HEALTHY O N A BUDGET W alking into the grocery store without a plan— or a shopping list—can be risky, especially with so many products hitting the shelves every week and temptation is at your fingertips. And let’s face it—healthy food can be expensive, making it even more difficult to try to eat well while on a budget. However, there are many creative ways to eat wholesome foods and save money at the same time. Here are some helpful tips for filling up on healthy foods without breaking the bank:
1 HEAD TO THE SUPERMARKET WITH A PLAN Start your grocery list by planning meals a week in advance. Scan your cupboards and refrigerator to see what you already have—so you only buy what you’re sure you will use. 2 CIRCLE THE PERIMETER Stick to your grocery list when you’re shopping by taking a lap around the store’s perimeter first, which is where the freshest foods are typically located, such as produce, dairy, and meat. 3 WHOLE FORM > PROCESSED FORM Whole foods are often less expensive than their processed counterparts, such as a block of cheese versus shredded cheese. The less processed foods are also usually sold in larger quantities, yielding more servings per package.
4 OPT FOR GENERIC Did you know that most supermarkets offer a generic brand for nearly every product? All food manufacturers have to follow food safety standards—generic brands should relatively be the same quality as name brands, just less expensive. 5 BUY FROZEN FRUITS AND VEGGIES Frozen fruits, berries, and vegetables can be just as nutritious as their fresh counterparts—and are great for cooking, making smoothies, or as toppings for yogurt or oatmeal. Plus, they are available year-round. NO NEED TO FEAR FLAVOR BOREDOM! Over time, it will get easier to make healthy buying decisions and to learn how to swap out some items for similarly priced alternatives (e.g., canned black beans for canned pinto beans).

DIY CORNER
Millet is a gluten-free “grain” that is packed with vitamins and minerals. Although often referred to as a grain because of its grain-like consistency, millet is actually a seed. It can be used in birdseed mixture, but if you think it is just for the birds, you are missing out on important nutritional benefits for yourself! Millet is high in protein, fiber, and antioxidants—as well as phosphorus and magnesium.

Although small in size, chia seeds are chock-full of important nutrients. They are an excellent source of omega-3 fatty acids, are dense with antioxidants, and are a valuable source of fiber, iron, and calcium. Some experts have linked chia seeds to improving risk factors for heart disease and diabetes, as well as aiding in digestion and gut health.

All-Purpose Cleaner
Oats are a great source of fiber and complex carbohydrates, which leave you energized and with that “full” feeling. Oats are also high in essential minerals (manganese, phosphorus, magnesium, and zinc), and B itamins (thiamin, folate, and riboflavin).
Try this simple all-purpose cleaner using a few basic pantry items to get your home clean and smelling as sweet as spring.
Ingredients:
1 cup water 1 cup white vinegar Lemon rind Fresh rosemary sprigs
Instructions:
Combine all ingredients in a glass spray bottle, shake well, and let infuse for one week before using. When ready, use your all-purpose cleaner to remove hard water stains, wipe down countertops, or clean trash bins. As an added bonus (besides the fresh scent!), the lemon rind acts as a cleaning power boost. Caution: Do not use acidic cleaners on granite.

The antioxidants, fiber, protein, and carbohydrates in black beans make them nutritionally powerful. Black beans also provide an abundance of soluble and insoluble fiber, both of which can decrease your risk of certain types of chronic diseases. A diet rich in beans can reduce your risk of several serious medical conditions and help your body to process calories more effectively.

Slow Cooker
RECIPE
TERIYAKI
Chicken Thighs With sweet and savory ingredients, this slow cooker teriyaki chicken recipe is easy to make, yet big on flavor—and is sure to be a big hit at the dinner table, too!
Ingredients 3 pounds boneless, skinless chicken thighs ¾ cup sugar ¾ cup reduced-sodium soy sauce 1/3 cup cider vinegar 1 clove garlic, minced ¾ teaspoon ground ginger ¼ teaspoon pepper 4 teaspoons cornstarch 4 teaspoons cold water
Instructions Place chicken thighs in the bottom of a five-quart slow cooker. In a small bowl, combine sugar, soy sauce, vinegar, garlic, ginger, and pepper. Pour over chicken, and cook (covered) on low for 4-5 hours or until chicken is tender. Remove chicken and place on a serving platter, and keep warm. Transfer cooking juices to a small saucepan, skimming fat as needed, and bring to a boil. In a small bowl, stir together cornstarch and cold water until smooth. Add to cooking juices, and return to a boil, cooking and stirring for 1-2 minutes or until thickened. Serve sauce with chicken over rice or vegetables, if desired.
