Letter from the Editor

Spring has sprung and, despite another mild winter, it’s been great having consistent sun and a bit more warmth. This has meant more time spent outside, which my two dogs, Teddy and Toby, certainly are looking forward to.

Speaking of dogs, this issue is one of my favorites because I get to meet and pet so many adorable pups. At the same time, however, it’s the issue I struggle the most with because it truly breaks my heart to not be able to choose each and every submitted dog as our Top Dog. As a canine lover, I firmly believe that every dog is worthy of that designation.

This is our fifth Top Dog issue, and with every dog that came through, it was abundantly clear how much love exists between a pup and their person. It’s hard to find something more special than the unconditional love of a dog. The same could be said for this year’s Thriving 20 Under 40, as the group has a seemingly unconditional love for Kankakee County: whether they’re building or improving a business here, or they’re planting their roots here. Getting these folks together for the photoshoot at Kankakee Country Club was a fun experience as we got to watch them interact with the same goal: to make Kankakee County a better place to be.

Kankakee County Health Department

Health Promotion Coordinator

How long have you been in your role? 1 ½ years

When it comes to your work, what are you most passionate about? Being in public health can be a very rewarding job and can be difficult without the right team behind you. The Health Department has the passion to make public health rewarding for all of our clients.

Being a Health Promotion Coordinator, I oversee multiple grants as well as promote the Health Department in all programs that we offer. Some of the programs I oversee include increasing Adolescent Wellness Visits and Well Women Visits, Tobacco, Emergency Preparedness and Car Seat inspections.

I believe some people do not realize that the Health Department is more than just immunizations. We have over 28 grants in total. I love going out in the community and educating the public on the other programs we have. Such as our new Integrated Referral and Intake System (IRIS) and Healthworks. IRIS is helping close the loop of referrals in Kankakee. Our Healthworks program is helping children

in foster care get the health care they need and to keep all their medical records in one place here at the Health Department.

For me, working for the Kankakee County Health Department is my passion. While I was in college, I knew that I wanted to work in public health. Working for the Kankakee County Health Department is a dream come true for me.

How do you/your organization help Kankakee County thrive? The Kankakee County Health Department mission is to promote, protect and monitor the health of all people in the communities we serve. This is true for all of the programs we offer from keeping our county’s establishments safe from foodborne illness to keeping children safe with our car seat program and everything in between.

What do you hope to see in the county’s future? What I hope to see is educating the community on all the services that the Health Department offers. I also hope to see that if someone is in need of a service that we offer to call us.

just a health care provider – we're a pillar of this community. We focus on providing high-quality care, but that extends far beyond the walls of our hospitals and clinics. One of the things I'm most proud of is our commitment to keeping care local. We've invested in expanding our network of clinics throughout the county, making sure everyone has access to the services they need, close to home. This not only reduces travel burdens but fosters a sense of familiarity and trust with our patients.

What do you hope to see in the county’s future? I hope for continued investment and growth from both large and small businesses. There are a lot of exciting initiatives across several industries going on in the county that will promote people working and investing in our area. In addition to business growth, several of our educational systems are expanding their investment in the youth of our county. It takes all of us to execute on these initiatives and lead to a bright future for Kankakee County.

Kankakee Forgives

Street Outreach Worker

How long have you been in your role? 1 year

When it comes to your work, what are you most passionate about? I am passionate about empowering our youth and community to break the cycle of violence and foster a safer environment for everyone. This involves tackling the root causes of violence, such as inequality, financial instability and limited access to resources and opportunities. I firmly believe in promoting empathy, understanding and respect for all individuals, and I am committed to working towards building a culture of non-violence and conflict resolution.

I am particularly driven to provide at-risk youth with new experiences and opportunities, showing them that life extends beyond the confines of their homes or the streets of Kankakee. By expanding their horizons, we can inspire hope and instill a sense of possibility for a brighter future.

Moreover, I am dedicated to advocating for systemic changes and interventions that prioritize prevention, early intervention and support for survivors. I strongly advocate for the rehabilitation of perpetrators, recognizing that healing and transformation are essential components of

breaking the cycle of violence.

Ultimately, my passion lies in making a lasting impact on reducing violence and promoting peace within our community. Together, we can create positive change and build a safer, more inclusive community for us all.

How do you/your organization help Kankakee County thrive? By providing opportunities for growth in a range of areas such as relationships, education, finances and mental health. Our goal is to specifically target those who aren't fortunate enough to have a support system that may be as strong as others. There are youth falling through the gaps, not because they aren't smart enough but, simply because of a lack of guidance. We want to step in to help bridge the gaps to success and healthy lifestyles.

What do you hope to see in the county’s future? I would love to see more activities for the youth, such as a skating rink and other things of that nature. I would also like to see a stronger collaborative effort between local organizations. We can accomplish so much more for the youth in our community when we work together.

Being born and raised in Kankakee County and a long-standing member of this community, OAK Orthopedics has provided me with opportunity and assistance not only as a patient, but as a student and now physician. My journey to becoming the person and physician I am today came not only from many people that live and work in this community, but from those involved with OAK Orthopedics. What do you hope to see in the county’s future? During my upbringing in Kankakee County, there has been increased opportunity and growth that has created a sense of pride in a place I call home. How do you/your organization help Kankakee County thrive? As the owner/operator of my own business, I purchase older dilapidated homes in our area. I then remodel and update the property in hopes of selling for a profit. Many times, my homes are sold to firsttime local home buyers. I am a proud husband, father, son, brother, uncle, grandson and friend to many. I am an avid golfer, and enjoy spending time with family and friends.

As a Kankakee County Board member, I have been a consistent conservative voice for the residents of Kankakee County. I have voted 'no' repeatedly on property and sales tax proposals, been a staunch supporter of our public safety professionals, and worked tirelessly to improve the county’s finances. In addition, I serve on the criminal justice, executive, finance, highway and buildings, and planning and zoning committees. I am the chairman of the finance committee and have helped establish financial policies that have helped the county create a solid financial outlook even amid historic inflation.

What do you hope to see in the county’s future? As a young husband and father, the driving force behind my work is to make Kankakee County a better place for not only my family but for everyone who calls it home. Kankakee Area LGBTQ Network

President

How long have you been in your role? I’ve been working in the mental health field locally for the past 16 years. I began forming the LGBTQ Network in 2019 and formalized our nonprofit in 2023.

When it comes to your work, what are you most passionate about? I am most passionate about connecting people to find and feel a place in this community. I do that through mental health work individually, through education and group work, and more directly through the LGBTQ Network, making space for LGBTQ people in a community who hasn’t always acknowledged our presence. I try to live by the quote, “Be who you needed when you were younger.”

How do you/your organization help Kankakee County thrive? I hope to have an impact on the mental wellness in our community. We’re all struggling right now. There is so much help and resources out there for people. The LGBTQ Network aims to bring LGBTQ voices into the picture locally, but ultimately by uplifting marginalized groups, we make the community better, more whole, more inclusive and welcoming.

What do you hope to see in the county’s future? There’s a lot of exciting things happening locally! I hope we keep moving forward together. We’re so often divided and pitted against one another. I’d love to see more community spaces for support groups, partnerships, events, etc. The DREAM is an LGBTQ center that could serve as a diversity center for local groups to convene, dream and grow!

Manager | Vice-Chairman of Kankakee County Board

How long have you been in your role? My family’s journey with our businesses began in 1979 and has grown over the years. Since my days as a toddler where I remember my grandfather, father, and uncle instilling in me the importance of hard work, I have been involved in each and every one of them at some point. For approximately the past five years I have been working in a full-time capacity daily. I was first appointed to the Kankakee County Board in 2021 and later elected in 2022 when my fellow board members elected and placed their trust in me to serve in the position of Vice-Chairman of the board.

When it comes to your work, what are you most passionate about? Providing leadership is my most passionate trait. I believe my vision and ideas for the future provide energy, excitement, and enthusiasm. As a leader in my family’s businesses, I take great pride in problem-solving business-related issues and working alongside my team to help them achieve goals. Likewise at the County, I am encouraged and proud of the work we have accomplished to make Kankakee County financially solvent and of the work completed by our elected/ appointed officials and their employees to serve the public in the most

economical and efficient manner.

How do you/your organization help Kankakee County thrive? Small businesses are the backbone of our country. Our businesses have created numerous good paying jobs, sparked economic growth, and supported several local non-profit organizations.

As Vice-Chairman I want to make local government work for our residents and not have citizens fearful of local government. No government entity including the County is perfect; however, we should always strive to provide top-tier services that benefit and help our residents in their time of need. I’m hopeful the residents of Kankakee County feel the services provided on a county level from county departments improve their quality of life and help them thrive.

What do you hope to see in the county’s future? Our geographical location, beautiful Kankakee River, growing industrial complexes, abundant fertile land, plentiful transportation options, quality health care centers, and numerous primary and post-secondary educational facilities make Kankakee County ripe for success. It is up to the next generation of leadership in Kankakee County to work together to capitalize on these assets and catapult Kankakee County into the future. My vision and hope is to see Kankakee County known as a safe, middle-class agricultural/rural/urban area with robust job opportunities and a high quality of life for our residents.

KVTA has been dedicated to providing high-quality, live theater since 1963. KVTA also provides an artistic outlet for actors, musicians, directors, dancers, technical personnel, graphic artists, and others who, by day, are involved in many diversified occupations. Their talents are displayed in a collaborative effort to bring the best theater possible to rural Illinois communities. KVTA's mission is to promote, produce, encourage and sponsor civic theater and drama in the Kankakee Valley area.

What do you hope to see in the county’s future? As a community, we can all be better at enriching and supporting live performing arts. Take a couple of hours to see a show, whether it is at KVTA, Acting Out Theatre Co, Easy Street Theatre, or any of the immensely talented high school/grade school performances in Kankakee County. There is also no shortage of live music performances thanks to the Symphony Orchestra, the Wind or String Ensembles, or various local artists performing at the different events. Live theater and music will not survive without the support of the community. Please, reach out to kvta.org if you have questions or suggestions for ways to bring people back to the theatre. United Way of Kankakee & Iroquois Counties

Executive Director

How long have you been in your role? 1 year

When it comes to your work, what are you most passionate about? After working with area nonprofits the past seven years, I can say confidently our community is home to a rich network of hardworking nonprofits and caring people. Unfortunately, many people aren't aware of the services available in our hometown. My role, and my passion, is to raise support for these hometown heroes, elevating their passions and efforts, while also serving as a voice for our neighbors whose needs are often unheard.

How do you/your organization help Kankakee County thrive? Fostering collaboration, growing grant support and elevating local voices - that's how United Way helps Kankakee County thrive! Our team raises support through our network of Kankakee-area workplaces and hundreds of individuals. Their generosity helps us empower around 26 local nonprofit programs with grant funding every year.

In this role, I relish in sharing stories of lives impacted by these program

partners, created by donors right here in our community. Our team also collects and analyzes data to create a picture of needs at the forefront of our community, like housing insecurity and mental health access.

What do you hope to see in the county’s future? I truly hope to see a unified spirit among Kankakee County residents and companies in addressing key issues our neighbors are experiencing. For example, Kankakee County is experiencing a housing crisis, our third grade reading rates often fall well below average, and 55% of our seniors are barely making ends meet. Addressing these issues will require solidarity and a great deal of local support, but we can not lose hope!

There are many passionate people and organizations who are seeking to address these giants. We have to take every opportunity to elevate and celebrate the work being done! It's an honor to contribute to a future where everyone in Kankakee County can thrive through education, financial stability and healthy living.

How long have you been in your role? 5 years in August! I was recently promoted to Vice President in January. Before, I was the Director of Events & Logistics from August 2019 until my new role.

When it comes to your work, what are you most passionate about? I am most passionate about making an event come to life while meeting the fundraising goals for our clients. Whether that is for a political candidate or nonprofit organization, having a well-run and successful event is a great feeling! In the last decade, we have worked with over 50 Illinois campaigns, and in 2020, our clients collectively raised over $7.5 million.

We have recently entered into the "nonprofit" world and I am super excited to help make a difference with the money we raise!

How do you/your organization help Kankakee County thrive? Our organization helps Kankakee County thrive by working alongside our State Representative Jackie Haas as well as the Mayor of Kankakee, Chris Curtis! It is important to keep our elected officials in office to work for the people of our district/city.

What do you hope to see in the county’s future? Kankakee County has been the home to my family for many generations and I hope to continue that legacy with my own family. I hope to see Kankakee grow to attract more families to stay or move here. Our downtown area has grown so much since I was a child and I am so excited to see it grow even more!

BUILD EQUITY

As you pay down a property mortgage, you build equity (an asset that is part of your net worth).

As you build equity, you have the leverage to buy more.

CASH FLOW

Cash flow is the net income from a real estate investment after mortgage payments and operating expenses have been made. Having an additional income stream from your investment property can only help you in your business endeavors.

DIVERSIFICATION

Investing in real estate can diversify your portfolio. Owning and growing a healthy real estate portfolio helps provide diversity within your business portfolio, income streams and it helps hedge your bets against volatility from the market as well as your business.

Tangible Asset

Unlike stocks or other types of investments, real estate is a tangible asset. You can physically see and touch the property, and you can even live in it if you choose to. This can provide a sense of comfort for many entrepreneurs, especially those who may have experienced loss in the stock market.

In our fifth annual Top Dog issue, we invite readers and their furry friends to join in on the fun and share information not only about what makes their pup special, but what is special about their relationship. Several dogs this year showed off their talents and wardrobes, and each had unconditional love for their paw-rents.

Realtor Monica Pizano the key to a new home

Twenty years ago, Monica Pizano broke into the everevolving world of real estate. In April 2022, she opened her own RE/MAX Prestige Homes real estate office at 297 S. Schuyler Ave. in Kankakee.

This has allowed her to further her passion of helping people achieve their real estate goals. But the 42-year-old St. Anne resident said that the industry isn’t just a transaction for her.

“It's about building relationships, understanding my clients' needs, and using my expertise to make their dreams a reality,” she said.

Whether it's finding the perfect home for a family, assisting investors in identifying lucrative opportunities or guiding sellers through the process of maximizing their property's value, Pizano said she is dedicated to delivering exceptional service and

results.

Buying a home or a property can be a daunting process. Having a knowledgeable and patient real estate agent is key. This is where Pizano comes in.

Her talents were recently recognized with her win of Kankakee Iroquois Ford Association of Realtors Realtor of the Year award. Pizano was honored on April 9 in Springfield by Illinois Realtors and was the first minority in KIFAR’s history to receive the award.

Being a native and resident of Kankakee County, she said that her role as a local real estate professional contributes to the thriving community in several ways.

First, she helps individuals and families find homes that meet

their needs and enhance their quality of life within the county.

“By matching buyers with suitable properties, I contribute to the stability and growth of the local housing market,” she said.

Second, she works closely with investors and developers to identify opportunities for real estate development and revitalization projects. These projects not only create jobs and stimulate economic activity but also improve the overall appeal and functionality of local communities.

Additionally, Pizano said she actively engages in community outreach and supports local initiatives that promote sustainable growth, education and cultural enrichment.

“By participating in events, volunteering and collaborating with local organizations, I contribute to the social fabric and vibrancy of Kankakee County.”

It all comes back to the idea that the work goes beyond the transaction, as Pizano said “it involves fostering a thriving and resilient community where residents, businesses and organizations can prosper and flourish.”

BEYOND THE JOB

In addition to her day-and-night work with local real estate, Pizano is involved in the community in various ways. She shared that she is deeply passionate about serving on boards and Diversity, Equity, and Inclusion (DEI) committees.

“I believe that diversity is not just about representation but also

about bringing unique perspectives, experiences and insights to the table,” she said.

Being part of these committees, she said, allows her to contribute her own diverse background and viewpoints, which can lead to more informed decision-making and innovative solutions. She said she is committed to promoting inclusivity, equality and belonging within organizations and communities.

With that in mind, she said she is dedicated to advocating for the underrepresented voices and fostering an environment where everyone feels valued and empowered to contribute their best.

“By championing diversity and inclusion initiatives, I strive to create positive change and drive meaningful impact in our society,” Pizano said.

She is a board member for the new program Kankakee County CEO, which is providing local high school students a venture into entrepreneurship education. She is involved with Harbor House, a local organization raising awareness of and providing resources for survivors of domestic violence. During the organization’s annual candlelight vigil in October — which remembers the local lives affected by domestic violence — Pizano contributed as a speaker.

She said that domestic violence is “a shadow that looms over our community.” However, she reminded those in the audience that “your voices are powerful instruments of change.”

Monica Pizano, right, receives the Kankakee Iroquois Ford Association of Realtors Realtor of the Year award on April 9 in Springfield. Presenting her the award is Illinois Realtors President Matt Silver.

Pizano is also involved with Kankakee County Hispanic Partnership, Inc., a collaborative group of individuals, agencies and organizations, striving to enable and empower the Hispanic community by providing access to available resources and services that will improve the quality of life for Kankakee County residents.

On top of all of her work in the community, she’s a wife and a

mother of two.

When thinking about the future of Kankakee County – for herself, her family, her clients and beyond – she said she is optimistic about several key developments that can positively impact the community.

She hopes to see continued economic growth and diversification, with new businesses and industries choosing to invest in the county.

“This growth will create more job opportunities, stimulate local businesses and enhance the overall prosperity of our residents,” she said.

She also aspires to see a thriving real estate market that offers diverse housing options for residents of all backgrounds and income levels, as she said affordable housing initiatives, mixeduse developments and accessible amenities can contribute to a more inclusive and vibrant community.

“Lastly, I hope for continued collaboration and partnership among government agencies, businesses, nonprofits and community members to address challenges, promote innovation and build a county that is both prosperous and equitable,” she said. “By working together towards common goals, we can create a future that enhances the quality of life for everyone in our county.”

Kankakee Municipal Band blends family and fun

If the history of Kankakee County were told through music, the Kankakee Municipal Band would be the storyteller.

Dating back to 1865, the large band — which performs at 7 p.m. every summer Thursday in the Don Palzer Bandshell in Kankakee’s Bird Park — has been in existence almost as long as Kankakee County itself.

Made up of approximately 50 members and 11 sections, the band has unique connections within: Some play with their spouses, some play with their children, others play with their in-laws.

Such a connection is found between father and daughter, Cliff and Bridget Smith. While Bridget joined the band last year after

moving back to the area from Chicago, dad, Cliff, has been playing trumpet for the band since 1992, back when he also was the band director at St. Anne Grade School.

When Bridget, now 33, was in fifth grade, she took a page from her dad’s sheet music and decided to try out the trumpet.

“I am thrilled and extremely proud of her and it’s just awesome that we can play together in a band setting,” Cliff said.

Bridget said she loves having the opportunity to play with her dad, as well as her first trumpet instructor, conductor Rod Williams.

In addition to the Smiths, other familial connections include father and son, Wes and Drew Smith; father and sons Justin,

COMMUNITY GATHERING

Belinda Schirmer is Kankakee Municipal Band’s secretary and treasurer and has been with the organization for 30 years. While the band, which only performs in the summer, currently has no openings, Schirmer said they are always looking for substitute players.

“The band is made up of area band directors and people who just want to play,” Schirmer said.

One such person is Voneda Denault, who has been playing with the band for over 30 years and has been KMB’s president for the past 15. She described herself as “the organization person,” as she starts in January preparing for the summer season.

Having played clarinet, alto saxophone and baritone saxophone, the new bass clarinet player gets the rehearsal space organized as well as schedules performance dates with the park district.

All of that work is worth it when she sees the community come together at the bandshell. She said that the most rewarding part is “seeing the audience there and enjoying the music.”

“Even if only 20 people come out because it might be raining, it’s still wonderful to play for those few,” she said, recalling a

time early in her KMB career when attendees sat in their cars due to rain, honking their horns in lieu of applause.

Another rewarding aspect is the annual tradition of performing the Armed Forces Salute during the Fourth of July concert. Audience members who have served are asked to stand when their branch is called.

The first time Denault played this piece, she was touched by the audience’s reaction of applause.

“I was playing my clarinet crying because it was just so touching to me,” she said. “I played through the tears.”

A BAND WITH HISTORY

During Cliff Smith’s 32 years with the band, he’s been under the guidance of three directors.

“The band itself has maintained its number of personnel, but the quality of musicianship has grown tenfold,” Cliff said, noting that a typical evening concert will include music from movies, musicals, pop, jazz, and concert band repertoire. “We have guest vocalists, instrumental soloists, duets and trios.”

Several concerts have a theme, including Patriotic Night and Around the World. Denault noted a former Disney night, organized by Brianna Harris, “that was like nothing else we ever had.”

Each show has an area food truck in attendance providing food options for attendees.

Bridget Smith smiles as she talks to her dad and fellow trumpet player, Cliff Smith, during a Kankakee Municipal Band rehearsal. When Bridget, now 33, was in fifth grade, she took a page from her dad's sheet music and decided to try out the trumpet. The pair are now one of many connected musicians in the symphonic band, which performs Thursdays in the summer at Bird Park's Don Palzer Bandshell in Kankakee.

“What a great way to spend 90 minutes of time on a summer night for absolutely free,” said Cliff.

In addition to her recently joining the band, Cliff’s daughter, Bridget, has also taken the helm of the band’s social media, bringing its presence to Instagram.

For the trumpeter, it was important to showcase the people in the band and the hard work put into it. She said that most of the musicians have been playing music for 40-plus years.

“I believe the additional social media presence and giving more of a personal touch regarding the KMB members, who we are and the added information about our weekly vendors, has definitely improved our attendance,” Bridget said.

The band rehearses on Tuesday evenings, typically at Olivet Nazarene University, and then has the next day to learn the new songs to be played Thursday evening. Many weeks find the musicians learning 10-12 new songs in less than two days.

“[That’s] quite an accomplishment on its own!” Bridget said.

On the subject of accomplishments, she said it’s important to highlight the achievements of music and the arts.

“Most of these members are extremely accomplished musicians, music directors and teachers who deserve the recognition for their hard work and dedication to the music ensembles and

NEW BUSINESS SPOTLIGHT

Mother-son duo bring bakery dream to reality with Cakes & Goodies

While other kids were busy playing house during childhood, Dylan Decker was playing business. It’s likely that playtime would conclude with a sweet treat that his mom, Gina Decker, baked in the family’s kitchen, as she describes baking as her “happy place.”

Though playtime was many years ago, business and baking now go hand-inhand in the form of Cakes & Goodies, a bakery business initially born in Gina’s home before becoming a brickand-mortar business in July 2023 at Northfield Square mall. While Gina does

most of the baking, Dylan is at her side overseeing the business end.

“This was our dream forever,” said Dylan, 30, who lives in Tinley Park with husband David.

He and Gina, 52, of Bourbonnais, both agree that they are not in it for the money but for the love of providing sweet treats to the community.

“For me, I get more satisfaction when I see that 5-year-old coming in and picking up his cake … that smile on his face does more for me than knowing how much they’re paying for it,” Gina said, noting

“the ‘oohs and the aahs’ remind me of why I do it.”

Dylan added that it doesn’t matter if it’s a new customer or someone they’ve known for years, “we take every transaction seriously.”

BAKING UP BUSINESS

While Dylan and his brother Branden (who lends a hand at Cakes & Goodies when needed) were growing up, Gina liked to bake from home while also working part time at Jewel in Bourbonnais. When one of the cake decorators on staff broke her wrist, Gina was brought to the front lines.

“I never knew that’s what I wanted to do,” she said, adding she was self-taught and never went to any classes.

She would eventually work for Nana’s Cakery before the family moved for a time to California. Upon the family’s return, Gina worked as a cake decorator at Kmart. Her endeavor with Cakes & Goodies marks her first-ever full-time job, and she’s certainly putting in the hours.

She approximates that she bakes six hours a day, six days a week. Including help from her apprentice, Isabel, the bakery sells between 600 and 700 cookies per week. And that’s just a fraction of the confection concoctions that move through the doors of the mall-based location (situated across from Kansai) and that are purchased at the Kankakee Farmers’ Market every weekend from May to October.

Theirs is a rotating menu that features new delights each week – from custom cupcakes and cake pops to tarts. Cakes & Goodies also offers specialty cakes, cookies and more for any occasion, from birthdays to weddings to divorce parties.

The most popular item – which never leaves the menu – is Mom’s Chocolate Chip Cookie, a staple in Gina’s recipe book for decades.

“It’s a simple recipe I’ve always loved,” she said.

As for their personal favorites, Dylan is partial to the chocolate-caramel-pretzel cookie which is a variation on Mom’s Chocolate Chip but featuring the saltysweetness of pretzel and caramel. Gina enjoys the apple pie tart which features a combination of different fresh-cut apples,

homemade streusel and iced with a cinnamon glaze. She describes it as apple pie in a cookie form.

In an effort to cater to anyone who walks through their doors, the menu also features gluten free and vegan items that go past the traditional vanilla and chocolate offerings.

“We like to have really out-there stuff, like an apple streusel or a brownie with cream cheese that’s [allergy friendly],” Gina said. “Something different all the time.”

‘IN

IT FOR THE LONG HAUL’

Dylan said that he and his mom have “a lot of big ideas” and are constantly working to make their space and their menu as fun and inventive as possible. Walking into Cakes & Goodies is almost like stepping back in time with an aesthetic flair from the 1960s and ‘70s, equip with music from the era.

Dylan explained he wanted it to feel like stepping into Grandma’s house – a Grandma who just happens to be obsessed with pink.

In addition to Saturdays at the farmers’ market, the business is gearing up to participate in Electric Lady Lounge’s annual Pride event held on June 15 at Knack Brewing & Fermentations, 789 S. McMullen Ave., Kankakee. Cakes & Goodies will be on hand with cakes and goodies. Additionally, Dylan and Gina are planning a first birthday celebration on July 6 at the mall where other vendors will be on site.

Because of Gina’s expertise in baking and Dylan’s prowess with the business and marketing ends, the company has seen steady support from the community.

Dylan said two things set them apart from other bakeries: they’re “very old school” and “very hands on.”

Both mother and son agree that they couldn’t do this without the other at their side.

“She is the definition of a badass,” Dylan said of his mother, sharing that she did most of the construction in the store front and built stands for the farmers’ market. “She’s worked very hard to get to this point.”

Trying to evade tears of joy from her son’s compliment, Gina said that Dylan encouraging her to make a baking Instagram two years ago took her on “a roller coaster of crazy, fun, exciting, what’s next?”

“I was always in my own way,” she said. “He came along and pushed me…There’s absolutely no way I could do this without him.”

The two agreed that the business happened naturally and reiterated that it’s not about the money.

“We’re in it for the long haul.”

It’s clear the duo is living into the message printed on the colorful pot holders hanging on the wall: “Don’t be afraid of whisks.”

Almost anything that you can grow in the garden can also be grown in a container. You just need to provide a few basic needs to your plants – a container, growing media, water, nutrients and light. What to consider:

ADVANTAGES/DISADVANTAGES

Container gardens can be mobile, allowing you to move containers around to take advantage of sunlight. This is helpful if you grow plants sensitive to cold weather as they can be moved indoors to extend the growing season.

You also have control over the growing media that is being used which can be adjusted to the type of plant(s) you are growing.

On the flip side, it tends to be more expensive than growing in-ground because containers and growing media need to be purchased. But there are ways to reduce costs.

WHAT TYPE OF CONTAINER?

Anything that can hold soil and has drainage can be used: a pot from the store, a bucket, a milk carton, or even a shoe or an old toilet. If you’re going to be growing something you plan on eating, it’s best to stick to a more traditional pot. If repurposing an item, clean it with soapy water and disinfect with 10% bleach solution.

GROWING MEDIA

Choose something that is well aerated, drains well, and can hold enough water for the plant to grow. Soilless media are generally the best option for container gardening and can be purchased commercially as all-purpose potting mixes, or you can make

your own.

Avoid using garden soils; they can contain weed seeds and pathogens and often don’t drain well enough to be used in containers.

CHOOSING PLANTS

Large vining plants like pumpkins and squash will likely get too large for containers. Fortunately, there are bush cultivars of some of these crops that can be grown in larger containers. The same can be said for tomatoes. Indeterminate tomatoes often grow too large for containers, but determinate tomatoes stay smaller and are a better option for growing in containers.

When selecting a container, keep the size of your plants in mind. Smaller plants like lettuce, begonias, coleus and pansies can be grown in smaller containers (4-6”). While larger plants such as peppers, tomatoes, geraniums and some zinnias will need larger containers (12”+, or 2 to 5 gallons).

PLANTING AND CARE

Before planting, make sure to wet down your growing media

thoroughly. Then fill your container. Leave about one inch of space between the rim of your container and the soil. This will help prevent water from overflowing your container.

If growing your plants from seed, plant at the depth indicated on the seed package. It is usually a good idea to overseed and then thin the seedlings to the spacing indicated on the package since not all seeds may germinate.

If growing from transplants, use plants that look healthy.

WATERING

Growing media in containers will dry out much faster than soil in the ground. Plants vary in water requirements, but a general rule of thumb is that plants should be watered when the top inch or so of your growing media feels dry.

Water plants thoroughly until water starts to trickle out of the drainage holes. If using a plant saucer under your pot, make sure to dump any water that collects. This helps prevent soils from staying too moist and eliminate potential breeding sites for mosquitoes.

FERTILIZING

Soil-less media are usually low in nutrients. Because of this, plants growing in them may need to be fertilized at some point. You can use either slow-release or liquid fertilizers.

Utilizing thriller, filler and spiller plants is a common way to design container gardens.

1 TBL vegetable oil

2 poblano chiles, stemmed, halved and seeded

4 jalapeno chiles, stemmed, halved and seeded

1 can of black beans, drained and rinsed

2 cups extra sharp cheddar cheese, freshly shredded

2 cups Monterey Jack cheese, freshly shredded

3 green onions, white and green parts sliced thin

2 TBL Chopped Cilantro

Your favorite tortilla chips

Sour cream, store bought salsa, for serving

1. Prepare your grill (gas or charcoal) the way you normally would. Brush the corn and peppers with oil. Grill the corn and peppers over high heat until charred on all sides. Remove the peppers from the grill and place in a zip-top bag for 10 minutes. Remove the corn from the grill and set aside until cool enough to handle.

2. Cut the charred kernels from the corn and remove charred skin from peppers. Slice the peppers to desired size and place them in a bowl along with the kernels, beans, cilantro and cheeses. Spread 1/3 of the tortilla chips into a cast iron skillet and cover with 1/3 of the mixture. Repeat layers until there is no mixture remaining. Place the cast iron skillet on the grill and cover until the cheese is melty. Remove the skillet from the grill, top with sour cream, salsa, additional cilantro and sliced green onions.

WATERMELON SUGAR, HI!

From the Kitchen Of Paul Fruhwirth

SERVES 1

INGREDIENTS:

10 oz cut watermelon

1 oz tequila

1 oz triple sec

Fresh lime juice (2 limes)

DIRECTIONS:

1. Weigh the cut watermelon on a kitchen scale until you reach 10 oz. Alternatively, it’s about 2 full cups of cut watermelon. Puree the cut watermelon in a blender until smooth. Using a mesh strainer, strain the blended watermelon into another container, pressing on any solids to extract as much juice as possible. Add the strained juice back to the blender and puree again, another 30 seconds. Strain the juice one more time to ensure no pulp. Add the juice to the blender one more time, along with tequila, triple sec, lime juice, and honey. Blend together for 30 seconds.

2. Moisten the rim of a margarita glass with water or lime juice. On a small plate, mix the granulated sugar and lime zest. Dip the moistened rim into the mixture and cover the rim in lime sugar. Pour the watermelon margarita over ice and enjoy!

The inaugural presentation of Yarn Factory Listeners: Kankakee Storytelling was held April 9 at Flanagan's Irish Pub and was hosted by Bill Yohnka.

The free event featured six storytellers who shared eightminute true, personal stories.

In partnership with Kankakee Podcast and Kankakee Public Library, the unusual name of the event was derived from the idea of yarn being a story, factory being a place for creation and listeners being the audience giving their full attention to others who have crafted a personal tale.

Presenters included Dameika J. Rosenthal, Scott Whitehair, Alexandra Avans, Tomika A. Talley, Terry Streetman and Deb Terrill.
