Pillbug – a cardboard boat specifically designed to cross Swanson Pool in St. Charles – were optimistic June 28 as they prepared to compete against other kids in the Sink or Swim Cardboard Boat Race. They wanted to know how many laps they needed to complete. “They said they are going to paddle to the end and chant to the end,” said Marsha Buvary, whose children, Albert, 10, and Anna, 7, navigated the boat with Brady and Brett Barnes, 9 and 11, respectively. But their handmade boat – along with most others – didn’t make it across the width of Swanson Pool without the kids somehow in the water. Melissa Weaver, aquatic supervisor with the St. Charles Park District, noted two boats made it across. “I would call that a success,” she said of the new park district activity. Because cataracts are the world’s leading cause of blindness and affect nearly 22 million Americans aged 40 years and older, there is a great deal of curiosity as to why and how they form. The most recent research on the matter shows that one of the crystallin proteins in the eye lens may be primarily responsible. Of the three water-soluble proteins found in the eye, two help form the structure of the lens. The third crystallin protein helps keep the other two from clumping together and forming a cataract (clouding of the eye lens). According to researchers, there is a finite number of these “helper” proteins, and when they are gone, the lens is more vulnerable to cataract formation. P.S. The information about cataract formation discussed above may someday lead to new preventive treatments.

Have you ever seen a barn dance? Or a record skip? How about a parachute jump? Terrible jokes aside, there’s a hopping good night of old-fashioned fun on tap at the annual Primrose Farm Barn Dance, which will take place from 7 to 10 p.m. Saturday, July 19. Under a starlit sky, near the glow of a cheery bonfire, visitors can swing, stomp and boogie their way back into history, to a time when such terpsichorean entertainment was the height of a farm community’s social calendar. Primrose Farm is a restored, 1930s’-era working farm, located at 5N726 Crane Road in St. Charles. At that time, of course, the country was in the throes of the Great Depression, and community dances were a relatively inexpensive way to escape the challenges daily life presented. While city dwellers might have headed to a nearby ballroom to listen to the era’s big bands, such as Glenn Miller and Tommy Dorsey, and do the big apple or fox trot, farm folk gathered at a neighbor’s barn where a local band could raise the rafters with its own renditions of the popular swing music of the day. Farmers and their wives and sons and daughters would do the Lindy hop, the jitterbugging dance named in honor of aviator Charles Lindbergh’s 1927 non-
stop solo flight to Europe. Primrose Farm Manager Kirk Bunke said these barn dances often reflected the musical tastes of the host family. An organization called the Farmer’s Club was formed to provide farm improvement support and information, but quickly became an entertainment outlet. “They’d rotate from farm to farm around St. Charles Township, Campton Hills and Wasco and the music they played would vary according to the tastes of the farmers who were hosting the dance,” Bunke said. As always when it comes to music, these tastes often ran along generational lines. Some of the older generations of farmers preferred more traditional square- and folk-dance music for their barn dances, said Bunke, while the young Anderson family, one of the original owners of the land that is now Primrose Farm, was very much into jazz and swing, popular musical styles of that time. The Andersons would feel
right at home at this year’s Primrose Farm Barn Dance. Set to the music of the Fox Valley’s own Jake Sanders Quartet. Visitors that night can Lindy Hop to their heart’s content. What’s that? You don’t know how to Lindy Hop? No problem. Members of the staff of Tri-City Swing will be on hand to give dance lessons starting at 6:15, before the official evening gets started. Want to get into the swing of things even more? Wear vintage casual dress to really get in the mood. Soft electric lights will transform the barn into a country cabaret, and lanterns will bring a festival mood to the adjacent barnyard, where little ones can sip sodas from glass bottles and munch on freshly-popped popcorn. Because all this dancing is sure to work up an appetite, Primrose Farm is also hosting a pie-baking contest that night. Dust off grandmother’s secret recipe for her famous Sunday pie and compete against other area cooks for bragging rights. Entries will be judged based on appearance, as well as taste, so channeling one’s inner Betty Crocker may prove to be the winning strategy. Tickets to the Primrose Farm Barn Dance are $10 per person in advance, or $15 at the door. So dust off your dancing shoes and Lindy hop on over to Primrose Farm for a toe-tapping good time.

CHARLES – It didn’t take long for the reopened McDonald’s on the west side of St. Charles to draw in customers. “We actually had people lined up before we opened,” Brandon Ross, McDonald’s area supervisor for Yanni Management, said July 3. The restaurant, 1915 W. Main St., opened its doors to the public at 5 a.m. July 3 after being closed for more than four months. The company’s typical 90- to 100-day turnaround on building projects was delayed in part by on-andoff inclement weather since the store closed for construction Feb. 23, Ross said. ST. CHARLES TOWNSHIP – Step into the Anderson Animal Shelter in St. Charles Township, and the 40-year-old building virtually rocks from all the barking. Volunteers and staff June 27 were introducing cats and dogs to families for possible adoption in a small, crowded foyer at the facility near South Elgin. The barking comes thundering from a hallway where the dogs are in kennels. Outside, the parking area was full, and visitors were putting their cars on the side of the driveway. But new times are coming to the shelter, said executive director Beth Drake, as a $660,000 renovation project will begin this fall. It will transform the facility, so it will meet new models of animal welfare care, as well as expand the parking area and

The shelter operates under a low-kill philosophy, and its goal is to eliminate the euthanasia of healthy, adoptable animals, according to its website. Some animals will be moved to a satellite location – still to be determined – so adoptions can continue while the shelter is closed for renovation, she said. “The transition to a shelter environment can be very stressful for dogs and for cats,” Drake said. “Oftentimes, it can be very helpful to engage foster homes and get the animals out of our facility so that they can learn manners and work on potty training and those kinds of things. Regardless of how wonderful a shelter is, it is an inherently stressful place to be.” The caging areas need to updated to be in line with research and advances in animal welfare and housing she said. For example, cats currently are housed in small, stainless-steel cages and dogs in chain-link kennels – neither is ideal for them, Drake said. Instead, adoptable cats would be housed with other cats in colonies or large “kitty condos” with perching and sleeping ledges, while adoptable dogs would be housed in small rooms instead of in kennels, she said. After Drake became director on May 14, she said they implemented a variety of activities – such as dog play groups – to increase the adaptability of their shelter animals in advance of its redesign. Dogs who play well with each other are allowed to interact with each other under supervi-

sion, allowing them to expend energy and have positive socialization. “Housing dogs in kennels in shelter away from other dogs – near other dogs but not allowing them to interact with other dogs – is very detrimental to the health of these dogs,” Drake said. “Over time, they lose that ability to read each other’s behavior, and it’s extremely stressful,” Drake said. “And if we send them home with a family, they’ve got these dogs that have no idea how to interact with other dogs, and oftentimes they can become aggressive and display really inappropriate behaviors.” Playgroups, implemented just within the past month, have made a difference for the animals, she said. “But in the end, they still go back into inappropriate cages, and we have to address this problem,” Drake said. Marco and Patricia Muscarello, on behalf of the Ivar and Ruth Animal Anti-Cruelty foundation, have provided $200,000 toward the renovation project and another $200,000 for another area of work, Drake said. Although the renovation will proceed starting Sept. 1, the shelter still needs to raise at least $400,000 to cover the cost, Drake said. “The Unknown Soldier” is leaving Custom Furniture in St. Charles because of the store’s closing after 75 years. Wyman “Clint” Carey bought the wooden soldier and is moving it to his barn in Pingree Grove. The owners of Custom Furniture, Richard and Carolyn Pakan, are closing the store because they said they have decided to retire. Carolyn Pakan said she thinks the residents of St. Charles will be “devastated” the wooden soldier is leaving. She said it was a “landmark” and people would stop in the middle of Route 25 to take a picture of it. Andrew Pakan, father of Richard Pakan and original owner of Custom Furniture, found fallen 100-year-old oak trees on his property, said store manager John Pakan, son of Richard and Carolyn Pakan. In honor of the upcoming U.S. bicentennial, he decided to craft a Revolutionary War soldier out of the wood, John Pakan said. He completed the soldier on July 3, 1976, just in time for the bicentennial. He dedicated the structure to unknown soldiers who died in the Revolutionary War and were never properly documented, John Pakan said. To complete the structure, Andrew Pakan needed to raise the soldier’s head and place it on top of its body. Instead of hiring a crane, he did it himself using a rusted tractor, John Pakan said. The head of the soldier was placed on a bucket on top of the tractor, and the tractor started wavering back and forth. “My dad thought he was going to die,” said John Pakan. The head was so heavy it almost flipped over the whole tractor, he said. The soldier is 18 feet high, and just its head weighs 650 pounds, states the store’s website, www.customfurn.com. Carey, former president of Pingree Grove, had driven by the soldier many times, and his wife, Brook, saw a newspaper article about the store

He runs small businesses on his barn property in the Heritage District of Pingree Grove, so he thought his barn property on Reinking Road in Pingree Grove would be a good new home for the soldier, he said. According to Carolyn Pakan, Carey was one of several potential buyers of the soldier. She said she and her husband are “thrilled” to sell it to Carey because they feel he will lovingly and responsibly take care of the soldier, adding it takes a lot of work to keep up and it has been repainted numerous times. Carey said late this past month he has some friends who restore barns and work with big pieces of timber, and they will work on transporting the soldier. They will erect scaffolding around the wooden soldier and take it down piece by piece, he said. The pieces
then will be driven in a truck to the destination, Carolyn Pakan said. The transportation work will start in the next couple of weeks, Carey had said in late June. Restoring the soldier will take a lot of work, Carey said. Carey is thinking about setting up a kickstart campaign to help fund the restoration. The work involves not only taking the soldier apart piece by piece but also rebuilding and re-carving some parts, he said. Carey has hired carpenters in the winter to make sure the structure is solid and will last at least another 40 years, he said, adding the Pakans “know that it’ll be well taken care of.” Carey plans to unveil the wooden soldier to the Pingree Grove community next spring when it is restored. “We’re going to be really proud to give it our new home,” Carey said. “It will become part of this town.”

GENEVA – After 23 years as a judge in Kane County, F. Keith Brown is ready to step down from the bench. “It’s time for some new challenges,” the 57-year-old said. Brown’s retirement from his circuit judge post with the Judge F. 16th Judicial Circuit was ef- Keith Brown fective July 5. Days prior, on the morning of June 30, he had two meetings and one decision left, as well as the task of cleaning out his office in Courtroom 340 in the Kane County Courthouse. The downtown Geneva courtroom, which he first toured as a sixth-grader, was the site of such milestones as his swearing-in ceremony and his first jury trial as a judge – a case involving a Class X felony, Brown said. Like the other judges of Courtroom 340 before him, Brown has left his mark on the bench: His name is etched in the drawer for the two blocks of time he served in the courtroom. “I always thought that was kind of cool,” he said. Brown’s judicial career started in July 1991 with an appointment to associate
judge, which he served as the presiding judge of the traffic and family divisions. He also presided over such matters as DUI, mental health, small claims, juveniles, paternity, domestic violence and child support matters. He was elected as a circuit judge in 1996. Brown said he likely will be remembered most as chief judge, a title he held from 2008 to 2012. His accomplishments during his time include establishing the Kane County Branch Court in St. Charles, starting the process of upgrading the court case management system and creating ways to get more probation fees paid, he said. Brown is leaving with plans to stay involved with the county’s Judicial/Public Safety Strategic Planning and Technology Commission, which he chairs, and the regret of leaving Kane County without an African-American judge, he said. Brown, an African-American, said when he was a practicing lawyer, he represented a client who didn’t feel he was getting a trial before his peers. The jury members, prosecutors, bailiffs and all but one security member were white, he said. “Minorities were appearing in court but had no other role,” Brown said. Brown was the first African-American judge in the
16th Judicial Circuit, he said. He said he aimed to bring greater diversity to the bench, which includes women and Hispanics. Brown’s final days as judge included a retirement reception, as well as drop-ins by fellow judges. “It’s been an emotional week for me,” he said before his last official day. But he has accomplished about everything he wanted to accomplish as a judge, has maxed out his pension and doesn’t want to be defined just as a judge, he said. He is looking forward to doing mediation and arbitration work for Chicago-based ADR Systems, traveling, pursuing philanthropic work and spending time with his two grandchildren, he said. Brown’s retirement could lead to one fewer judge in the 16th Judicial Circuit because of a provision in the law which limited the 16th Circuit to Kane County and moved Kendall and DeKalb to the 23rd Judicial Circuit, Kane County Court Administrator Doug Naughton said. He said the law states the first resident circuit judge in Kane County to retire would result in the transfer of that position to the 23rd Judicial Circuit. Chief Judge Judith Brawka intends to ask the Illinois Supreme Court to authorize a new associate judge, Naughton said.

Area restaurant industry leaders share their favorite dining spots in Kane County By KARA SILVA ksilva@shawmedia.com When chefs and leaders in the beer and wine industry aren’t slaving away in their own kitchens, breweries or cellars, they too venture into the vast dining scene of Kane County, acquiring their own lists of gastronomical haunts and culinary hot spots. Niche executive chef Chris Ayukawa of St. Charles said the best way to discover where to eat and drink in the area is by word of mouth. “It’s probably easy for people who work in the restaurant industry because being around food and being around service ... everyone has a heightened sense of those qualities,” said Ayukawa, who created Niche’s new menu after taking the helm of the Geneva-based fine-dining establishment in April. “If you have friends who work in the [restaurant] industry, listen to them.” The Berkshire Pork Cheek and Grilled Lamb Chops rank among his favorite dishes on the menu he created, but Ayukawa – a self-proclaimed addict of Geneva-based Josef’s Elegante Meats & Deli sub sandwiches – said when he gets a rare reprieve from working in his own kitchen, he likes to take his wife to Bien Trucha in Geneva. “Everything on [Bien Trucha’s] menu is amazing,” Ayukawa said. “They like to play with flavors, and the drinks are always clever.” If Ayukawa isn’t grabbing a shot of whiskey and a cold PBR after his shift at Niche, he said – on occasion – he’ll end up with his line cooks at The House Pub in St. Charles. “All the cooks that work here are definitely beer geeks for sure ... [The House Pub] has an excellent selection of beer, great live music and a nice atmosphere; in general that suites people of our ilk,” Ayukawa said. Another brew-savvy patron is Batavia resident Tom Korder, the brewmaster of Penrose Brewing Company. Korder has a decade-worth of experience in the beer
industry, and when he isn’t sipping his favored Proto Gradus – a Belgian-inspired single ale – at his Geneva taproom, he’s usually at one of his favorite Geneva restaurants: A Toda Madre, Nobel House or Preservation Bread and Wine. Nobel House – which uses Penrose’s Proto Gradus in its Beer Mussels with Fries – has a solid craft beer selection, knowledgeable staff and “they do a great job with their outlook on food with beer,” Korder said. He cited Off Color Brewing’s Troublesome gose, a top-fermented beer that originated in Goslar, Germany, as another favorite craft beer, which is available at Binny’s and Nobel House. Roberto Avila, owner and executive chef of Altiro Latin Fusion in Geneva, started his career in the restaurant industry as a dish washer, having since held nearly every imaginable restaurant job in roughly 11-area eateries. When he’s not indulging in his restaurant’s Altiro tacos – pan-seared tilapia with mango salsa, pico-cucumber, arugula, chipotle aioli and Altiro vinegreta – Prince Edward Island Mussels (Al Mejillon) or Al Atun – a pink peppercorn, yellowfin ahi tuna dish – Avila enjoys Italian fare from St. Charles-based ZaZa’s Trattoria or Francesca’s by the River for their food and service. “For me, it’s very important that [a restaurant] is taking care of you,” Avila said in regard to what makes him a restaurant repeat customer. “I don’t like when people rush me. ... The food is very important, too.” Also a fan of Altiro’s Latin-infused offerings and margaritas is Geneva-based Chez Moi Café and Catering executive chef and owner Beth Cull, a Le Cordon Bleu-trained chef, who specializes in French fare, such as freshly-made quiches and – one of her

A St. Charles resident and married mother of two, Cull said she generally likes to cook for her children at home but enjoys keeping a low profile by dining in local pubs while out for dinner in the area. “My husband and I are really low-key people; we’re not fancy so we tend to go to the pubs,” Cull said, adding that she enjoys the Gaelic Grilled Tilapia with white-wine caper sauce, roasted potatoes and sautéed spinach at McNally’s Traditional Irish Pub in St. Charles. “I just love that fish, and I haven’t been disappointed yet.” Of vino connoisseurs and those just getting their tastebuds wet in the world of wine, Aurora-resident Mark Czubak, the sommelier and beverage manager of Atwater’s at Herrington Inn and Spa in Geneva, said, “The best way to know if a wine list is good or not is to ask questions about it, and see if anyone there actually knows
anything about it.” Atwater’s and Niche are the places for wine, Czubak said, adding that The Turf Room in North Aurora and Wildwood in Geneva also have strong wine lists. Currently, Czubak’s favorite Atwater’s wine is the Schäfer-Fröhlich 2012 pinot noir blanc de noir rosé from Nahe, Germany. But, his go-to, everday, affordable wine is the Emile Beyer pinot blanc. The Emile Beyer comes from Czubak’s favorite region for wine – Alsace, France – which he said is a key element in maneuvering a wine list. “Pay attention to where the wine is from,” Czubak said. “A lot of people pay attention to the grape too much. What will really allow you to explore more is to pay attention to also where [the grape] is from.” Though the places frequented by local chefs, a brewer and somm may differ, one thing remained a constant between the five of them: Service, quality and consistency tops the list in creating an ideal dining experience in Kane County.

A winemaker’s odyssey around the world Orion Stang did everything possible to become a winemaker. Stang, now the owner of Dilécta Wines, began his journey through wine at an early age. What started with family picnics in Paso Robles and Santa Barbara County, California, eventually led him to Italy, then back home to work domestically in highend restaurants. Eventually, he would take classes at the Culinary Institute of America. But it was a chance walk into a new winery on Anderson Road in Paso Robles, California, that led to the opportunity for which he’d long wanted.
Winemaker spotlight Stang fell for Rhone Varietals. Syrah, grenache and mourvèdre are the wines on which he humbly honed his craft. “When I walked into Booker, they weren’t even open yet,” said Stang when he walked into the Anderson Road winery. “They had an assistant winemaker, so I started in the tasting room. I started to show up on my days off. I was willing to work for free, and did so. For six months I farmed, drove
UNCORKED James Nokes the tractor and learned a lot. The farming and winemaking aspect was really beneficial. I absorbed everything I could.” Gradually, Stang moved from the tasting room to the vineyard. He eventually became a salaried employee as assistant winemaker before he set out on his own in 2011. He produced his first vintage at Herman Story Wines, where he continued to develop his winemaking skills. “At Booker I met a lot of good contacts,” Stang said. “Russell P. from Herman Story was one of them. He has an interesting winemaking style. He’s not very worried about sorting fruit. They are in and out. He has 200 plastic bins lined up and all these different fermenters. How he keeps track of everything is amazing, it’s wild. “At Booker there are 12 guys sorting. We’d pull every stem and leaf.
There would be bare grapes that look like a blueberry. In my wines I will do some sorting at the winery. But, I don’t think it makes that big of a difference. The stems add some complexity, actually.” With just over 200 cases made from a ton of syrah from Caliza and Alta Colina Vineyards and a ton of grenache from Live Oak Vineyards, Stang started small and began his endeavor to make small lots of wine with personal attention.

An iron-like minerality and underlying acidity tie together seamlessly. A 100 percent syrah blend from Caliza and Alta Colina vineyards in Paso Robles. “That gaminess has developed the last six months in the bottle,” Stang
said. “It is fruit forward but has luscious tannins that really rounds it out.”
Local news Galena Cellars had another banner showing at the Illinois State Wine Fair. The winery in bucolic northwest Illinois won two Governor’s Cups for its 2013 Eric the Red and its new Honey/Mead wine. Overall, Galena Cellars took home 11 awards.
Wine 101 Dilécta wines is all about family. Stang’s mother, Betty Wick, designed the wine-bottle art. His daughter has finger-painted the art on his business cards. “My mother has been incredible my entire career,” Stang said. “Whenever I’ve wanted to take a risk, she has told me to go for it.”

CHARLES – Not even the Cubs’ 106-year World Series championship drought can keep longtime friends and Cubs fans Scott Comperda and Frank Pavlek down. For them, a picture hanging in the Avenue Two Barber Shop in downtown St. Charles says it all. Posted on the back wall of Pavlek’s barber station sits a sketched picture of a man in a Chicago Cubs hat with a beard, seemingly looking for comfort. Behind his sunken eyes lies a story of 106 years worth of Cubs misery. The picture’s story began when Pavlek attended a party about 20 years ago and sketch artist V. “Jim” Roseili drew the picture, giving it to Pav-

he elongate the picture by sketching a copy of the beard and attaching a long strand of the “beard” (laminated paper) in which he inscribed every year the Cubs have not won the World Series since the last title in 1908. “It’s an illustration of the futility of the Cubs,” Comperda said. “Anybody can look at a certain year, and reflect on how long it’s been since they last won it.” For either new or returning customers, the picture is a natural source of conversation, and depending on which Chicago baseball team one supports, it could bring either tears or jeers. Memories of the 1984 NL Championship Series loss to the San Diego Padres and the 2003 NLCS collapse against the Florida Marlins are just two
of many instances throughout Cubs history that the picture signifies. It is a painful reminder for some Avenue Two customers, including St. Charles resident and loyal Cubs fan Chris Gibson, who has had Pavlek cut his hair for 26 years. Since his first haircut as an infant, Gibson has sat in Pavlek’s chair and watched the beard “grow” year-afteryear. “The look on [the subject’s] face says it all,” he said. “One day we’ll get to tear that thing down.” While it remains to be seen if the Cubs will return to the World Series any time soon, there is no shortage of optimism inside the shop, especially with the Cubs’ ascending minor league system earning rave reviews. “I predict the Cubs will
win the World Series in 2016 or 2017,” Comperda said. “It’s gonna happen, and when it does, there will be a celebration.” If the Cubs ever break the drought, there is a “special idea” Comperda has in mind but hasn’t finalized it yet. He’s kicking around potentially making the picture into some sort of shrine or special display, although he has ruled out the destroying of the picture, similar to what transpired at Harry Caray’s Restaurant in which the “Bartman ball” was blown up for a charity event. Until further notice, viewing the picture serves as a potentially cathartic experience for some Cubs fans. “I look at life like it’s halffull. When it comes to the Cubs, it’s half-empty,” Comperda joked.
