Welcome Note Dear Guest, Two years later, the Vibe is still as strong as ever. We’ve had an enjoyable stay in the neighborhood of Bonifacio Global City so far, and are glad to know you’ve chosen to be a part of this journey we’re currently on. Our first two issues focused on what made this property come alive: be it the dynamic city we’ve gotten to know and call home, the facilities and amenities we offer, and the experiences awaiting every one of you who walk past our double doors. In this third issue, we tell these stories through the eyes of the people making Shangri-La at the Fort the vibrant lifestyle destination it is today. Whether dining indoors or al fresco, indulge in the exotic flavors of Peru from dishes prepared by Chef Carlo Huerta at Samba. Hailing from the scenic Cusco, Peru, Chef Carlo brings the unique flavors of his hometown to the Philippines. Samba is the first authentic Peruvian restaurant in the country serving up a feast for both the palate and the eyes. The intriguing presentation of the ANTICUCHO DE PULPO is owed to its star: a sustainably caught octopus tentacle. It embodies the best of Peruvian cuisine with its fresh, crisp, and delightfully surprising taste. Each bite resembles the vibrance of the culture, especially with each ingredient imported all the way from Peru. ALL ABOUT FRESHNESS The first thing Chef Carlo does when he gets to work is check on the freshness of the ingredients he’ll be using. With great respect for the bounty of the land and sea, he takes pride in the fact Samba gets the season’s choicest seafood delivered every day to assure the quality of dishes like CEVICHE LIMEÑO and ARROZ CON MARISCOS are of the quality customers deserve. UP FOR THE CHALLENGE To prepare for the daily grind, Chef Carlo makes sure to exercise his upper body and eat healthy for the physical demands working both the back and the floor of the house calls for. Getting the chance to know and give guests a little background on the food: “There’s more value in a dish when you learn where it’s from. In Peru, there are jungles, mountains, a desert, the sea and the Amazon River so our menu’s history stretches just as wide.” With that, you can only imagine the number of dishes prepped and served, making the second shift up to the dinner service his busiest time. WINDING DOWN After hours and if the night wasn’t particularly hectic, Chef Carlo and fellow chefs from Canton Road and Raging Bull share a drink and maybe a burger. Once home, he de-stresses with music, video games, or by spending time with his wife and two French Bulldogs.

Dining at this modern food hall is a must when in the metro with nine culinary neighborhoods in one High Street Cafe. The dishes are prepared a la minute by the chefs on hand and can even be cooked according to each guest’s specifications. Start off with some sushi from the SEAFOOD AND RAW station, a classic Caesar Salad from the SALAD AND GREENS station, or with a variety of cold mezzes, breads, and sliced-to-order jamón from the MEDITERRANEAN station. For the main course, have a taste of Japanese, Chinese, and Southeast Asian cuisines or perhaps some grilled food from the ROTISSERIE station. Finally, end an already delectable meal with a Molten Lava Cake topped with an ice cream flavor of your choice from the DESSERT station. The cafe’s laidback and contemporary vibe makes for a great change of pace from the hustle and bustle of the city. PEOPLE OF THE NEIGHBORHOOD With much to explore at High Street Cafe, you can always ask for assistance when getting your bearings right within its nine culinary neighborhoods. One of the friendliest faces you could spot is that of MARVELOUS, who’s become a guest favorite for his welcoming demeanor and attention to detail. He enjoys meeting new people and has an uncanny talent for remembering guests' preference on their next visit. When asked what he recommends often, he finds himself talking about dessert. “I always recommend the Molten Lava cake which is baked on the spot – it goes well with any of the ice cream flavors that we have.” Look out for Marvelous, he’s sure to make your dining experience a memorable one. A conversation with High Street Cafe’s Executive Sous Chef Ryan Dadulfaza on his roots and what he brings to the table HOW DID YOU GET INTO FOOD IN THE FIRST PLACE? My first real job was in a kitchen where I ended up falling in love with the profession. I later realized it could be the perfect medium for success with my meticulousness and creativity which is something this calls for. I eventually studied in a culinary community college back home in Guam and aced the whole thing—but knew it wasn’t enough so I attended two years at the Culinary Institute of America in New York. HOW DID YOU FIND YOURSELF IN S H A N G R I - L A AT T H E F O R T ? After my studies, I was able to get a job at a prestigious restaurant in Tokyo where I worked for free for six months. That starting period in my career prepared me for my stints in Thailand, Shangri-La Beijing, Singapore, Bali, and Dubai. After all the shuffling, I really wanted to come back to Shangri-La and be somewhere closer to my parents so that's how I ended up here.

HOW MUCH OF YOU IS IN HIGH STREET CAFE RIGHT NOW? My role is a matter of taking what’s been done and polishing it off by finding that small percentage of improvement I can lend my experiences to while still making sure our food stays approachable, easy-going, and impactful. For me, it’s our ability to balance simple and complicated dishes—such as our SOUS VIDE BEEF CHEEK and THAI SAMUI SALAD—while consistently delivering distinct bold flavors and the excellent quality expected from us. In addition to that, how the team engages with guests is probably one of the most integral parts of the High Street Cafe experience. Besides having the opportunity to be closer to my culture, it feels good to grow a dining experience for those closer to my roots and working with a team of familiar people. The start of my tenure here has definitely been a better fit and is more like home than I thought it would be.
