pipeline, which would carry crude oil extracted from tar sands in western Canada to refineries in Texas. The pipeline would travel through Montana, South Dakota, Nebraska, Kansas and Oklahoma. *** OTTAWA - Jack Layton’s death has revived talk of a merger of federal New Democrats and Liberals but neither party seems interested. Veteran Liberal MP Denis Coderre said Monday the outpouring of grief for Layton tells him Canadians want a united, progressive alternative to Stephen Harper’s Conservatives. Justin Trudeau agreed the idea should at least be discussed but said he’s not yet convinced it’s the best

option. Apart from those two Montreal MPs, however, there appeared to be little support for a merger at a four-day Liberal caucus retreat to plot strategy for next month’s resumption of Parliament. INTERNATIONAL SRINAGAR, India Indian Kashmir’s first major literature festival has been cancelled after several writers and artists said it would give a false impression about the existence of basic freedoms in the troubled region. The Harud literary festival was scheduled for Sept. 24-26 in Srinagar, the region’s main city. Its cancellation late Monday came weeks after news reports quoted festival organizers as saying the event would be apolitical. Writers argue that the region has a long history of fear and that people are not allowed to speak their minds.

Water Main Replacement The City of Estevan is undertaking replacement of Water Main at: Souris Avenue – Seventh Street to King Street The purpose of this work is to provide timely and cost effective replacement of existing cast iron water main with PVC pipe, replacement of existing water and sanitary sewer services from water & sewer main up to the property line and surface restoration. This work would require closure of immediate areas of excavation and may necessitate parking restriction in adjacent areas. This work will commence during the week of August 22, 2011 (from Seventh Street) and will take approximately Eight (8) to Ten (10) Weeks to complete (subject to weather). These are two of the combines that will be smashed to pieces September 16 during the Eve of Destruction at the Estevan Motor Speedway. The evening will include a combine demolition derby and a rollover contest.

Prepare for the Eve of Destruction The demolition derby is going to be taken to the max in Estevan in September. The Eve of Destruciton pits combines head-to-head in a battle of twisted metal and flaming wills. That’s right, the same farm machinery normally designed for working the many fields that fill Saskatchewan’s flatlands, is going to be featured at the Estevan Motor Speedway for a demolition derby on Sept. 16. Inside the dirt oval, the combines will be running full force into one another. Drivers are coming from all over the area to get behind the wheel of one of these metallic beasts and try to outlast their opponents in a game of survival. Davin Emmel, who sits on the Estevan Motor Speedway board and races at the Speedway in the modified class, is organizing the event. He said he’d seen a combine demolition derby and for a long time wanted to bring something like that to the speedway. Now he has. “Me and a few buddies had been talking about it for a couple of years and watching (combines) at auctions,” he said. “This spring we were at an auction and there were two of them there. So we bought both of them and the idea came together, I guess.”

Emmel has slowly been arming the event with more combines and recently picked some of them up, so they can now be prepped for the ensuing carnage. He had 10 combines lined up and ready to go at the time of the interview, and he’s received some verbal agreements from other drivers who say they’ll be bringing their own, so the total could be as high as 13 or 14 for the event. Prepping the combines for combat means removing the windows and unloading augers, but the rest of the machine is set to smash, with the front-heavy vehicles often being kicked onto two wheels at impact. Finding people to sit inside a combine and drive into others proved to be a very easy task. “I’ve got all the drivers lined up. That was no problem finding someone to drive them. Everyone wants to drive them. There was no issue there,” said Emmel. He did want to find combines that were different colours, and he went to places like Coronach where he found a couple of Gleaners. He found some others in Regina. “I had to do a little bit of hunting for them. Not everybody wants to give them up. We’re kind of

looking just for the ones that are used for parts.” Emmel noted the club has had some difficulty with spectators at the Speedway this year but is hopeful an event like this will bring out a whole new group of people. Along with the demolition derby, there will also be a car rollover contest, because if you’re going to destroy vehicles you might as well be thorough. “It’ll just be with little cars. I’ve built a ramp, and you just roll them over.” Emmel got the idea to do this from a friend of his in Iowa, who is going to be present that evening to do all the announcing. “They do it all the time down there. Basically you get one point for each side of the vehicle that touches the ground. If you manage to get it back on the wheels, that’s five points.” The Trackside Motocross Club will be out with a few bikes doing some jumps and tricks, said Emmel. It’s Miller Time The Saskatchewan Roughriders got back to work from the bye week with a Sunday practice at Mosaic Stadium and a new head coach at the helm. Exactly 10 days after the firings of head coach Greg Marshall and offensive coordinator Doug Berry, Rider vice-president of Football Operations Ken Miller was directing the troops as the man now in charge of both roles. Quarterback Darian Durant was vocal in his support of Miller after the moves and performed with a spring in his step on Sunday. “It was a pretty good day,� Durant said. “I’m glad and it’s good to see Coach back out there. You can tell he’s been itching to get back out there. He’s having fun and the team’s having fun. It’s a new beginning, so to speak.� It’s a new beginning but the situation hasn’t changed. The Riders are a CFL-worst 1-7 and their first two games in the new Miller era are against the best team in the CFL, the Winnipeg Blue Bombers beginning with Sunday’s Labour Day Classic. “We recognize what we have to do,� Durant admitted. “There have been changes made but the game doesn’t change. We still

Old-Fashioned Ice Cream With a Modern Twist Making ice cream at home is an old-fashioned way to have a cool summer treat. You can make ice cream at home without a machine by using a few simple techniques. Freezing the custardbased ice-cream recipe below (or anything that goes from a liquid to a solid form) means the formation of hard ice crystals. A machine churns the icecream mixture constantly, breaking up the crystals. If you’re not using a machine, you can break up the ice crystals by using a spatula, whisk or hand-held mixer to create a smooth, creamy dessert. The trick to avoiding ice crystals is to use a large amount of sugar. Sugar lowers the freezing point of the ice-cream mixture so that large crystals are unable to form. Always use cooked or pasteurized eggs or an egg substitute in your ice cream to avoid any foodborne illness (food poisoning). If using a recipe with eggs, the base should be heated to an internal temperature of 160 degrees Fahrenheit and then cooled. This temperature will kill any salmonella, if present. Another tip to making smooth, creamy ice cream is to make sure everything you use is cold. After you make the ice-cream mixture, cover it and allow to chill overnight in the refrigerator. When you’re ready to freeze the mixture, place it into a metal container that has been wrapped tightly in a plastic bag and placed in the freezer for several hours. This will cut down on freezing time. Pouring the ice-cream mixture into a shallow container with lots of surface area (which has been wrapped tightly in a plastic bag and placed in the freezer for hours) is another way to get it to freeze rapidly. The only downside of this homemade mixture (if you want to call it that) is that this ice cream needs to be eaten within a week after it’s made for best quality. HOMEMADE VANILLA ICE CREAM 4 cups heavy cream 2 (14 ounce) cans Eagle Brand Sweetened Condensed Milk 6 tablespoons butter, melted 3 tablespoons vanilla extract 1. Using a large bowl,

mixture smooth. Cover and return ice cream to freezer. 3. Keep checking every 30 minutes to see if the ice cream is freezing near the edges. Stir vigorously

whip heavy cream to stiff peaks and set aside. Using another bowl, whisk sweetened condensed milk, butter and vanilla together until well-combined. Gently fold in the whipped cream. 2. Place the bowl of ice-cream mixture into another large bowl filled with ice water. Let it set in the cold water until the mixture is cold, or cover the ice-cream mixture with Saran or plastic wrap and place it in the refrigerator to chill overnight. 3. Proceed with the recipe below to freeze the ice cream, or use the variations to create other flavors. Makes 1/2 gallon of ice cream. Variations: Cinnamon Bun Ice Cream Add in 1 1/2 teaspoons cinnamon to the recipe above and decrease the vanilla extract from 1 1/2 tablespoons to 1/2 teaspoon and proceed with the ice-cream preparation recipe below. Chocolate Chip Ice Cream Mix 1 1/2 cups of chocolate chips into the vanilla ice-cream recipe above and decrease the vanilla extract from 1 1/2 tablespoons to 1/2 teaspoon and proceed with the ice-cream preparation recipe below. Choco-Peanut Butter Chip Ice Cream Add in the 1/2 cup Nutella Hazelnut Spread and 1 cup peanut butter chips to the vanilla icecream recipe above. Decrease the vanilla extract from 1 1/2 tablespoons to 1/2 teaspoon and proceed with the ice-cream preparation recipe below. To Prepare the Ice Cream: 1. Stir the chilled ice-cream mixture and then pour it into a 4-quart container (preferably a chilled metal or a shallow plastic container) or two 2-quart containers. Cover with plastic or Saran wrap. 2. After 45 minutes, check the mixture to see if it is freezing near the edges. Remove it from the freezer and stir vigorously with a hand-held mixer, stick blender, spatula or whisk to break up any frozen sections and to make the
