MEDITERRANEAN DIET MONTH May is Mediterranean diet month. The Mediterranean diet can offer some amazing health benefits. It has been proven to reduce the risk of heart disease, certain cancers, diabetes, and Parkinson’s and Alzheimer’s diseases. This diet consists of eating large quantities of fresh fruits and vegetables, nuts, fish, and olive oil—coupled with physical activity. Here are some of the basics to get you started: • Fruits and vegetables — lots of them. Vegetables should be the foundation of every meal, and fruit makes a wonderful main attraction in desserts. • Beans and legumes like lentils, chickpeas, and fava beans are packed with fiber, protein, vitamins and minerals. • Whole grains, such as farro and bulgur, are a great source of complex carbs, fiber, vitamins and minerals. • Seafood and fish are an important source of protein. Fish, such as sardines, tuna, and salmon, also contain heart-healthy omega-3 fatty acids. • Red meat and dairy — but only a little. Mediterranean cuisines often use red meat as a seasoning rather than as the star of the meal. Ditto for dairy. And their cheeses are so flavorful, you only need a little. • Olive oil as a main source of fat, used to cook and dress salads. Extra virgin, the least-processed variety, retains the most nutrients and may be good for regulating blood sugar and cholesterol levels. • Nuts, such as almonds, walnuts and pistachios, are a source of healthy fats, protein, minerals, and nutrients. • Herbs and spices (like garlic, thyme, and cumin) have rich flavors and aromas, allowing them to replace some salt. Instructions
Melt equal parts beeswax and sweet almond oil over a double broiler or in the microwave in an oven-proof container. Remove from heat and add essential oils to the melted wax mixture. Gently stir with a wooden skewer or chopstick, and then pour the melted mixture into the metal container. Allow to cool completely.

RECIPE CHICKEN CACCIATORE

Ingredients 1 package chicken thighs 1 onion, sliced thin 1 can diced tomatoes Âź cup chicken broth 2-3 tablespoons olive oil
1 red pepper, sliced into thin strips 2-3 garlic cloves, minced 2 teaspoons Greek seasoning 1 tablespoon arrowroot (to thicken sauce) Salt and pepper to taste
Instructions Heat olive oil on medium in a large skillet. Add chicken and lightly brown on both sides. Remove chicken and set aside. Add garlic, onions, and red pepper. SautĂŠ until soft. Move chicken back to the pan and top with tomatoes and broth. Bring to a boil. Reduce heat, cover, and simmer for about 45 minutes, or until chicken is tender. Remove the chicken. Mix arrowroot with 2 tablespoons of chicken stock. Add to the pan and stir to thicken. When the sauce is thick, pour over the chicken and serve with pasta or a creamy polenta.
