Do you remember your first experience of drinking coffee? Was it a good or bitter taste? This is a story about the coffee culture cultivation as a social business in Kandy, Sri Lanka. Slowly this habitually tea-drinking country is having its first experience of drinking coffee. With this photo story I wish to convey how the revival of the coffee industry hopes to reinforce the fair relations between rural areas and cities, and the beautiful processes of coffee production. I also wish that someday you will also experience the delightful aroma of Ceylon coffee. はじめてコーヒーを飲んだ時のことを覚えていますか？その時の感想はどんなものだったでし ょうか。ただ苦いだけの体験だったかもしれません。この本は、 スリランカの古都キャンデイ を舞台にしたコーヒーの物語です。今、紅茶をこよなく愛するスリランカでそのはじめての経 験が広がっています。この本では、 コーヒーを通して構築される森と町の新しい関係や、栽 培や生産の過程の美しさをお伝えできたらと思います。そして、 ぜひ深みのある味わいのセイ ロンコーヒーをいつの日かお楽しみいただけたら幸いです。

KANDY AND PROJECT MEMBERS Kandy is the ancient capital and the second largest city in Sri Lanka.

It is also one of the most venerable places for Buddhists in the whole country. The temple and town were registered as a UNESCO world heritage site, so many foreign tourists visit. The people’s lives in this city are supported by belief. This coffee story began from this relatively conservative city.

In March 2013, next to the world heritage Buddhist temple, the Temple of the Tooth, like-minded project members were called upon to join the Ceylon Coffee revival project. キャンディは、 スリランカの古都で二番目に大きな都市です。また、町全体がユネ スコの世界遺産に登録されており、仏教の聖地でもあることから、国内外から多く の参拝者や観光客が訪れます。人々は信仰を大切にして暮らしています。そん な伝統を大切にする空気のある町で、 このコーヒーの物語ははじまりました。 2013年3月、世界遺産のひとつである仏歯寺の隣りにある宝石店の跡地に、 セ イロンコーヒー復活プロジェクトの同志たちが集結したのです。

セイロンコーヒー スリランカは、 かつてセイロンと呼ばれ、1860年代には世界第三位のコーヒー生 産国として知られていました。しかし残念ながらコーヒーの木を枯らすさび病の流 行によって、 その生産高は激減し、 コーヒーから紅茶栽培へと切り替えられた経緯 があります。それ以降、 スリランカではミルクと砂糖をたっぷり入れたセイロンティ が飲まれるようになりました。 三十年間続いた内戦が2009年に終わると、農村の暮らしを支えるために、政 府やNGOなどによって二万本のコーヒーの木が植樹されました。しかし、その後 それらコーヒーの木や実が適切に管理、生産されているとは言えない地域が多く、 現状として農民たちに利益をもたらす結果とはなっていません。日本の建設会社 の駐在員であった吉盛真一郎氏はその現状を知り、 タランガ氏とともに会社を立 ち上げ、森と町での支援をはじめました。彼らは活動の方針として次の三つを掲 げています。 「目に見えるフェアトレード」、 「コーヒー産業・文化の普及育成」、 「女性が安心して働けるプロフェッショナルな接客業の育成」 です。

CEYLON COFFEE Ceylon, modern-day Sri Lanka was renowned as the third biggest coffee producing country in the 1860s. Unfortunately, after the coffee tree suffered a serious disease, the production drastically declined and was replaced by tea. After this, people developed the custom to drink sweet tea with milk and sugar known as Ceylon tea.

After the 30-year-long civil war which ended in 2009, the government and some organisations planted 20,000 coffee trees to support the rural agricultural economy in the forest areas. These coffee trees, however, are not always well-managed and sales of the poor quality coffee do not actually contribute to the villagers’ lives.Mr Tharanga, a Sri Lankan and Mr Shinichiro Yoshimori, a Japanese expatriate working as an administrator on a construction site, recognised the problem and decided to act. They set up a company and started their activities in urban and rural areas with three goals: ‘Visible fair trade’, ‘Coffee-drinking culture and market development’ and ‘Professional service industry development for women’.

INTO THE FORESTS The project members explored the coffee tree planted areas and communicated with the villagers about their coffee situation. It is of upmost importance to wait until the coffee cherries ripen enough.

If the green cherries are cropped, they are only used for an instant coffee which means the sale price is lower than the ripened ones. An adequate level of knowledge and skill is necessary to produce good quality coffee. Manual work such as cropping and hand sorting are an essential part in the production of high quality coffee, though it requires patient concentration. プロジェクトメンバーたちは、 コーヒーが植樹された森を探しだして、住民たちとコ ーヒーの現状について対話してきました。コーヒーの生産においてまず大切な のは、 コーヒーチェリーと呼ばれる実が熟すのを十分に待ってから収穫することで す。もしこれを熟す前の緑色の状態で収穫してしまうと、 インスタントコーヒーの原 材料にしかならず、 そのため取引価格も低いものになってしまいます。質の高いコ ーヒーを作るためには、適切な知識と技術が不可欠なのです。特に収穫や優良 豆の選別は手作業で行われ、忍耐力と集中力が求められます。

The target of Natural Coffee is to increase the local customer ratio gradually. Their challenge continues. これまでのところお客さんの90パーセントは、外国人です。地元スリランカの顧客 の割合を少しずつ増やすのも目標のひとつとなっています。

Mr Shinichiro Yoshimori, the founder, lived in Sri Lanka as an expatriate for five and a half years, working for Japanese construction company. During this period, many tragedies shocked him due to the 30-year-long civil war which ended in 2009. The war generated many social problems such as poverty. The experience pushed him to contribute to the wounded society. At the same time, he was interested in the coffee trees which were planted around his dam project site by the government and NGOs. These coffee trees, however, are not always well-managed and sales of the poor quality coffee do not actually contribute to the villagers’ lives. This situation made him decide to resign from his job. Yet his company gave him approval to spend some of his work days for the coffee project without leaving the company. Although his assignment in the construction company changed from Sri Lanka to India, he visits Sri Lanka a few times every month for this project from India.

He and his team are making progress on this coffee project with three goals.

‘Visible fair trade’

Forest Unions were organised in two villages. The unions and Japan Fair Trade Cooperation made a contract about fair trade and opened a joint bank account to return the profit of the coffee business to the unions. The unions can use a part of the profit for the improvement of coffee production and to improve the lives of the people in the villages. The conference is held constantly in the cafe or villages. As well as the domestic consumption, two tons of the beans were exported to Japan in 2013.

‘Coffee-drinking culture and market development’

Mr Yoshimori believes people cannot imagine the value of coffee without actually experiencing the enjoyment of drinking coffee. Therefore, the cafe is a pivotal part of this project not only to invite customers but also to show how the products are consumed. As for the prices of coffee, it is relatively expensive in order to keep it fair trade. Hence, they make an effort to tell the story behind a single coffee bean and its benefits to enhance the value of Ceylon coffee.

‘Professional service industry development for women’

The service industry as a work place is not open enough to females. This first cafe in Kandy tries to improve the environment with a healthy image and through professionalism. Their motto is ‘Be professional, Offer the beauty, Build a good team’. The staff regularly have professional job training and evaluations. They also believe that the high standard of service increases the value of coffee.

I

stumbled on the Ceylon Coffee revival project through a friend’s post on

Facebook in March 2013. It read, ‘I have a professional service training session at the first coffee house in the second biggest city of Sri Lanka’. After enquiring for more details, it seemed that they not only pursued the project for economic reasons but also for a social contribution. The story left me feeling inspired that something interesting would happen. My friend helped me get in touch with Mr. Yoshimori who was living in India. On asking whether I could visit Sri Lanka to photograph his project, he gave me an immediate permission. My journey to Sri Lanka began.

Firstly, I was attracted to their three goals in this project. In particular ‘Visible fair trade’ seems important because it is not only for economical improvement but in addition it can motivate both the villagers and coffee house staff as they can see the coffee being produced and consumed first hand. This gives them an understanding of the value of the coffee that they sell and therefore inspires and motivates them to work.

Secondly, I have been interested in the process of coffee drinking culture cultivation in Sri Lanka because it is one of the essential topics of marketing that was of concern in my previous profession. Sri Lankan people are not used to drinking coffee except for the innovative people who live in the biggest city, Colombo. It is usually considered as a kind of traditional medicine for relieving their stomach discomfort. This story reminded me of my first coffee drinking experience where I remember the distinctly bitter taste.

However, the benefits of coffee and the image of becoming an adult made me think of this taste positively. This inspired me to document the work of the project members and the process of change in Sri Lanka where coffee is becoming more popular.

Lastly, the career path and entrepreneurship of Mr Yoshimori were interesting for me as well. Recently, serial mastery and a parallel career are becoming more important through our life. He found his own mission and set up his company in his late thirties whilst he worked for a major construction company. I respect his decision and challenge. I think it is crucial to consider the following points when we start work; what, with whom and why, because we definitely spend long time at work in our lives. This unique career development of Mr Yoshimori was something that fascinated me and one of the key reasons I chose to document the Ceylon Coffee revival project.

あとがき ファウンダーの吉盛真一郎氏は、 日本の建設会社の駐在員としてスリランカで五年半を過 ごしました。その間、約三十年間続いた内戦による数多くの惨状を目のあたりにしました。 2009年にようやく終結したその内戦は、貧困をはじめとする多くの社会問題を生み出した のです。彼はその現状を見て、何かスリランカ社会に貢献できることはないかと考えていま した。それと同時に、勤務していたダム建設現場のまわりに植樹されたコーヒーの木にも 高い関心を持ったといいます。残念ながら、 それらのコーヒーのほとんどは適切に収穫、加 工されていないため、 安く取引され村人の生活を豊かにするほどの利益を産んでいませんで した。これらの現状を見た吉盛氏は、建設会社の職を辞して事業に乗り出そうと決意しま した。しかし、 これまでの建設会社での仕事を継続しながら、一定の時間をコーヒーのプロ ジェクトに割くことが勤務先の会社から許可されたのです。そこで設立されたのが、 日本フ ェアトレード社という会社です。現在、吉盛氏の駐在先はインドへと変わりましたが、電話や メールでの打ち合わせをはじめ、一ヶ月に数回はスリランカに訪れてプロジェクトを推進して います。セイロンコーヒーのプロジェクトには三つの柱があります。ここではそれらについて 紹介いたします。 「目に見えるフェアトレード」 吉盛・タランガ両氏のリーダーシップにより、二つの村で森の組合が設立されました。二つ の組合と日本フェアトレード社の間では、 コーヒーを適正価格によって取引する契約が交わ され、 カフェでの売上の一部を組合に還元するための共同の銀行口座も開設されました。 組合は、 その基金を村の農業や生活向上のために使うことができます。組合会議は定期 的に村やカフェで行われています。また、国内消費に加えて、2013年には二トンのコーヒ ーが日本に輸出されました。 「コーヒー産業・文化の普及育成」 吉盛氏は実際にコーヒーを飲まないスリランカの人たちが、 コーヒーの価値を想像するの は難しいと考え、 まずはカフェを設立することにしました。ただお客さんにコーヒーを提供す るためだけではなく、生産者である村人やサービスをするスタッフにも、 コーヒーがどのように 楽しんで味わってもらえるのかを知ってもらうために、 カフェは大切な役割を担っているので す。コーヒー一杯の値段は、 フェアトレードを維持するために高めに設定されています。そ のためプロジェクトメンバーは、 セイロンコーヒーの背後にある物語やコーヒーの効用を伝 え、価値を高めていく努力を重ねているのです。 「女性が安心して働けるプロフェッショナルな接客業の育成」 スリランカではサービス産業は女性の職場としてあまり開かれているとはいえず、健全な職 業としてみなされていないという現状があります。ナチュラルコーヒーはキャンディでの最初 のコーヒーハウスとして、接客業の持つイメージと実態を、健全でかつプロフェッショナルな

ものへと向上させようとしています。彼らのモットーは、 「プロフェッショナルであること、美し さを提供すること、 チームワークを大切にすること」の三つです。質の高いサービスを提供 することが、 コーヒーの価値を向上させると信じて日々取り組んでいます。 私がスリランカコーヒーのプロジェクトを知ったのは、2013年３月に知人がフェイスブックに 「スリランカの古都にできる最初のコーヒーハウスの接客トレーニングに行ってきます」 と 投稿したのがきっかけでした。詳細を尋ねるとそれは単に利益を追求するだけの活動では なく、社会還元も目指すものだとわかりました。面白いことが起きようとしているという直感 があり、 すぐに代表の吉盛氏を紹介してもらいました。吉盛氏にスリランカでの活動を撮影 させてほしいとお願いしたところ、 ご快諾いただき直ぐにスリランカ入りしたのです。 スリランカでは、吉盛氏からこのコーヒープロジェクトに対する確固たる信念を聞き、強い感 銘を受けました。特に先述した三つの目的の中でも、現地完結型フェアトレードの取り組 みは、 お金と農作物の公正な取引だけではなく、生産と販売・サービスの現場で何が起きて いるのかを目で見て理解することができ、 村と町のカフェ双方での人々の働きがいにも繋が ってゆく、非常に価値ある取り組みだと考えました。 また、 コーヒーを飲む習慣の無い国で、新たにコーヒーに価値付をしていく活動も魅力的で した。そう思ったのは、価値が認められていないものを人々はどのようにして好きになってい くかということが、 という私のもう一つの専門であるマーケティングの本質的なテーマでもあ ったからでしょう。スリランカでは、大都市コロンボで暮らす一部の先進的な人々を除き、 コ ーヒーを飲む習慣がなく、一般の人々はコーヒーを胃腸薬として飲んだりします。その話を 聞いて、 自分が子どものころにはじめてコーヒーを飲んだ記憶が蘇りました。はじめはただ 苦かったコーヒーが、 目が覚めるという効用や大人になったような気分になるという付加価 値を知ることで、気がつくとあの苦味をおいしいと思うようになっていました。不思議なもの です。ぜひこの過程もドキュメンタリーとして撮影したいと思いました。 最後に、吉盛氏の働き方や起業のあり方について強い関心を持ちました。近年、 パラレル キャリアや複数の専門スキルを繋げることで、 自分だけの専門性や職業を確立することの 価値が高まっていると言われています。吉盛氏は、 日本の大企業で財務・管理として働き ながらも、三十代後半で自分の果たすべき役割を駐在先の社会に見つけ起業しました。 しかも、 ユニークな職業の開拓とその仕事の専門性に加え、二足のわらじをタフにこなす 気力と体力の維持にも努めています。人生で仕事に費やす時間は膨大です。そんな時 間をどこでどのように誰と何をしたいのか、 それは私にとっても大きなテーマでもあり、その 点からも私は本プロジェクトに魅せられたのです。

AUTHOR Shintaro Kurihara I am a Japanese photographer who was born in 1977, currently based in London, United Kingdom. After having studied for a master degree in statistical analysis within social science, I worked as a marketer in Japan and China for eight years. The experiences of analysing markets with different cultural contexts and their customers motivated me to capture people’s lifestyles and the atmosphere of their society through photography. As a result, I moved to London and developed my photography at MA Photojournalism and Documentary Photography at London College of Communication, University of the Arts London.

栗原 慎太郎 1977年愛知県生まれ、 ロンドン在住のフォトグラファー。社会科学分野の統計解析を学 んだ後、日本と中国で、ITオーディオビジュアル分野のマーケティングに八年間従事した。 異なる文化の中での市場・顧客分析の仕事を通じて、人々のライフスタイルや社会の雰 囲気を写真で表現することに魅せられる。 その後、 ロンドン芸術大学ドキュメンタリー写真 の修士課程にて学ぶ。
