Benefit concert again proves community’s generosity The importance of a benefit concert is rallying a group of people together to support a common cause. One such concert has been organized to support a Bienfait man diagnosed with cancer. Lavern Jardine began 2011 on Jan. 1 by being diagnosed with the disease in his liver and colon. The 62-year-old and his sisters had organized benefits for others who had been in similar circumstances before he received his own news. The theme of the benefit is to pay it forward, just like Jardine did, said benefit organizers. “I am thankful I have my health,” said one organizer who wished not to be named. She added that being able to do something now, as a healthy person, is important, as anyone can find themselves in the same situation later. That’s what paying it forward is all about. The benefit concert will feature Rory Allen,

She said when she approaches businesses and organizations, she gets the same reaction from everybody: they will do what they can to help. “The list (of people who have donated) goes on and on. We’re really thankful.” The organizers have so far been blown away by the support and how readily the community says yes to donations, whether they are donating something for the auctions or making a monetary contribution.

“It doesn’t seem to matter what the cause is. For the people around here it’s not a question of why, it’s a question of what can they do,” she said. She added that the spirit of community in the oilpatch is as strong as anywhere else, noting the community never gets tired of contributing to the many causes that need its support. “We’re a working community. Everybody works hard. The generosity of the people here is amazing.” Jardine was hospitalized for a number of days in January before beginning chemotherapy in February. He has been going back to Regina for treatments on a regular basis, but those trips have been reduced recently as he is now able to get some of his treatments at St. Joseph’s Hospital in Estevan. The benefit concert is set for June 3 at the Bienfait Legion Hall. Doors open at 5:30 p.m. The concert will be preceded by both a silent and Chinese auction at 6:30 p.m.

Seeing old friends again is great. Being cooped up in a cottage with those friends for a weekend can be exhausting but fun. I am truly spent. I spent last weekend back in Ontario with some college friends, some of whom I haven’t seen since college. It was a bachelor party on Lake Scugog. I wish that was a cool pirate name, but it’s actually First Nations. Something the group of us realized is that bachelor parties are great for all the reasons that aren’t dealt with in Hollywood’s bachelor party movies. Just getting the whole gang back together again in one spot is what it’s all about. In the movies, bachelor parties are about guys doing crazy stuff as a rite of passage. That makes for good cinema, but our group found ourselves realizing there is a real reason to have one. Four of us who were there were all roommates in a house near the college we attended in Welland. Finishing college had a number of harsh

realities. The end of your school life and start of your work life, the life we all lead for the next 50 years, and the beginning of a time when you actually have responsibility. What that meant for us was that back in college for those last couple of days, it was going to be the last couple of days where we could all hang out and not really have to worry about tomorrow. The days of no responsibility. Well, thank you bachelor parties. Once again we found ourselves with three full days of nothing but hanging out and indulging in our favourite drink. One of my friends I hadn’t seen since college, and just being together again is the real reason for the bachelor party. To be able to go back to our college days for a weekend, to have no responsibility was incredibly refreshing. I guess that’s what the bachelor-party movie really does show. A couple of guys with no responsibility, and they take a stab at imagining the sort of shenanigans a group of people can get up to with a complete lack of purpose and limited adult supervision. The other thing we realized is that our dads had their annual traditions of a golf weekend or fishing trip with their buddies when we were growing up. We need one, and this is it. The May Two-Four, Lake Scugog splurge. Social networking has changed the way we keep in touch. Or it has changed how most people keep in touch; I’m not real hip to Facebook just yet, and it seems I never will be. But Facebook can’t give you the experience of being with your friends. It just gives an illusion of conversation. We still need the physical, social gathering if we are really going to stay connected with those old friends. One thing Facebook still can’t do is hold a great party.

International MACOMB TOWNSHIP, Mich. - Chrysler CEO Sergio Marchionne said Monday that his company will save $300 million in interest a year when it repays $7.5 billion in U.S. and Canadian government loans on Tuesday. Chrysler plans to announce the repayment at a Detroit-area auto assembly plant. Marchionne has said that Chrysler is eager to pay back its loans in part because of the governments’ high interest rates of around 12 per cent, which cost the company $1.2 billion last year. Report from the Legislature The spring session of the legislature allowed our government to continue taking action to move Saskatchewan forward. Our fourth consecutive balanced budget played an important role in helping us meet that goal. Highlights of the 2011-2012 “Saskatchewan Advantage” budget include measures to further reduce income taxes. A Saskatchewan family with dependent children will now earn more tax-free income than anywhere else in Canada. We also further reduced education property taxes on farmland by $55.6 million. Since 2007, our government has reduced the amount you pay in property taxes by $103-million. This is the largest property tax cut in Saskatchewan history. Lower taxes make life more affordable, put more money back in the economy and create jobs. We committed a further $352-million to debt reduction. Because of that, the provincial debt is now at its lowest level since 1988. Debt reduction means lower interest costs and more money to pay for infrastructure and important government services such as health care and education. In the budget, we also kept our promise to increase municipal revenue sharing to one full point of the PST, providing municipalities with a long-term, stable source of provincial funding. Our growing economy and population has put more demand on our roads and highways, which is why our government also invested another $556.2 million into highways. This funding brings our total commitment to improving Saskatchewan’s transportation system since 2007 to $2.2 billion – keeping and exceeding our promise to invest $1.8 billion during our Àrst term. Our budget also recognized the signiÀcant contributions our farmers and ranchers make to Saskatchewan’s economy through record Crop Insurance coverage and by fully-funding the province’s share of important farm programs such as AgriStability and AgriInvest. During the spring session, our government announced that the Shock Trauma Air Rescue Society, or STARS, was coming to Saskatchewan. STARS will be operational by 2012, Àrst in southern Saskatchewan, then in the north. The new helicopter EMS service will support our existing air and ground ambulance programs, resulting in faster, more responsive service, especially in remote and rural areas, when precious minutes can mean the difference between life and death. Anticipating signiÀcant Áooding due to last winter’s record snowfall, we announced a $22 million Emergency Flood Damage Reduction program. To date there have more than 700 requests for assistance under the program. An affordable housing summit was held in April. As a result, our government committed $252 million over Àve years to build more than 4,600 new housing units as part of a Àvepoint action plan to help lower income families realize their dream of having a home to call their own. We also made amendments to The Automobile Accident Insurance Act to prevent criminals from the same beneÀts through SGI’s injury coverage as law-abiding citizens who actually pay insurance premiums. The amendments to the act ensure that criminals who steal cars cannot collect injury beneÀts. This is the last legislative session before this fall’s election. On November 7, voters have a clear choice - to move backwards with Dwain Lingenfelter and the NDP or move forward with Brad Wall and your Saskatchewan Party MLAs. Leg Cramps Cramp Sleep DEAR DR. DONOHUE: For several years I have had spasms in my left leg at night while asleep. Now I get them in my right leg. They are intense and painful. My calcium is normal. I have taken magnesium and legcramp pills without results. I have put soap in the bed, used mustard and tried many other home remedies without any luck. I would be indebted for any other suggestions you might offer. -- S.G. ANSWER: Nighttime leg muscle cramps are another one of the joys of aging. Why? I don’t know. A cramp is a sustained, painful muscle contraction. In a very small number of people, low blood calcium or magnesium, an underactive thyroid gland and dysfunctions of the kidney or liver might be the cause. For most, a cause cannot be found. Quinine was a favorite remedy. Now quinine has a limited use -- only for malaria. It has potentially dangerous side effects that make it unwarranted for muscle cramps. Some find that tonic water stops their cramps. That’s fine that they do; the amount of quinine in tonic water is quite small. There is evidence that the heart and blood pressure drug diltiazem can be useful. Vitamin B complex -- a mixture of the B vitamins, including B-6 -- also has some support for its use. Stretching the leg muscles three times a day and again before going to bed might prevent cramps. One exercise is standing on the lowest step of a stair with heels project-

ing off the edge of that stair. Raise high on your toes and then slowly lower yourself until the heels are well below the level of the stair. Hold that position for 10 seconds and repeat the exercise 10 times. Some have found that a warm bath taken before heading to bed stops their cramps. The booklet on restless leg syndrome and nighttime cramps offers a more lengthy treatment of this annoying problem. nus shot is given every 10 years. Included in the tetanus shot is diphtheria vaccine. The material is called Td. Between the ages of 19 and 64, another vaccine is included in the shot -- pertussis, whooping cough. That shot is Tdap. It is substituted for the Td shot and is given only once. Pertussis immunity wanes with age and needs this booster to keep people from contracting whooping cough. Whooping cough isn’t just a childhood illness. Older people catch it and spread it. At that stage of life, whooping cough leads to coughing that lasts for many months. The rate of allergic reactions from the combination of these vaccines is quite low. CONSTRUCTION BULLETIN DOMINION HEIGHTS SUBDIVISION – PHASE II The City of Estevan is undertaking construction for the Earthwork, Underground & Surface Works to provide development of residential lots in this area. The affected area includes the portion of Nicholson Road, north of Wellock Road and Tedford Way. The proposed construction area is shown within the bold line. At different times, Tedford Way will be closed during the construction for the construction of the underground and surface works. The contractor will provide adequate notiÀcation when limited direct property access and parking restrictions are to occur. It is anticipated this work will commence during the Week of April 18, 2011 with the order of underground works, earthworks, concrete works, franchise utilities and then road works with an anticipated completion by the end of July, 2011. Saving Summer When backyard gardens are overflowing with cucumbers, grandma’s home-canned pickles are not far behind. But before you take the first bite of that crisp, tangy pickled cucumber, it might be wise to ask, “Is her recipe safe?” No offense to grandma, but it’s probably not very safe. Many of the old family favorites use methods that have been deemed unsafe, said Sarah Janicek, who answers food-safety questions for University of Missouri Extension’s nutrition education programs. “People are still using really old recipes that are not reliable or safe,” she said. For Janicek and other extension nutrition specialists, home canning questions are as much of a summer tradition as grandma’s pickles. Answers to those questions focus first and foremost on ensuring that home canners know the current recommendations to prevent the possibility of food-borne illnesses and spoilage. Common mistakes include failing to heat pickles in a boiling-water bath, and under-processing tomatoes and other items produced using recipes based on trial and error rather than good food science. Though the U.S. Department of Agriculture -- the definitive source on home food preservation -- completely revamped canning recommendations in 1989, old methods still persist. “Sometimes they (home canners) don’t realize the risk they take because up to this point they’ve managed to escape the most serious consequences, or have not understood why jars came unsealed or spoiled on the shelf,” said Cynthia Fauser, an MU extension nutrition specialist. For years, “cold packing” -- treating vegetablepacked jars in a hot-water bath -- was the favored method for green beans and tomatoes, vegetables still popular among home canners. The technique was based on pre-World War II science when microbiology was still in its infancy, she said. Food scientists now know that water-bath canning is not safe for lowacid foods, which includes vegetables, meats and vegetable-meat combinations, Fauser said. “CI Botulinum goes active when it’s canned,” she said. “It particularly likes low-acid, air-free environments, as in canning jars with low-acid vegetables.

“It’s undetected by taste or smell, but one taste can produce potentially deadly stroke-like symptoms,” Fauser said. Janicek added, “Lowacid foods need to be pressure canned to kill the botulism spores.” Tomatoes are borderline acidic, so safeguards include added lemon juice and increased processing times for many tomato products, Fauser said. Tested recipes use processing times based on the specific recipe’s pH, the size of the jar, thickness of the product and even altitude. “That’s why home canners need to stick to tested recipes and follow procedures precisely,” Fauser said. “Just because the recipe has been published in a book doesn’t mean it’s been tested. There’s no requirement for recipes to be safety tested,” Fauser said. “The bottom line is that you have to take the safety into your own hands when you want to be a food processor.” This recipe for Refrigerator Pickles allows you to save the best of your summer produce using modern methods for preserving vegetables. REFRIGERATOR PICKLES

pickling spice recipe below to add a boost of flavor to your refrigerator pickles. This recipe also works well for all types of peppers, just omit the dill weed and dill seeds, and the red pepper flakes. 12 (3 to 4 inch long) pickling cucumbers 2 cups water 1 3/4 cups white vinegar 1 1/2 cups chopped fresh dill weed 3 tablespoons sugar 8 cloves garlic, chopped 2 tablespoons coarse salt 1 tablespoon pickling spice* 1 1/2 teaspoons dill seed 1/2 teaspoon red pepper flakes, or to taste 4 sprigs fresh dill weed 1. In a large bowl, combine cucumbers, water, vinegar, dill, sugar, garlic, salt, pickling spice, dill seed and red pepper flakes. Stir,

and let stand at room temperature for 2 hours, until the sugar and salt dissolve. 2. Remove the cucumbers to three sterilized, 1 1/2 pint wide-mouth jars, placing 4 cucumbers into each jar. Ladle in the liquid from the bowl to cover. Place a sprig of fresh dill into each jar, and seal with lids. Refrigerate for 10 days before eating. Use within 1 month.

1. Trim ends from green beans. In 3-quart saucepan over high heat, in 1 tablespoon very hot salad oil, cook green beans and 1/2 teaspoon salt until green beans begin to brown, stirring frequently. Add 1/2 cup water and heat to boiling. Reduce heat to low; cook, covered, until beans

are tender, about 3 minutes. Drain; remove green beans to warm large platter; keep warm. 2. Meanwhile, remove pits from cherries; cut each cherry in half. Stake a Graduation Party Photo Walk

One of my vivid childhood memories is of riding in the backseat of our Ford station wagon on a trip through the scorching deserts of the Southwest in the summer with no air conditioning and two restless brothers kicking each other and me. We often were rescued from boredom by a series of Burma-Shave signposts. Printed on giant stakes spaced about a mile apart, silly rhymes grabbed our attention and gave us a chuckle, prompting us to make up our own verses. With a nod to that clever marketing idea, I created our own version of these posts, using photos for my kids’ high-school graduation parties. Along the walkway that led guests from our front yard to the festivities in the back was a progressive visual history of their lives from tot to teen. Step 1: Sort through family photos of your graduate, and choose about 12 favorites that make you smile. We pulled out photo albums, loose pictures stuffed in drawers and

my wallet, and identified favorites in our photo collection. Sort and identify your favorites from the different stages of your child’s life. Step 2: Scan and print enlarged 8-1/2-by-11-inch versions of the photos on your computer or have them enlarged and copied in color at a copy store. For displaying 12 photos, purchase six large sheets of poster board in bright colors at a discount or artsupply store and 12 dowels or garden stakes at your hardware store. Cut poster board in half widthwise. Step 3: Attach photos to the poster board with spray adhesive outdoors, following the directions on the can. For added pizzazz, you might wish to glue on construction paper cut in geometric shapes for

decoration. Attach the dowels with strong tape to the back of each photo poster. Set in the ground or in planter boxes along the path to your party. As a mom of three, I found pleasure in focusing on just one of the kids for a concentrated period of time, chronicling that life with visual and sentimental memories. Allow eggs to come to room temperature (about 30 minutes). Add the cream of tartar or lemon juice to the bowl with the egg whites. Beat the egg whites with an electric beater until soft peaks form, about 2 minutes. Set aside. 4. In the top of a double boiler over simmering water, combine 2 tablespoons

of the sugar and the egg yolks, and beat with an electric beater or whisk until frothy and thickened, about 10 minutes, scraping the sides occasionally with a rubber spatula. Remove from heat. Add a tablespoon of the yolk mixture to the egg whites, folding them together. Add in the rest of the yolk mixture, folding it into the egg whites. 5. Divide the berries among 4 individual gratin dishes or ramekins and pour the egg mixture over them. Sprinkle each dish with a little of the remaining sugar. Place under a broiler, about 4 inches from the heat source,

and broil until golden, about 4 minutes. Serve hot or warm. Makes 4 servings. Meringue Tips: Don’t make meringues on a humid day, as the moisture makes it chewy and it will take longer to bake. Separate the eggs when cold and make sure none of the egg yolks get into the egg whites. Use the egg shell to remove any stray egg yolks. Diet Takes Backseat as Gout Treatment DEAR DR. DONOHUE: Do you have information on gout? I am 65, and my son-in-law is 32. We both have it. It is so painful. My doctor was pretty vague. He asked me to go on the computer to find which foods I should or should not eat. I found that you can’t eat meat and fish, but salmon and chicken are all right. Some vegetables can’t be eaten. How about tomatoes and tomato products? Does one attack mean gout is forever? What is the medicine of choice? -- C.B. ANSWER: Gout comes about when the blood uric-acid level rises. Uric acid seeps into joints to form needle-shaped crystals that cause joint swelling and unspeakable pain. Uric acid, in turn, is a byproduct of cell chemistry. Its blood level rises because a person makes too much or passes too little into the urine. A first gout attack most often occurs in the joint at the base of the big toe. The skin over the joint turns red, and the joint swells and becomes exceedingly painful. One of the best ways of diagnosing gout is to draw fluid from the affected joint and examine it with a microscope to

see the needleshaped uric-acid crystals. Gout can affect other joints: the knee, wrist, ankle and fingers. One attack of gout doesn’t call for lifelong treatment. Indocin (indomethacin) is the drug most often used for an acute gout attack. Colchicine and cortisone also work well. Medicines for gout prevention are taken if a person has frequent attacks (two or three a year), has

formed uric-acid kidney stones, has kidney damage secondary to gout or passes large amounts of uric acid into the urine. Zyloprim (allopurinol) reduces uric acid production. Probenecid increases its elimination into the urine. Uloric, a new gout drug, is for those not responding to these two. Diet was the sole means for gout treatment in the old days. Now, with effective medicines, it takes a back seat. You ought to eliminate organ meats -liver, kidney, sweetbreads and brain. Decrease but don’t eliminate red meat

and shellfish. Beer should be avoided. Wine can be taken in small amounts. Soft drinks containing high-fructose corn syrup (and most do) shouldn’t be drunk. You can eat all vegetables and any vegetable you want. That’s the gout diet. Not complicated. The booklet on gout explains this common disorder in detail. “The President Is a Sick Man: Wherein the Supposedly Virtuous Grover Cleveland Survives a Secret Surgery at Sea and Vilifies the Courageous Newspaperman Who Dared Expose the Truth” by Matthew Algeo (Chicago Review Press, $24.95) Reviewed by Larry Cox Grover Cleveland is one of America’s lesserknown presidents. His reputation for honesty while serving as mayor of Buffalo and governor of New York helped Cleveland secure the Democratic nomination for president, and he went on to win the election of 1884. His first term as president is remembered for the civil-service reforms he triggered. Although beaten by Benjamin Harrison in 1888, he ran again in 1892, winning a second but not consecutive term. On July 1, 1893, just five months after beginning his second term as president, a strange thing happened. Cleveland boarded a friend’s yacht, sailed into Long Island Sound and vanished for five days. Newspaper reporter E.J. Edwards began to investigate. He discovered this had been no mere outing, rather, the president had undergone a medical procedure aboard the yacht. Cleveland, despite his reputation for always telling the truth, denied the story, and Edwards was branded as a liar. Now, more than a century later, the truth has finally been revealed in a new book. According to historian Matthew Algeo, a team of doctors aboard the yacht worked feverishly to remove a cancerous tumor from Cleveland’s palate, along with much of his upper jaw. This required a partial reconstruction of the president’s face. Drawing on newspaper accounts, interviews, declassified documents and medical files, Algeo explores an extraordinary event that occurred at a time when the national economy was in a tailspin. It was no small feat to coordinate a secret surgery requiring a fiveday absence of the president. Even the vice-president was kept in the dark. Detroit A: Most small marks, rips or holes in window screens can be quickly repaired, and should be, as left alone they may only get bigger. Of course, if the damage is large or widespread, or you just want completely unmarred screens, replacing the screens is not too difficult, though you will need a screen replacement kit and enough screening material to go around. Here are a few quick fixes for minor screen damage: • Punctures: Use a pointed tool like an awl, a

small pick or a scissor prong to straighten and reposition the strands of wire. To protect the repair, dab the area with several coats of clear nail polish and let dry. • Rips: Use a pointy tool to position the wire strands in place. Then, thread a large needle with sturdy nylon thread, or use a spare piece of screening wire, and stitch the rip shut. Protect by dabbing on several coats of clear nail polish. • Holes: Get a scrap

Perfume Bottle Q: I have a perfume bottle that was given to me almost 50 years ago, and I wonder if it is worth anything. There is no label or markings on the bottle, so I am unable to identify it. A:Although I was unable to find your exact bottle in any of my reference books, I did find one that was similar in “The Wonderful World of Perfume Bottles: Identification and Value Guide by Jane Flanagan (Collector Books, $29.95). The top of your bottle is what is called a “feather” or “fan” stopper, which was

especially popular during the 1930s and ‘40s. The one most like yours in Flanagan’s guide was manufactured by New Martinsville Glass during the 1930s and is valued in the $50 to $75 range. *** Q: I have an old straight razor in a small case. It was originally purchased at the Columbian Exposition in Chicago in 1893, and manufactured by H. Boker & Company, Germany. The blade in engraved on one side with the exposition site and has a black handle. Can you tell me its approximate value? -- H.W.S., Sod, W.Va. A: Most straight razors generally sell in the $10 to $50 range, depending on condition and design. The razor most similar to the one you have that I was able to find is from the 1904 St. Louis

ley flakes 1/3 cup shredded reduced-fat Cheddar cheese 1. Preheat oven to 350 F. In a large skillet sprayed with olive oil-flavored cooking spray, brown meat and onion. Add chili seasoning and tomato sauce. Bring mixture to boil. Cover and simmer for 5 minutes. 2. Spoon about 3 tablespoons of the mixture

on each tortilla. Roll up tortillas and place on a cookie sheet, seam side down. Lightly spray tops with olive oil-flavored cooking spray. 3. In a medium bowl, combine salsa, undrained tomatoes and parsley flakes. Evenly spoon mixture over tortillas. Bake 10 minutes. Sprinkle 2 teaspoons Cheddar cheese over top of each.
