Italian'Style'Turkey'with'Lemon'Ciaba6a'Stuffing#
A Turkey is always essential at Christmas time and this Christmas is no different. Be prepared to make one of the best turkeys this Christmas since this is a special day. Method: Time to cook: 1 hr 50 mins – 2 hrs
Ingredients for Turkey: Fresh Turkey 1. ½ Cup of Butter 4 tbsp Olive oil 1 tbsp Salt 2. ½ tsp Pepper or Peppercorns 2 tbsp Seasoned Salt 1 tsp Poultry Seasoning 3. 1 tsp Paprika 2 whole Onions 2 Garlic cloves 4. 4 Rosemary sprigs or finely chopped A splash of Cumin, Oregano, Dill, and some of your favourite herbs to add your own personal flavour.

Firstly, rinse the fresh Turkey with cool water, Lemon and Vinegar and let the Turkey stand for two hours and pre heat the oven to 190C . Lightly cover the Turkey with warm butter, olive oil and pepper mixture and leave for 20 minutes then add the other seasonings and herbs. Cut a few holes in the Turkey and add in cut Garlic, Onions and rosemary sprigs (makes the inside of the Turkey more flavoursome). Tie the crown in 2-3 places with butcher’s string to hold the shape together. Slice some onions wedges and place them in the middle of a large roasting tin and sit the crown on top. Italian#Style#Turkey#Con0nued…# Stuffing Ingredients: 4 tbsp Olive oil 2 Onions 3 Garlic cloves 50g Pine Nuts 85g grated Parmesan Lemon Zest 1 small loaf of Ciabatta 2 tbsp of each finely chopped fresh Parsley and Rosemary 2 eggs beaten Gravy Ingredients: Any fresh herbs (Parsley, Oregano, Cumin Seeds, Basil, Chives, splash of Mint, Sage and Thyme) Salt Pepper 4 Plain Flour Carrots/Celery 175 ml medium Sweet marsala 850 ml of Turkey of chicken stock
Method: 1. Heat oil in a frying pan and add in the Garlic and Onions and fry for 10 minutes until soft and golden. Add in the pine nuts and stirring the nuts until golden. Remove form the heat and leave to cool. 2. Add in a handful of Parmesan and the remaining stuffing ingredients and sprinkle a bit of salt and pepper and loosely spoon the stuffing mixture. Drizzle a bit of oil and add in the remaining Parmesan and lay on a sheet of parchment (if not use a warm plate.) 3. Once Turkey is fully cooked, place on warm platter and leave for 40 minutes before carving. Turn the heat to 200C and put the stuffing in the oven for 20-25 minutes if covered in foil or parchment remove after 15 minutes and let the stuffing golden for 5 minutes. 4. For the gravy stir in the juices from the Turkey roasting tin to sit on a medium heat. Add in flour, marsala, and stock add in your fresh herbs. 5. To add a bit more Spice to your dish: Cut up the remaining Lemon and Garlic Cloves, warm in the oven for 7 minutes and add as decoration for your Turkey.

Ingredients: 1 Cup Granulated Sugar 1 cup Brown Sugar 1 cup Creamy Peanut Butter 1 cup Margarine 2 Eggs ¼ cup milk 1 tsp salt ½ White sugar for decoration 2 tsp vanilla extract 3 ½ cups of all purpose flour 2 teaspoons of baking soda 250g Milk chocolate candy kisses

1. Heat the oven to 190C and grease the sheets. In a large bowl beat 1 cup of granulated sugar, brown sugar, peanut butter, butter and eggs. Stir in the milk and vanilla extract. Gently add in the flour, salt and baking soda. 2. Shape tablespoons of dough into balls or whatever shape you choose and add in the remaining white sugar. Place the cookies on the greased sheets keeping them 1 ½ inches apart from each other. 3. Bake for 10- 13 minutes, remove from the oven and immediately press the chocolate kiss into the cookie and sprinkle the white sugar. 4. Leave to cool and then enjoy! By Princess Fisher
