WINE WITH FOOD

This course is designed to teach students the applied approach to match wine and food from different parts of the world using flavors, textures, and components present in food and wine as complementing strategies. Emphasis is on menu planning, preparation of foods, cooking methods, and tasting wines with food. Concepts can be applied to home preparation of food with wine, restaurant food production with wine, and dining out. This course may be offered in a distance education format.

Do you have an ice cream maker but aren't getting the results you want? Looking for tips from an artisan ice cream expert? This class has got you covered! Dave will guide you through everything you need to know about making artisan ice cream at home, which you can do using tools commonly found in most kitchens, and basic home ice cream making equipment. Learn how quality ingredients affect results, where to shop locally for the best ingredients, and the importance of technique and temperature. You will learn how to make two different types of ice cream base: custard style (with eggs) and Philadelphia style (no eggs). HAND PIES - SWEET AND SAVORY

Hand pies are fun because you can eat them...well, with your hands! Plus, they freeze well so you can quickly bake them for a delicious dessert or as part of a meal. These flaky, yummy pies can be filled with delicious sweet or savory filling and creamy cheeses. Join Chef Stephany to learn how to make the perfect, flaky butter crust and then fill the crust with both sweet and savory fillings (not in the same pie of course). Learn to make a delicate pie crust from scratch, and while it rests, prepare several delicious fillings, then form and bake! At the end of this class you will have 5 or 6 of each flavor to bake or to freeze for later - yum!! Facilitator Stephany Buswell is a pastry chef and Certified Master Baker with 45 years of experience. She has been teaching baking for 30 years, first at Cabrillo's Culinary Arts Program, and then at the International Culinary Center. She has worked at Staff of Life Bakery, Gayle’s, The Buttery, and ran her own bakeshop, Stephany’s Desserts. She was a finalist in Food Network's Holiday Baking Championship Season 4, and is now a mentor with the Teen Kitchen Project.

MIXOLOGY AND THE COCKTAILS OF AN ERA CLASSIC 1960S, 70S AND 80S COCKTAIL HOUR

Join Liz Pollock, a Certified Mixologist, for a classic 1960’s, 70’s and 80’s cocktail hour and learn how to make six popular cocktails reflecting the era. Liz will tell the stories behind the cocktails while demonstrating how to make a perfect drink every time. She will also show pieces from her collection of vintage cocktail menus from Santa Cruz County hotels and restaurants. Learn bartending basics, including suggestions for standard equipment and supplies. Put on your favorite music from one of those decades, and settle in for your classic cocktail hour!
