PEANUT BUTTER AND TOMATO
Peanut butter is high in calories and each bite packs a bunch of nutrition. It contains both protein and healthy monosaturated fats, which will give you the energy pick-me-up that you are looking for. Additionally, peanut butter has other nutrients including vitamin B3, and manganese. The researchers found that tomatoes are the biggest source of dietary lycopene; a powerful antioxidant that, unlike nutrients in most fresh fruits and vegetables, has even greater bioavailability after cooking and processing. Tomatoes also contain other protective mechanisms, such as antithrombotic and anti-inflammatory functions.
How it came about?
Peanut Butter & Tomato Sandwich: I never ate a peanut butter sandwhich growing up, so there was no way I had tried it with tomato. The first time I actually tried a normal peanut butter sandwich was in Florence, Italy. While studying abroad I had American roomates and for them this was comfort food so I tried it one day when my roommate made some. So, while exchanging stories and critiquing my work, Ken (my Thesis Professor) told me about his childhood snack. He told me he used to have a Peanut Butter & Tomato Sandwhich. I personally found this gross; nonetheless I went ahead and tried it anyway.
