SPRING DUG PARSNIPS Some of the first vegetables to come out of the ground in the spring season, these parsnips were planted the previous spring and left in the ground to “winter.� During this time the starches are converted to sugar and the flesh becomes more tender. Available in the spring.

MOREL MUSHROOMS Known for their honeycomb-like exterior, these fragile mushrooms range in color from blonde to dark brown. Morel mushrooms must be cooked, developing a meaty, tender texture and deep, woodsy, nutty flavor. Available for a short time in the spring.

GARLIC SCAPES The tender young stems from which garlic bulbs are formed deliver a similar flavor to green garlic, only milder with grassy and nutty notes. They also release a pungent oil and robust peppery flavor when pressed. Available late spring and early summer.
