Choosing to stay clean and lean for the new year is the best way to start. A few ways to get your mind adjusting o a new food style is: ! Replacing your favourite junk food for healthier options. This is easy to say but hard to do. For example instead of White rice everyday try grains and seeds, Couscous, Bulgar Wheat, Quinoa (pronounced keen-WAH), Millet, Buckwheat and Black Rice. ! By Princess Fisher Ingredients 1 loaf Crusty Italian Bread 1 Cucumber, Halved, Seeded And Sliced 6 whole Assorted Tomatoes, Cut Into Wedges ½ Whole Red Onion Very Thinly Sliced ¼ cup Olive Oil Plus More For Drizzling On The Bread 1 Tablespoon Red Wine Vinegar Salt And Pepper 25 whole Basil Leaves Parmesan Shavings Olive Oil, For Drizzling ½ cup of Olives ½ round of Lettuce
Method 1. First cut up tomato into wedges, slice cucumber slice in half, slice Red onion and put into the bowl. 2. Add in olives, basil leaves and lettuce (anything else you choose to add) 2. The making of the bread is very important. The bread should be stale “a day old” but if that is not possible, preheat the oven to 200C. 3. Cut the bread into 1 inch pieces and space them out o a baking sheet. Pour oil even across the bread. 4. Place in the oven for 15-20 minutes until slightly crisp (not too hard). 5. Remove from the oven and leave to cool for 7 minutes 6. Add bread to the bowl of salad, Red wine vinegar, salt and pepper and parmesan shavings. Cover with foil and allow to sit for 40 minutes before serving.

200g/7oz sugar, plus some extra for a bit of dusting 3 blood oranges, juice and zest 1 tsp orange blossom water 2 free-range eggs, plus 6 yolks 200g/7oz butter, cubed 25cm/10in sweetened shortcrust pastry tart shell, blind baked (ready made) 3 blood oranges, peeled, sliced into rounds 1 tbsp demerara sugar double cream or custard, to serve or eat plainly
1) Quickly preheat the oven to 180C and start whisking the sugar, orange juice and zest, orange blossom water, eggs and egg yolks together in a bowl until mixture is smooth 2) Add the butter and set over a pan over simmering water. (Tip: Make sure the base of the bowl does not touch the water) 3) Cook the butter for 12-20 minutes, stirring regularly, until the butter has melted and the mixture is thick. 4) Pour the mixture into the cooked pastry case and make sure it is covered with clingfilm and put aside to cool for 10 minutes. 5) Arrange the orange slices on the cooled tart and evenly sprinkle over the demerara sugar. 6) Heat the sugar until caramelised and serve, 7) Optional: Slice tart and serve with double cream or custard.
