Rainbow Pineapple Black Bean Salsa
Ingredients:
1 cup finely chopped fresh pineapple 1 (15-ounce) can black beans, drained and rinsed 1 cup frozen corn kernels, thawed 1 diced red or orange bell pepper 3 tablespoons chopped red onion 1 seeded and chopped jalapeno ¼ cup lime juice, plus more to taste ¼ cup chopped fresh cilantro ½ teaspoon ground cumin Salt and pepper to taste
Directions:
1 In a large bowl, toss together pineapple, black beans, corn kernels, bell pepper, onion, jalapeno, lime juice, cilantro, and cumin. Add salt and pepper to taste and additional lime juice, if desired.
2 Cover and chill in the refrigerator until ready to serve.
Prep time: 10 minutes Serves: 6-8
