Grilling Masterclass with Francis Mallmann at Los Fuegos

Faena Hotel’s monthly culinary series—Chef Collective, a gastronomical journey where chefs from around the globe are invited to cook together— hosts Edward Lee from 610 Magnolia in Old Louisville, Kentucky with Paul Qui in Miami for a unique feast on October 19th.

SMOKE & PICKLES BY EDWARD LEE Take a look at one of the dishes chef Edward Lee prepares and you will see pickled, fermented, fried, smoked and cured ingredients. Take a bite and you will be immediately transported to Korea (where his family is originally from), Brooklyn (where he was raised) and Louisville, Kentucky (where he currently resides and runs his celebrated restaurant, 610 Magnolia). Readers will be transported to these places through his stories and recipes in his book Smoke & Pickles, and understand the history behind the four-time James Beard Award nominee.

The theme of this dinner will be focused on southern-style flavors infused with tobacco and bourbon served family-style. Chef Edward Lee is the chef/owner of 610 Magnolia, The Wine Studio & MilkWood in Louisville, KY and the culinary director for Succotash in National Harbor, Maryland and forthcoming in DC in 2017. He has received multiple finalist nominations for the James Beard Foundation Awards Best Chef: Southeast. Most recently, he was selected as a runnerup for a daytime Emmy for his role as host of the Emmy-winning series, Mind of a Chef on PBS. He is also a judge on MasterChef. Lee’s self-authored best-selling cookbook, Smoke & Pickles, (Artisan Books, May 2013) chronicles his unconventional journey from the kitchens of Brooklyn to becoming a lauded Southern chef. His signature drink called Chef’s Collaboration Blend (made with Jefferson’s Reserve Whiskey) is a luxury small batch bourbon he developed with Master Blender Trey Zoeller. OCT

Florida and the Fountain of Youth The mythical association of The Fountain of Eternal Youth and Florida was a cultural event with real foundations. But, is it not also a metaphor for the way we choose to inhabit the world? Comparing the different stages in man’s life has always been culturally inevitable. We constantly feel the need to establish hierarchies and make appraisals; each of the stages—childhood, youth, adulthood and old age—have specific qualities, associated with metaphors that seek to express their singularities. Childhood is at once a time for blossoming, for spring and for Eden; youth is incandescence and old age is like a calm and demure river. If we think about it, sometimes one is better than the other (or at least it would seem that anything is better than old age), when our body no longer follows the commands of our mind and will. Being old, for some, represents an unavoidable decadence they wish to avoid at any cost —and to no avail. Many of the fantasies that bring time to a halt are born from this urge: spells and enchantments, blood pacts with dark forces, cosmetics and secret recipes; methods that try to satisfy a somewhat naïve desire to remain young forever. Among these, the legendary Fountain of Eternal Youth deserves a special mention; that mythical source that rejuvenates anyone who drinks or bathes in its water. Of the many tales that mention this place, and probably the most influential, is that of Juan Ponce de León, Adelantado. He was a conquistador representing the Spanish Crown, who arrived in the Florida Peninsula in search of the coveted treasure. It seems that Ponce de León and other Spaniards made the fountain their goal after learning of a similar legend told by the Arahuacos: Cuban and Puerto Rican natives who spoke of “Beimeni.” They described a land of enormous wealth and pleasure,

which Europeans immediately associated with The Fountain of Eternal Youth and its promise of renewal. Ponce de León paid attention to the story, left Cuba towards an imaginary destination and reached land the 2nd of April 1513. Six days later he declared the discovery in the name of Spain and baptized the land as “Florida”. It is unknown whether the name was chosen because of the abundant vegetation of the place or because the day they arrived was the day of Pascua Florida (Easter). Regardless of the reason, since that day, Florida and The Fountain of Eternal Youth are paired together in Western historical and cultural cannons, a correspondence which may not appear casual in light of the somewhat paradisiacal atmosphere that has always characterized this Peninsula. After all, the legends of universal folklore, the myths and stories that have been passed down from generation to generation, become a part of our collective genetic code which must always mention one thing in order to refer to the Other, in a rhetorical and symbolic game that reveals the multifaceted character of reality. Which is the real Fountain of Youth? Which is the Garden of Delights full of endless pleasures? Are they to be found on maps or solely in our minds? To this end, a few of lines from The Rose of Paracelsus, one of Jorge Luis Borges’ last stories: “Where are we, then, if not in paradise?” he asked. “Do you believe that the deity is able to create a place that is not paradise? Do you believe that the

The Most Legendary Garden In the hanging garden of the imaginary Tartar kingdom, under magnolia trees and the smell of sandalwood, Marco Polo and Kubla Khan walk, inventing cities as they go. The Fantastic Kingdom of King Ludwig II The so-called “fairy tale king” built fantastic castles, inspired in Wagner operas and the oriental dreams of The Thousand and One Nights.

British artist Roger Hiorns (1975, Birmingham, UK, lives and works in London) is the winner of the 2016 Faena Prize for the Arts, the biennial internationally-juried prize, which recognizes artistic experimentation, encourages postdisciplinary and temporal exploration, and promotes inquiry of the infinite links among art, design and technology. The 2016 edition called on artists or groups of artists from all over the world to develop proposals for original projects that engage with the concept of time and duration while also interacting with the monumental architecture of the Faena Art Center Buenos Aires in FAENA MAR BY BRANDON HAW A landmark for future generations, Faena Mar has been designed to maximize views of the Ocean, the bay and Miami’s skyline, articulated by large sweeping terraces east and west. Curved-corner windows give a softness to the experience of interior living while revealing panoramas of the beach and the city. Designed with proportion and scale in mind, the planning of the interior spaces dictated the rhythm of the expression found when looking at the building from the outside—an almost jazz-like composition.

Following the evaluation of more than 400 proposals from over 70 countries around the world, Hiorns was selected by a jury of leading figures from the international art world. Coordinated by Ximena Caminos, the 2016 selection jury included Carlos Basualdo, Keith L. and Katherine Sachs Senior Curator of Contemporary Art at the Philadelphia Museum of Art;

Achim Borchardt-Hume, Director of Exhibitions at Tate Modern; Caroline Bourgeois, curator of the Pinault Collection; independent curator Jesús Fuenmayor; and Victoria Noorthoorn, Director of Museo de Arte Moderno de Buenos Aires. Hiorns will receive a $75,000 prize, which includes $25,000 for the artists and a budget of up to $50,000 towards the production of Untitled (working title), to be presented by the Faena Art Center Buenos Aires in 2017.
