Produce Highlight It’s Spring! So Get Your Fresh On Piles of fresh produce are coming to Mazopiya in May. Berries. Stone fruit. Fresh greens. They’ll all be ripe and ready for the tasting. But you have to know how to spot good fruit. First, don’t let a few wrinkles scare you. Mangoes and grapefruit that appear somewhat dehydrated and shriveled on the surface are actually pumped full of concentrated, flavorful juice. Spotty, slightly soft organic pears? They’ll taste buttery and sweet, the way they’re supposed to be. Organic soft fruit and kiwi taste best when they’re a little wrinkled, too. Not sure by looking at them? Try sniffing them. Smell is often the best indicator of quality when it comes to produce. Fruit with a powerful aroma likely is tasty, juicy, and ready for you to enjoy. Our gluten-free products will be highlighted throughout Mazopiya this month, following the theme of our Brown Bag Lunch Series and other classes in May. Now go ahead, indulge! Strawberry Spinach Salad with Berry Dressing

Use fresh summer strawberries in this vegan salad drizzled with berry and balsamic dressing to transform tender greens into a colorful and luscious treat!

For the Dressing:

• 1/2 cup fresh strawberries, washed, stemmed • 1/2 cup fresh raspberries, washed • 1 tablespoon balsamic vinegar • 2 tablespoons olive oil • 1 tablespoon raw agave nectar • Fresh ground pepper to taste

For the Salad:

• 4 cups baby salad greens, washed • 2 cups baby spinach leaves, washed • 1 1/2 cups fresh strawberries, washed, stemmed, sliced • 2 spring onions, washed, sliced • 6 sprigs fresh mint, washed

Directions:

Place the strawberries, raspberries, balsamic vinegar, olive oil, and agave nectar into a blender. Cover and blend on high until the berries are pureed. Season with a grind of fresh black pepper to taste. In a salad bowl, toss the baby salad greens with the spinach leaves. Add the strawberries and sliced spring onions. Drizzle with the berry dressing. Toss lightly. Serve with a mint sprig.
