Sourced from a small family-owned producer in Thailand, this coconut milk is made using traditional methods and an ancient, perfected recipe. 20-22% refers to the fat content, this being the higher-fat option, it is the best choice for tempering spicy dishes. This is excellent in traditional Thai recipes that include spicy chilies or curry, or use simply to add creaminess to soups and sauces. 17-19% is the more traditional choice found in authentic Thai recipes with a slightly less creamy consistency and subtle spice.
Our producer in Korea uses locally harvested peppers, which are dried and ground into a fine powder to make our clay pot aged chili paste. That powder is mixed with aged soybeans, rice, salt, and water to form a paste. It is then poured into clay pots called onggi, which means "breathing earthenware". These pots concentrate the flavor and thicken the texture of this exceptionally bright and spicy condiment. The slow, natural process creates a smooth, steady spice. It will lessen with cooking time so add towards the end of cooking for a spicier dish, or towards the beginning for a less spicy dish.
