BMX Bash is soaring to new heights with extreme fun

By CAROL HAGGAS stcharlesrepublican@shawmedia.com Do an Internet search of the term BMX bike and one of the first things you’ll find will be YouTube videos of riders doing intricate tricks that seem to defy the laws of gravity. While holding on to the handlebars of these specialty bikes (BMX is an acronym for bicycle motocross), riders soar through the air, twisting their bikes – and their bodies –into contortionists’ positions, executing complete loops, forward flips, skyward jumps or balancing on the thinnest of edges before careening down a steeply pitched ramp to do it, or something else equally mind-boggling, all over again.

Luckily, anyone who wants to see this kind of aerodynamic show doesn’t need to park themselves in front of a computer screen. Instead, they can come from noon to 3 p.m. Saturday, Sept. 27, to the East Side Sports Complex and watch local riders ages 7 to 25 compete in the second annual BMX Bash, presented by the STC Underground, the community’s popular teen center.

Like its better-known cohort, the Skateboard Bash,

the BMX Bash is a celebration of this daredevil form of bicycling and a showcase where riders can demonstrate their mastery of tricks and stunts. It’s the brainchild of Dan Procaccio, teen recreation supervisor, who thought organizing a BMX Bash was a way of leveling out the playing field, so to speak, between skateboarders and riders.

“A lot of park districts have skateparks that prohibit the use of BMX bikes,” said Procaccio. “That’s not our policy. We want to recognize the viability of BMX as a recreational sport.”

And make no mistake – it is a sport. A typical BMX bike can weigh upward of 30 pounds. In a skatepark setting, riders build momentum as they accelerate to the top of a ramp, where they will per-

form tricks in the air using the handlebars and overall body strength and agility to twist and spin, hover and flip.

The more altitude they gain, the more room and time they have to accomplish these maneuvers. Back flips, front flips, spins of 360 degrees, poses that resemble tabletops and even Superman flying are all part of a veteran rider’s repertoire.

“You have to be creative to do this stuff,” said Procaccio.

“These kids are amazing,” agreed Darby Beasley, teen program and center director.

“There are professional-level kids coming out to this event.”

The BMX Bash is more than a chance to fly high and get high fives. It’s an actual competition, with judges from one of the area’s premier bike shops and a panel of the area’s most accomplished riders who will evaluate competitors on the level of technical ability and creative expertise demonstrated. Prizes are awarded for the top three competitors in each age bracket, 7 through 12 and 13 through 25.

But riders are in it for more than the prizes. They’re in it for the recognition, not only by the community but by their biking and nonbiking peers and elders.

“It’s a great way to bring

the whole BMX biking community together,” said Beasley, who notices older riders often take a mentor’s interest in younger riders’ skill and safety. “They’ll tell them what to watch out for and give them tips to perfect their tricks.

They cheer them on.”

And it’s a great way for current or aspiring BMXers to watch the best in the region. BMX competitions are still relatively rare in the Fox Valley, so the St. Charles Park District’s BMX Bash is a prime opportunity to see these athletes perform their tricks and stunts.

“We want to provide an outlet for people with this interest to participate in a professional competition and venue, to have their sport included in programming just like football camps or lacrosse workshops,” said Beasley. “The St. Charles Park District is giving them credence and recognition.”

Registration for the BMX Bash is $5, and while advance sign-up is recommended, bikers also can enter on the day of the event.

“It’s the most athletic event I’ve ever seen,” said Beasley. “The Park District is proud to recognize this athleticism.”

By BRENDA SCHORY bschory@shawmedia.com ST. CHARLES TOWNSHIP – Megan Bennett saw a need in the law enforcement community for times when a sworn officer’s family is going through a catastrophic illness, serious injury or death.

The daughter of a retired police officer herself, the St. Charles Township resident started Blue For Life in 2011 and serves as its executive director. The charity makes financial donations to any sworn Illinois police officer’s family in crisis.

“There are no charities that will step in and help if someone else in the family is going through an illness,” said Bennett, 39. “If they are taking care of a sick child or spouse, they are not always getting paid.”

A stay-at-home single mom with four children – 13-yearold twin boy and girl, an 8-yearold girl and 4-year-old boy –

Bennett said she works on the charity from home while her children are in school.

The first family to receive a Blue For Life donation was the family of Bloomington Police Officer Jeremy Cunningham, a few days after his daughter, Alexa, then 15 months old, was diagnosed with brain cancer.

“We took my daughter to the hospital in Peoria for an MRI,” his wife Sara Cunningham said. “We expected to go home the same day, but as soon as left the parking garage, the doctor called and said, ‘You need to come back and admit your daughter.’”

Cunningham said she spent the next 10 days in the hospital with Alexa while her husband used up his sick days and drove back and forth. Although their medical expenses were covered, all the other incidental costs were not.

But within a few days of Alexa’s diagnosis, financial support came from Blue For Life – and it just blew them away.

“It definitely helped,” Cunningham said. “I had not heard of Blue For Life. Then all of a sudden, I saw they made a donation to us. We don’t know these people. They don’t know us. ... I still do not know how they heard about us.”

Alexa, now 2, has no evidence of tumor at this time, Cunningham said.

Cunningham and Bennett met for the first time at a recent fundraiser for the charity. She said Bennett stayed in touch about Alexa’s condition.

“Megan is so passionate about this charity, and she wants to help so many people,” Cunningham said. “She calls Alexa their ‘Blue For Life Baby.’ That was really special to me as well. ... They are like our family now.”

Bennett said would not say the amount given to specific families, but $1,000 is the most that is donated.

Others that have received donations include a police officer’s family whose 12-year-old

daughter died of heart problems, a DuPage County Sheriff’s Deputy’s wife with brain cancer and the family of a Wauconda police officer who was in hospice and died a couple of days later, Bennett said.

More recently, the charity made a financial gift to a state trooper’s family whose 3-year-old child accidentally drowned at a family party, Bennett said.

Bennett has some first-hand experience with a sickness in the family when her uncle, a Cook County Sheriff’s Deputy, died of cancer in 2006. Bennett said he worked all through chemotherapy and then was given a desk job until he went into hospice care in his home.

“As I was growing up, I was cognizant that if something happened to my dad – I do not know what my mother would have done, financially,” Bennett said.

“Police work is such a hard job. It’s so stressful that financial concerns over health of a

loved one can be too much,” Bennett said. “No amount of money can make anybody feel better after losing a child, but if we can help alleviate a financial burden, they can focus more on being a family.”

Bennett said the organization’s bylaws state 80 percent of all donations go to law enforcement families and 20 percent cover their expenses.

Eleven lodges of Fraternal Orders of Police and patrol officers’ associations are Blue for Life’s founding sponsors, according to its website, www. blueforlife.org. Bennett said the lodges put up the money for the charity application and start-up fees while she learned how to start and run a nonprofit organization.

“We are getting name recognition, slowly but surely,” Bennett said. “My goal is to be national. We’re doing baby steps make to sure we’re doing everything correctly. We want to become a known charity in Illinois first.”

“You could see Jenny [McCarthy] through the window,” Wells said. “The security kicked us out ... we were right up against the glass.”

There was a noticeable security presence outside of Hotel Baker all weekend, which continued to intensify Aug. 31, when the sidewalk on the north side of Main Street was closed off from the east end of the Main Street bridge outside of the St. Charles Municipal Center to right before the northeast corner of Main and Second streets.

Two St. Charles police officers flanked the east and west sides of the hotel, and St. Charles police squad cars continually moved up and down Main Street in front of the hotel. A black unmarked squad car was parked near the west end of the bridge most of the afternoon Aug. 31.

Skinner heard about the wedding from her friends, who had been outside of the hotel Aug. 30. Then she read about it in the Sunday papers.

Skinner was near the hotel for about five hours Aug. 31, ready to take pictures of any possible celebrities with her iPhone. She was joined on the south side of Main Street by several other people and cameramen from two different

NERVOUS ABOUT A TWITCH? Involuntary twitching of the eyelid (usually the lower lid), known as “myokymia,” tends to occur mostly in one eye among young, healthy individuals. The twitching, which may last from several hours to several days, is due to contractions of a portion of the “orbicularis oculi” muscle or other facial muscles. The twitching is commonly triggered by stress, caffeine, and lack of sleep. By reducing these factors, the twitching can often be eliminated. However, if the problem persists on a daily basis for two months or longer, treatment with an injection of Botox may eliminate it. If myokymia starts in one eyelid and spreads to other parts of the face, further examination is strongly recommended.

P.S. If Botox injections do not eliminate myokymia, “myectomy” (surgical removal of the eyelid- and brow-squeezing muscles) may be required in severe cases.

ST. CHARLES – The area of downtown St. Charles near Hotel Baker was filled with onlookers for most of Labor Day weekend as word spread of a celebrity wedding with some celebrity guests.

Many news outlets reported that entertainers Jenny McCarthy and Donnie Wahlberg would be married over the Labor Day weekend in New York.

But then the couple was photographed Aug. 29 walking into the Hotel Baker in St. Charles.

The weekend continued with more candid photos and sightings of celebrities, including Wahlberg’s mother, Alma, on Aug. 30 on the First Street Plaza and Sherri Shepherd, McCarthy’s former cohost on “The View,” on Aug. 31, said Sharon Wells of South Elgin.

Wells said Shepherd was dropped off about 2:30 p.m.

The Kane County Chronicle, sister paper of The Republican, could not independently verify the account of Wells and other sources, but their sightings were corroborated by other onlookers who also took photos of the same people.

Shepherd had indicated on her official Instagram account she was catching an early flight to attend McCarthy’s wedding. She later tweeted from the wedding on her Twitter account.

Wells first got word of a local McCarthy-Wahlberg wedding Aug. 28 from two of her co-workers at St. Charles-based SmartSource. Her co-workers attended a sales meeting at a hotel on St. Charles’ east side and heard from some hotel staff members their building would serve overflow guests

Italian Steakhouse, located across Main Street from Hotel Baker, was noticeably full nearly all weekend.

Keaton O’Connor, a server at McNally’s Traditional Irish Pub across from the hotel, couldn’t figure out whether the increased business was from the holiday or the wedding. He said guests from the wedding, some with recognizable and often-photographed faces, patronized the pub all weekend. He declined to give names but said they obliged when other patrons asked to take photos with them.

People like Wells sat inside of McNally’s next to the windows the afternoon of Aug. 31 in the hopes of seeing someone famous across the street at the hotel.

“It’s fun,” Wells said. “What else are you going to do on a holiday weekend?”

ST. CHARLES – A restaurant offering American cuisine with a twist plans to open in early September, its owner said.

Hampshire residents Nathan and Amanda Drafall plan to open Top Table restaurant to the public for dinner during the first weekend in September at 1 W. Illinois St., Suite 170, in St. Charles. The St. Charles City Council on Aug. 18 voted 8-2 in favor of a liquor license for the restaurant. Ward 4 aldermen Jim Martin and Jo Krieger continued their longstanding practice of voting no on liquor license requests.

Nathan Drafall said he remembers going to the restaurant when it was known as Erik & Me when he grew up in Elgin. The restaurant also was known as Sage Bistro and was called Bistro One West when in closed in November 2012.

Top Table will offer American cuisine with a twist, including steak and seafood. The restaurant will only offer dinner for a few weeks before it rolls out the rest of its dining options, which will include weekend brunch. Later in the fall, Top Table will be open for lunch and weekday breakfast.

Cadence, Northwestern integration begins

The merger between Cadence Health and Northwestern Memorial HealthCare is finalized, the organizations announced last month in a joint news release.

As of Sept. 1, Cadence will be formally integrated with Northwestern, and they will operate under the Northwestern Medicine brand name, according to the release. The four hospitals in the health systems are Delnor Hospital in Geneva, Central DuPage Hospital in Winfield, Northwestern Memorial Hospital in Chicago and Northwestern Lake Forest Hospital in Lake Forest.

The Cadence name will be phased out as a result of the merger, Chris King, Cadence Health senior manager of public relations, said in a phone interview.

“Anything under the Cadence umbrella is now part of Northwestern Medicine,” King said, including the Cadence Cancer Center that opened in 2013 on the Delnor campus.

Rivers Edge Bar and Grill replaces O’Brien’s in Batavia

Rivers Edge Bar and Grill recently opened at 12 N. River St. in what formerly housed O’Brien’s Pub and Grill.

“We serve classic American bar food made fresh and the right way,” said Richard Kaniuga, the restaurant’s executive chef.

Jody and Joel Hutchison, who also own White Tavern in Naperville, opened Rivers Edge earlier this year.

“The bar has a lot of history,” Rivers Edge night manager Jason Hunley said.

“It was a way for them to step in and be part of the community.”

According to Hunley, the building dates back to the 1800s and has been a bar since the early 1900s.

Those who were regular customers at O’Brien’s will find that Rivers Edge Bar and Grill is sporting a new look. Along with the restaurant having new tables and chairs, the floors have been redone.

In addition, the bar seating has been expanded and additional big screen television sets have been brought in. Rivers Edge also has an expansive outdoor patio.

In addition, Rivers Edge features a new menu. Those who attended last weekend’s Batavia Block Party had the chance to sample the restaurant’s food.

Kaniuga is a graduate of the Le Cordon Bleu culinary program at the Cooking and Hospitality Institute of Chicago and previously worked at Clara’s Fresh Pasta and other restaurants in the Chicagoland area. Rivers Edge’s menu includes a wide variety of burgers, sandwiches, wraps and wings.

That includes the blue bacon burger served with crispy bacon, crumbled Gorgonzola cheese, tomato, grilled onions

and mesclun mix, all on a pretzel bun with garlic mayonnaise; a grilled threecheese sandwich with American, cheddar and pepper jack cheese on grilled sourdough bread; and the cilantro chicken wrap with grilled chicken, cilantro, lettuce, mixed with fresh salsa, and a touch of chipotle mayonnaise.

Rivers Edge serves hand-pressed, half-pound burger patties. For vegetarians, Rivers Edge also serves a portabella mushroom sandwich.

“It’s been a popular item,” Kaniuga said.

North River Street features several restaurants. Hunley said he hopes Rivers Edge adds to the vibrancy of North River Street and downtown Batavia.

“I think whatever is great for one business is great for all of them,” Hunley said.

Rivers Edge also showcases local entertainment, including an open mic night on Tuesdays and a monthly Slam Jam, where local musicians play together.

“It’s a great way for artists to showcase skills and play off each other,” Hunley said.

Rivers Edge also has a trivia night.

ational Geographic’s WILD is bringing nature back with its new series “Pond Stars,” a show that plucked its title characters right out of Kane County.

In its first season, the show follows local water-feature specialists Greg Wittstock (“The Boss”), a Wayne resident and owner of St. Charles-based Aquascape – a supplier of water gardening supplies – and longtime co-workers Ed Beaulieu (“The Scientist”) of Sugar Grove and Brian Helfrich (“The Foreman”) of Downers Grove, as well as new guy Chris Hanson of Naperville.

Filmed locally, and in other U.S. cities, “Pond Stars” aims to reconnect a digital-dependent society with nature by transforming dreary backyards into tranquil retreats. Cameras capture individual projects carried out by the Aquascape team, including an oasis at Kaneland High School, a zoo habitat project, a backyard remodel for a football-team owner and a healing garden for a cancer survivor.

“Pond Stars” premieres at 9 p.m. Tuesday, Sept. 9, on Nat Geo WILD. Features editor Kara Silva got a chance to chat with “Pond Star” character Beaulieu about his role on the show, reconnecting with nature and his first foray in filming reality TV. Kara Silva: Well, first off, congrats on the show. Are you pretty excited for it to premiere?

Ed Beaulieu: Yeah, you know what? I am. Because we’ve spent so much time filming over many, many months, talking about it, doing all the filming, traveling all over the place and, now, all of a sudden, we’re actually going to see something.

I’m also a little bit nervous because you don’t know how it’s going to turn out. We don’t see all the footage and everything; we see little bits and pieces.

Silva: How did the idea for “Pond Stars” the TV show come about?

Beaulieu: It actually had started years ago.

[Aquascape’s] main business is the design, [building] and installation of water features throughout the Chicagoland area, but we also have another element of our business, which is the manufacturing and training of the people for the products that we install.

So, with that, we have always done training videos, books, magazines, articles, blogs, Facebook, Youtube [and] that went out to landscape contractors and professional installers throughout North America.

Somebody – a production company – had actually watched one of those videos; they found them on Youtube and liked what they saw. This happened years ago, and nothing happened.

This happened multiple times. And then finally about two years ago, another production company came to us with the same exact story.

We said, “Yeah, no problem, we’ve heard this before.”

We made another video with them, and – this time – the timing was right or they put it in the right person’s hands or whatever, and we ended up

getting contacted by a network.

Silva: What do you want people to know about this show? What’s the premise?

Beaulieu: The premise of the show is pretty simple. What we’re doing is we’re trying to take ordinary people in typical suburbia and we’re trying to give them a wildlife experience.

So, by adding that aquatic element, putting in some sort of a decorative water feature or small pond, you will bring in a lot of life from the surrounding area. It’s turning it into this little microworld in your backyard.

Silva: How did you land a spot on “Pond Stars”? Were you always in the running and always a part of it or did you have to audition?

Beaulieu: I was always in the running, and I think it’s because I was one of the first people hired [at Aquascape] and I had designed and built over 1,500 water features throughout the world. So, between Greg, Brian and myself, we have the most experience in the company in doing this.

Silva: What is your role on the show?

Beaulieu: So, there are three main characters: Greg is the owner – he’s the boss guy;

Brian is the foreman, so he is in charge of the installations; and, my degree is in zoology, so I have that wildlife background, and I specialize in aquatic biology.

So, I am known as the scientist on the show.

Silva: So, you’re the brains of the operation?

Beaulieu: [Laughs.] Yeah, well all three of us have a lot of brains, but I kind of take it to a science, nerdy level, I guess you could call it.

Silva: “Pond Stars” is a reality TV show. Were you a fan of reality TV before making your own show?

Beaulieu: Oh, yeah. Absolutely.

Reality TV is the norm, so there is such a diversity of programs on TV right now. You can literally find a TV show on anything that you’re interested in, and because of my background in science and everything, I am a National Geographic junkie so I was thrilled when I found out we were with National Geographic.

Silva: Is the show scripted?

Beaulieu: It is not. It’s not scripted at all.

Silva: What was the filming experience like? Was there anything that you

learned about making reality TV that you didn’t initially realize before going into it?

Beaulieu: Oh my God, pretty much everything. I mean we had no clue. We’re going into this with our basic understanding of how we would film one of our training videos. But when you have a full blown production company ... there are more of them on the job site than there are of us actually working and installing the features.

They’re trying to weave a full blown story out of what they see. We’ll have 100-plus hours of footage for one episode, so how they can condense all of that footage down to one episode – to me – is a daunting task.

Silva: Is any of the show filmed in the Kane County area?

Beaulieu: It is. There are multiple things filmed in Kane County. ... I would say out of any other place in the country, we have more filmed in Kane County than anywhere else.

Silva: Why do you think people will be interested in watching a show like this? What will they get out of it?

Beaulieu: In today’s world everybody has a very hectic life, high stress jobs, and we’re always running to take the kids to ball games, soccer practice, whatever. ... There are direct correlations between stress relief and having an aquatic element.

The other thing is, during the construction process in suburbia, we’ve had to – unfortunately – destroy or move and displace a lot of local wildlife.

So, all of these animals that normally live in Kane County have been displaced and pushed out to the outer fringes.

So, by us doing these little backyard oases, we’re inviting some of that wildlife back in, which I think is very important.

Crafton thinks in terms of evolution rather than revolution.

“There’s no magical formula I received when I was promoted,” Crafton quipped. “There’s not a key to a locker with the 1973 formula. We look at every vintage as a challenge rather than a chance to replicate past success. We want to continually refine what we do and make more elegant and complex wines.”

That is exactly what Crafton plans to do with the 2014 vintage. Despite a three-year drought, the 2014 crop yields are only slightly lower than 2013. A rain storm arrived four weeks before bud break, but as winemakers around California have reported, the fruit is still of high quality. It just matured earlier this year.

“2014 looks like another great vintage,” said Crawfton, who added this year is similar to 2004. “I’m excited to get to sink my teeth into the program on a bigger scale.”

“I didn’t expect a promotion.

My first thought was, ‘Wow, this is awesome.’ For [Chateau Montelena CEO and Master Winemaker] Bo Barrett to have so much faith in me is humbling and exciting. It really got my blood flowing and reenergized me to think about the future.”

Napa Valley earthquake Pictures of shattered bottles and overturned barrels dominated my Twitter feed after a 6.0 magnitude earthquake struck Napa Valley County the morning of Aug. 24. Adam Lee had the best plan to help wineries.

The owner and talented winemaker at Siduri took to social media and used his Twitter handle, @SiduriWines, to encourage his followers to buy a bottle of Napa Valley wine.

I bought Titus, Napa Valley Cabernet Sauvignon, 2010 ($45), a wine with deep purple color, very focused with fruit notes of strawberry and blackberry.

There’s cedar in the mid-palate, loamy earth and some ripe plum and dried cherry notes on the finish. It was a big wine for a Monday night, but it was for a worthy cause.

“Fortunately, the Chateau Montelena team is safe and we have not sustained any damages to our facility or inventory,” Montelena spokeswoman Sonia Meyer wrote via email. “Our deepest sympathy and prayers go out to those in the valley who experienced the worst of the earthquake.”

Rakkar joined the club from Boise on July 28. Second baseman Daniel Lockhart, a Cougar for all of 2014 after spending the majority of last season with the Hawks, can attest to his observation.

“I think the vibe’s really been the same all year,” Lockhart said. “I mean, no matter what guys come up or down, we still have kind of the same core concept as far as winning

and trying to be the best that everyone can be to contribute. No matter if there’s a guy that gets sent down or sent up, whenever there’s a new guy, they seem to be buying into the system that we kind of set for the first part of the season.”

That system, in short, translates to picking teammates up whenever possible but still knowing not to press.

There’s always another player in the lineup, field or bullpen – or in the Cougars’ case, the Cubs’ minor league system – eager to try the same.

“These guys never quit; they never give up. It’s just been really fun to watch for the last five months. Just an incredible group of guys, an incredible staff and it’s just been fun,” Cougars manager Mark Johnson said.

“Everybody enjoys coming to the field every day, working and doing everything. I know winning helps, but it also helps that people enjoy doing their job and everybody gets along and plays well together and practices well together and rides the bus well together. And that all counts. So it’s been cool. ... A lot of cool things have happened.”

Organic diet not for everyone A little less than half — 45 percent — of Americans actively try and include organic foods in their diet, but 15 percent go out of their way to avoid them, according to a new Gallup poll.

The remaining 38 percent indicated they “don’t think either way.”

Active interest in an organic diet is highest in the West, where 54 percent of respondents placed an importance on their inclusion. The East had the lowest interest, where only 39 percent actively try and include organic foods, while 18 percent intentionally avoid them.

Younger respondents are more likely to seek organics, with 53 percent of those aged 1829 indicating they are of active importance.

Older respondents are only slightly more likely to go out of their way to avoid organics, but are much more likely not to give the matter much thought at all.

Quick and easy preserved lemons ! 6 small lemons, scrubbed ! 2/3 cup kosher salt ! 1 cup fresh lemon juice (from about 5 large lemons) 1. Wash the lemons, place them in a saucepan, and cover with cold water. Bring to a boil and cook for 5 minutes, or until the rinds have begun to soften.

2. Drain and dry the lemons well and cut each into 8 wedges. In a bowl, toss the wedges with the salt and transfer to a large glass jar.

Add the lemon juice and cover with a tightfitting glass lid or plastic-coated lid.

3. Let the lemons stand at room temperature 5 days, shaking the jar each day to redistribute the salt and juice. Store the lemons, covered, in the refrigerator for up to six months.

erries combined with sugar and bread may seem peculiar to Americans. But English Summer Pudding is nothing short of brilliant. Fresh summer berries are warmed with sugar and water until they give up their glorious juice, then placed into a bread-lined bowl. When left to chill in the fridge overnight, the bread transforms into a crimson-stained “cake” that oozes a cornucopia of juicy goodness when sliced open.

While the pudding is traditionally made with stale white bread, raspberries and red currants, we’ve jazzed up the recipe by using brioche, a rich yeast bread made with eggs, butter and sugar available in most supermarket bakeries. And instead of red currants, we used blueberries, strawberries and blackberries.

Really, any combination of berries will work. We don’t fuss too much. We even decided not to worry over the bread crusts and left them on. American ingenuity.

English Summer Pudding ! 8 cups assorted fresh berries (blueberries, strawberries, raspberries, blackberries), divided ! 1 cup water ! 3/4 cup sugar ! 1 T vanilla extract ! 1 (18-ounce) brioche loaf ! Whipped cream Mix 6 cups of berries with the water and sugar in a large saucepan. Cook over medium heat, stirring gently, until berries start to soften and sugar dissolves, about 15 minutes. Remove from heat.

Stir in remaining berries. Strain berry mixture, reserving all the juice and berries. Stir vanilla into juice. Line a 2-quart serving bowl with plastic wrap.

Cut a slice of brioche to fit the bottom of the bowl. Dip into juice and place in bottom of bowl. Cut the remaining brioche into wedges and dip each piece, one at a time, into juice. Place three-fourths of the juice-soaked brioche wedges against the sides of bowl pressing to remove any gaps.

Spoon berries into center. Top with remaining brioche wedges.

Cover with plastic wrap. Press down with your hands until juices rise to the top. Place a plate on top, and set weights on the plate (2 or 3 cans of soup work well). Refrigerate at least 8 hours.

To serve, remove weights, plate and top plastic wrap. Place a serving plate on top of bowl and quickly turn both over together, shaking gently, so that the pudding releases from the bowl. Remove plastic wrap. Cut into wedges and serve with whipped cream. Serves 8.
