Two-Bite Burgers! ®

1 lb. ground beef (96% lean) 2 cloves garlic, minced 9 whole wheat small hamburger or slider buns, split, divided 1/2 teaspoon salt 1/4 cup minced onion 1/8 teaspoon pepper 1 egg white, slightly beaten

Topping Variations: Mango-Pineapple Salsa or Creamy Yogurt-Feta Sauce 1. Tear one hamburger bun into pieces. Place in food processor or blender container. Cover; pulse on and off, to form fine crumbs. 2. Combine ground beef, 1/2 cup bread crumbs, onion, egg white, garlic, salt and pepper in medium bowl, mixing lightly but thoroughly. Lightly shape into eight 1/2-inch thick mini patties. 3. Place patties on grill over medium, ash-covered coals. Grill, covered, 8 to 9 minutes (over medium heat on preheated gas grill, 9 to 10 minutes) until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. About 1-1/2 minutes before burgers are done, place rolls, cut sides down, on grid. Grill until lightly toasted. 4. Serve burgers in buns with Topping(s) Variation(s), as desired. Close sandwiches. Makes 8 burgers. Mango-Pineapple Salsa: Combine 1/2 cup finely diced ripe mango or 1/2 cup finely diced drained jarred ripe mango, 1/3 cup finely chopped fresh pineapple or 1/3 cup drained canned crushed pineapple, 1/4 cup finely chopped tomato, 1 to 2 tablespoons finely chopped jalapeño pepper, 1 tablespoon finely chopped fresh mint, 1 tablespoon fresh lime juice and 1/4 teaspoon salt in small bowl. Refrigerate until ready to use. Makes 1 cup. Creamy Yogurt-Feta Sauce: Combine 1/2 cup reduced-fat or nonfat plain or Greek yogurt, 1/4 cup reduced-fat or regular crumbled feta cheese, 2 tablespoons minced onion and 1 teaspoon chopped fresh oregano or 1/4 teaspoon dried oregano leaves in small bowl. Season with salt and pepper, as desired. Refrigerate until ready to use. Makes about 3/4 cup. Cook’s Tip: Cooking times are for fresh or thoroughly thawed ground beef. Color is not a reliable indicator of ground beef doneness. Serving Suggestion: Serve burgers with fresh or pickled vegetables. InGredIents:

1 head iceberg lettuce 2 tablespoons olive oil 2 teaspoons Worcestershire sauce 2 to 3 tomatoes, sliced 2½ pounds ground chuck 2½ teaspoons kosher salt 3 cloves garlic, grated or very finely chopped 3 scallions (green onions), chopped 6 multigrain hamburger buns 6 slices Swiss cheese Freshly ground black pepper Hidden Valley® for Everything Topping and Dip

InstructIons:

In a large bowl, using your hands, mix together beef, Worcestershire, scallions (green onions) and garlic, seasoning well with salt and pepper. Make 6 even patties and drizzle oil on both sides. Rest at room temperature for 1 hour. Place burgers directly on your charcoal grill. Sear patties until golden brown on the bottom then flip and sear until cooked through, about 5 minutes per side. Add cheese 1 minute before removing and allow to melt. Cook in batches, if necessary. Remove patties and cover lightly with aluminum foil. Allow to rest for 5 minutes before assembling. Serve on hamburger buns topped with lettuce, tomato and Hidden Valley® for Everything Topping and Dip. tIP: Having fries with that burger? Mediterranean Back Ribs with Pomegranate Sauce 5 lbs. pork back ribs 1 tbs. kosher salt 1 tsp. black pepper, freshly ground 1 16-oz bottle pomegranate juice, 100% 2/3 cup ketchup 1 tbs. molasses 1 tbs. soy sauce 2 scallions, white and green parts, chopped 2 cloves garlic, minced

Season ribs with salt and pepper. For a charcoal grill: prepare an indirect medium-hot fire with drip pan in the center. For a gas grill: heat grill to medium and turn off burners directly below where ribs will go. Lightly oil cooking grate. Place ribs over indirect heat (over drip pan or unlit burner). Close grill hood and cook until ribs are tender, about 1 1/2 to 2 hours. (If using charcoal, add more charcoal briquettes to fire, if necessary, to maintain grill temperature of about 325-350 degrees F.) Meanwhile, bring pomegranate juice to a boil in medium saucepan over high heat. Boil until thickened and reduced to about 1/3 cup, about 15 minutes. Stir in ketchup, molasses, soy sauce, scallions and garlic. Bring to a simmer. Cook, stirring often, until slightly thickened, about 5 minutes. During last 20 minutes of cooking ribs, baste ribs with sauce. Ribs are done when meat pulls away from the bone. Yield: 6 servings, (4-rib slab per serving )

Instructions: Prepare grill (medium-high heat). Brush sliced Vidalia onions with olive oil, season with salt and pepper. Grill onion slices and peach until tender, about 4 minutes per side. Thinly slice peaches. For the dressing, simply whisk together all ingredients in a bowl. In another large bowl, toss together the salad, freshly grilled sliced peaches and Vidalia onions. Drizzle with dressing and sprinkle goat cheese on top. Serve immediately.
