FESTIVE HOT APPLE CIDER Active Time : 10 minutes Total Time : 1-2 hours Serves : 16 (8 ounce) servings

INGREDIENTS • 1 gallon Apple Cider • 1 large navel orange • 15-20 whole cloves • 3-4 cinnamon sticks • 2 whole nutmeg • - tea ball or cheesecloth • - sliced apples and cinnamon sticks for garnish DIRECTIONS Pour apple cider into a large slow cooker. Turn on HIGH. Randomly score skin of orange with a knife to help release oils in skin. Do not cut all the way through the skin. Pierce orange with cloves. Place orange and cinnamon sticks in apple cider. Cut nutmeg into quarters and place in tea ball (or use cheesecloth tied closed with kitchen string). Place tea ball in apple cider. Heat on HIGH 1-2 hours or until hot. Place a slice of apple and cinnamon stick in a mug. Ladle hot cider into mug.

SPICED HOT COCOA Active Time : 15 minutes Total Time : 15 minutes Serves : 3

INGREDIENTS • 1/2 cup bittersweet chocolate chips • 1/3 cup water • 3 tablespoons Essential Everyday Granulated Sugar • 2 tablespoons Baking Cocoa • 1/2 teaspoon Essential Everyday Ground Cinnamon • 1/8 teaspoon cayenne pepper • 1/8 teaspoon Essential Everyday Salt • 3 cups 2% milk • - Aerosol Extra Creamy Dairy Whipped Topping DIRECTIONS In large saucepan over medium heat, combine chocolate, water, sugar, cocoa, cinnamon, cayenne and salt. Heat until boiling, stirring constantly. Reduce heat. Slowly add milk; bring to a simmer, stirring constantly to avoid scorching. Top with whipped cream, if desired.


GINGERBREAD WHOOPIE PIES WITH LEMON CRÉME Gingerbread Whoopie Pies: 3 cups flour 2 teaspoons McCormick® Ground Ginger 1 teaspoon McCormick® Ground Cinnamon 1 teaspoon baking soda 1/4 teaspoon McCormick® Ground Nutmeg 1/4 teaspoon salt Lemon Créme: 1 jar (7 ounces) marshmallow cream 1/4 cup (1/2 stick) butter, softened

3/4 cup (1 1/2 sticks) butter, softened 3/4 cup firmly packed brown sugar 1/2 cup molasses 1 egg 1/4 cup granulated sugar 1 cup crushed peppermint candies 4 ounces (1/2 package) cream cheese, softened 1 teaspoon McCormick® Pure• Lemon 1 canExtract (15 oz) tomato sauce

• 1 cup frozen whole kernel corn

Directions • 2 cups uncooked regular elbow FOR the Gingerbread Whoopie Pies, mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Set macaroni aside. Beat butter and brown sugar in large bowl with electric mixer on medium speed until lightCheddar and fluffy. Add • 1 cup shredded cheese molasses, egg and vanilla; beat well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight. PREHEAT oven to 350°F. Shape dough into 1-inch balls. Roll in granulated sugar to coat. Place 2 inches apart on ungreased baking sheets. BAKE 8 to 10 minutes or until edges of cookies just begin to brown. Remove to wire racks; cool completely. MEANWHILE, for the Lemon Creme, mix marshmallow creme, butter, cream cheese and lemon extract in medium bowl until well blended. To assemble whoopie pies, place about 1 tablespoon filling on the flat side of 1 cookie. Top with a second cookie, pressing gently to spread the filling. Repeat with remaining cookies. Roll edge of cookies in crushed candy. Store whoopie pies between layers of wax paper in airtight container in refrigerator up to 5 days.

Unfold puff pastry sheets; repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 6 smaller squares. Spoon apple mixture onto the center of each square. Fold over from corner to corner into a triangle shape; press edges together to seal. Place turnovers on a baking sheet about 1 inch apart. Bake in a preheated 400°F oven 25 minutes or until the tops are puffed and lightly golden brown.

RUSTIC ROASTED TOMATO BASIL SOUP Active Time : 20 minutes Total Time : several hours Serves : 8 servings

INGREDIENTS 2 tablespoons Wild Harvest Organic Extra Virgin Olive Oil 1 cup chopped yellow onion 2 tablespoons chopped garlic 1/2 cup dry white wine

3-4 cups puréed roasted tomatoes 1 32 ounce container Wild Harvest Organic Low Sodium Chicken Broth 1/3 cup chopped Wild Harvest Organic Fresh Basil Leaves 1 tablespoon Wild Harvest Organic Balsamic Vinegar

DIRECTIONS In large saucepan or Dutch oven, heat oil over medium-high heat. Add onions and sauté until golden (about 8-10 minutes). Add garlic about half way through. Add wine and reduce by half. Add tomatoes and chicken broth; salt and pepper to taste. Bring to a boil. Reduce heat; simmer 25-30 minutes. Add basil and vinegar; remove from heat. Serve with grated Parmesan cheese, if desired. • To Roast Tomatoes: Start with approximately 4 pounds of fresh vine ripe tomatoes, any variety. Rinse tomatoes and cut in half (lengthwise for Romas, crosswise for all other tomato varieties). Place tomato halves on baking sheets, face up. Drizzle with olive oil and sprinkle with salt and pepper. Place in a 325°F oven for 2-3 hours. Tomatoes should have a wonderful caramelized appearance. Allow tomatoes to cool completely. • To Freeze Roasted Tomatoes: Place desired quantity of cooled tomatoes in freezer-style recloseable food storage bags. Place in freezer.

INGREDIENTS: 2/3 cup flour 1 18 oz. roll refrigerated sugar cookie dough 1½ cups prepared vanilla frosting 3 cups M&M’S® Brand Minis Chocolate Candies 4 strands red licorice laces Resealable plastic bags Drinking straw Christmas light shaped cookie cutter (small) 1. Preheat oven to 350°F. 2. Knead the flour into the cookie dough until smooth. 3. Roll the dough out to 1/4-inch thickness. By hand, or using a Christmas light cookie cutter, cut out shapes. 4. With a spatula, gently transfer the cookies to a baking sheet. Using a drinking straw, press a hole at the top of each cookie. 5. Bake for 15 minutes. Transfer to a wire rack and let cool completely. 6. Separate different colors of M&M’S® Brand Minis Chocolate Candies, and set aside. 7. Spread vanilla frosting on top of each cookie. Arrange a solid color of M&M’S® Brand Minis Chocolate Candies on top of each cookie. 8. Let the cookies dry for 30 minutes. INGREDIENTS • 2 tablespoons 100% pure olive oil • 1 cup chopped onion • 1 cup chopped carrots • 1 cup chopped celery • 1 tablespoon chopped garlic • 1 32 ounce container reduced sodium chicken broth

• 3 pounds butternut squash peeled, seeded and cubed (about 8 cups) • 2 tablespoons chopped fresh sage leaves • 1 cup half & half • dash cayenne pepper • sourdough pretzel nuggets

DIRECTIONS In large stockpot or Dutch oven, heat oil over medium-high heat. Add onions, carrots, celery and garlic; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes). Add in broth and squash; bring to a boil. Reduce heat and simmer 30 minutes or until squash is tender. Stir in chopped sage last 5 minutes of cooking. Remove from heat. Using a food processor or blender, purée soup in batches; return to pot. Stir in half & half and cayenne pepper; continue simmering 5 minutes. Serve soup garnished with pretzels.

BUTTERMILK BISCUITS Active Time : 20 minutes Total Time : 35 minutes Serves : 14-16 biscuits

INGREDIENTS • 4 cups self rising flour • 1/4 cup all vegetable shortening chilled • 1 tablespoon granulated sugar • 6 tablespoons cold butter divided • 1/2 teaspoon baking soda • 2 cups cold buttermilk • 1/2 teaspoon salt DIRECTIONS In large mixing bowl, combine flour, sugar, baking soda and salt. Using a pastry blender or two forks, cut shortening and 4 tablespoons butter into flour until it resembles coarse crumbs. Make a well in the flour; pour in buttermilk. Gently fold flour into buttermilk until a sticky dough is formed. Turn dough out onto a floured work surface; dust with flour. Gently fold dough over itself 5-6 times to create layers. Roll dough out to ¾-inch thick. Cut with a 2½-inch biscuit cutter or upside-down drinking glass. Place biscuits onto an ungreased baking sheet. Melt remaining 2 tablespoons butter; brush over biscuits. Bake in a preheated 425°F oven 15 minutes or until golden brown.

BEGINNERS CARAMEL ROLLS INGREDIENTS • 4-1/2 to 5 cups all-purpose flour • 1/3 cup sugar • 2 packets Fleischmann’s® RapidRise Yeast • 1 teaspoon salt • 1-1/2 cups water • 6 tablespoons butter OR margarine • 1 egg

CARAMEL SYRUP • 1/2 cup butter OR margarine • 1 cup brown sugar • 1/4 cup Karo® Light Corn Syrup • 1 cup pecan halves, chopped or toasted if desired FILLING • 1/3 cup sugar • 2 teaspoons ground cinnamon • 3 tablespoons butter OR margarine, very soft

Directions: 1. Combine 2 cups flour, sugar, dry yeast and salt in a large mixer bowl and stir until blended. Place water and butter in a microwave-safe bowl. Microwave on HIGH in 15 second increments until very warm but not hot to the touch (120° to 130°F. Butter won’t melt completely). Add to flour mixture with egg. 2. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1 cup flour; beat 2 minutes at high speed, scraping bowl occasionally. Stir in just enough remaining flour so that the dough will form into a ball. 3. Knead on lightly floured surface until smooth and elastic and dough springs back when lightly pressed with 2 fingers, about 6 to 8 minutes. Cover with a towel; let rest for 10 minutes. 4. To make Caramel Syrup, combine butter, brown sugar and corn syrup in a medium saucepan over medium heat, stirring frequently. Bring to a boil for just 30 seconds. Remove from heat and pour into 13 x 9-inch baking pan that has been sprayed with cooking spray. Sprinkle pecans over the caramel. 5. For filling, combine sugar and cinnamon in a small bowl. Set aside. 6. Roll dough into a 15 x 10-inch rectangle using a rolling pin. Spread 3 tablespoons butter over dough stopping at least 1/2-inch from the edges on the long sides. Sprinkle with cinnamon sugar mixture. Beginning at long end of each rectangle, roll up tightly. Pinch seams to seal. Cut into 12 equal pieces. TIP: Use unflavored dental floss instead of a knife to cut rolls. To do, cut a piece of floss about 12 inches long. Slide floss under the roll; bring the ends up and cross over to cut each slice. Place, cut sides down, in prepared pan. Cover with towel; let rise in warm place until doubled in size, about 1 hour. 7. Bake in preheated 350ºF oven for 28 to 33 minutes or until rolls are golden brown. Cool on wire rack for 5 minutes and then invert onto serving tray. Gently pour any caramel remaining in the baking pan over the rolls.

CLASSIC PECAN PIE INGREDIENTS • 1 cup Karo® Light OR Dark Corn Syrup • 3 eggs • 1 cup sugar • 2 tablespoons butter, melted

• 1 teaspoon pure vanilla extract • 1-1/2 cups (6 ounces) pecans • 1 (9-inch) unbaked OR frozen** deep-dish pie crust

Directions 1. Preheat oven to 350°F. 2. Mix corn syrup, eggs, sugar, butter and vanilla using a spoon. Stir in pecans. Pour filling into pie crust. 3. Bake on center rack of oven for 60 to 70 minutes (see tips for doneness, below). Cool for 2 hours on wire rack before serving. 4. **To use prepared frozen pie crust: Place cookie sheet in oven and preheat oven as directed. Pour filling into frozen crust and bake on preheated cookie sheet. 5. RECIPE TIPS: Pie is done when center reaches 200°F. Tap center surface of pie lightly - it should spring back when done. For easy clean up, spray pie pan with cooking spray before placing pie crust in pan. If pie crust is overbrowning, cover edges with foil. 6. NUTRITION TIP: To reduce calories, substitute new Karo® Lite Syrup for the Karo® Light or Dark Corn Syrup. 7. High Altitude Adjustments: Reduce sugar to 2/3 cup and increase butter to 3 tablespoons. Reduce oven temperature to 325°F. 8. VARIATION: coarsely chopped walnuts may be substituted for pecans to make a walnut pie.
